ABSTRACTQuality improvement  of sale banana ambon curup was necessary to increase chemical and organoleptics quality and consumer preference. The  purpose  of  this  study  was  to  determine  the  effect  of  variations  in  theconcentration   of   red   ginger   juice   and   the   length   of   immersion   on  chemical   quality, microbiology and organoleptic wet sale of banana ambon curup. By using (RAL) 2 factorial randomized design, the concentration of red ginger juice was 5%, 10% and 15% with a time of immersion for 20 and 10 minutes. The analytical method used was ANOVA. The results of the study found that sucrose levels were 37.56% to 57.54 %, the water content was 36.66% and 38.33%, ash content was 1.47 % to 1.87 %.  The  panelists  preferred  the  average  value  of  the  whole (texture, aroma, and tate)  was  found  in  the  P1T1 sample  with  a  treatment  of  red  ginger  concentration  of  0.05%  and  immersion  time  for  10 minut

This study aims to determine the quality of jackfruit seed juice drinks with the addition of red ginger and to determine the level of acceptance of panelists on jackfruit seed juice drinks. Parameters observed included water content, protein content, carbohydrate content and organoleptic including color, taste, aroma and texture. This study used a Completely Randomized Design (CRD) consisting of one factor, namely the concentration of red ginger juice with four treatments, namely: 0%, 6%, 12%, 18%, each repeated three times. The results showed that jackfruit seed juice drink with the addition of 18% red ginger was the best treatment from the results of organoleptic tests. The proximate test results showed that the best treatment was 3.13% water content in 12% ginger treatment, 2.17% protein in 18% red ginger treatment and 95.61 carbohydrate in 18% red ginger treatment.

The residue of paraquat herbicides may cause human health problems. Paraquat causes the testosterone hormone to decline. Testosterone hormone affects aggressive and sexual behavior. It is caused by free radicals in the body. Free radicals can be non-reactive if in the body there are antioxidants. Red ginger could be used as an antioxidant because it has active phenolic compounds, such as arginine, gingerol, shogaol, zingerone, gingerdiol, and zingiber. Ginger could increase serum testosterone levels. The purpose of this research is to know the effect of red ginger ethanol extract on aggressiveness and libido of male mice induced by paraquat herbicide. This study used a Completely Randomized Design (RAL) consisting of six treatment groups with four replications each. Group P1 as control (aqua dest), P2 (paraquat at dose 20 mg/kg BM), P3, P4, P5 (paraquat with dose 20 mg/kg BM and red ginger extract at 200 mg/kg BM, 400 mg/kg BM, 600 mg/kg BM) and P6 (red ginger extract at 600mg/kg BM). Paraquat is given 2 times a week for 21 days and the red ginger extract is given daily for 35 days. The result of analysis with One-way ANOVA and continued BNT at 5% showed that giving of red ginger ethanol extract can increase aggressive behavior and libido of male mice induced paraquat herbicide.

This study aims to examine the effect of garlic (Allium sativum Linn) and red ginger (Zingiber officinale var rubra) extract on the growth of broiler chickens were infected by Escherichia coli. The design used in this study was a complete randomized design (CRD) with 6 treatments and 3 replications. Treatment consists of P0A = Control without infection; P0B = Control + E. coli infection; P1 = Infection E. coli + tetracycline antibiotics 0.05%; P2 = Infection E. coli + garlic extract (Allium sativum Linn) (1%); P3 = Infection E. coli + red ginger extract (Zingiber officinale var rubra) (1%); P4 = Infection E. coli + garlic (Allium sativum Linn) and red ginger (Zingiber officinale var rubra) extract (1%). The results showed that the effect of garlic and red ginger gave significant influence (P <0,05) to growth of broiler were infected by Escherichia coli. The combination of garlic (Allium sativum Linn) and red ginger (Zingiber officinale var rubra) extract has the highest influence of other activities. It was concluded that giving of garlic and red ginger extract give influence to growth of broiler were infected by Escherichia coli and can be used as alternative antibiotic.

