Purple sweet potato is one of the agricultural products that has several advantages such as attractive color, high content of antioxidant, fiber and carbohydrate compounds and has a low glycemic index value. However, similar to the other agricultural products, the availability of purple sweet potatoes is seasonal, perishable, moldy and rotten. Proper processing with equipment or simple expertise can increase the economic value of purple sweet potato, so that it can be done by any group of people from either upper, middle or bottom. The purpose of this community service activities was to provide the technical guidance on processing the purple sweet potato into food products, namely noodles and sponge to open new business opportunities for group of housewives in the area of ​​community service partners namely Kampung Ladang Bambu, Medan Tuntungan. The expected outcome of this community service activity is the formation of a new business by a group of housewives to be able to increase the community income in Ladang Bambu Village, Medan Tuntungan. OPTIMIZING THE SWEET POTATOES’ POTENTIAL IN SINDANGKARYA VILLAGE, MENES SUB-DISTRICT, PANDEGLANG REGENCY. Sweet potato is one of the agricultural commodities that is suitable for cultivation in Sindangkarya village, Pandeglang Regency. Each year, Sindangkarya village produces 350 tonnes of sweet potato. However, the low price of sweet potato causes small income for the residents. One of the efforts to increase its selling value is processing sweet potatoes into various products such as sweet potato cake or various other processed products. The problem founded is that people do not have the knowledge and skills of sweet potatoes utilization. The purpose of this community service activity is to transfer knowledge and train the community skills in processing sweet potatoes so they will have a higher selling value and attract the buyers. This article concludes that Sindangkarya Village has a business potential that involves the participants, PKK Cadres, Posyandu Cadres and Youth Organization developing creative ideas to make valuable products and beneficial to the lives of Sindangkarya residents and can reduce unemployment.

Hargomulyo Village is one of the villages in the Kokap Kulonprogo District of Yogyakarta which has high agricultural potential. Agricultural management efforts are mostly carried out by women. The Mekar Mandiri Women Farmers Group is a forum consisting of a group of farmer wives or female farmers in Hargomulyo Village who have activities in the agricultural sector in utilizing agricultural resources to work together to increase farm productivity and the welfare of its members. In carrying out its activities, the Mekar Mandiri Farmer Group has several obstacles: (1) Limited insight and skills in developing the potential of agricultural products into processed products with higher economic value; (2) Limited production equipment capable of processing agricultural products into processed products; (3) The low involvement of young people in the development of agricultural products. The solutions offered through these Community Service activities include: (1) training to broaden the horizons and increase the capacity of the community in managing local agricultural products-based processed products, (2) Facilitating the procurement of business equipment, (3) Assisting in applying for home industry permits and trademarks, and (4) Assistance in the manufacture of packaging designs for agricultural snack products. <p><em>Higher education student is known as agent of change that can play a significant role on the transformation of the social life of a society. However, the idealism of students is often hampered by the availability of funds. On the other hand, someone who works as a lecturer at a higher education has a responsibility to do the three pillars of higher education (Tri Dharma Perguruan Tinggi), one of which is to carry out community service activities. To carry out the community service, a lecturer has many opportunities to obtain funds from various funding bodies. This article discusses the community service activity that was done by implementing a synergy between a group of lecturers and students who are the members of the Food Science Technology Student Association (HIMAGHITA) Universitas Sebelas Maret in the Village of Koripan, Matesih Sub-district, Karanganyar Regency. The purpose of the community service activity is to introduce the processing technology of purple sweet potato and corn and to increase the knowledge of food industry management in the group of women farmers in the region. The community service activity included the introduction of flour-making technology, processing technology of purple sweet potato cookies and corn brownies. Based on the results of monitoring and evaluation, it can be concluded that the synergy of lecturers and students can effectively support the community service activity and the introduction of purple sweet potato and corn processing technology can be well-carried out. In addition, the knowledge of farmer women's groups on the management of home-scale food industry increased after this activity was carried out.</em></p>

