A comparative assessment of beef in the interbreed and age aspects of animals carried out. A specific difference in the beef quality from meat and dairy breeds raised in Kyiv and Cherkasy regions has been determined. The influence of different parameters of weight growth and slaughter age on the chemical composition of beef of 20-22-month-old bulls of Ukrainian black-and-white dairy and meat breeds was established. The chemical composition of beef of young Ukrainian dairy and meat breeds has a significant difference. Meat bulls are inferior to dairy peers in terms of dry meat content (28.8 and 31.8%) and mineral content (5.9 times) and fat content (10.2 and 12.6 times). There is no difference in protein content between the groups. In the increasing the age of slaughter of young dairy and meat direction of productivity, the content of dry matter, minerals and fat does not change significantly. Only dairy animals at the age of 20 months have a higher protein content. Before the age of 22 months, animals of the Ukrainian black-and-white dairy breed tend to increase their fat content with a slight reduction in protein. The weight of the animals before slaughter does not affect the chemical composition of beef. The dry matter content with an increase in actual live weight before slaughter has only a tendency to increase. There is no significant difference in protein, fat and mineral content. With faster growth of animals of both breeds, only the protein content in beef tends to increase, and the content of minerals - to decrease. The meat of bulls of the Ukrainian meat breed tends to increase in fat by 0.3 points as their growth increases. Comparison of chemical composition m. Longissimus dorsi of Ukrainian black-spotted dairy and beef cattle shows that the beef of the Ukrainian meat breed, which responds to satisfactory feeding with rapid growth of muscle tissue and late formation of adipose tissue, meets the market requirements the most. The biological feature of these cattle, in contrast to the dairy breed, is that the increase in their weight up to 20-22 months of age is mainly due to the accumulation of muscle tissue and moderate growth of adipose tissue. Beef from it should be considered a lenten, so it is in great demand. The accumulation of fat in the bulls of the Ukrainian black-spotted dairy breed is somewhat intensified. The ratio of protein to fat at 20 months in bulls of Ukrainian black-and-white dairy is 1 to 0.29, while in Ukrainian meat - only 1 to 0.03

The article presents the results of studies of protein composition and nutritional milk value of Ukrainian Black-and-White dairy cows with different genotypes of kappa-casein. It was found that the milk of cows with the BB genotype contained more total protein by 0.41 and 0.28 %, the mass fraction of protein (Pro Total) – by 0.37 and 0.25 %, with a probable advantage over the protein content (casein) – by 0.46 and 0.29 % (p≤0.001) and the total amount of casein and globulin – by 0.39 and 0.27 % (p≤0.001) against analogs with genotypes AA and AB. There are differences in the chemical composition and physicochemical properties of milk. In particular, the difference in mass fractions of lactose and dry matter in milk between cows with the genotype BB and AA and AB was respectively 0.16 % (p≤0.001) and 0.11 % (p≤0.01) and 0.64 % (p≤0.001) and 0.37 % (p≤0.01). No less valuable in terms of mass fraction of dry matter was the milk of cows with genotype AB, in which the growth of this indicator against animals with genotype AA was at the level of 0.28 % with a statistically significant difference between them (p≤0.01). Freezing point and density as marker criteria that characterizing the presence of falsification were practically unchanged and did not exceed the permissible norms and amounted to 0.551–0.553 °С and 1028.04–1028.45 kg/m3. The content of somatic cells in the milk of cows of different genotypes of kappa-casein was within the permissible level according to the state standard, which indicates the absence of mastitis. Cows with genotype AA had an increased level of titrated acidity and concentration of free hydrogen ions (p≤0.01 – p≤0.001) against analogs with genotypes AB and BB. However, in general, the hydrogen pH of the milk of cows of all groups had a weakly acidic environment, the values of which ranged from 6.66 units. pH in cows with genotype BB up to 6.71 units. pH – in animals with genotype AA.

