The purpose of the study was to optimize the effective drying conditions and different foaming agent concentrations on the biochemical properties of foam mat dried tomato powder. Foaming was achieved by using egg albumin as foaming agent and sodium salt of Carboxymethyl Cellulose (CMC) as foam stabilizer with different concentrations. Drying was achieved by using different drying temperatures. The changes in different physicochemical properties of foam mat dried powder viz. total soluble solid (TSS), pH, ascorbic acid, titratable acidity, β-Carotene, DPPH radical scavenging activity were observed. Foams were prepared from different concentrations of egg albumin (3-7% w/w) and sodium salt of Carboxymethyl Cellulose (1%, 0.5%). The drying temperatures were varied from 60°C to 70°C. The drying time changes with different drying temperatures. It was found that the drying time decreased with the increased foaming agent concentrations as well as with higher drying temperature. It takes almost 13 hrs for drying at 70°C. TSS and pH content was increased with the increase of foaming agent concentrations and foam stabilizer’s concentrations but decreased with the increasing temperatures. Ascorbic acid decreased with the increase of foaming agent concentrations and temperatures but increased with CMC concentration. Titratable acidity content of foam mat dried tomato powder was decreased with the increasing foaming agent concentrations but increased with the higher temperatures and decreased CMC concentration. β-Carotene contents increased with the increase of foaming agent concentrations but decreased with the increase of temperatures and foam stabilizer concentration. DPPH free radical scavenging activity increased with the increase of foaming agent, foam stabilizer and temperatures. Based on the maximum retention of physicochemical properties, the optimum treatment of foaming agent was found to be 7% egg white + 1% CMC at 60°C.

This study investigated the fortification of a carob-based kefir-like beverage (KLB) with whey permeate (WP) and oat flour (OF). The response surface method was used to show the effect of WP and OF concentrations on lactic acid bacteria and yeast cell densities, pH, total titratable acidity (TTA), total phenolics content (TCP), DPPH radical scavenging activity, and overall acceptability (OA) in KLB. The statistical design provided thirteen formulations where OF concentration varied from 3% to 5% and WP from 10% to 15%. The enrichment of carob pods decoction with WP and OF had a positive effect on biomass production. Overall fermentation was shown to increase TPC of KLB. Furthermore, OF supplementation led to the higher levels of TPC and antiradical activity. WP negatively affected OA at linear and quadratic levels, whereas no effect of OF was observed at the linear level. The optimum point was found by using WP at 11.51% and OF at 4.77%. Optimized KLB resulted in an enrichment of bioavailable phenolics derivatives and highly digestible proteins.

AbstractThree cultivars ‘Zefyr’, ‘Honoeoye’ and ‘Polka’ were grown on beds mulched with black plastic or without it, as well as in low tunnels covered by transparent polyethylene film or Agronet (Pegas agro, 17 g·m-2), or without covering. The quality of fruits determined by content of ascorbic acid, titratable acidity, soluble solids, total content of phenolics and anthocyanins, antiradical activity, and radical scavenging activity (RSA) was evaluated during two seasons. Significant differences in phytochemical contents within strawberry cultivars, production seasons and cultivation methods were stated. Cultivar had the greatest influence on the content of ascorbic acid, total phenolics and RSA among all the studied factors. The amount of anthocyanins was mainly influenced by plant covering, while the annual climatic conditions had the greatest impact on the amount of titratable acidity and soluble solids. Soil mulching had the lowest influence on the chemical content of fruits.

The flowers of Bombax ceiba were investigated for their chemical composition, antioxidant effects and antiproliferative activity against seven human cancer cell lines. The antiproliferative responses of diethyl ether (DE) and light petroleum (PE) extracts were evaluated by sulforhodamine B (SRB) assay against MCF-7, HeLa, COR-L23, C32, A375, ACHN, and LNCaP cells in comparison with a human normal cell line, 142BR. Moreover, extracts were characterized by GC-MS analysis and tested for their antioxidant properties by different in vitro systems, namely DPPH, Fe-chelating activity and β-carotene bleaching test. Both PE and DE extracts showed the highest antiproliferative activity against human renal adenocarcinoma (ACHN) in a concentration-dependent manner. PE extract showed the highest radical scavenging activity against the DPPH radical, while DE extract was more active in the β-carotene bleaching test. The presence of β-sitosterol and some fatty acids may contribute to the bioactivity of B. ceiba flower extracts.

