This study aims to analyze the critical point factor and malachite green test to determine the halal status of broiler chickens in chicken slaughterhouses (TPA). Samples were taken from 4 landfills in Menes District. The research was conducted in 3 stages, namely first filling the halal slaughtering quisoner according to the LPPOM MUI standard (2011), with results of 80% in accordance with the halal chicken slaughtering technique. The second stage is the Malachite Green test, which aims to prove whether the process of slaughtering broiler chickens is perfect, seen from the removal of chicken blood which must also be perfect, the data obtained is that blood removal is carried out completely from all samples (negative carcass). The last stage is post-slaughter handling by testing Eacherichia coli microbial contamination. The average value of microbial contamination is 2.6 x 104 cfu / gr with purple colonies on brilliance media, and the amount of e.coli contamination of broiler chicken meat exceeds the maximum limit of Eacherichia Coli microbial contamination (BMCM) of fresh chicken meat is less than 1 x 101 cfu / gr.

Escherichia coli (E. coli) is a gram-negative bacteria that can reduce meat quality and cause diarrhea if the amount is too much. This study investigates the presence of E. coli contamination in chicken meat sold in traditional markets in Medan. This research was conducted using the purposive sampling method and collected samples from 30% of each nine traditional markets with 32 samples. The traditional markets in Medan, namely Petisah, Central, Sei Kambing, Kampung Lalang, Kwala Bekala, Helvetia, Kampung Baru, Kemiri and Padang Bulan. Research was conducted by using the CFU / ml method with chromocult media. Samples were analyzed in the laboratory of the Regional Veterinary Disease Investigation Center Region 1 Medan. The results showed 32 samples of chicken meat had exceeded the maximum limit of microbial contamination. The highest total microbial average was in the Kampung Lalang market, 3.49 Log CFU / g, and the lowest was in the Kemiri market of 2.79 Log CFU / g. Based on the research results, it was found that the meat in the traditional markets of Medan was all contaminated with E. coli and had passed the maximum limit of bacterial contamination.

The data about changes in neutrophils stimulation index in men blood after consumption of broiler chicken meat with the natural origin immunomodulators, introduced in feed before slaughter, is presented in this paper. Spleen extract biologically active substances were used as immunomodulators and anti-stressors during pre-slaughter period. Biologically active substances influence on putrescin, spermine and spermidine content in broiler chicken blood before slaughter and on some non-specific resistance indices in people was determined after consumption of broiler chicken meat. Two groups of broiler chickens at one month age were formed for the study. The spleen extract obtained with ultrasound application (I research group) served as biologically active substances was added to the feed of broiler chickens in pre-slaughter period (five days before slaughter). Blood polyamines such as putrescin, spermine and spermidine were determined by the method of High-performance liquid chromatography (HPLC) on the liquid chromatograph Agilent 1200 (USA). The second experiment was conducted on 10 people. We recruited 10 healthy male medical students (20 years old, on average) after the National Medical license examination. Spleen extract polyamines as immunomodulators and anti-stressors have the most effective influence on total quantity of polyamines in broiler chicken blood. As a result of research, it is found that aerosol introduction of spleen extract into broiler chicken feed reliably increases total quantity of polyamines by 39% and, in particular, spermidine concentration by 34%, and spermine by 40% compared with broiler chickens of the control group. Some non-specific body resistance indices in men blood upon consumption of broiler chicken meat varied within the physiological norm. The neutrophils stimulation index increased in men blood (+0,82) after consumption of meat of broiler chickens to which spleen extract as immunomodulator and anti-stressor was introduced before slaughter (experimental group). The neutrophils stimulation index decreased in men blood (–2,21) after consumption of broiler chickens meat at pre-slaughter stress (control group). The neutrophils stimulation index in men blood of experimental and control groups differed by 34,8%, but did not go beyond the physiological norm. At the final stage of poultry feeding it is necessary to consider pre-slaughter stress and to apply biologically active substances of natural origin, such as spleen extract. The results obtained in the experiment on broiler chickens can be used in studies of non-specific resistance indices of the farm animals for increasing the organism resistance, correction and avoiding of pre-slaughter stress and improvement of product quality

<p>The article deals with the influence of Farmazin® and Tilocyclinvet® on the microbiological, chemical and microscopic characteristics of slaughtering products of broiler chickens. We have been studied the histological changes in the internal organs of broiler chickens under the influence of antibacterial drugs usage. Use of Farmazin and Tilocyclinvet as the antibacterial drugs for broiler chickens did not affect the microflora in the studied samples of poultry meat. We also investigated the microbiological parameters such as mesophilic aerobic and facultative anaerobic microorganisms, Escherichia coli bacteria, Proteus, Salmonella, Listeria monocytogenes, and Staphylococcus aureus bacteria and proved that Farmazin is mostly accumulated in «white» muscle, while Tilocyclinvet – in “red” ones. Results of the chemical analysis shown that the pH of meat in the bird groups that were fed on Farmazin (experimental I), Tilocyclinvet (experimental II) and control groups ranged from 5.64 ± 0.04 to 6.30 ± 0.03. We performed some tests concerning fresh meat and copper sulfate, peroxidase, ammonia and ammonium salts and suggested that meat of broiler chickens from the experimental and control groups con be preserved when refrigerated for three days and it is considered to be fresh. However, on the day 4 of storage pH value of chicken meat in the experimental group increases in the alkaline side; the results of reaction with copper sulfate, ammonium salts, ammonia, and ammonium salts testified the questionable freshness of meat from the experimental group at the end of the withdrawal period. We founded that pH value of broiler chicken meat from experimental group after withdrawal period shifts into the alkaline side comparing to the beginning of withdrawal period. We also registered that pH value of broiler chicken meat from experimental groups shifts into the alkaline side compared to control. Based on histological studies we can say that pathological changes registered in the internal organs of broiler chickens when using Farmazin and Tilocyclinvet were similar to each other and indicated some specific processes. We founded granular and fatty degeneration of hepatocytes, interstitial lymphocytic hepatitis, and fibrosis in the liver of broiler chickens; granular dystrophy of epithelial tubules, diffuse interstitial lymphocytic nephritis, and fibrosis – in kidneys; we also discovered swelling of intramuscular connective tissue and myocardial sclerosis in myocardium. The most obvious pathological changes were observed in broiler chickens, who were fed with Farmazin, somewhat less – in chickens who had got Tilocyclinvet at the beginning of the withdrawal period.</p>

