Abstract Oleaster (Elaeagnus angustifolia L.) is a fruit with special nutraceutical value which grows under a wide range of climatic conditions in Europe and Asia. In the present study, the effects of oleaster flour (15%, 30% and 45%) and active gluten at (0 and 3%) on the physical, chemical and sensory properties of sponge cakes were assessed. The best sample was selected based on the qualitative properties and compared with the control with respect to the staling rate and nutritional aspects. In order to decrease the calories, the sucrose content of the selected sample was replaced with potassium acesulfame and isomalt at the levels of 30%, 50% and 70%. Oleaster flour increased the density but decreased the hardness and cohesiveness of the cake. Active gluten decreased the density and hardness but increased the cohesiveness and springiness. Considering the qualitative properties of the sponge cakes, the sample containing 30% oleaster flour and 3% gluten (30 OFG) was selected as the best. Replacement of the sucrose in 30 OFG increased the hardness, density, redness and yellowness of the crumb. With 30% sucrose replacement, the quality of the product was adequately maintained. The use of oleaster significantly increased the calcium, potassium, crude fibre, fat and total phenolic compound contents of the sponge cakes as compared to the control. The sample containing 30% oleaster flour and 3% gluten with 30% sucrose replacement showed appropriate physicochemical, textural and sensory properties.

The most important process in immortelle is the extraction of the essential oil by distillation. The chemical properties of the plant depend largely on the cultivation type, climatic conditions and agrotechnical measures. In this work, studies were carried out on organically grown and wild immortelle harvested during the summer (July) and autumn (October) seasons of 2020. Immortelle samples were prepared by drying naturally in two ways: in direct sunlight and in shade. To extract the essential oil, immortelle was distilled in two ways: on an industrial and a laboratory scale. The essential oil was analyzed by gas chromatography to determine the composition and quality of the essential oil. The results of this work showed that the qualitative properties of the essential oil were influenced by the cultivation type, harvesting time, preparation method and distillation method. A higher yield (0.21% ± 0.03) of essential oil was obtained from wild immortelle whereas a better utilization rate (0.38% ± 0.09) of essential oil was obtained from the organically grown immortelle. It was also found that a higher yield of essential oil was obtained from the summer harvest (0.19% ± 0.01) and a higher utilization rate from the autumn harvest (0.33% ± 0.13) with the industrial scale distillation and shade drying. In general, better qualitative properties of immortelle essential oil were obtained from wild immortelle, which was confirmed by a chromatographic analysis and better content of γ-curcumene (16.64% ± 0.30) and neryl acetate (8.15% ± 0.19) and other constituents except α-pinene where organically grown had a higher share (24.27% ± 0.97).

Masa is a traditionally fermented meal usually made from cereals. The aim of this research was to produce an enriched meal from rice and Bambara groundnut. The colour, functional properties and microbial quality of composite blend of rice and Bambara groundnut flour, in the ratio of 100:0, 95:5, 90:10, 85:15, 80:20, were evaluated using standard methods. Sensory properties of freshly made masa and masa prepared from stored flours were also determined. The microbial load of the masa flour blend increased over the storage period. Water absorption capacity, swelling capacity and bulk densities increased, while the oil absorption capacity decreased with the storage period. The objective colour result showed a decrease in the lightness (L*) value. Sensory properties of masa were not substantially altered with Bambara groundnut inclusion, but the ratings reduced with storage. Instant masa may be prepared from flour stored for 4 weeks without considerable changes in quality.