Coffee Powder Processing as a Variation of Processed Products of Community-Owned Products in Karang Rejo Village, Ulubelu Subdistrict, Tanggamus Regency, Lampung ProvinceAbstract. Karang Rejo is a village in Ulubelu Subdistrict, Tanggamus Regency, Lampung Province. In this community service activity, we introduce the processing of coffee powder as a variety of processed agricultural products from the community, starting from what materials are used, how to manufacture to produce agricultural products that can be of economic value - considering that the people in Karang Rejo Village only use coffee grounds to be used as drinks. Therefore, the purpose of this community service is to share knowledge on how to process coffee into processed coffee crackers by observing and counseling the processing of coffee crackers. Evaluation of the increase in participant knowledge was carried out by pre-test before counseling on how to process and post-test after counseling. Processing practices are carried out when counseling is carried out. The results of the activity showed that the enthusiasm of the citizens, especially the PKK mothers, and showed an increase in basic knowledge about the processing of coffee crackers, the benefits, and ways of making coffee-based crackers. The service of processing coffee grounds into coffee crackers is considered auspicious and beneficial for improving the economy in Karang Rejo Village.Keywords: Coffee powder, coffee crackers, community development, karang rejo village.Abstrak. Karang Rejo adalah salah satu Pekon yang berada di Kecamatan Ulubelu Kabupaten Tanggamus Provinsi Lampung. Kegiatan pengabdian pada masyarakat ini mengenalkan pengolahan bubuk kopi sebagai variasi produk olahan hasil bumi masyarakat mulai bahan apa saja yang digunakan, cara pembuatan hingga menjadikan hasil bumi yang dapat bernilai ekonomis. Mengingat bahwa masyarakat di Pekon Karang Rejo ini  hanya memanfaatkan bubuk kopi untuk dijadikan minuman. Tujuan pengabdian kepada masyarakat ini adalah untuk berbagi ilmu mengenai cara pengolahan kopi menjadi olahan kerupuk kopi dengan cara observasi serta penyuluhan pengolahan kerupuk kopi tersebut. Evaluasi peningkatan penge-tahuan peserta dilakukan dengan pre-test sebelum dilakukan penyuluhan cara pengolahan danpost-test setelah dilakukan penyuluhan. Praktik pengolahan dilakukan pada saat penyuluhan dilaksanakan. Hasil kegiatan menunjukkan bahwa adanya antusias warga khususnya para ibu PKK dan adanya peningkatan pengetahuan dasar mengenai olahan kerupuk kopi, manfaat, dan cara pembuatan kerupuk berbahan dasar kopi. Kegiatan pengabdian pengolahan bubuk kopi menjadi kerupuk kopi tergolong berhasil dan bermanfaat untuk peningkatan perekonomian di Pekon Karang Rejo.Kata Kunci: Bubuk kopi, kerupuk kopi, pengabdian, pekon karang rejo.

Takalar District is one of the areas in South Sulawesi with its superior product that is sweet potato. Sweet potato production in this area is quite abundant but has not been utilized properly. This activity aimed to utilize the abundant local potential in making various cakes to minimize the use of wheat flour. The method used was counseling and training. The activity was carried out in Tala, Sombalabella Village, Pattalassang Subdistrict, Takalar District. Participants amount are 25 peoples consisting of cake traders and housewives who are not economically productive. The activity was carried out with two sessions, that is material present and practice. Based on the results of participant's questionnaires, there was an increase in the knowledge of the participants up to 80, the participants already knew how to utilize the potential of sweet potatoes and pumpkin in their area to have higher economic value. In addition there was an increase in the skills of the participants up to 92 in processing sweet potatoes and pumpkin into a variety of cakes such as donuts, panada, and fried bread as well as participants skilled in packaging products with vacuum and non-vacuum plastic packaging. Community service activities from the economic side can increase people's income, and from the health side can add the nutritional value of the community from that various cakes produced.

The purpose of this study was to obtain maltodextrin with the appropriate concentration of purple sweet potato anthocyanin extract to produce the natural dye powder preparations with the best physical and chemical characteristics. The research method used is Experimental Method (Experimental Method) by using Group Random Design (GRD). The experiment consisted of three treatments and each was repeated four times, with the treatment obtained in cassava purple with a concentration of 35.4 mg / 100gr anthocyanin extract.  The  next  stage  was  to  determine  the  best  concentration  of  maltodextrin Consisting of four treatments and each repeated three times. The anthocyanin pigment powder of purple sweet potato with various treatments of maltodextrin concentration addition gave a significant effect on the soluble time, and yield, but did not gave a significant effect on total of anthocyanin, hygroscopicity and solubility. The treatment 10% of maltodextrin concentration addition resulted in best characteristic with total anthocyanin of 48.43 mg / L, color intensity L * (brightness) of 37.86, a * (redness) of 43.66, b * (yellow) of 21.68, water content of 5.56%, hygroscopicity of 11.62%, solubility of  97.13%, soluble time of 159 seconds, pH value of 3.04, and yield of 31.38%. The resulting anthocyanin powder shows that the anthocyanin pigment powder of purple sweet potato with the maltodextrin concentration addition has the potential to serve as a natural dye powder for food and beverages.