Latar belakang: Pemenuhan kebutuhan pangan asal ternak yang berasal dari unggas memiliki angka konsumsi yang cukup tinggi salah satunya yaitu ayam broiler. Untuk memenuhi tingginya permintaan terhadap ayam broiler pada pakandiberifeed additiveserta antibiotic growth promotor (AGP) dalam bentuk antibiotik untuk mempercepat pertumbuhan dan daya tahan tubuh. Pemanfaatan antibiotik yang tidak bijak akan menimbulkan residu antibiotik serta resistensi Escherichia coli penghasil Extended Spectrum β-lactamase (ESBL).Metode: Penelitian ini termasuk penelitian deskriptif. Data primer diperoleh dari hasil screeningtest. Data ditunjukkan dalam tabel dangambar yang dibahas secara deskriptif. Variabel yang diamati residu antibiotik tetrasiklin serta E. coli penghasil ESBL pada daging ayam broiler.Hasil: Temuan terhadap residu antibiotik tetrasiklin pada daging ayam broiler yaitu sebesar 7,14% dengan rerata zona hambat 12,13 mm, sedangkan hasil identifikasi E. coli penghasil ESBL pada daging ayam broiler diperoleh hasil sebesar 71,4%.Simpulan:Residu antibiotik tetrasiklin dalam daging ayam broiler masih tergolong aman dapat dikonsumsi namun, temuanE. coli penghasil ESBL pada daging ayam broiler menimbulkan masalah kesehatan, baik bagi kesehatan hewan maupun manusia, serta dapat menimbulkan resistensi terhadap antibiotik. ABSTRACT Title: Broiler Chicken Meat Sold at Purwokerto's Market Has Antibiotic Residues and Escherichia Coli That Produces EsblBackground: Poultry, of which broiler chickens are one example, is a food source with a relatively high consumption rate.Feed additives and antibiotic growth promoters (AGP) in the form of antibiotics in the ration are given to increase broilers’ growth and endurance to meet the high demand for them. It is important to note that unwise antibiotic use results in the buildup of antibiotic residues and resistance to the Extended Spectrum Beta-lactamase(ESBL)produced by Escherichia coli bacterium.Method: To collect primary data for this descriptive study, the screening test results were employed as a starting point. Next, the information was presented in the form of tables and figures.Result: According to this study, broiler chickens had a tetracycline residue of 7.14 percent, with an inhibitory zone mean of 12.13 mm, and 71.4 percent of ESBL-producing E. coli.Conclusion:According to the study, broiler chicken meat with tetracycline residue is still safe to consume. E. coli, which is known to develop an antibiotic-resistant strain of E. coli ESBL) can cause serious health problems in both humans and animals.

ABSTRACT Escherichia coli clonal group A isolates cause infections in people. We investigated 158 phylogroup D E. coli isolates from animals, meat, and humans. Twenty-five of these isolates were of clonal group A, and 15 isolates were shown to cause infection in a mouse urinary tract infection (UTI) model. We conclude that clonal group A isolates are found in both broiler chickens and broiler chicken meat and may cause UTI in humans.

Abstract This study aims to determine the effect of lactic acid bacteria supplement from sewge force feeding fish to the LDL content of broiler chicken blood. The research samples are 40 of 1 day old broiler chicken from PT. Multi Breeder Adiram, which were divided into 4 treatments, were taken randomly and maintined for 42 days. Data were analyzed by analysis of variance using a completely randomized design unidirectional pattern, followed by a test of Duncan's Multiple Range Test (DMRT).Probiotic Lactic Acid Bacteria Isolates treatment (BAL) were used in this study is the bacterium Streptococcus thermopillus in the form of freeze drying from the Laboratory of Nutritional Biochemistry, Faculty of Animal Husbandry, UGM. I as a control treatment (without BAL) Treatment II BAL cell count was 106 CFU / ml., The third treatment is the number of BAL Cells are 107CFU / ml. , IV treatment BAL cell count was 108 CFU /ml. The results showed that there is no significant effect of BAL isolate addition on the LDL level of the broiler chicken blood. Keywords: lactic acid bacteria, LDL, freeze drying

Abstract Chicken meat is a source of animal protein that is very popular with all people, especially in Indonesia. The meat also contains nutrients that are good for the body. However, broiler meat also has a weakness because it is a food that is easily damaged; most of the damage is caused by poor handling, thus providing opportunities for growth microbes. Broiler meat is easily contaminated by various microorganisms that are in the environment. This study aimed to determine the level of microbial contamination in broiler chicken meat in the Ambon city market. The study used a random sampling technique and used 12 samples from the market in Ambon city. Parameters of microbiologic status observed total plate count and E. coli. Data were described descriptively. The result showed that total plate count (TPC) and E-coli was not more than the standard. The microbial contamination of broiler chicken meat markets in Ambon city was not in excess with the National Standardization Agency (NSA, 2009). Thus, broiler meat is safe for consumption.
