The study was based on the comparative evaluation of physical and physicochemical properties and antioxidant potential of different cooking oils as awareness for the consumers. The cooking oils extracted from sunflower, corn, canola, soybean, and rapeseed and available for consumers as different commercial brands were purchased from the local market and analysed for their physical, physicochemical and antioxidant properties. All of the selected oils were found to be statistically similar on the basis of their physical properties including odour, specific gravity (P=.65) and refractive index (P=0.84). All of the selected oils contained vitamin A except one brand of each of the sunflower, corn and canola oils. The selected oils and their blend showed statistically different physicochemical properties and antioxidant potential (P=.000). The corn oil and rapeseed oil were found to be the best quality oil due to comparatively lower acid, peroxide and saponification values and higher antioxidant potential in terms of free radical scavenging capacity. The study results would provide valuable information to the consumers and the researchers regarding the selection of the best quality cooking oils available in the market.

Objective: This study was aimed to evaluate the antioxidant potential of sinapic acid in both in vitro and in vivo. Recently, we have reported that oral administration of sinapic acid (3,5-dimethoxy 4-hydroxycinnamic acid) an active phyto ingredient widely distributed in rye, mustard, berries, and vegetables has been shown to ameliorate hyperglycemia.Methods: Experimental Type 2 diabetes was induced in male Wistar rats by feeding high-fat diet to induce insulin resistance followed by intraperitoneal administration of a single low dose streptozotocin (35 mg/kg body weight [bw]). Sinapic acid was administered orally at a concentration of 25 mg/kg bw/rat/day for 30 days, and its efficacy was compared with metformin. In vitro, antioxidant scavenging properties of sinapic acid were determined using 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2’-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS), superoxide, and nitric oxide (NO) assay.Results: Sinapic acid treatment showed a significant decline in the levels of lipid peroxides, hydroperoxides and protein carbonyls in the plasma and vital tissues of diabetic rats. The treatment also improved the antioxidant status in diabetic rats indicating the antioxidant potential of sinapic acid. In addition, the results of DPPH, ABTS, superoxide, and NO radical scavenging assays substantiate the free radical scavenging efficacy of sinapic acid.Conclusion: The results of this study evidenced that sinapic acid possess significant antioxidant properties which in turn may be responsible for its antidiabetic properties.

Celery (Apium graveolens Linn, Family: Apiaceae) is a common edible herb used as a spice in the traditional medicine of several nations since time immemorial. The whole plant is extensively used in cooking as soups and salads. A. graveolens has various pharmacological properties such as anticancer, anti-obesity, anti-hepatotoxic, and antihypertensive agents. Hence, it is of interest to document the in vitro cytotoxic, antioxidant, and antimicrobial activity of A. graveolens. The plants were collected in the local market, shade dried, and different parts of the plants were extracted with 70% ethanol using a cold maceration process. Antioxidant tests were performed based on the various radical scavenging methods. Antimicrobial activity and MIC were completed using the respective cup-plate and two-fold serial dilution method. In vitro cytotoxic studies were achieved by the MTT; Sulphorhodamine B assayed total cell protein content. DLA and ESC cells determined the short-term toxicity. The leaf extract exhibited significant antioxidant properties against NO, DPPH, ABTS, LPO, and HPO methods. Thus, potential inhibition against Gram-positive, Gram-negative, and fungal strains within the MIC ranges of 250-500 μg/ml was observed. All the extracts of the plant presented in the study revealed greater cytotoxicity effects against five respective cancer cell lines, L6, Vero, BRL 3A, A-549, L929, and L-929 with the ranging of 443-168.5 μg/ml. Thus, we show that A. graveolens possess a potential cytotoxic, antioxidant, and antimicrobial activity.