This study was carried out to determine chemical composition and in vitro dry matter and organic matter digestibility of range plant species of the area. Samples were collected from range lands at full maturity stage, dried under shade and subjected to chemical analysis and dry matter and organic matter in vitro digestibility for Vigna sunhum, Andropogan gayanus, Pennisetum Pedicelatum, Shoenfeldia gracilis and Stylothanis flavicans were determined. The data was analyzed via analysis of variance and differences among means were determined using Least Significant Difference (LSD) test. The results showed that the legumes (Vigna sunhum and Stylothanis flavicans) were significantly higher (P≤0.01) in their crude protein content and the percentage of crude protein respectively was 13.4% and 10.00% while the grasses were significant (P≤0.05) higher in Crude Fibre (CF), ash, Acid Detergent Fibers (ADF) and Neutral Detergent Fibers (NDF). Crude fiber % values were 41.78, 43.37 and 46.07% for Pennisetum Pedicelatum, Andropogan gayanus and Shoenofeldia gracilis, respectively. The acid detergent values were 53.85, 47.74 and 53.39 for the three weeds. (P≤0.05), while the ratio of neutral detergent was significantly higher (P≤.05) in grasses than in the two legume species; 87.22, 82.35 and 88.99% for the three grasses respectively. Similarly higher in vitro dry matter and organic digestibility coefficients were obtained from legume species than grasses. The study concluded that, the studied grasses were higher in fiber content and lower in their protein content but, legumes grasses (Vigna sunhum, Pennisetum Pedicelatum and Stylothanis flavicans) had high nutritive value and in vitro digestibility which may provide ruminants with the needed protein and energy.

SUMMARYThe effect of stage of harvesting on dry-matter (D.M.) yield and chemical composition of barley, wheat and the legumes common vetch (F. sativa), woollypod vetch (F. dasycarpa) and fodder peas (P. sativum) were studied in Cyprus under low rainfall conditions in a series of trials sown in four successive years. Cereals were harvested at the beginning of heading, 50% heading and the milk stage of grain, and legumes at three stages from preflowering to full pod formation, D.M., protein and digestible D.M. yields and percentage D.M. content increased with age, whereas percentage protein content and D.M. digestibility declined. Under moisture stress conditions before and during the harvesting period D.M. yields did not increase significantly with age. Protein content of cereals under low rainfall conditions was higher than that of cereals grown in the U.K. under higher N fertilization levels. Rainfall conditions affected drastically the performance of both cereals and legumes. However, average yields were satisfactory; the barley variety 628 gave 8·98 t/ha, the highest D.M. yield among all cereal and legume varieties.

The study was to conduct to evaluate the chemical composition and nutritive values of feedstuffs (forages and concentrate mixtures) used for dairy goats nutrition in Vojvodina. Samples were collected from six farms, including one organic farm. The results showed that the relative feed values of analyzed forages were in the range of good, medium to lower quality. Average protein content from lowest to highest for investigated forages was: corn silage (Zea Mays) (65.37-82.57g kg??DM), alfalfa haylage (Medicago sativa L.) (159.99-184.17g kg??DM), pasture (185.30g kg?? DM), and alfalfa hay (Medicago sativa L.) (167.48-203.60g kg??DM). The non-fibre carbohydrates and protein content most varied in organic hay samples (cv: 29.25% and 19.09%, respectively). Generally, feedstuffs used in organic nutrition, including organic concentrate, were of lower nutritional quality and moreover contained higher amounts of crude fibre and lignin. Especially, a high source of variation was observed in investigated concentrate mixtures for the crude protein content (p<0.0001), ranged from 135.32 to 209.87g kg??DM. Corn silages also varied substantially in their chemical composition and significant difference (p<0.05) was observed in regard to acid detergent fibre (ADF) and lignin content (ranged: ADF: 242.20-319.24g kg??DM; ADL: 27.98-52.54g kg??DM, respectively). Furthermore, pasture contained the most soluble materials during May and June and their content was related inversely to crude fibre amount. This survey highlights that investigated farms still pay insufficient attention to the quality of the feedstuff. For the development of intensive goat farming, greater emphasis should be placed on using higher quality feedstuffs, as well, standards for feed quality must be considered and established.

