The article presents the results of studies of protein composition and nutritional milk value of Ukrainian Black-and-White dairy cows with different genotypes of kappa-casein. It was found that the milk of cows with the BB genotype contained more total protein by 0.41 and 0.28 %, the mass fraction of protein (Pro Total) – by 0.37 and 0.25 %, with a probable advantage over the protein content (casein) – by 0.46 and 0.29 % (p≤0.001) and the total amount of casein and globulin – by 0.39 and 0.27 % (p≤0.001) against analogs with genotypes AA and AB. There are differences in the chemical composition and physicochemical properties of milk. In particular, the difference in mass fractions of lactose and dry matter in milk between cows with the genotype BB and AA and AB was respectively 0.16 % (p≤0.001) and 0.11 % (p≤0.01) and 0.64 % (p≤0.001) and 0.37 % (p≤0.01). No less valuable in terms of mass fraction of dry matter was the milk of cows with genotype AB, in which the growth of this indicator against animals with genotype AA was at the level of 0.28 % with a statistically significant difference between them (p≤0.01). Freezing point and density as marker criteria that characterizing the presence of falsification were practically unchanged and did not exceed the permissible norms and amounted to 0.551–0.553 °С and 1028.04–1028.45 kg/m3. The content of somatic cells in the milk of cows of different genotypes of kappa-casein was within the permissible level according to the state standard, which indicates the absence of mastitis. Cows with genotype AA had an increased level of titrated acidity and concentration of free hydrogen ions (p≤0.01 – p≤0.001) against analogs with genotypes AB and BB. However, in general, the hydrogen pH of the milk of cows of all groups had a weakly acidic environment, the values of which ranged from 6.66 units. pH in cows with genotype BB up to 6.71 units. pH – in animals with genotype AA.

The analysis of literature sources on the question of the relevance of the influence of raw milk and its casein fraction on the production of rennet cheeses is presented in the paper. The studies were conducted to determine the suitability of using milk for the production of rennet milk from raw materials of cows of Ukrainian brown dairy and Ukrainian black-rumped dairy breeds of the state enterprise “Research Institute of Agriculture of the North East of NAAS”. As a result of the studies on the cheesiness of milk samples from the two study groups, we can conclude that, compared to the literature data, the average milk values obtained from cows of Ukrainian brown dairy and Ukrainian black-and-white breeds are confirmed. While analyzing the technological parameters of milk, it should be noted that there is no significant difference between the samples. We should note only that the first sample is inferior to fat by 0.41. This ratio of fat to protein, in turn, affects the yield of the product and its consumption characteristics. The first sample the creation of casein was in 3.2 min. faster , phase of gelforming – for 0.3 min. faster and the clot processing was done requiring 3 min less time. The consumption of milk per 1 kg of cheese in the first sample was lower than 0.4 in the second. It should be noted that the curd grain obtained from the milk of cows of the Ukrainian black-ruby dairy breed had a softer structure, ie it contained more moisture than the grain from the milk of cows of the Ukrainian brown dairy breed. This subsequently affected the mass fraction of moisture in the finished product in the direction of increase and was reflected in the organoleptic evaluation. As a result of the evaluation, members of the tasting committee noted that the consistency, taste and smell of cheese made from milk of Ukrainian brown dairy breed were slightly better. The difference was not significant and was respectively 1 point. It should be noted that the mass fraction of fat in the first sample was 1.3% higher than in the second sample. In this case, we observe a decrease in the mass fraction of moisture in the first sample compared to the second by 1.8%. The difference in terms of mass fraction of salt was not significant and is 0.1%. Considering the results of the presented studies, it should be noted that both samples of cheese of semi-solid cows made of milk of Ukrainian brown dairy and Ukrainian black-and-white breeds meet the requirements of state standart 4669:2006 in terms of organoleptic, physicochemical and microbiological parameters. However, the production of cheese from the milk of cows of Ukrainian brown dairy breed will reduce the loss of raw materials and produce cheese with better organoleptic characteristics.