ABSTRACT: Meloidogyne javanica is a plant-parasitic nematode that infects a wide range of vegetables. Its negative effects on crop yield and value are well documented. However, few studies have investigated the impact of the parasite on the nutritional value of vegetables. This study aimed to assess the effect of M. javanica parasitism on the vegetative characteristics, nematological parameters, chemistry composition and antioxidant activity of carrots. Seedlings were inoculated with 0 (control), 1000, 2500, or 5000 eggs and eventual second-stage juveniles (J2) of M. javanica. At 60 days after inoculation, plants were harvested and evaluated. Plants inoculated with 2500 eggs and J2 of M. javanica had higher root and tuber fresh weight than the control. Gall number increased with increasing inoculum density. The number of nematodes in the roots increased until 3000 specimens, decreasing thereafter. Proximate analysis revealed that plants inoculated with 1000 eggs and J2 of M. javanica or more had higher protein content in roots. In contrast, inoculation with 1775 nematodes or more resulted in a decrease in carotenoid content. There was no effect of inoculation on total phenolic content or antioxidant activity. Although, M. javanica infection did not have a marked impact on the nutritional quality of carrots, gall formation resulted in deformed roots of low commercial value.

The objective of this research was to study the effect of sacha inchi pressed-cake (SPC) on the physical, chemical and sensory properties of tuiles. The addition of SPC in tuiles can increase the nutritive value in terms of protein and antioxidant efficiency. The ratios of SPC to wheat flour varied from 50:50, 60:40 and 70:30 by weight. The color, textural properties and antioxidant activities of tuiles were determined. The sensory evaluation was conducted by 30 elderly with age between 60 to 70 years. Results showed that the moisture, protein and fat contents of the tuiles with sacha inchi pressed-cake (TSPC) significantly increased with increasing level of SPC. The color values (L*and b*) of tuiles also significantly decreased (P ≤0.05), while a* value significantly increased (P ≤0.05) when increasing SPC content. The textural properties showed that increased level of SPC resulted in increase of hardness and crispness of TSPC (P ≤0.05). Tuile with 50% SPC showed the highest sensory quality attributes of liking and JAR. In conclusion, the total phenolic content and antioxidant activities by DPPH, FRAP and ORAC assay of TSPC at the ratio of SPC to wheat flour of 50:50 were higher than tuile without SPC.

The extent to which sheep, cattle, feral goats, red kangaroos, western grey kangaroos, euros and eastern grey kangaroos are equivalent in their use of the Australian southern rangelands is partly dependent on the extent to which their diets and foraging areas overlap. These herbivores all eat large amounts of green annual grasses, ephemeral forbs and the green leaf of perennial grasses when they are available. Overlap in use of these forages by all seven herbivores is concurrent and high. As the abundance of these preferred forages declines, sheep, cattle and feral goats consume increasing amounts of mature perennial grasses and chenopod and non-chenopod perennial forbs. Red kangaroos and western grey kangaroos continue to graze mature perennial grasses longer than sheep, cattle and feral goats, and only switch to perennial forbs when the quantity and quality of perennial grasses are poor. Consequently, overlap in use of perennial forbs by sheep, cattle, feral goats, red kangaroos and western grey kangaroos is sequential and moderately high. When palatable perennial forbs are eaten out, the diets of all herbivores except feral goats comprise predominantly dry perennial grass, and overlap is again concurrent and high. In comparison, feral goats have higher preferences for the browse of a wide range of shrubs and trees, and switch to these much earlier than the other herbivores. When perennial grasses and perennial forbs become scarce, sheep, feral goats and cattle browse large shrubs and trees, and overlap is sequential and high. If climatic conditions remain dry, then red and western grey kangaroos will also browse large shrubs and trees, but overlap between them, sheep, cattle and goats is sequential and low. In contrast to the other herbivores, the diets of euros and eastern grey kangaroos are comprised predominantly of perennial grasses, regardless of climatic conditions. As for diet composition, concurrent overlap in foraging distributions of sheep, cattle, feral goats and the four species of macropods is often low. However, over periods of several months to two or three years, as climatic conditions change, overlap in foraging distributions is sequential and high. While equivalency in what and where these herbivores eat is not quantifiable, it appears to be high overall. This is particularly so for perennial grass, which is the dominant forage for herbivores in the southern rangelands.

