Papaya leaves have long been known as leaves that contain meat tenderizers. Papaya leaves can soften the meat because it contains papain which is one of the protease enzymes. In the fresh papaya leaves there is sap which contains 5.3% papain. Meat tenderizer in powder form is more practical and more durable. One of the papain enzyme powder drying methods that is considered appropriate to be applied in the ginger powder production process is the foam mat drying method. This study aims to examine the foam drying process on papain enzyme activity using tween 80 (foam agent) and maltodextrin as filler to help maintain foam consistency. The drying process was carried out by varying the drying temperature (50oC, 55oC, 60oC, 65oC, and 75oC) and drying time (2 hours, 3 hours, 4 hours, 5 hours and 6 hours). The results of the analysis showed that the highest enzyme activity reached 408.7 U/mL for drying at an operating temperature of 60oC with a time of 2 hours..

The foam mat drying is one of drying methods applied to produce powdered food in the food industry. Foam mat drying, which is better than other methods of drying in terms of drying time and cost, is used to convert powder form of various foods such as fruit, milk and seafood. The formation of the foam structure is provided with foaming agents and/or stabilizers. The surface area and drying efficiency of food product increase with conversion to foam structure. In this review, knowledge about the process conditions applied during the process of converting the food into powder form by foam drying method, the obtained product properties and the applicability of foam mat drying to various foods are presented.

The making of instant coffee with foam drying methods is one of the product inovation effort which it can produce commercially by small industry and also home industry. In this research, added coconut oil, dextrin, and tween 80 are added to the coffee for optimalized that drying process. Coconut oil are perhaps as heat conductor so that can increasing drying rate. Tween (Polyoxyethylene 20 Sorbitane Monooleate) and dextrin interacted each other tween 80 act as emulsifier and foam marker, dextrin act as foam stabilizer during drying process. Coffee extract have been added with cooconut oil, tween 80 and dextrin, they are mixed together toproduced  foam and then will be dried in cabinet drier. The research method used is the making an instant coffee in three differents coconut oil concentration (0.01-1 %w/w), three differents tween 80 concentration (5-15%w/w), and three differents dextrin concentration (0-20%w/w). The research results showed that added of coconut oil will be increased rate of drying. Tween 80 can increase rate of drying, but dextrin can make case hardening that decrease rate of drying. Product of instant coffee have water content and caffein content in the range of SNI, which are 2.281-3.962% of water and 2.825-3.275% of caffein. Pada penelitian ini ditambahkan minyak kelapa, dekstrin dan tween 80 pada kopi untuk mengoptimalkan proses perngeringan tersebut. Minyak kelapa diharapkan dapat berperan sebagai penghantar panas sehingga dapat mempercepat pengeringan. Tween (Polyoxyethylene 20 Sorbitane Monooleate) dan dekestrin saling berinteraksi, dimana tween 80 berfungsi sebagai emulsifier dan pembentuk busa sedangkan dekstrin berperan sebagai penstabil busa selama proses pengeringan. Ekstrak kopi ditambahkan pada minyak kelapa, tween 80 dan de/estrin, dan diaduk hingga terbentuk busa untuk kemudian dioleskan pada tray-trayyang akhirnya akan mengalami proses pengeringan di dalam tray drier. Konsentrasi minyak kelapa divariasikan pada 0,01-1%b/b, tween 80 pada 5-15% b/b, dan dekstrin pada 10-20% b/b. Hasil penelitian menunjukkan bahwapenambahan minyak kelapa akan meningkatkan laju pengeringan. Penambahan dekstrin meningkatkan laju pengeringan sedangkan penambahan tween 80 akan menyebabkan case hardening dan menurunkan laju pengeringan. Kopi instan yang dihasilkan telah memenuhi standar SNI dengan kadar air 2,281- 3,962% dan kadar kafein 2,825-3,275% serta memiliki aroma, rasa dan tekstur yang tidak berbeda jauh dari kopi instan dipasaran.Kata Kunci: Kopi Instan, Pengering Busa, Tween 80, Dekstrin, Minyak Kelapa