The improvement of cattle of Black-and-White breed by mating of maternal stock with the sires of Holstein breed continues at the present time. Therefore, breeding in pedigree farms for the production of milk is carried out including the use of Holstein lines. The purpose of the work was to assess the milk productivity of cows of Black-and-White breed, with a high proportion of blood in Holstein breed, depending on their linear origin. In the herd of the breeding farm where the research has been carried out, the lines Reflection Sovereign 198998 and Wes Ideal 933122 occupy the dominant position in terms of the specific weight of cattle, followed by the line Montwick Chieftain 95679. The difference in milk yield between groups of cows of different lines was from 3,0 to 354 kg or 0,04 to 4,6 %. The highest milk yield was shown by the first-calf heifers of the line Wes Ideal 933122 – 7787±123,21 kg. In the milk of the first-calf heifers of the line Pabst Governor 882933 compared with herdmates of other lines the increased content of fat and protein has been noted,. The difference in the mass fraction of fat in milk was significant in favor of Pabst Governor 882933 cows (P ≤ 0,01–0,001). There was also the significant difference in the mass fraction of fat in milk between the groups of cows of the lines Montwick Chieftain 95679, Reflection Sovereign 198998 and Wes Ideal 933122 in favor of the latter at P ≤ 0,05–0,01. A definite association between milk yield and the mass fraction of fat in milk has not been established. There is a pattern of the positive association between the mass fraction of fat and the mass fraction of protein in milk and it is clearly seen that with the increase in the mass fraction of fat in milk, there is the increase in the mass fraction of protein.

Goal. To study the influence of interbreeding of Ukrainian black-spotted dairy cows with bulls of Swiss breeds on growth and development and exterior-constitutional features of repair young stock. Methods. Selection-genetic analysis, comparative, statistical. Results. Research and production studies were conducted on the basis of the breeding plant of SE "Pasichna" ICSGP NAAS "Starosinyavsky district of Khmelnytsky region on the population of purebred animals of the Podolsk factory type of Ukrainian black-and-white dairy breed (UCHRMP) and local animals obtained from crossbreeding bulls of the Swiss breed. According to the results of experimental studies in identical conditions of feeding and keeping young animals of the experimental groups, it was found that the highest live weight, both at birth and in subsequent age periods is characterized by local young animals. However, a significant difference between the groups of 12.9 kg (td = 2.15; P > 0.95) in favor of crossbreeds is observed only at the age of 18 months. When studying the absolute increase in live weight of experimental calves in the three-month dynamics of postnatal ontogenesis, which is an indicator of the intensity of animal growth, the advantage of local animals over purebred peers was also established. The largest significant difference in their favor is observed at the age of 7–9 months (3.1 kg, td = 2.29, P > 0.95). In all other periods of cultivation, the difference is not significant. Comparative characteristics of the degree of stress in the growth of animals, which was determined by the relative increase in live weight in the three-month dynamics showed that the most intensively growing animals of both groups from birth to 3 months of age (168.0–169.3%), then – with increasing age, the growth rate gradually decreases. A significant difference between the experimental groups, according to the above indicators, has not been established. The average daily gains in live weight of animals, for all periods considered, were higher in local animals. On average, from birth to 18 months of age, they were: local heifers 660 g, purebred – 637 g. External evaluation of the studied groups of heifers showed that purebred young at 18 months of age had the highest height at the withers by 1.2 cm, height in the buttocks – 1.4 and oblique length of the torso and buttocks, respectively, 0.8 and 0.7 cm compared to local young, but inferior to the latter in latitudinal measurements: chest width 1.2 cm, width in macula – 0.9 and width in the buttocks – 1.1 cm. In general, animals of both groups are well developed and have a harmonious physique. Conclusions. The results of the analysis of the dynamics of live weight of experimental groups of heifers, aged from birth to 18 months of age, show that local young animals obtained from crossing cows of Ukrainian black-spotted dairy breed with bulls of Swiss breed have slightly better performance than peers of purebred animals . However, the difference between the groups is in most cases unlikely. External evaluation of the studied groups of heifers showed that purebred young for all considered periods, from birth to 18 months of age, have higher indicators in height at the withers, height in the buttocks and oblique length of the torso and buttocks, but inferior to local in latitudinal measurements : chest width, width in macula and width in the buttocks. Thus, it can be argued that when using crossbreeding of Ukrainian black-and-white dairy cows with bulls of Swiss breed, the obtained young animals have slightly higher rates of growth and development, which will further positively affect the size and quality of milk productivity, reproductive capacity and duration use of cows herd.

