The objectives of this research were both to know as well as to determine the exact concentration of lemongrass water extract applied during storage on the quality of tofu. A complete randomized experimental design with two factor of treatments was utilized. The first factor was concentration of lemongrass water extract with 3 levels of treatmens, i.e : T1 : 1 kg of lemongrass : 2 L of water, T2 : 1 kg of lemongrass : 3 L of water, T3 : 1 kg of lemongrass : 4 L of water. Whereas the second factor was the storage time, i.e : L0 : 0 day, L1 : 2 day and L3 : 4 day. Variables observed including chemical, and microbial. They consit of protein, moisture, TPC, and Salmonella. Results showed that lemongrass water extract with the concentration of 1 : 4 stored for 4 day had high protein and moisture, content which were 15.4%, and 74.37%, respectively results from microbial test showed that microbial growth was suspressed by the treatments and the content were still in the range set by Indonesian National Standard Agency.

This objectives of this research were both to study and determine the best level of concentration of yeast Saccharomyces cereviseae and period of fermentation on the quality of tomi-tomi vinegar (Flacourtia inermis). A completely randomized experimental design with two factors of treatment was applied in this research. The first factor was concentration of yeast S. cereviseae having four levels of tretament, i.e.: without the addition of yeast 0.5, 1 and 1.5 g yeast. The second factor was period fermentation with 1, 2, 3, 4, and 5 weeks. The result indicated that the concentration of yeast S. cereviseae 1.5 g and period fermentation 5 week produced a good tomi-tomi vinegar with total acids 51.22%, total dissolved solids 8.35, total sugar 8.07% and pH 5.40.

Seeds of native forest species for food and seedling production have a growing demand that impacts the need for studies involving seed storage in order to maintain good levels of germination quality. Thus, scientific analyzes that explore the physiological potential of the seeds of these species are necessary, especially for the pink pepper (Schinus terebinthifolia Raddi.), a species used as an alternative source of income for traditional communities and which has been arousing interest due to the consumption of its fruits as a condiment in the national and international market. This work aimed to assess the physiological quality of pink pepper seeds according to the storage period and seed size. The seeds came from a rural settlement, a pioneer in the extraction of pink pepper, in the state of Rio de Janeiro, Brazil. The seeds were evaluated for moisture content, germination, first count, length and dry weight of the germinated seedlings, during the period of time that they remained stored and the size of the seeds. The results allowed to conclude that: i) the germinative percentage of the stored pink pepper seeds decreased over the months; ii) the moisture content of the seeds decreased over the months evaluated iii) the different sizes of seeds did not show differences in germination and storage time and iv) values of length and dry weight of the seedlings did not differ according to the period of storage.

This study aimed to evaluate the quality of Hevea brasiliensis seedlings, a GT1 clone, produced in protected environments in a variety of substrates. The treatments consisted of 13 substrates composed of combinations of cattle manure, soil from a ravine, medium vermiculite, superfine vermiculite and washed fine sand and two environments: a greenhouse with 50% shade using aluminized screen and a plant nursery with 50% shade using a Sombrite® screen. There were no replications of the environments; therefore, each one was considered an experiment. For each environment, a completely randomized experimental design with five replications was used to evaluate the substrates. Subsequently, the average squares of the residuals of individual variance analyses of these treatments (substrates) were evaluated, and because they did not exceed an approximate ratio of 7:1, a combined analysis of experiments was performed with Sisvar software. Two hundred eighty days after sowing, the dry weight, plant height, stem diameter, diameter at five centimeters above soil and the seedling quality indices were evaluated. Results indicated that substrates with a low amount of manure and sand and a high amount of vermiculite (S9 and S13) produced rubber tree seedlings of high-quality. The environment with greater radiation availability was better for the development of high-quality rubber tree seedlings.

Soy corn yoghurt is a vegan friendly product prepared by using soymilk as the major ingredient. The aim of this study was to assess the effect of corn milk addition (0, 10, 20, 25 & 30%) on the quality of soy yoghurt. The samples were subjected to sensory evaluation for consumer acceptability and data were subjected to statistical analysis. From sensory evaluation and statistical analysis 10% corn milk inclusion was selected as the best product (p<0.05). The yoghurt thus prepared using 10% corn milk had total solids 22.04%, moisture content 78.62%, protein 4.84%, fat 3.29%, carbohydrate 12.57%, ash 0.81%, acidity 0.68% and pH 4.58. Both control and 10% corn milk incorporated yoghurts were stored under refrigeration 6±1° C and analyzed at 2 days interval till 10 days. Yoghurts with corn milk and control were organoleptically acceptable up to 10 and 6 days respectively. Acidity and syneresis increased but pH decreased with storage time in both samples.

