A preservation process based on the “hurdle” effect for obtaining a shelf-stable banana purée was developed. The microbial stability of the purée was challenged with inoculation of osmophilic and non-osmophilic yeasts, various molds, Bacillus coagulans, Clostridium pasteurianum and Clostridium butyricum. It was shown that growth of both native and inoculated flora may be prevented for at least 120 days storage in banana purée by adjusting water activity (aw) to 0.97, pH to 3.4, adding 250 ppm of ascorbic acid (AA), 100 ppm of potassium sorbate (KS) and 400 ppm of sodium bisulphite (NaHSO3), and applying a mild heat treatment.

Drying is the oldest method of food preservation. By reducing the moisture content and water activity the microbial stability of the food materials can be increased. The minimum water activity (aw) for microbial growth is approximately 0.6. But in case of dehydration the texture, palatability and some physical properties of the food materials can be decreased. Intermediate moisture food (IMF) are shelf-stable products having water activities of 0.6-0.84, and the range of the moisture content from 15%-40% and are edible without rehydration. Osmotic dehydration has many advantages include low processing temperatures, short drying times, and 20%-30% lower energy consumption than typical dehydration processes. Sugar is the most important agent used as the humectants for candied intermediate moisture fruits, and salt is used for intermediate moisture vegetables and fish. Most of the fresh fruits can be transformed into IMF or candied fruit (also known as crystallized fruit) without adding synthetic colors and flavors or gelling agent. In this review paper the how different IMF enhance the self-life of the food materials are discussed.

Annurca apple juice was processed by high pressure homogenization (HPH) to inactivate the endogenous microbial flora, with the aim of maintaining the organoleptic properties and the polyphenolic content of the fresh juice. In particular, it was shown that the shelf life of clear juice can be prolonged for many weeks of storage both at 4°C and 37°C upon HPH treatment at 250 MPa. Instead, the juice with pulp required higher pressure levels (300 MPa) for microbial stabilization both at 4°C and 37°C. The sample stored at 37°C exhibited a physical instability, with deviation in color and pH, which reduced the shelf life, but the samples stored at 4°C exhibited an excellent microbial stability and no observable variation of pH and color, suggesting that HPH can represent a good option for non thermal pasteurization of Annurca apple juice.Interestingly, the HPH treatment delivered also significant changes to the distribution of suspended particles, whose comminution had a measurable effect on viscosity.

Aim. Studying of black nightshade young plants’ response to the induced mechanical stresses. Methods. Researches conducted in small plot fi eld experiments. Results. Change of sensitivity level of Solanum nigrum L. plants depending on phases of their development at the moment of damage of elevated parts has been proven. Owing to loss of the surface capable to photosynthesis, there is an essential decrease in volumes of photosynthesis at plants of weed survived and their possibilities of ontogeny passage. The deep induced dis- stresses reduce biological effi ciency of plants, their ability to accumulate weight and to form seeds and even lead them to death. Conclusions. The defi ned principles of response of weed plants to the induced mechanical dis-stresses are can be used for working out and ecological receptions of crops protection from weeds.

From literally study from various recourses it is found that Rasayan churna have property anti-depressant, anti-xylotic, Immunomodulatory, Anti-diabetes, anti hypertensive, anti-inflammatory, Anti-toxic effects, Anti-arthritic, Anti-cancer effects, Anti-microbial effect, and Anti-oxidant which can be useful in preventive aspect of Covid -19 in all phase like normal individual, also can be used in asymptomatic patients and symptomatic patients, clinical study can be performed for the same to evaluate the result.

: Nigella sativa (Family Ranunculaceae) is a common medicinal plant all across the world. It is quite popular in different traditional medicinal systems such as Unani, Ayurveda, Tibb, and Siddha. Oil and Seeds have a long tradition of folk medicine utilized in different medicinal systems and food. The seeds of N. Sativa have indeed been widely applied in the treatment of many diseases, ailments, and also the immune booster. Our goal primarily concentrated on the therapeutic efficacy of Nigella sativa in combating the COVID-19 pandemic.