A comparative assessment of beef in the interbreed and age aspects of animals carried out. A specific difference in the beef quality from meat and dairy breeds raised in Kyiv and Cherkasy regions has been determined. The influence of different parameters of weight growth and slaughter age on the chemical composition of beef of 20-22-month-old bulls of Ukrainian black-and-white dairy and meat breeds was established. The chemical composition of beef of young Ukrainian dairy and meat breeds has a significant difference. Meat bulls are inferior to dairy peers in terms of dry meat content (28.8 and 31.8%) and mineral content (5.9 times) and fat content (10.2 and 12.6 times). There is no difference in protein content between the groups. In the increasing the age of slaughter of young dairy and meat direction of productivity, the content of dry matter, minerals and fat does not change significantly. Only dairy animals at the age of 20 months have a higher protein content. Before the age of 22 months, animals of the Ukrainian black-and-white dairy breed tend to increase their fat content with a slight reduction in protein. The weight of the animals before slaughter does not affect the chemical composition of beef. The dry matter content with an increase in actual live weight before slaughter has only a tendency to increase. There is no significant difference in protein, fat and mineral content. With faster growth of animals of both breeds, only the protein content in beef tends to increase, and the content of minerals - to decrease. The meat of bulls of the Ukrainian meat breed tends to increase in fat by 0.3 points as their growth increases. Comparison of chemical composition m. Longissimus dorsi of Ukrainian black-spotted dairy and beef cattle shows that the beef of the Ukrainian meat breed, which responds to satisfactory feeding with rapid growth of muscle tissue and late formation of adipose tissue, meets the market requirements the most. The biological feature of these cattle, in contrast to the dairy breed, is that the increase in their weight up to 20-22 months of age is mainly due to the accumulation of muscle tissue and moderate growth of adipose tissue. Beef from it should be considered a lenten, so it is in great demand. The accumulation of fat in the bulls of the Ukrainian black-spotted dairy breed is somewhat intensified. The ratio of protein to fat at 20 months in bulls of Ukrainian black-and-white dairy is 1 to 0.29, while in Ukrainian meat - only 1 to 0.03

The article highlights comparative research results of milk quality indices obtained from the milking in specialized milking halls with such milking units as «Parallel», «Carousel» or in stalls with the milking unit «Molokoprovid». The fat and protein mass fraction, dry matter and fat-free dry matter, density, titratable and active acidity, heat resistance and freezing point have been determined according to the accepted techniques. The electrical conductivity of milk has been determined by using the analytical device MD-20 MAS-D-TEC. The total amount of milk bacteria has been determined by reductase reduction test and by seeding method in Petri dish. The milk quality has been investigated by the fermentation and rennet fermentation tests. The higher indices of the fat mass fraction, the protein mass fraction and the dry substance concentration of milk, obtained in specialized milking halls, have been established. This is not statistically significant. Milk, obtained from the milking unit «Molokoprovid», has higher index of titratable acidity, lower thermal stability in comparison with milk, obtained from specialized milking halls with milking units «Parallel» and «Carousel». It has been determined that there is the bacteria insemination increase in milk received from milking cows in stalls in comparison with milk, obtained from milking in specialized halls. Milk, obtained from the milking unit «Carousel», indicates the subclinical form of mastitis in cows or «Carousel» operation violationif there is in 1,8 mS/cm conductivity increase above average index 4,6 mS/cm. Abstract Background: Understanding the effect of pre-analytical factors is important for data quality of bio-specimens and health status. The study examines the effect of 9-days fluid intake and 2-time sampling on concentration changes of 7-Urine and 17-Blood variables. Material and Method: SPSS software v23.0 