ABSTRACTThis study aimed to determine the effect of adding ginger juice on the organoleptic and chemical values of soy fiber dodol products. This study used a completely randomized design consisting of the addition of ginger extract (F), namely treatment F0 (0%), F1 (1%), F2 (2%), F3 (3%), and F4 (4%). Data were analyzed using Analysis of Variance and continued with Duncan's Multiple Range Test (DMRT) at a 95% confidence level (α=0.05). The addition of ginger juice had a very significant effect on the parameters of aroma, texture, color, and significantly different on taste. Based on the results of the organoleptic assessment, the most preferred treatment was F2 treatment (addition of 2% ginger juice) with color, aroma, and texture rating scores reached 3.89 (like), 3.80 (like), and 3.56 (like), respectively. The chemical analysis results show that the selected treatment had 17.53% water, 1.60% ash, 12.25% protein, 31.37% fat, 10.52% fiber, and 9.79% crude fiber. Among the five parameters, parameters of water, fat, protein, and crude fiber contents met the national standard but the ash content did not.Keywords: lunkhead, soybean dregs, gingerABSTRAKPenelitian ini bertujuan untuk menentukan pengaruh penambahan sari jahe terhadap nilai organoleptik dan nilai kimia produk dodol serat kedelai. Penelitian ini menggunakan Rancangan Acak Lengkap yang terdiri atas penambahan sari jahe (F) yaitu perlakuan F0 (0%), F1 (1%), F2 (2%), F3 (3%) dan F4 (4%). Data dianalisis menggunakan Analisis ragam (Analysis of Varian) dan dilanjutkan dengan uji Duncan’s Multiple Range Test (DMRT) pada taraf kepercayaan 95% (α=0,05). Penambahan sari jahe berpengaruh sangat nyata terhadap parameter aroma, tekstur, warna dan berbeda nyata pada rasa. Berdasarkan hasil penilaian organoleptik diperoleh perlakuan terpilih yaitu perlakuan F2 (penambahan sari jahe 2%) dengan skor penilaian warna 3,89 (suka) aroma 3,80 (suka), tekstur 3,56 (suka).dengan nilai analisis kimia meliputi analisis kadar air 17,53%, kadar abu 1,60%, kadar protein 12,25%, dan kadar lemak 31,37%, kadar serat 10,52%, serat kasar 9,79%. dari 5 parameter ada 4 parameter kadar air, kadar lemak, kadar protein dan kadar serat kasar telah memenuhi SNI dan 1 parameter yaitu kadar abu tidak sesuai standar SNI.Kata kunci: dodol, ampas kedelai, jahe

The purpose of this research was to obtain the best addition of red ginger powder in making herbal tea of avocado leaf. This research used a Completely Randomized Design with five treatments and three replications. The treatments used were BJ1 (without addition of red ginger powder), BJ2 (addition of red ginger powder 2%), BJ3 (addition of red ginger powder 4%), BJ4 (addition of red ginger powder 6%), and BJ5 (addition of red ginger powder 8%). The result showed that addition of red ginger powder significantly effected water content, ash content, antioxidant activity (IC50), polyphenol content,  and sensory assesment descriptively and hedonically and also overall assesment. The treatment chosen from the result was BJ5 (addition of red ginger powder 8%).  This treatment had water content 4.43%, ash content 5.57%, and antioxidant activity (IC50) 44.63 µg/mL. The best treatment on descriptive test of herbal tea had tawny colour, no rotten flavour, and rather bitter and spicy.  The result of hedonic test showed that colour, flavour, and taste of herbal tea were preferred by panelists and also assessment overall preferred by panelists.

Abstract. This study aims to determine the effect of red ginger extract (Zingiber Officinale R) on the pH value and cooking losses. The study was conducted in January 2018 at the Laboratory of Animal Product Processing Technology, Faculty of Agriculture and Animal Husbandry using a factorial Completely Randomized Design (RAL), where factor A (level of red ginger extract and papaya fruit skin) 0%, 25%, 50%, 75% were interacted with a factor B (soaking time) of 5 minutes, 10 minutes and 15 minutes which was repeated three times. The results showed no significant effect (P> 0.05) on the value of cooking losses. The treatment of using red ginger extract (Zingiber Officinale R) as a natural enzyme that had no significant effect (P> 0.05) on the pH value. In factor A (extract level) to the pH value, this can be seen from the average effect of A is J0 = 6.24%, J1 = 6.28%, J2 = 6.26% and J3 = 6.40%. In factor B (duration of immersion) does not affect the pH value that can be seen from the average effect of B is W1 = 6.14, W2 = 6.41 and W3 = 6.34. The conclusion of this study was that the administration of red ginger extract in cooking losses could decrease in the treatment of P3 = 30.46% and the pH did not significantly affect the immersion long red ginger extract.Keywords: Red Ginger Extract, Natural Enzymes, pH Value and Shrinkage of Cook.