Strawberry is the most consumed berry fruit worldwide due to its unique aroma and flavor. Drying fruits to produce a powder represents one of the possible conservation methods to extend their shelf-life. The aim of the present study was to compare the influence of freezing and different drying methods on the volatile profile of strawberry using the HS-SPME/GC–MS method, in addition to analysis of strawberry jam volatiles. A total of 165 compounds were identified, accounting for 85.03–96.88% of the total volatile compositions. Results and PCA showed that freezing and each drying process affected the volatile profile in a different way, and the most remarkable representative differential volatiles were ethyl hexanoate, hexyl acetate, (E)-2-hexenyl acetate, mesifurane, (E)-nerolidol, γ-decalactone, 1-hexanol, and acetoin. Shade air-dried, frozen, freeze-dried, and oven-dried 45 °C samples retained more of the fruity and sweet aromas of strawberry, representing more than 68% of the total aroma intensity according to the literature. In contrast, the microwave-drying method showed drastic loss of fruity esters. Strawberry jams demonstrated complete destruction of esters and alcohols in most jams, while terpenes were significantly increased. These findings help better understand the aroma of strawberry and provide a guide for the effects of drying, freezing, and jam processing.

In this study, the impacts of two different pear cultivars, “Conference” and “Alexander Lucas”, on the kinetics and the final quality of samples dried by convection (CD) and microwave-convection (MCD) methods, were investigated. The quality of dried material was evaluated by the analysis of water activity, porosity, color, acoustic emission (AE) and mechanical and sensory properties. The required drying time to obtain 0.2 kg H2O/kg dry solid (d.s.) was longer for “Conference” than “Alexander Lucas” and was 20 min by CD and 5 min by MCD. The pear cultivar, in conjunction with the drying method (CD or MCD), affected the number of AE events and the work of breaking. The CD pear of the “Conference” cultivar was characterized by higher force, higher breaking work and stronger AE relative to the CD pear of the “Alexander Lucas” cultivar. There were no differences in taste or overall quality, but the hardness was higher for the CD “Conference” pear. A principal component analysis showed that panelists preferred dried fruit with good taste and overall quality but lower hardness. A positive correlation was found between the number of acoustic events and sensory hardness; thus, an acoustic method can be useful for effectively evaluating the texture of dried pears. These results show that the dried pear slices that generated fewer AE events upon breaking were perceived as better by the panelists.