applies to data processing. The group of 23 healthy subjects divide based on water intake and gender. Results: A statistically significant difference(p<0.01) between 1st/2nd sampling is confirmed for Freezing point depression, Sodium, Potassium, Creatinine Urea and Urate in Urine and Urea, Urate, Glucose, Hematocrit, Thrombocyte in Blood. The difference between water intake after 1st sampling is confirmed (p<0.01) for Freezing point depression, Sodium, Urate and(p<0.05) for Potassium(p<0.05), Chloride(p<0.05), Creatinine(p<0.05), Urate, Urea in Urine and Potassium(p<0.01) and Chloride(p<0.05) in Blood. Difference between gender exists for Urea(p<0.05) in Urine after 2nd sampling and Urate(P<0.01), Glucose(p<0.01/0.05), Ht(p<0.01/0.05) after 1st and 2nd sampling and MCHC(p<0.01) after 2nd sampling in Blood samples.Conclusion: Water intake increases blood and urine biomarker range after sampling.

The theory and practice of breeding show that optimal results can be achieved by a complete evaluation of the genotype. The leading method of such an estimation is an index expression, which accumulates in one indicator the optimal ratio of breeding signs. In this aspect, it is important to use the breeding indices, which are estimated by the exteriors of animals, since breeding only on the indicators of milk productivity, namely on the level of fertility, contributes to the degradation of reproductive ability and, generally speaking, to the early extinction of the herd of animals. This determines the relevance of our work. The aim of the work was to study the effectiveness of selection first-born cows by the udder-mass-metric index in the herd of Ukrainian Black-and-White dairy breed.The research was carried out on 198 first-born cows Ukrainian Black-and-White dairy breed PAC "Yerchi". We used the basis of breeding records and the results of their own research.The differentiation of cows by the size of the wizard-mass-metric index was carried out according to the methodology of O. P. Polkovnikova wiith co-authors. Groups are conventionally called early, optimal and late.The results of our research showed that the first-born cows of the Ukrainian Black-and-White dairy breed, separated by the size of this index, significantly differ in their complexes features of the 100-score system of linear classification of the exterior type. The studied animals of the three groups for all the complexes of the 100-score system received rather high ratings: from 78.8 to 81.9 points, which corresponds to the classes "good" and "good with the plus" in accordance with international requirements.In general, there is a clear tendency that with an increase in the value of the udder-mass-metric index there is an increase in the overwhelming majority of complex features of linear classification, except for the complex features of the exterior, which characterizes the development of the body and gives an idea of the size of animals. Better were animals of groups II.With the increase in the size of the udder-mass-metric index in cows, the level of assessments of the main descriptive traits is also significantly increased. The best indicators of the descriptive features of the linear classification of the exterior were the group of animals of the Ukrainian Black-and-White dairy breed, which, according to the value of the udder-maso-metric index, are classified as high-value groups of magnitude 16.9 or more. units, the worst – animals of the first group (11.7 and less than units of scientists). The difference between animals of the best and worst groups in 50% of cases was reliable (P < 0.05–0.001).The dynamics of dairy productivity in a certain way "copies" the dynamics of group and descriptive signs of the exterior type of animals. That is, with the increase of the size of the udder-mass-metric index there is a linear increase in quantitative characteristics of milk productivity.The animals of the group III showed the best results in PAC “Yerchyky”. From them received 305 days of the first lactation of 6036 kg with fat content of 3.63% and the amount of milk fat and protein, respectively, 218 and 185.0 kg. The lowest counts are first-born cows of group I (5390, 3.57, 193.5 and 166.3 respectively). Animals of group II occupy an intermediate position. The difference between the groups of animals for milk productivity, differentiated by the size of the exterior index in 40% of