AbstractThe antioxidant properties of methanol extracts of Lady’s Bedstraw (Galium verum L., Rubiaceae) herb from two different localities in Serbia were evaluated. Antioxidant activity was assessed in four different model systems. Free radical scavenging capacity (RSC) was examined by measuring the scavenging activity of extracts on 2,2-diphenyl-1-pycrylhydrazil (DPPH) and hydroxyl radical (OH), as well as on hydrogen peroxide. In addition, the protective effects of lipid peroxidation (LP) in corn oil were evaluated by the TBA-assay using the Fe2+/ascorbate system of induction. The amount of dried extract, the content of total phenolics, flavonoids and chlorophylls was also determined. Extracts from both locations expressed very strong scavenger activity, reducing the DPPH⊙ (IC50=3.10 µg/mland 8.04 µg/ml) and OH radical formation (IC50=0.05 µg/ml and 0.54 µg/ml) and neutralising H2O2 (IC50=4.98 µg/ml and 3.80 µg/ml), in a dose dependant manner. Also, examined extracts showed notable inhibition of LP (IC50=11.69 µg/ml and 19.47 µg/ml). The observed differences in antioxidant activity could be partially explained by the levels of phenolics (2.44–4.65 mg and 4.57–5.16 mg gallic acid equivalents/g dry extract), flavonoids (6.38–10.70 µg and 15.56–17.96 µg quercetin equivalents/g dry extract) and chlorophylls in the investigated Lady’s Bedstraw extracts.

The antidiabetic and antioxidant potential of ethanolic extract ofCassia nemophilapod (EECNP) was evaluated by three in vitro assays, including yeast glucose uptake assay, glucose adsorption assay, and DPPH radical scavenging activity. The result revealed that the extracts have enhanced the uptake of glucose through the plasma membrane of yeast cells. A linear increase in glucose uptake by yeast cells was noticed with gradual increase in the concentration of the test samples. Moreover, the adsorption capacity of the EECNP was directly proportional to the molar concentration of glucose. Also, the DPPH radical scavenging capacity of the extract was increased to a maximum value of 43.3% at 80 μg/ml, which was then decreased to 41.9% at 100 μg/ml. From the results, it was concluded that EECNP possess good antidiabetic and antioxidant properties as shown by in vitro assays.

Research background. Legumes are superior sources of macro- and micronutrients which can be further enhanced by fermentation. This can assist in addressing the food security concerns. The present study aims to determine the effect of fermentation by Rhizopus oligosporus on nutritional and antinutritional composition of some commonly consumed legumes. Experimental approach. Chickpea (kabuli and desi), pigeon pea, and soybean were fermented with Rhizopus oligosporus (at 34 °C for 52 h), dried at 45 ºC for 16-18 h and milled. Unfermented and fermented flours were evaluated for antioxidant potential, phenolic composition, antinutrients, mineral composition and FTIR spectra. Results and conclusions. Fermentation significantly (p<0.05) enhanced the total phenolic and flavonoid contents, and antioxidant properties (radical scavenging activity, reducing power, ferric reducing antioxidant power and metal chelation) of chickpea kabuli and desi, and soybean. Although fermented pigeon pea exhibited excellent antioxidant properties, the effect of fermentation on such properties was either minimal or insignificant. Additionally, specific phenolics were quantified using HPLC which showed higher concentration of certain compounds such as chlorogenic acid, p-hydroxybenzoic acid, gallic acid and vanillic acid in fermented legumes. Phytic acid in all the fermented legumes reduced (p<0.05), however trypsin inhibition increased (p<0.05). In chickpea kabuli and desi, and pigeon pea, saponins increased (p<0.05) while they decreased in soybean. Tannins enhanced (p<0.05) in chickpea desi, pigeon pea and soybean and reduced (p<0.05) in chickpea kabuli. Furthermore, fermentation enhanced the content as well as estimated bioavailability of minerals. FTIR spectrum of unfermented and fermented legumes showed the presence of several functional groups and modifications in the molecular structure after fermentation. Novelty and scientific contribution. To our knowledge, this is the first study wherein legume (chickpea kabuli and desi, pigeon pea and soybean) fermentation by Rhizopus oligosporus has been assessed for nutritional and antinutritional profile, and FTIR spectra, which concluded that the treatment resulted in an optimal balance of nutrients and antinutrients. The process was established as a potential tool and thus can be proposed in the development of legume based novel functional foods which might help in tackling the concerns of nutritional security.