The aim of this study was to optimize gluten free pasta formula made from purple sweet potato puree and mung bean flour. Aplication of a mixture design allowed to find the optimal composition to achieve the desirable characteristic. The results showed that the optimal formula was mixture of 45.25% purple sweet potato puree and 51.75% mung bean flour. The characteristics of the chosen formula were springiness of 2.29 mm, 0.38 cohesiveness, cooking loss 17.62%,333.48 ͼHue, Ie   20.59%, and 42.42 mg/L anthocyanin content. Microscopic structure showed that cooked pasta with purple sweet potato puree composition below 50% in the formula had a solid texture appearance. Keywords: Pasta, purple sweet potatoes, gluten free food, formulation optimization ABSTRAKPenelitian bertujuan untuk mengoptimasi formula pasta bebas gluten berbahan dasar puree ubi jalar ungu dan tepung kacang hijau. Aplikasi mixture design dalam optimasi formula dapat menghasilkan formula yang optimal dengan karakteristik produk sesuai dengan yang diinginkan. Hasil penelitian menunjukkan bahwa komposisi optimal puree ubi jalar ungu dengan tepung kacang hijau dalam formula adalah 45,25% puree ubi jalar ungu dan 51,75% tepung kacang hijau. Pada komposisi tersebut dihasilkan pasta ubi jalar ungu dengan karakteristik yaitu kekenyalan 2,29 mm, cohesiveness 0,38, KKP 17,62%, warna 333,48, Ie   20,59%, dan kandungan antosianin 42,42 mg/L. Dari segi mikroskopik, pasta ubi jalar ungu matang dengan rasio puree ubi jalar ungu dengan formula di bawah 50% sudah menunjukkan adanya struktur yang kompak.Kata kunci: Pasta, ubi jalar ungu, pangan bebas gluten, optimasi formula

Retnati, Andriani MAM, Fauza G. 2009. The influence of addition of various sweet potatoes (Ipomea batatas) extract to total count of cells and antioxidant activity in yogurt. Biofarmasi 7: 68-76. The aim of this research was to determine the influence of addition of various sweet potatoes extract to the total count of cells and the antioxidant activity in yogurt. Yogurt was made from fresh milk, skim milk, white sweet potato, orange sweet potato, purple sweet potato, and pure culture of Streptococcus thermophilus 0040 and Lactobacillus bulgaricus 0041 in straight MRS agar. Fresh milk, skim milk powder (5%, b/v), and sweet potato extract (10%, v/v) was pasteurized at 90oC for 15 minutes, cooled to the temperature between 40-45oC, inoculated with 2.5% S. thermophilus and L. bulgaricus with a proportion of 1.4:1, and then incubated at a temperature of 40oC for 15 hours. Yogurt without an addition of sweet potato extract was used as control. The parameters measured in this experiment were the total count of cells with TPC (Total Plate Count) method and the antioxidant activity with DPPH (2,2- diphenyl-1-picrylhydrazyl) method. Samples were taken at one hour interval to examine the total count of cells, while the antioxidant activity was collected at three hours interval. The result of each analysis was plotted into graphics which describing the relation of total bacteria and antioxidant activity with fermentation time. ANOVA was employed to analyze the data. If there was a significant difference, it should be followed by Duncan Multiple Range Test (DMRT) at a significance level α=0.05. The result of this research showed that the addition of various sweet potatoes extracts increased the total count of cells and the antioxidant activity in yogurt. The total count of cells showed no significant different for each sample, it meant that the different colors in sweet potato did not influence the total count of cells. However, yogurt with orange and purple sweet potato extract addition had a significant difference on the antioxidant activity with control and yogurt with white sweet potato extract. In conclusion, the difference colors in sweet potato influenced in the antioxidant activity in yogurt significantly. Sweet potato is potential for milk substitute in yogurt production due to oligosaccharide content and antioxidant activity.

Tapai is one of the typical Indonesian fermented products. This research utilized Lactobacillus plantarum 1 RN2-53 and natural dyes made from plants in the production of cassava tapai. The objectives of this research were to improve the quality of probiotic cassava tapai and to obtain the chemical, microbiological and sensory characteristics of the cassava tapai. Natural dyes used were purple sweet potato extract, red dragon fruit extract and narrow-leaf pleomele extract. The results showed that cassava tapai made with the addition of Lactobacillus plantarum 1 RN2-53 and the addition of natural dyes from plants had different chemical and microbiological characteristics. Tapai made with the addition of red dragon fruit extract generally had a lower pH value and a higher total titrated acid compared to tapai made with the addition of purple sweet potato extract and narrow-leaf pleomele extract, but the alcohol content of tapai made with the addition of purple sweet potatoes extract was higher than the others. The number of lactic acid bacteria was around 109 and had met the probiotic food criteria.