cases was reliable.The distribution of animals by the size of the extermination index (UMMI) completely copies their location according to the overall assessment of the exterior type and the 305 days lactation, which again confirms the existence of a direct correlation between these features. That is, differentiation and selection of animals by the size of the udder-mass-metric index can be an effective method for improving the milk production and exterivation of animals in the milk breed herd of PAC “Yarchiki”.With the help of the exterior index, we can predict milk productivity, that is, with the increase in the value of UMMI per unit milk productivity, namely, milk for 305 days of lactation, increases by 323 kg.Increasing the value of the udder-mass-metric index is accompanied by an increase in the consolidation factor for all the blocks of attributes. That is, the selection with the maximum value of the index of group III will help to increase the typification of animals by the exterior type and productivity.We also studied the influence of the exterior index on the manifestation of exterior and productivity. The results of this analysis showed that the share of this index in the overall variability of the signs varies within the range of 1.87–16.88 among the signs of the 100-score linear classification system and 0.31–7.92 among the signs of milk productivity, but it should be noted, that in 70 and 80% of cases the force of influence was reliable, respectively (P < 0,05–0,001). On average, the impact strength of the 9-point linear classification system was 2.94%.

The scientific community has shown that the genetic improvement of dairy cattle depends on many genotypic factors, including paternal ancestry and lineage. With this in mind, the purpose of our research was to evaluate the Holstein bulls of black-and-white and red-and-white suits of different lines for the milk productivity of their daughters. The research was carried out on the basis of primary breeding records of 10 breeding herds of Ukrainian Black-and-White Dairy breed, 3 – Ukrainian Red-and-White Dairy breed and one – Ukrainian Red Dairy breed, which are subordinated to NAAS. Cows of the studied breeds has divided into groups according to lineage and paternal origin. Studies have revealed a significant differentiation of milk yield of cows of the first and highest lactation not only of one breed, but also of linear affiliation and paternal origin. It was found that the yield of the first lactation in cows of the Ukrainian Black-and-White Dairy breed varied from 3211 kg (Damir 7100354042) to 7884 kg (Dzhokus 113080315) of milk. Noteworthy are the daughters of Dzhokus 113080315, from which 9143 kg of milk were obtained for higher lactation, Polyarsten 342347941 and Manteno 344222859 – 8248 kg and 8290 kg of milk, respectively. The significant influence of paternal origin on the yield of Ukrainian Black-and-White Dairy breed cows of the first and higher lactation (31.0%; P > 0.999) and 37.3% has been proved; P > 0.999). The influence of genealogical formation on the milk productivity of cows was significant and amounted to 10.8% for the first lactation, higher – 10.2%. Some of the first-born Ukrainian Black-and-White Dairy breed has characterized by high milk productivity, which steadily increased until the third and higher lactation. The yield of cows of the Ukrainian Red-and-White Dairy breed of the first lactation varied from 5414 kg (Dialog 2009) to 6689 kg (Larets 6177), testifying to better homogeneity of herds in terms of milk productivity compared to the Ukrainian Black-and-White dairy breed. The highest yield of the third and highest lactation – 7626 kg, had cows-daughters of the bull Roman 660886883 Starbuck line 352790. The variability of milking cows of Ukrainian Red-and-White Dairy breed of the first and highest lactation by 25.0% and 15.2%, respectively, was due to the influence of the father offspring and to a lesser extent – belonging to the line. A very high (6517–8013 kg) realization potential of milking cows of the Ukrainian Red Dairy breed was established, but it also depended on the paternal origin and linear affiliation. The highest yield of the first lactation were shown by the daughters of the bull Belisar 365235897, Dzhorin 114414759 and Tumpi 112367468, who produced 8013 kg, 7323 kg and 7170 kg of milk, respectively. In cows of this breed it was