Free radicals including reactive oxygen species are continuously increasing in the human body. This condition causes the unbalance between free radicals and antioxidants in the human body. An antioxidant is a compound with the ability to reduce the harmfulness of the free radical. This study aimed to determine the antioxidant activity of fractions and analyzed the functional groups of water lettuce (Pistia stratiotes) methanol extract. The separation process was performed by using thin-layer chromatography (TLC) and column chromatography. The separated fractions were measured for their antioxidant activity by using the 2,2′-diphenyl-1-picrylhydrazyl radical (DPPH) assay. The functional groups of each fraction were determined by using Fourier-transform infrared (FT-IR) spectroscopy. The separation of water lettuce extract by using column chromatography produced seven fractions with different colors and confirmed by using TLC. The antioxidant activity showed the highest activity in the third fraction with a half-maximal inhibitory concentration (IC50) value of 131.66 ppm. The fifth fraction with the IC50 was about 184.62 ppm. Whereas, the first, second, fourth, sixth, and seventh fractions were relatively weak with the IC50 more than 200 ppm. The FT-IR spectrum also showed that the intensity hydroxyl group in the third fraction higher than the seventh fraction.

Oxidative Stress is the primary cause of most of the diseases currently in the world. The human body is prone to many illnesses out of which oxidative stress plays a significant role in the causation of those. The Stress in the body releases free radicals and these free radicals react with the cell organelle and cause denaturation and break down. The generated free radicals should be fought to eliminate and prevent toxic effects. Many drugs are known to fight free radicals. Most of them had been scientifically evaluated and published for their activity too. The investigations say that antioxidant activity of the herbs does not similarly reflect . There were differences in activity and significant deviations in the results that are shown in comparison to and . Thus, there is an urgent necessity to investigate the antioxidant activity of herbs to make sure that the activity resembles and to find any variations when compared to activity. This research protocol was framed out to screen for the antioxidant activity of the ethanol extracts of the Indigofera leaves by estimating the serum parameters and correlating the results with the human body. Out of the values overall, the were the ones that are significant participants in fighting the free radicals and in boosting the immune system. The ethanol extract successfully prevented the breakdown of the cellular structure of the liver cells, thereby protecting it and replenishing the enzyme levels by destroying the free radicals that are generated due to DMH.

During the lifetime, the human body forms a considerable amount of free radicals damaging DNA, cell membranes, and their components. A wider application of basil (Ocimum basilicum), an aromatic plant and one of the common gastronomic commodities in the human diet could help to prevent the formation of free radicals and to remove them from the human body. Therefore, determination of antioxidant activity and total content of phenolic substances in selected cultivars of basil (Ohře, Sweet green, Salad leaf, Purple opal, Thai) in a fresh and frozen state and the mixture with another plant (garlic, mint, rocket, spinach) in the fresh and refrigerated state was performed. The total content of phenolic substances in basil was established by the spectrophotometric Folin-Ciocalteu method. DPPH spectrophotometric method was used to analyze the antioxidant activity. The results have shown statistically significant differences between basil cultivars under the same growing conditions. The values of antioxidant activity in frozen samples ranged from 5.1 ±0.4 mg.g-1 AA FW to 11.71 ±0.18 mg.g-1 AA FW and the total phenolic content varied between 2.77 ±0.16 mg.g-1 GAE FW in TH and 8.93 ±0.13 mg.g-1 GAE FW. A statistically significant difference between fresh and frozen samples was established only in the “Ohře” cultivar. After the storage in cold temperatures, all mixtures showed a reduction in the antioxidant activity and total content of phenolic substances. The mixture of basil and mint performed the highest values of antioxidant activity and total content of phenolic substances and significantly differed from the other mixtures most often. The addition of basil and its mixtures to food and beverages can substantially increase their biological value and subsequently also the quality of human nutrition.

(1) Background: The COVID–19 pandemic and the imposition of strict but necessary measures to prevent the spread of the new coronavirus have been, and still are, major stress factors for adults, children, and adolescents. Stress harms human health as it creates free radicals in the human body. According to various recent studies, volatile oils from various aromatic plants have a high content of antioxidants and antimicrobial compounds. An external supply of antioxidants is required to destroy these free radicals. The main purpose of this paper is to create a yoghurt with high antioxidant capacity, using only raw materials from Romania; (2) Methods: The bioactive components used to enrich the cow milk yoghurt were extracted as volatile oils out of four aromatic plants: basil, mint, lavender and fennel. Initially, the compounds were extracted to determine the antioxidant capacity, and subsequently, the antioxidant activity of the yoghurt was determined. The 2,2-diphenyl-1-picrylhy-drazyl (DPPH) method was used to determine the antioxidant activity; (3) Results: The results show that cow milk yoghurt enhanced with volatile oils of basil, lavender, mint and fennel, encapsulated in sodium alginate has an antioxidant and antimicrobial effect as a staple food with multiple effects in increasing the body’s immunity. The antioxidant activity proved to be considerably higher than the control sample. The highest antioxidant activity was obtained on the first day of the analysis, decreasing onwards to measurements taken on days 10 and 20. The cow milk yoghurt enriched with volatile basil oil obtained the best results; (4) Conclusions: The paper shows that yoghurts with a high antioxidant capacity were obtained, using only raw materials from Romania. A healthy diet, compliance with safety conditions and finding appropriate and safe methods to increase the body’s immunity is a good alternative to a major transition through harder times, such as pandemics. The creation of food products that include natural antioxidant compounds combines both the current great possibility of developing food production in Romania and the prevention and reduction of the effects caused by pandemic stress in the human body.

As a result of metabolic transformations of substances in the human body in the reactions of lipid peroxidation, reactive oxygen species are formed. Normally, the regulation of the production of activated oxygen metabolites and free radicals in human tissues and organs is carried out by the antioxidant system. Despite its high efficiency, antioxidant system it is not always to protect the human body from the development of oxidative stress. Thiazolidinones are among the most intensively studied heterocyclic systems, since they possess a wide spectrum of biological activity. Based on the above, the synthesis of some 4-thioxo- and 4-iminothiazolidin-2-ones and the study of their antioxidant activity is an topical direction. The aim of our work was to synthesize some C5 substituted derivatives of 4-thioxothiazolidin-2-one and 4-iminothiazolidin-2-one, as well as to conduct a primary screening of their antioxidant activity. The objects of study were C5 substituted 4-thioxo- and 4-iminothiazolidin-2-ones. The composition and structure of the synthesized compounds were confirmed by the data of elemental analysis and 1H NMR spectroscopy. The antioxidant activity of the synthesized compounds was studied in vitro, determining the decrease in the concentration of free radicals. The synthesis of 12 derivatives of 4-thioxothiazolidin-2-one and 4-iminothiazolidin-2-one was carried out. These substances are obtained by structural modification  to the C5 position of the base scaffolds. The antioxidant activity of the synthesized compounds was measured in vitro by the method of scavenging effect on 2,2-diphenyl-1-picrylhydrazyl (DPPH) radicals. Ascorbic acid was used as a standard. As a result of screening, 2 highly active compounds with a pronounced antioxidant effect were identified. As a result of structural modification of the basic scafolds, 12 corresponding C5 substituted thiazolidinones were obtained. During the primary pharmacological screening of antioxidant activity, 2 substances with a pronounced antioxidant effect were isolated. Further optimization of the structure is currently in progress.