При производстве табачного сырья важную роль играет сокращение продолжительности сушки табачных листьев. Одним из способов интенсификации сушки свежеубранных табачных листьев является прием прорезания средней жилки (ПСЖ) листьев вдоль волокон. По результатам исследований 2019–2020 гг. была создана база данных табачного сырья, полученного при естественном способе сушки с применением приема ПСЖ, которая может служить информационным материалом для производителей табака. Проведена оптимизация процесса сушки табачного листа ПСЖ по показателям качества табачного сырья для расширенного диапазона сортотипов табака. Объектом исследований были сорта отечественной селекции, включенные в Государственный реестр селекционных достижений, допущенные к использованию: Самсун 85, Вирджиния 202, Юбилейный новый 142, Трапезонд 92, Трапезонд 204, Дюбек 33, Американ 287 и Крупнолистный Ильский (находится в стадии государственных испытаний). Критерием оценки эффективности применения приема ПСЖ на исследованных сортах табака являлся совокупный сравнительный анализ следующих показателей контрольных (без ПСЖ листа) и опытных образцов: уровень интенсификации сушки, показатели товарного качества, технологических свойств и химического состава полученного сырья. Установлено, что ПСЖ позволяет интенсифицировать процесс сушки в 1,3–2,46 раза в зависимости от сорта табака и положительно влияет на технологические свойства сырья, у большинства сортов увеличивается выход волокна и сохраняются объемно-упругие свойства. Динамика сушки оказывает влияние на изменение химического состава сырья. В процессе сушки за счет гидролизации солей никотина и его освобождения путем окисления кислородом воздуха уровень никотина в ряде образцов снижается в пределах 10–30%. Чем выше содержание никотина, тем выше крепость табака, грубее его вкус. Изменения углеводно-белкового соотношения в сторону повышения углеводов улучшают вкусовые характеристики сырья. По каждому исследованному сорту не удалось выявить закономерной зависимости его структуры и характера процесса сушки при ПСЖ с преобразованиями химического состава сырья. На основе анализа технологических и качественных показателей табачного сырья, представленных в разработанной базе данных по интенсификации сушки различных сортов табака с применением приема ПСЖ табачных листьев, можно планировать выбор оптимального способа сушки для каждого сорта табака, позволяющего повысить эффективность использования сырья и улучшить его качественные характеристики. In the production of tobacco raw materials, reducing the drying time of tobacco leaves plays an important role. One of the ways to intensify the drying of freshly harvested tobacco leaves is the method of cutting the middle vein (CMV) of the leaves along the fibers. Based on the results of research in 2019–2020, a database of tobacco raw materials obtained by a natural drying method using CMV reception was created, which can serve as information material for tobacco producers. The optimization of the process of drying the CMV tobacco leaf according to the quality indicators of tobacco raw materials for an expanded range of tobacco variety types was carried out. The object of research was the varieties of domestic selection included in the State Register of Breeding Achievements, approved for use: Samsun 85, Virginia 202, Yubileyny novy 142, Trapezond 92, Trapezond 204, Dubek 33, American 287 and Krupnolistnyy Ilskiy (under state testing). The criterion for evaluating the effectiveness of the use of CMV intake on the studied tobacco varieties was a cumulative comparative analysis of the following indicators of control (without CMV sheet) and experimental samples: the level of drying intensification, indicators of commercial quality, technological properties and chemical composition of the obtained raw materials. It is established that CMV allows to intensify the drying process by 1,3–2,46 times, depending on the tobacco variety and has a positive effect on the technological properties of raw materials, most varieties increase the yield of fiber and retain volume-elastic properties. The dynamics of drying affects the change in the chemical composition of raw materials. During the drying process, due to the hydrolysis of nicotine salts and its release by oxidation with air oxygen, the nicotine level in a number of samples decreases within 10–30%. The higher the nicotine content, the higher the strength of tobacco, it is coarser in taste. Changes in the carbohydrate-protein ratio in the direction of increasing carbohydrates improve the taste characteristics of raw materials. For each studied variety, it was not possible to identify a regular dependence of its structure and the nature of the drying process at CMV with transformations of the chemical composition of raw materials. Based on the analysis of technological and qualitative indicators of tobacco raw materials presented in the developed database on the intensification of drying of various varieties of tobacco using the use of CMV of tobacco leaves, it is possible to plan the choice of the optimal drying method for each variety of tobacco, which allows to increase the efficiency of using raw materials and improve its quality characteristics.

Apple slices of the Elise variety were previously osmo-dehydrated in erythritol, xylitol, and sucrose for 2 h. In some parts of the experiment, 30 min of ultrasound pre-treatment (US) were applied. Afterwards, fruit samples were dried by convective (CD), microwave-vacuum (VM), and a combined method (CD/VM, mix two of them). The main aim of the research was to characterize an impact of osmotic dehydration, sonication pre-treatment, and drying method on the physicochemical properties of the dried apples. The use of sugar alcohols (xylitol, erythritol) in the production of dried apples did not badly affect the taste of the obtained dried products; it enabled a noticeable cooling/refreshing effect felt in the mouth when consuming a snack, and enabled the production of dried snacks with lower calorific value. Polyol residues in the product were at a level that was safe for consumers. The most popular convective drying was long lasting, whereas the VM drying method allowed for the shortest drying time, amounting to 76 min; moreover, additional application of ultrasounds reduced this time to 36 min. The combined drying method allowed the total duration of the process to be reduced 2–4.5 times. Ultrasound applied during osmotic dehydration did not significantly affect attributes of the descriptive sensory analysis for the obtained dried apples. The best hygroscopic properties, ensuring the storage stability of the dried product, showed dried apples previously osmo-dehydrated in erythritol and sucrose solutions.

