These days, sustainability is a key issue for many private companies that address their sustainable corporate performance. The perspective is essential for their license to operate and forms the basis for business principles and practices. The lack of internationally accepted reporting standards on what, when and where to report makes it difficult to assess sustainability. The article examines different sustainable methods to forecast the development of food sector in Kazakhstan. The scenario approach is used as the most effective one that, in the authors’ opinion, allows taking into consideration a variety of tendencies in the sphere of production, distribution and consumption of food products. Kazakhstan has real opportunities to produce a wide range of food products in the volume, that ensure not only food security of the country, but also the possibility of expanding the export potential of Kazakhstan both at the expense of raw materials and the realization of food products on the world markets with high added value. Currently, however, the food potential of the country is being used inefficiently.

The article analyses the various theoretical approaches to the planning of agricultural and food areas of Kazakhstan. The author considers that the method of forecast scenarios in development of green business as the most effective one. Kazakhstan has all the prerequisites to produce a wide range of food products in volumes that ensure not only the country's food security, but also the opportunity to expand export performance in world markets. At the same time, the available food potential is not being used effectively. This is evidenced, first, by the irrational structure of imports of food products, many of which could be produced at domestic enterprises. In these conditions, it is necessary to search for the most appropriate scientific approaches to the organization of strategic management of the agro-food sector by improving the analysis, planning and forecasting of its development trends, considering the influence of various factors.

A recent tendency in Ukraine is the changes in the structure of food consumption, which are caused by the reduced consumption of some product groups and by their decreasing quality. A persisting problem is that affordable and easy-to-consume food products made with due consideration of the needs of patients with certain categories of diseases can hardly be found on the domestic market. The products present on the domestic market are all imported, available in a limited assortment, very expensive, and not customised to suit all the specific needs of human metabolism. Approaches to the nutrition of patients with certain types of nutrition-dependent and non-infectious diseases have been analysed. It has been established that аn effective component in the diet of patients with non-infectious diseases can be plant-based milk analogues. It has been determined how important it is to use domestic raw materials: it will contribute to expanding domestic production, will help the gross domestic product growth, and will reduce the product’s costs, thus reducing the costs of diagnostic and treatment procedures. It has been established that the assortment of plant-based milk analogues is constantly expanding. The vegetable raw material conventionally used to make this product group has been analysed. It has been shown that fenugreek seeds can be most effectively used to make special food products (in particular, plant-based milk analogues) for the nutritional support of patients with non-infectious diseases. This is feasible due to the availability of the raw material, simple cultivating conditions, the chemical composition of the product (e. g. a wide range of biologically active substances), low costs of the product when it is made from domestic raw materials, and the simple production technology. It is expected that manufacture of milk analogues from fenugreek seeds will widen the assortment of this product group, and satisfy the target consumers’ needs of safe and high quality products that offer an alternative to imports.

The recent interest in the topic of agri-food exports is caused by investment activity in agriculture after 2014 and, as a consequence, the positive dynamics of the main indicators of the industry's development. Russia’s food exports has grown more than 15 times since the early 2000s, and the dozens of countries around the world buy this food. At the same time, there are structural and regional features that indicate the limited results achieved in foreign trade, but Russia’s agri-food exports are growing only at the expense of three categories of goods (grain, vegetable oil and fish) with a lower added value than by top-processed food products. It is noted that despite the large number of importing countries, only a few of them purchase significant volumes of Russia’s food. The aim of the study is to quantify the regional differences in the involvement of the territory in the export of food and agricultural raw materials. The assessment showed that most of the Russia’s regions are poorly involved in foreign trade, therefore more than half of all food exports belong to several regions that have a large seaport and produce one of the three main food products. Based on the assessment results, a typology of Russia’s regions is presented according to the criterion of involvement in Russia’s export of agricultural products, taking into account the characteristics of exported products (upper, middle or lower processing). The results obtained make it possible to assess the real export activity of the agroindustrial sector of the regions and the potential for its increase in the future. To calculate the dynamics and regional distribution of Russia’s food exports we used the database of the Federal Customs Service of Russia (HS codes 01-24). In the article, we also calculated the Balassa index and the export diversification index, modified for analyzing the involvement of Russia’s regions in the export of agricultural products.

Gresik is well known as one of the Islamic based tourism towns in East Java. This Islamic tourism encourages the development of typical souvenirs business in Gresik especially in food sector. Some Gresik traditional food are often used as souvenirs, such as pudak, jubung, and ayas. High sale promotes product innovation, especially in terms of taste creations, preservation / shelf life, as well as packaging. Unfortunately, these product innovation have not been supported with information related to product nutritional value. The nutritional value is important, considering the usage of information in food labelling as well as for the materials, process and packaging basic innovation. The study of Gresik traditional food nutritional value products consists of two stages, they were field-related observation and laboratory testing. Field observations were done to obtain information on raw materials and production processes from pudak, jubung and ayas. As for the test of nutritional value was done by proximate test. The results showed that pudak has moisture content (55.6%) twice higher than jubung and ayas (25.0% and 22.7%, respectively). All three products have a low fat content, which was below 1.0 g per serving. The protein content is also relatively low, i.e. only 2.1-2.8%. All three of these products are carbohydrate sources with the amount of 40.8-73.4% which gives a caloric amount of 120-185 kcal per serving. Implementation of nutritional information in food label could also give added value to the product.