The forage yields and the detailed chemical composition of six cultivars of oats harvested at the vegetative stage (three cuttings during the growing season to simulate grazing) and at the heading and dough stages (one cutting for silage) were established over a period of 3 yr. No significant difference in the dry matter yields of the cultivars was found within any of the three stages of growth. Highly significant increases in the yields, however, were recorded with advance in maturity from 4210 kg/ha at the vegetative stage to 6754 kg at heading and 9219 kg at dough stage. Likewise, the percent dry matter increased progressively from 12% to 19% to 33% for the same stages. In general, the organic and mineral compositions of the cultivars did not vary significantly within any stage of growth, but were influenced by the age of the tissues. The total digestible nutrient, the crude protein, the cell contents and the mineral elements Ca, P, K, Mg, Na, Zn and Fe decreased while the nitrogen-free extract, the cell walls, the lignin and the hemicellulose increased from the vegetative to the dough stage. The other constituents exhibited a less defined pattern or remained relatively stable from one stage to another.Key words: Yields, chemical composition, stages of growth, cultivars, forage oats

In order to obtain more and more resistantpigletsduring lactation, thisexperimentwas set up. Its objective was to assess the quality of the milkproduced by the sowafter the use of new agricultural by-products in the feeding of lactatingsows.Thus, downgradedalmondswereintroducedinto the diets.Three types wereformulated and tested on threeseparate lots of 10 sows [(Large White x Pietrain) X (Landrace x Duroc)] each.Thesedietsconsisted of 0, 6 and 9% downgradedalmonds. Releases of cashew kernels in the food ration had no significanteffect on the dry matter, protein content of colostrum 1, 2, 3 and milk.In contrast, the use of 9% cashew kernelrejectssignificantlyincreased (P <0.05) the proportions of lipid in colostrums and in milk.The lipid contents increased by 1.07% 1.01% 1.05% and 1.10% respectively for colostrums 1, 2, 3 and milk. Thesehigherlipid proportions couldincrease the organicenergylevel of piglets and makethem more resistant to microbialattack.

It has been highlighted the data of researches as for the influence of natural and climatic zones of Ukraine on display of economically useful signs of the most numerous cattle in the country like Ukrainian black-spotted dairy breed. It was the grounds to assert the efficiency of resources use in those conditions to which they are most adapted and have genetically determined potential. It was found that cowsof lactation breeding herds in the Forest-steppe zone produced 7344 kg of milk, which is 242 kg and 1125 kg more than in the Steppe and Polissya regions due to significant variation of the characteristic within each climatic zone (Cv = 11.6– 27,5%). The Polissya zone, where the animals' yieldwere 5764 kg, while in other climates 6982–6992 kg, does not contribute to the high productivity of the first lactation cows. It is proved that the duration of the service period in cows of three natural and climatic zones of Ukraine varied from 106 days in Polissya to 126 days – Forest-steppe, but it did not agree with the output of calves per 100 cows, which in 81 Polissya amounted to 82 and Forest-steppe – 79. The heifers of the Steppe zone are inseminated with live weight of 391 kg at the age of 477 days, and the Forest-steppe and Polissya with slightly less 385 kg and 387 kg, respectively, at the age of 493 days and 517 days. There is no significant difference in live weight at the ages of 6, 12 and 18 months between heifers of different natural and climatic zones of Ukraine, but the degree of development of the trait after 6 months was slightly better in cattle of the Steppe zone. A positive correlation was found between milk yield of first lactation cows of all natural climatic zones and their live weight at 6, 12 and 18 months of age, as well as negative calf age at first insemination (-0.587 ... -0.810) with significant correlation from the cattle of the Steppe zone. A high correlation coefficient (+0.703) was found in cows between live weight of heifers at first insemination and first lactation in the Polissya region. The aim of study was to evaluate the chemical composition, including mineral content, in milk of different breeds maintained in organic and traditional farms using intensive (PMR) and traditional feeding systems. The study was carried out on 47 farms in south-eastern Poland. A total of 735 milk samples were analysed, including 263 from cows raised on organic farms, 218 from cows raised on conventional farms using a traditional feeding system, and 254 from cows raised on conventional farms using an intensive feeding system (PMR). All types of farms raised Polish Holstein-Friesian and Simmental cows, and the conventional farms using a traditional feeding system also kept Polish Red and White-Backed cows. The highest (p≤0.01) daily milk yield and content of protein, lactose, dry matter and urea in the milk were obtained from the cows fed in the PMR system. The highest fat content was noted for the milk from the conventional farms using a traditional feeding system. The animals raised in the organic system produced the least milk, with the lowest concentrations of its basic nutrients. The highest mineral content was noted for the milk from the traditional system. The milk from the organic system contained the least Ca, Na, Mg, Zn and Fe, while the milk from the intensive system contained the least Mn. The content of Cu was similar in the milk from the organic and intensive systems and lower (p≤0.01) than in the milk from the traditional system. The results of two-way analysis of variance indicate that the breed of cow significantly influenced milk yield, protein content, protein-to-fat ratio, Ca and Zn concentration (p≤0.01), and the content of dry matter, Fe and Mn in the milk (p≤0.05). .