found that yield increased with increasing serial number of lactation, with the third and higher lactation cows produced more than 8000 kg of milk per lactation, and the daughters of bull Dzhorin 114414759 – more than 9000 kg. The influence of the bull on the milk productivity of the first-born cows of the Ukrainian Red Dairy breed (16.7%; P > 0.999) is almost three times higher than this linear affiliation. Significant phenotypic variability of milk productivity of cows of different breeds of half-sisters by the father is established. The advantage of the daughters of the bull Belisar 365235897 of the Ukrainian Red Dairy breed on milking of the first lactation over the representatives of the Ukrainian Red-and-White Dairy breed was 1932 kg (p < 0.001). The difference in milk yield of the first lactation of the half-sisters by the father, the bull Konbeo 579810507 was 1007 kg (p < 0.01), and Roman 660886883 – 717 kg. Thus, a significant phenotypic variability of milk productivity of cows of different breeds of half-sisters by father was established. At the same time, regardless of the breeder, the cows of the Ukrainian Red Dairy breed were characterized by higher milk yield of the first lactation in comparison with the Ukrainian Red-and-White Dairy breed.

The aim of this research was to determine the effect of Cirripedia sp. flour as feed substitution of protein source in feed on the digestibility of dry matter and organic matter in 100 male rex broilers. The research was experimental by using a completely randomized design with four treatments and five replications. Substitution of Cirripedia sp. flour respectively in feed were 0%, 2.5%, 5%, 7.5% given for four weeks. Data collection was carried out in the fourth week (for seven days) which included consumption data, manure weight and analysis of treatment feed and manure analysis. The data were analyzed using Analysis of Variance and the difference between treatments was determined by the Duncan test. The results showed that there was no significant difference (p>0.05) and that there was no significant difference (p>0.05) on the digestibility of rex broilers. This shows that the substitution of Cirripedia sp. flour in feed can replace animal protein sources in fish meal in complete feed rabbits.Key words : Cirripedia sp, digestibility, feed subtitution, flour, rabbit.

It has been highlighted the data of researches as for the influence of natural and climatic zones of Ukraine on display of economically useful signs of the most numerous cattle in the country like Ukrainian black-spotted dairy breed. It was the grounds to assert the efficiency of resources use in those conditions to which they are most adapted and have genetically determined potential. It was found that cowsof lactation breeding herds in the Forest-steppe zone produced 7344 kg of milk, which is 242 kg and 1125 kg more than in the Steppe and Polissya regions due to significant variation of the characteristic within each climatic zone (Cv = 11.6– 27,5%). The Polissya zone, where the animals' yieldwere 5764 kg, while in other climates 6982–6992 kg, does not contribute to the high productivity of the first lactation cows. It is proved that the duration of the service period in cows of three natural and climatic zones of Ukraine varied from 106 days in Polissya to 126 days – Forest-steppe, but it did not agree with the output of calves per 100 cows, which in 81 Polissya amounted to 82 and Forest-steppe – 79. The heifers of the Steppe zone are inseminated with live weight of 391 kg at the age of 477 days, and the Forest-steppe and Polissya with slightly less 385 kg and 387 kg, respectively, at the age of 493 days and 517 days. There is no significant difference in live weight at the ages of 6, 12 and 18 months between heifers of different natural and climatic zones of Ukraine, but the degree of development of the trait after 6 months was slightly better in cattle of the Steppe zone. A positive correlation was found between milk yield of first lactation cows of all natural climatic zones and their live weight at 6, 12 and 18 months of age, as well as negative calf age at first insemination (-0.587 ... -0.810) with significant correlation from the cattle of the Steppe zone. A high correlation coefficient (+0.703) was found in cows between live weight of heifers at first insemination and first lactation in the Polissya region.