Farmers in Bhutan practice hot water blanching and sun drying of green chillies as one of the preservation measures. The blanched dried chilli is known as ema shukam locally and is used in preparing various traditional cuisines. Blanching is done for 2-3 minutes by immersing in boiling water and drying in open sun. However, blanching and drying process lead to quality changes such as texture, colour, flavour, and nutritional value. Therefore, this study aimed to determine the proximate compositions of sun dried and oven dried green-blanched chillies. An experiment with two drying methods and two levels of blanching durations with three replications for each treatment were conducted to examine the proximate compositions of the dried and blanched chillies. Blanching duration of two minutes retained higher carbohydrates (x͂ = 31.78) than three minutes (x͂ = 26.08). However, the Mann-Whitney U test showed no significant effect of blanching duration on carbohydrate (U = 7.5, z = - .690, p > .05). Drying methods had significant effect only on fat content with oven drying retaining higher fat content (x͂ = 4) compared to sun drying method (x͂ = 2); (U = 2, z = -2.713, p < .01). Blanching for three minutes resulted in higher loss of Vitamin C content. The colour of oven dried chilli was dark brownish green even at lower temperature of 37 oC. Hot water blanching of green chillies for two minutes followed by sun drying produced desired colour of dried chillies.

This study aimed to determine the effect of different drying methods on the physical and chemical characteristics of Senduduk fruit powder determine the best drying method in producing then applied as a natural dye to food. This study used an exploratory method with three treatments (drying method with an oven dryer,  vacuum oven, and sun dryer). The result showed that the use of different drying methods resulted in different physical and chemical characteristics of the senduduk fruit powder and the best drying method in this study was using a vacuum oven with physical and chemical characteristics, that is the yield of 15.57%, ºHue 45.27, long time dissolve 60.08 seconds, insoluble part 4.34%, water content 8,76%, drying time 8 hours, ash content 2.36%, antioxidant activity 67.44%, anthocyanin content 45.52 (mg/L), organoleptic test on cookies, ice cream and pudding products with the addition of senduduk powder as a natural colorant, namely the cookies product obtained an average value of 3.2 (Usual), ice cream product 4 (Like) and pudding 4,4 (Like).

Dried products are widely used from the past because of their long shelf life, rich nutrient content and availability. Solar or shade drying methods have become the most widely used drying technique from past to date, due to no equipment requirement, cost and simplicity. However, this drying method has some disadvantages such as long drying time, contamination risk and requirement of large area and heavy labor. In this review, various drying methods applied in food are summarized. Then, solar energy assisted drying methods were examined in detail. Finally, solar energy-assisted drying methods involving energy storage are examined. Solar energy assisted drying is a very advantageous technique for economical production. The most important advantages of this technique are that the system can be designed in many different ways in order to provide the desired characteristics. In addition, the availability of various energy storage units contributes to the availability of the system.

Drying is a basic operation in wood, food, pharmaceutical and chemical industry. Currently, several drying methods are often not efficient in terms of energy consumption (energy efficiency of 20-60%) and have an impact on product quality degradation due to the introduction of operational temperature upper 80oC. This work discusses the development of adsorption drying with zeolite to improve the energy efficiency as well as product quality. In this process, air as drying medium is dehumidified by zeolite. As a result humidity of air can be reduced up to 0.1 ppm. So, for heat sensitive products, the drying process can be performed in low or medium temperature with high driving force. The study has been conducted in three steps: designing the dryer, performing laboratory scale equipment (tray, spray, and fluidised bed dryers with zeolite), and evaluating the dryer performance based on energy efficiency and product quality. Results showed that the energy efficiency of drying process is 15-20% higher than that of conventional dryer. In additon, the dryer can speed up drying time as well as retaining product quality.