The study was conducted to investigate the nutritive value and microbial status of different wholesale cuts of sheep carcass. The meat sample was obtained from 3 sheep. The ages of sheep were approximately of 1, 2 and 3 years. The wholesale cuts were shoulder, rack, loin and leg of each sheep carcass. The pH, juiciness, chemical composition, total bacteria, coliform bacteria, yeast and mould were studied to assess the quality of meat. The range of pH value were 5.077 - 5.927. The value of juiciness was decreased with the age. The value of dry matter, ash, crude protein, ether extract, calcium and phosphorus content of all samples were ranged from 23.32-30.40%, 0.88-1.027%, 20.50-24.88%, 8.10-12.13%, 0.012-0.038% and 0.048-0.185% respectively. Statistical analysis indicated that the value of pH, juiciness, dry matter, crude protein, ether extract, calcium, phosphorus and yeast (log value) was highly significant (P< 0.01) due to age and cut. Chemical composition, such as dry matter, ash, ether extract and calcium of all the samples increased gradually with the age, except crude protein, which decreased gradually with the age. The phosphorus content of the sample did not differ significantly due to age and cuts. The value of ash content was less significant (P<0.05) due to different cuts but highly significant (P<0.01) due to age. The range of total bacteria and coliform bacteria was 4.210-4.787 and 2.38-3.637/g of sample respectively. The range of yeast was 1.297-2.777/g of sample. Different meat cuts and ages did not show significant difference on total bacteria and coliform bacteria but in case of yeast, the value was highly significant (P<0.01) for the ages and cuts. The aim of the study was to determine the effect of region, variety, year and ecological and conventional way of cultivation on the content of total protein and nitrates in potato tubers in three-year field trials. The effects of selected factors on nitrate and protein contents were similar, more significant for nitrates. Growing regions, varieties and years of cultivation caused statistically significant effects whereas the effect of ecological way of cultivation was less pronounced and showed a tendency without significance. Higher region showed lesser average nitrate (113.4 mg/kg) and protein content (4.27% dry matter) in comparison with lower region (143.7 mg/kg and 4.72% dry matter). The highest nitrate content was found in Impala and Karin varieties (199.2 and 167.6 mg/kg); Karin variety was also rich in total proteins (4.86% dry matter). Ecological way of cultivation showed no significant difference on nitrate content (136.9&nbsp;mg/kg) and protein content (4.41%) as compared with conventional way of cultivation (153.9 mg/kg, 4.32%).