The daily consumption of tobacco products leads to a boost in free radical production in tissues, promoting the risk for malignancies, metabolic alterations and chronic-inflammatory diseases. This study aimed to broaden the knowledge of the status of the antioxidative (AO) system in the skin, compared to the blood, of healthy appearing smokers. Both, the basic status compared to non-smokers and the short-term impact of controlled cigarette consumption in smokers were analyzed. Our study showed that the basic level of the AO system of smokers significantly differed from that of non-smokers. As determined by resonant Raman spectroscopy (RRS), the levels of exogenous AOs were decreased in both, the skin, in vivo (β-carotene and lycopene), and blood plasma (β-carotene only). In contrast, the levels of glutathione (GSH), the prototypical endogenous AO, which were analyzed by fluorimetric assays in cutaneous tape strips and blood plasma, were increased in the skin, although unchanged in the blood of smokers. Elevated cutaneous GSH levels were reflected by an elevated overall radical scavenging activity in the skin, as quantified by non-invasive electron paramagnetic resonance (EPR) spectroscopy. Analysis of the expression of selected stress-associated genes in blood immune cells by quantitative RT-PCR in subgroups of non-smokers and smokers additionally demonstrated the downregulation of AKR1C2 in smokers, and its negative correlation with blood plasma levels of the protective immune mediator interleukin-22, assessed by the ELISA technique. Controlled cigarette consumption did not alter exogenous or endogenous AOs in the skin of smokers, but decreased lycopene levels in blood plasma. Moreover, there was a decline in blood IL-22 levels, while no relevant response of blood cell gene expressions was found after the considered short time. Our data therefore demonstrate a strengthened endogenous AO status in the skin of smokers, which may indicate a long-term adaptation to chronic oxidative stress in this specific organ. While this effect was not clearly visible in the blood, this compartment seems to be useful as an immediate indicator of the body’s AO consumption. Moreover, decreased levels of AKR1C2, which we show for the first time to be expressed in immune cells, may be a candidate marker for long-term smoking. In addition, this study demonstrates that the rate constant of a spin probe decline determined by EPR spectroscopy mainly represents the endogenous AO status of a tissue.

Objective:  Current analysis aims at in-vivo investigation of analgesic and anti-inflammatory activities of Aitchisonia rosea methanolic extract. Methods: Albino mice (20-30 g) were used in the study. Extract at 200, 400 and 800 mg/kg doses was tested against egg albumin and carrageenan induced mice paw edema along with formalin persuaded paw licking and acetic acid prompted writhing for analgesic activity. Results: Results depicted dose reliant and significant (p<0.001) inhibition of carrageenan as well as egg albumin brought paw edema, abdominal constrictions/ hind limb stretching tempted by acetic acid and formalin instigated paw licking. Capability of crude extract to halt inflammatory and analgesic response was akin to that of ibuprofen in all models. Conclusion: The current findings support the use of Aitchisonia rosea for inflammatory conditions, which might be attributed to its previously proven high alkaloid, flavonoids, phenol, tannins content and free radical scavenging activity.

