In current study nutritional constituents of fenugreek seeds Trigonella foenum graecum andantioxidant potential was determined. Rheological aspects of fenugreek supplemented flour were evaluated.Total phenolic contents (TPC) were quantified by using spectrophotometer. TPC content was higher inethanol extract as compared to methanol extract, accounted for 9.11mg GAE/g, and 7.82mg GAE/g,respectively. High pressure liquid chromatography was used to analyze the individual phenolic acids.Chlorogenic acid was found in higher quantity accounted for 167. 9 mg/g and sinapic acid with lowestamount 8.6 mg/g. Composite flours with treatments T1, T2, T3 and T4 of fenugreek seed powder with wheatflour were prepared and their rheological properties revealed the T4 with best and healthy results.Physicochemical and sensory analysis of cookies depicted that T1 was best as compared to rest of thetreatments.

Abstract The present paper studied the dielectric constant, dielectric loss, and ac conductivity of fenugreek seed, a medicinal seed (Trigonella foenum graecum), within the frequency range of 10 kHz and 10 MHz and the temperature range of 30°C and 50°C. Impedance gain/phase analyser (HP 4194 A) was used to measure the dielectric constant and the dielectric loss and Julabo (temperature controller, F-25, Germany) was used for keeping the temperature of fenugreek seeds constant. It was found that the dielectric constant and the dielectric loss decrease with the increase in the frequency while the same increase with the increase in temperature and moisture content. The ac conductivity increased with the increase in frequency, moisture and temperature.

Abstract Fenugreek has a long tradition of use as a medicine and also has been commonly used as food in many countries. This plant is well known, especially in Asia. In Europe, fenugreek seeds are regarded as a traditional herbal medicine consumed in case of loss of appetite and in confirmed skin inflammations. Trigonella foenum-graecum seeds contain wide spectrum of different biologically active constituents which affect the properties of preparations produced from this plant. Numerous preclinical studies confirm the use of fenu-greek as a hypolipidemic and lowering blood glucose level drug. Unfortunately, there are not many clinical studies on fenugreek seeds in this area. Published studies often significantly differ in the amount and type of fenugreek seed preparation used. However, results of available scientific research are promising and suggest the possibility of using fenugreek seeds in metabolic syndrome therapy. Undoubtedly, further research is required to confirm such properties of Trigonella foenum-graecum.

Abstract. In this study, the effects of a diet including fenugreek (Trigonella foenum-graecum) seed on feed consumption and milk performance were examined. A total of 24 buffaloes were randomly divided into two groups (12 animals each). The diet containing ground fenugreek seed (GFS) improved total dry matter (13.17–14.00 kg day−1) (P < 0.05) and daily concentrated feed consumption (2.90–3.81 kg day−1) (P < 0.01) and significantly increased milk production (7.34–8.01 kg day−1) (P < 0.01) in Anatolian water buffaloes (AWBs). In future work, the use of other herbs in AWB may be investigated.

Experiment to identify ambient grinding conditions and energy consumed was conducted for fenugreek. Fenugreek seeds at three moisture content (5.1%, 11.5% and 17.3%, d.b.) were ground using a micro pulverizer hammer mill with different grinding screen openings (0.5, 1.0 and 1.5 mm) and feed rate (8, 16 and 24 kg h-1) at 3000 rpm. Physical properties of fenugreek seeds were also determined. Specific energy consumptions were found to decrease from 204.67 to 23.09 kJ kg-1 for increasing levels of feed rate and grinder screen openings. On the other hand specific energy consumption increased with increasing moisture content. The highest specific energy consumption was recorded for 17.3% moisture content and 8 kg h-1 feed rate with 0.5 mm screen opening. Average particle size decreased from 1.06 to 0.39 mm with increase of moisture content and grinder screen opening. It has been observed that the average particle size was minimum at 0.5 mm screen opening and 8 kg h-1 feed rate at lower moisture content. Bond’s work index and Kick’s constant were found to increase from 8.97 to 950.92 kWh kg-1 and 0.932 to 78.851 kWh kg-1 with the increase of moisture content, feed rate and grinder screen opening, respectively. Size reduction ratio and grinding effectiveness of fenugreek seed were found to decrease from 4.11 to 1.61 and 0.0118 to 0.0018 with the increase of moisture content, feed rate and grinder screen opening, respectively. The loose and compact bulk densities varied from 219.2 to 719.4 kg m-3 and 137.3 to 736.2 kg m-3, respectively.