The paper deals with some theoretical approaches to determining the essence of the export potential, the features of its formation and development in the agri-food complex, the impact on the growth of competitiveness. This made it possible to clarify the definition of the export potential of the agri-food complex as an aggregate of competitive advantages. The specifics of the development of the export potential in the context of globalization and the development of international integration are revealed. The dynamics and structure of exports of food products and agricultural raw materials are analyzed; the physical capacity of the domestic markets of basic food products, the dynamics, and trends of its change are estimated. Excessive growth in the volume of production of agricultural products can lead to oversaturation of the domestic market, a decrease in the profitability of domestic producers, worsening the financial situation in the industry. Russia has a significant potential for integration into the world agri-food system. However, the main share of the export of the agri-food complex is made up of agricultural raw materials, primarily grains and oilseeds, which has an adverse effect on the structure of the complex and the rate of its development. The diversification of exports, the growth of exports of products with high added value will contribute to the sustainable development of agriculture and food industries. The development of the export potential of the Russian agri-food complex should be based not only on the active use of national competitive advantages but also on the formation of competitive advantages based on the international division of labor as well. The export-oriented strategy for the development of Russia's agri-food complex needs to be justified in the context of food security policy, which implies resolving the contradiction between national interests related to the saturation of domestic markets, and attitudes toward growing competitiveness in the world food markets, as well as the development and realization of the export potential.

Optimization of thermochemical and biological transformations occurring during the heat treatment of food products can be carried out only taking into account the dynamics of the formation of temperature fields inside the processed products. A mathematical model of the Sous-Vide processing process has been developed, which provides the determination of the dynamics of changes in the temperature field of Sous-Vide processed functional food products based on animal and vegetable raw materials. To calculate the process of Sous-Vide processing of functional products, we used the differential equation of unsteady heat conduction taking into account the Bio criterion. When solving a system of partial differential equations, the mathematical package flexPDE is used. In calculations, a spatial grid with the number of nodes 20000 was used, the accuracy of calculations was 10E-4. Experimentally determined values of thermal conductivity, specific heat capacity, density and thermal diffusivity of each of the components of the food system are used in calculations. The results of the calculated experiment in mathematical modeling of the Sous-Vide processing process show the evolution of temperature fields in different sections of the food system and on its upper surface, having the shape of an ellipsoid of rotation. The dependences of the change in the thermophysical characteristics of the longitudinal and transverse flow of the food system coolant. The results of the computational experiment show a good convergence of the mathematical model and the results obtained, which is 94%, which indicates the adequacy of the developed mathematical model of the Sous-Vide processing process. The obtained mathematical model allows, by means of a computational experiment, to analyze and optimize the Sous-Vide processing modes of a wide range of food raw materials, of various geometric shapes and sizes, with different physicochemical and thermal properties, taking into account their non-stationarity under thermal influence.

The economy of the European North of the Russian Federation is predominantly based on the use of natural resources. The mining complex remains the leading one in its structure. Its specialization focused on the production of raw materials and the export of products with low added value increases the dependence of the socio-economic situation on the conditions in world commodity and raw materials markets. The economies of the regions under consideration have some common features: the economies are export-oriented. Consequently, the economy depends on world prices for relevant products, conditions in world markets, and a number of political factors. The work revealed a change in the amount of labor force in recent years, assessed structural changes in the economy that affect the dynamics of employment and the level of qualifications. The quality of life of the population in the regions of the European North of Russia is also assessed in this paper.

The article substantiates scientic and methodological approaches and principles of distribution, formation, effectiveness, effciency of functioning and development of agri-food chains. It is determined that agro-food chains have acquired the most significant economic and social importance for the inclusion of small producers in the processes of practical production cooperation, which prompted the requirements related to the specifics of the technology of production of finished food products. The main factors that provoke the emergence of extremely contradictory and diverse phenomena in the development of agri-food chains include: globalization of international relations, intensification of turbulent phenomena and processes in the world economy, the entry of advanced countries to new economic frontiers. For the current stage of development of the national economy, the practical implementation of one of the key objectives of the Association Agreement between Ukraine and the European Union was of paramount importance. For the purpose of periodic audit of HACCP-certified food processing enterprises, the specified structure of business entities that ensure the production of finished food and other products is highlighted. These calculations show that in 2018 in Ukraine the producers of agricultural raw materials were 49550 farms/enterprises and 23822 natural personsentrepreneurs who are oficially registered and represent the primary link in the food chain. The next link in the agri-food chain are processors of raw materials of primary production, which in Ukraine in 2018 were 5872 enterprises and 10845 individual entrepreneurs, of which 157 enterprises and 1016 sole proprietors produce non-food products. The analysis allows us to conclude that now the producers of food raw materials have the following situation: a) Àexible or simplified permanent procedures, certified (or tested) their facilities for compliance with the minimum requirements of basic programs; b) the second part, mainly FOPs and PF, continue to operate traditionally, ie without paying special attention to the time requirements for the implementation of systematic security procedures. It is established that in practice, some producers of food raw materials, with different levels of tightness, depth of processing and value creation, are already included in agri-food chains. Taking into account the objectively existing tendencies of spontaneous, at the initial stage mainly seasonal occurrence, and further deepening and strengthening of interrelations between actors, the hierarchy of formation and sustainable development of food chains is offered. Key words: agro-food chains, economic turbulence, agricultural raw materials, personal farms, processing and food enterprises, sustainable development, added value.