Palmyra palm (Borassus flabellifer Linn.) is an important sugar-producing plant that is widely distributed in tropical Asian countries. Its jaggery and sweet sap are prevalent in Cambodia as a substitute for table sugar. They contain essential minerals, vitamins, and biological compounds. We investigated the changes in the nutritional composition, antioxidant properties, and biological activity of palm granulated sugar prepared by using three different drying–solidification processes under vacuum conditions: the drying temperature was controlled at 80 °C, 90 °C, and 100 °C, and the drying time was 60, 75, and 90 min, respectively. Palm granulated sugar contains 10 kinds of vitamins (mainly vitamin E 52.15–55.12 mg/100 g), 5-hydroxymethylfurfural (2.18 to 41.92 mg/100 g), and 38 volatile compounds that belong to the alcohol, ketones, pyrazines, acids, and phenols groups, and an aldehyde group. Moreover, palm granulated sugar exhibits a high total phenolic content (2.77–8.94 mg gallic acid equivalent/100 g), 2,2-diphenyl-1-1picrylhydrazyl (DPPH) radical scavenging activity (20.15%–37.88%), and ferric reducing antioxidant power (FRAP) value (322.68–378.23 μmol Fe2+/mL). Furthermore, palm granulated sugar-treated NIH3T3 cells showed a higher cell viability of 18.10% to 23.68%. This study confirmed that palm granulated sugar prepared at 90 °C for 75 min can have a better product quality with increased vitamin and mineral contents, antioxidant properties, and biological activity, while also being low in 5-hydroxymethylfurfural (HMF) content.

Soursop (Annona muricata L.) is a genus of tropical fruit trees belonging to the family Annonaceae, which is grown in Viet Nam. Soursop is highly nutritious but has economically low value and easily perishable. Therefore, this study aims to evaluate the effects of drying temperature (50oC, 60oC, 70oC, 80oC, 90oC) onphenolic compounds, antioxidant activities via reducing power and DPPH radical scavenging activity and sensory evaluation of soursop. The results showed that the total polyphenols content at the temperatures was 22.867 mg GAE per 100g dry matter; 23.450 mg GAE / 100g dry matter; 24.342 mg GAE / 100g dry matter; 27.747 mg GAE / 100g dry matter; 25.933 mg GAE / 100g dry matter. The samples at 60oC were found maximum in antioxidant activities which reduced as the heating drying temperature increased. Sensory evaluation showed that astringency taste was rated higher to the samples dried at 70oC with 150 minutes.

Rice bran protein is an emerging protein source from rice milling that possesses health benefits and emulsifying capacity suitable for hypoallergenic encapsulation applications, especially for lipophilic compounds such as β-carotene. The purpose of this study is to develop and characterize β-carotene encapsulates with maltodextrin and rice bran protein. Rice bran protein was prepared using conventional alkali extraction. β-carotene was added to the composite wall materials (50:50 of 4%, 8%, 12%, and 16% solids content) and spray-dried. Encapsulation efficiency (85–98%) and radical scavenging activity (11–43%) varied proportionally with rice bran protein. Across increasing maltodextrin and rice bran protein content of the feed, carbohydrate content of the microcapsules varied proportionally (50–66%) but protein content was uniform (10–13%). Scanning electron microscopy, differential scanning calorimetry, and Fourier transform infrared spectroscopy data suggested successful encapsulation. Release profiles showed decreasing trend with increasing rice bran protein content; co-digestion with rice mitigated negative impacts of rice bran protein. Microcapsules with nutritive potential and health-promoting properties were developed as potential carotenoid delivery systems.

Sea cucumber is an important food and remedies in Eastern hemisphere. However, less study have been performed to identify health benefit effects of sea cucumber from tropical region. In this study, radical scavenging activity of sea cucumber from Mataram - Lombok [Holothuria leucospilota, Holothuria atra, Holothuria fuscocinerea, and Holothuria excellens] were studied. Compared to other species at concentration of 0.1 mg mL–1, H. atra extract showed strongest scavenging activity in 2,2-Diphenyl-1-picrylhydrazyl (DPPH) (13.14 ± 2.17) % and absorbance value of β-carotene linoleic acid model at 180 min was (3.32 ± 1,12). H. atra extract were further fractionated, and ethyl acetate fractions (fr. 6) significantly inhibit radical activity at 180 min with the absorbance value of 2.84 ± 0.2. It can be concluded that H. atra is an important sea cucumber from tropical region.