The present study describes the in vitro antioxidant activity of methanol extracts of 34 plant species collected in the Colombian coffee-growing eco-region belonging to Euphorbiaceae, Piperaceae and Solanaceae families. The antioxidant properties of extracts were evaluated by determining radical scavenging power measured with a DPPH assay. The methanolic extracts of  Hyeronimia antioquiensis, Mabea montana, and Alchornea grandis species (Euphorbiaceae), presents EC50 values equal to 0.686, 12.35, and 13.01 µg/mL, respectively, showing high antioxidant potential.

Abstract Background CCl4 is a widely used xenobiotic for the purpose of causing liver damage in experimental studies. In this study, we aimed to reveal the effects of crocin on liver injury caused by CCl4 via free radical scavenging properties. Materials and methods Animals were divided into five groups of 10: control; corn oil; crocin; CCl4; CCl4 + crocin. Tissue samples were carefully removed and separated for biochemical and histological investigations. Results CCl4 administration led to significant increases in MDA, SOD, CAT and TOS in liver tissue, and AST, ALT and ALP levels in plasma (p < 0.05). In addition, CCl4 caused significant decreases in GSH and TAS (p < 0.05). When animals were treated with crocin, high MDA, SOD, CAT, TOS levels, and AST and ALP activities decreased and GSH and TAS levels increased. Control group exhibited normal histological appearance; however extensive necrosis areas were detected in the CCl4 group. In the CCl4 + crocin group, pathological changes were markedly decreased and the appearance of liver tissue was almost similar to the control groups. Conclusion Our results showed that crocin suppresses oxidative stress with antioxidant properties and has a protective effect on tissue damage caused by CCl4.

The present study makes an effort to investigate the foliar neutraceutical potential of a promising green accession of a seed amaranth (Amaranthus hypochondriacus, accession no. IC94661) based on anti-lipid peroxidation property, reducing power, metal chelating activity, hydroxyl radical scavenging property, antidiabetic factor and GC-MS based identification of hydroxyl containing phytochemicals. Methanol and aqueous fractions possessed exhibited better anti-lipid peroxidation, reducing, hydroxyl radical scavenging, and metal chelating properties in the experimental accession. Estimation of anti-diabetic factors from the young leaf extract also revealed significantly high α-glucosidase and α- amylase inhibition properties. When GC-MS study was carried out, it exhibited presence of several hydroxyls containing phytochemicals in the accession, some of which are having antioxidant properties. Taken as a whole, the data not only provide evidence of rich sources of marker antioxidant properties but also the availability of several phytochemicals with hydroxyls, in support of its rich pharmaceutical potential

Tagetes erecta (T. erecta) is an herbaceous species, having wide ethno medicinal and traditional uses. It demonstrates different pharmacological activities like antioxidant, antimicrobial and anti depressant. The present study deals with the estimation of antioxidant properties of four solvent extracts of flowers of T. erecta. The study aims to discover potent extracts as a novel source of natural antioxidant. The crude extracts; Petroleum ether (PE), Chloroform (CF), Ethyl Acetate (EA) and Methanol (MET) were screened for their free radical scavenging capacity and reducing powers using DPPH, Superoxide and Reducing power assay. Ascorbic acid was used as standard. All the extracts show considerable antioxidant potential. However, methanolic extract can strongly scavenge DPPH and superoxide radical with significant IC50 value range 30.08 ± 0.98 µg/mL and 64.22±0.04 µg/mL respectively. The IC50 value of the extracts follows the order; MET less than EA less than PE less than CF. Lowest IC50 value indicates highest antioxidant potential. The reducing power of extracts were in the order; CF less than PE less than EA less than Met