Background: Medicinal and healing plants have been used in treating human diseases for centuries because of their therapeutic effects. They may assist in curing common ailments such as a multitude of skin problems, various disorders from muscle spasms to cuts and wounds. They can be used to relieve symptoms of different illnesses from a cold to some forms of arthritis or some allergies as well. The Asteraceae plant is a strong source of antimicrobial and antioxidant agents and this paper focuses on its specifications. Objectives: This study aimed to investigate the antioxidant potential and radical scavenging of different solvents (Methanol and Ethanol) of five species, i.e., Artemisia absinthium L., Arctium lappa L., Centaurea cyanus L., Silybum marianum L., and Echinops ritro L., belonging to the Asteraceae family. Methods: Methanol and ethanol extracts of the above plants were prepared. The obtained sections were evaluated for total phenolic content (TPC), total flavonoid content (TFC), total antioxidant capacity (TAC), chain-breaking activity (CBA), thiobarbituric acid (TBA), and 2, 2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity. Also, Ferric reducing antioxidant power (FRAP), Nitric oxide (NO) radical scavenging, Hydrogen peroxide (H2O2) radical scavenging, and Superoxide (O2-) radical inhibition assay were measured. Phenolic compounds were determined and measured by high-performance liquid chromatography (HPLC) as well. Results: The collected and analyzed data showed that the highest values for the TPC, TFC, TBA, and DPPH were related to methanol extract of A. lappa L. Moreover, the maximum values for the CBA, H2O2, and O2- were observed in the Ethanol extract of E. ritro L., while methanol extract of E. ritro L. showed the highest amount of FRAP and NO. Eventually, the highest value for TAC was related to A. absintium L., and it was also realized that methanol compared to ethanol solvent was more successful in the extraction procedure. Conclusions: These findings suggest that A. lappa L. and E. ritro L. extracts can be considered excellent natural antioxidant agents. The type of solvent can affect the extraction of phenolic compounds. Sinapic acid, as the highest level of phenolic acid, was found in S. marianum L.

Oxidative stress has a crucial role in the progression of diabetes and its complications. Soluble fibre-rich fenugreek seeds (Trigonella foenum-graecum L.) are understood to have a beneficial effect in the management of diabetes. Previously, we have shown that the amelioration of diabetic hyperglycemia and related metabolic abnormalities was potentiated by onion (Allium cepa L.) in experimental rats. The present study evaluated the additive beneficial effect of dietary fenugreek seeds (10%) and onion (3%) on oxidative stress in diabetic rats. These dietary interventions lowered oxidative stress, the combination producing a higher beneficial effect (p < 0.05), although not additive. Dietary fenugreek, onion, or fenugreek+onion countered hypercholesterolemia (p < 0.05), especially from low-density lipoprotein−associated fraction by 43%, 35%, and 54%, respectively. Elevated concentrations of cholesterol and triglycerides in the liver and heart under diabetic conditions were significantly counteracted by these dietary interventions, with the additive combination resulting in greater effect. These findings were also corroborated by restoration of histopathological abnormalities of heart and liver tissues along with lowered heart and liver weights. It is inferred that an alleviation of oxidative stress contributes further to the antidiabetic influence and this nutraceutical potential of fenugreek seeds and onion was higher when consumed together.

Background: Enteral nutrition (EN) intolerance is a common complication in critically ill patients that contributes to morbidity and mortality. Based on the evidence of curing effects of fenugreek seeds in some gastrointestinal disorders, this study aimed to determine the effects of fenugreek seed powder on enteral nutrition tolerance and clinical outcomes in critically ill patients. Materials & Methods: A randomized, double-blinded clinical trial of 5-day duration was conducted on 60 mechanically ventilated patients divided in 2 groups (n=30). Group 1 was given fenugreek seed powder by gavage, twice a day in addition to routine care, while Group 2 received only routine care. Enteral nutrition tolerance and clinical outcomes were measured throughout the study. Demographic and clinical data were recorded and clinical responses to the primary outcome (enteral nutrition tolerance) and secondary outcome (other clinical factors) were interpreted. Data were analyzed using the independent t-test, Chi-squared test, covariance analysis, and repeated measure ANOVA via SPSS statistical software (v. 20); statistical significance was set at p< 0.05. Results: Patients who were fed with the fenugreek seed powder showed a significant improvement in enteral nutrition tolerance, as well as some complications of mechanical ventilation for Group 1, as compared with Group 2. The mortality rates were not different between the two groups. Conclusion: This study shows the beneficial effects of fenugreek seeds on food intolerance in critically ill patients and that the seed powder can be used as an add-on therapy with other medications. Thus, the use of fenugreek seeds to treat mechanically ventilated patients is recommended.

Results of a two-year investigation (2005 and 2006) for the yield and quality of fenugreek seed (Trigonella foenum graecum L) obtained on the location in South Banat (around Pancevo) on marsh dark soil are presented in the paper. Fenugreek seed used in this investigation was produced in the collection of the Institute of Medicinal Plant Research "Dr Josif Pancic" in Pancevo. The effect of sowing date on yield (kg/ha) and quality of fenugreek seed (germination energy and total germination) were investigated. Sowing was carried out on seven dates, 10 days between dates of each sowing. Yield of fenugreek seed sowed on different dates differed in both years. Sowing carried out in the first two weeks in April resulted in considerably higher yield compared to sowing at the end of April and during May. The highest yield was produced in the second sowing date from April 10, then in the first (April 1) and the third sowing period (April 20). The lowest yield of fenugreek seed was recorded in sowing carried out at the end of May. Yield of fenugreek seed wasn't significantly different in study years. Earlier dates of sowing resulted in seed of better quality (better germination energy and total germination). In the second sowing date fenugreek seed obtained was of best germination energy and total germination (approx. 99%). Later sowing dates gave seed of lower quality. So, sowing carried out at the end of May resulted in seed with the lowest value of germination energy and total germination (approx. 91%).