ABSTRACT The season of harvest is one of the most important factors influencing seed quality. This study evaluated the effect of different harvesting times on the physiological quality of Coriandrum sativum L. seeds, cv. Palmeira. The experimental design was completely randomized, with six treatments (harvest times) and four replications. The experiment was conducted during the months of April to October 2010. The first moment to harvest seeds was carried out 15 days after full bloom, when approximately 50% of plants were in flowering phase. Other harvests (22, 29, 36, 43 and, 50 days after bloom) were carried out at 7 days intervals until the seeds reached 16.0% of moisture, which occurred in the 6th harvest. Immediately after each harvest, the seeds were analysed for water content, germination and vigor (first count, seedling emergence and emergence rate index). The harvest season most suitable for C. sativum seeds cv. Palmeira occurred between 46 and 50 days after flowering, when the seeds have the highest physiological quality and moisture content between 20 and 16%.

Biodiesel is an alternative raw material for fuel of diesel motor made from vegetable oil. This study attempted to utilize tofu dregs as raw material for biodiesel. This study aimed to determine the yield of biodiesel produced and the content of methyl esters in the biodiesel yield, and to analyze the quality of biodiesel produced based on Indonesian national standard (SNI). This study consisted of four stages: the provision of samples, pre-treatment, esterification and transesterification, and analysis of the quality of biodiesel produced which include the density at 15 °C, the viscosity at 40 °C, and the moisture content. The results showed that the yield of biodiesel was 4.01%, and the content of methyl ester shown by larger Rf (0.87) using eluent of hexane:diethylether:formic acid. Results of the analysis of biodiesel quality obtained the density at 15°C was 864 kg/m3, the viscosity at 40 °C was 2.57 mm2/s, and the water content was 4%. Based on the parameters ofthe density at 15 °C and the viscosity at 40 °C, the product of biodiesel met the requirements of SNI, while in term of the water content the product did not meet the requirements of SNI.

Penelitian ini bertujuan untuk mengetahui kualitas kimia daging abalon beku H. asinina yang dicairkan dengan beberapa metode.  Penelitian ini menggunakan rancangan acak lengkap, dimana terdapat tiga perlakuan yaitu pencairan dengan melakukan perendaman pada air es (4oC), pencairan dengan melakukan perendaman pada air biasa (28oC), dan pencairan dengan menempatkan pada suhu ruang (30oC). Sebelum dilakukan pencairan sampel yang digunakan dibekukan pada suhu -20oC selama 3x24 jam. Parameter yang dianalisa antara lain, kadar protein, kadar lemak, kadar protein terlarut, kadar air, dan kadar TMA-N. Dari hasil penelitian ini diperoleh perlakuan pencairan dengan melakukan perendaman pada air biasa (28oC) memberikan kualitas kimia yang lebih baik dengan kadar protein 14,08%, lemak 5,43%, protein terlarut 4,09%, kadar TMA-N 6,71 mg/100 g, dan kadar air 78,40%. This research was conducted to investigate the chemical quality of frozen abalone (H. asinina) which thawed using different thawing methods.  A completely randomized experimental design (CRD) was used. It consisted of three treatments of thawing (A; immersion in cool water (4oC), B; immersion in water at ambient temperature (28oC), C; placement at room temperature (30oC)) and done in triplicates. The samples were frozen at a temperature of -20oC for 3x24 hours and they were packaged by air packaging method. The content of protein, fat, soluble protein, water,  and TMA-N were analyzed. The results showed that thawing by immersion in water at ambient temperature (28oC) gave the best chemical quality compared to two others thawing methods in this research.

Abstract: Seeds with high quality are one of the important factors to consider in the crops establishment on field. Therefore, the physical and physiological quality of wheat seeds treated with mixes of micronutrients including zinc and protective products were aimed. The wheat seeds were analyzed in a factorial scheme 5x3x4, with five storage time: 0, 60, 120, 180 and 240 days; three micronutrients: micronutrients 1 (1% Mn; 0.1% Mo; 10% Zn); micronutrients 2 (0.3% B; 0.3% Co; 3% Zn) and no micronutrients, and four protective products: untreated seeds, polymer (Colorseed He), fungicide carboxin + thiram (Vitavax® Thiram 200 SC) + insecticide thiamethoxam (Cruiser® 350 FS) and polymer + fungicide + insecticide. After treatment, the seeds were stored under uncontrolled conditions for 240 days and at intervals of 60 days, the germination, accelerated aging and moisture content were determined. Wheat seeds untreated and treated with polymer have the best physiological performance during storage, regardless micronutrients treatments. The wheat seeds treated with carboxin + thiram + thiamethoxam and polymer + carboxin + thiram + thiamethoxam can be storage up to 120 days, under uncontrolled conditions, regardless micronutrients treatments. The seed treatment does not alter the moisture content of wheat seeds.