Paraquat is a toxic compound that disrupts biochemical processes in the body, cell death, and multi-organ failure. The liver and lung are the target organ of paraquat toxicity. The body needs antioxidants to counteract free radicals. Red ginger (Zingiber officinale Roxb. Var rubrum) is a spice that contains antioxidants. This study was conducted to determine the effect of ethanol extract of red ginger (Zingiber officinale Roxb. Var rubrum) on liver and lung histology male mice induced by paraquat. The research used completely randomized design and use of 6 treatment groups, i.e. control group (given distilled water and standard feed), PQ group (induced by paraquat 20 mg/kg per BW), group P1 (given paraquat and ethanol extracts of red ginger 200 mg/kg per BW), group P2 (given paraquat and ethanol extract of red ginger 400 mg/kg per BW), group P3 (given paraquat and ethanol extract of red ginger 600 mg/kg per BW), group P4 (given ethanol extract of red ginger extract 600 mg/kg per BW). The data obtained will be tested using One Way ANOVA and continued by Least Significant Difference (LSD) with a 95% confidence level. The results showed ethanol extract of red ginger effective against liver and lung histology male mice induced by paraquat. The results also showed ethanol extract of red ginger with a dose of 400 mg/kg per BW is effective in protecting the liver and lung from damage caused induced by paraquat.

This study aims to determine the effect of the concentration and duration of soaking of Sodium Metabisulfite on the quality of potato chips. The study was conducted with a factorial Complete Randomized Design (CRD), which consisted of two treatment factors. The first factor concentration of Sodium Metabisulfite with the code N, consists of 4 levels, namely: N0 = 0% (control), N1 = 1%, N2 = 2% and N3 = 3%. The second factor of the immersion time with the code L, consists of 4 levels, namely: L0 = 0 minutes (control), L1 = 30 minutes, L2 = 60 minutes and L3 = 90 minutes. Data analysis was performed with LSR (Least Significant Ranges) test.The results showed that the concentration of Sodium Metabisulfite had a significantly different effect (P <0.01) on water content, ash content, protein content, and fat content. The higher the concentration of Sodium Metabisulfite, the fat content decreases, while the water content, ash content, and protein content increase. Soaking time gave a very significant effect (P <0.01) on the water content, ash content, protein content, and fat content. The longer the immersion time, the higher water content, and fat content while protein content, fat content content decrease. The interaction between Sodium Metabisulfite Concentration and soaking time had a very significant effect (P <0.01) on ash content.

Abstract As a result of its diverse culture and nature, Indonesia is rich in traditional cuisine. In Aceh province, located in the western part of Indonesia, there is a special condiment known as asam sunti, made of fermented bilimbi (Averrhoa bilimbi L.). Asam sunti is used as a spice to give a sour taste and specific aroma in Acehnese cuisine. Although asam sunti is widely used by the people in Aceh, but until now there is no standard quality that shows the quality of asam sunti. The quality of a sam sunti products that existing on the market is very diverse, especially in colour and texture. This study aims to analyse the chemical quality of asam sunti obtained from several markets in the city of Banda Aceh. Samples were obtained from 5 markets, namely Gampong Baroe, Peunayong, Seutui, Ulee Kareng and Gampong Peuniti Market. Chemical parameters analysed were moisture content, ash content, salt content and titrated acid content. The result shows that asam sunti in Banda Aceh city market has diverse chemical characteristic with moisture content range 21.38%-33.8% with average 29.48%, ash content 0.13%-0.45% with average 0.27%, salt content 6.11%-18.34% with average 8.15% and titrated acid content 7.5%-14.5% with average 11%. This chemical data needs to be correlated in further research with the level of consumer preference through descriptive and hedonic sensory tests so that later a complete asam sunti quality character can be obtained and can be made into a standard that is practically and scientifically acceptable.

Breadfruit (Artocarpus altilis) is one of the main fruit producing plants of the Moraceae family. This plant has long been cultivated by the people of Indonesia and even in several countries in the Pacific region such as Fiji, Tahiti, the Samoan Islands, and Hawaii, breadfruit has been used as a traditional staple food. The consumption of breadfruit is generally still limited as a snack and a vegetable and as an alternative food source, breadfruit is proven to have a high nutritional content. The purpose of this study was to determine the effect of substitution of wheat flour with breadfruit (Artocarpus altilis) on the chemical quality of semprong cake or egg roll. The treatment design in this research on the substitution of wheat flour with breadfruit flour (Artocarpus altilis) on the chemical quality of semprong cakes, namely: P0 (100 grams of wheat flour), P1 (75 grams of wheat flour + 25 grams of breadfruit flour), P2 (50 grams of wheat flour + 50 grams of breadfruit flour), P3 (75 grams of wheat flour + 25 grams of breadfruit flour), and P4 (100 grams of breadfruit flour). The experimental design used was a randomized randomized design (CRD) with 5 treatments and 4 replications. The results of the proximate analysis test included moisture, ash, fat, protein and carbohydrate content, with an average value of 3.50% water content, 1.07% ash content, 26.97% fat content, 4.21% protein content, and 63.88% carbohydrate content.