In this study, Cudrania tricuspidata (CT) containing abundant phytochemicals, such as xanthones and flavonoids, was evaluated as an additive to fortify the functionality and organoleptic quality of fermented milk. The physicochemical, functional, and sensory properties of fermented milk supplemented with different concentrations of CT powder were investigated. Increasing amounts of CT powder elevated the malic acid concentration, increasing the total acidity and decreasing the pH of fermented milk supplemented with CT powder. The viable cell count and free sugar contents of fermented milk indicated that supplementing with CT powder improved lactic acid fermentation slightly. The color of fermented milk supplemented with CT powder was darker, redder, yellower, and more pleasing than the control fermented milk. The total phenolic and flavonoid contents of fermented milk supplemented with CT powder rose as the concentration of supplemented CT powder increased, resulting in enhanced antioxidant and antimutagenic activities. The CT powder improved the functionality of the fermented milk; still, at 2% or more, it had some unfavorable sensory properties, such as sourness, taste, and texture, which reduced the overall consumer preference. Therefore, a CT powder concentration of 0.5% or 1% may be acceptable to consumers.

The paper presents an analysis of the quality of soft wheat grown in different soil and climatic conditions of the Russian Federation and having a wide range of quality indicators (the amount of gluten - from 15.3 to 29.4%, the quality of gluten - from 29 to 84 units. IIR, falling number - from 134 to 475 sec). Revealed significant differences in the quality of modern Russian wheat from the wheat of the late XX century. The interrelationships of indicators of quality of grain, flour obtained from it, rheological properties of dough with indicators of quality of bread on a modern instrument base using an alveograph, valorigraph and mixolab have been established. The study of the rheological properties of the dough on the mixolab was carried out in the classical "Chopin Wheat +" mode. According to the profiler parameters (radial diagram), it was found that the analyze grain was characterized by increased rates of starch retrogradation, which characterizes the carbohydrate-amylase complex of flour, a high water absorption index, and increased amylolytic activity; low viscosity and gluten +. To differentiate the strength of wheat, a test laboratory baking of bread was carried out using two methods - the remix method and the reduced-remix method, which showed that the most stable relationships were revealed when baking bread with the remix method. When baking with the abbreviated method, higher indicators of bread quality were obtained, but there are fewer stable relationships, moreover, both for wheat containing less than 25% gluten and more than 25%.

Nutritional and commercial value of the apricot fruits depends on the interaction among several factors, including the management strategies, the environmental conditions, and the genotype. This study aimed to evaluate the effect of orchard management and pedoclimatic conditions on apricot fruit quality traits (soluble solids, titratable acidity, dry matter and soluble solids and titratable acidity ratio) and phytochemical content (total phenolic content and antioxidant activity). Two apricot cultivars (Kioto* and Pieve*) were subjected to three different organic systems: (i) a standard management (BAU), (ii) an innovative diversified system with reduced tillage based on the natural cover conservation (INC) and (iii) an innovative diversified system with introduction of different cover crops (ICC), for two consecutive years (2019–2020). Overall, besides the effect of the climatic conditions, the multivariate analysis revealed the role of management systems, rather than genotype, on the quality of apricot fruits. In particular, INC soil management positively affected soluble solids, titratable acidity and dry matter parameters, especially in environments with low precipitation and high solar radiation (20.7 ± 1.7 g 100 g−1 FW, 19.9 ± 2.5 g MA 100 g−1 FW and 0.23 ± 0.2 g 100 g−1 FW respectively). In addition, the results indicate that ICC management showed the highest antioxidant values (1.45 ± 0.19 μg of Trolox equivalent (TE) 100 mg−1 FW), especially in the environment with high precipitation. This study was a useful tool for farmer to choose an effective organic system management in order to obtain fruits with high quality parameters.

Wastewater discharge into rivers has a negative impact on the quality of water resources. The existing methods for assessing the anthropogenic load from the discharge of wastewater into rivers do not allow one to compare and rank according to the degree of load rivers that differ in the size of the catchment area and are located in different natural zones. The author has developed a method for assessing and analyzing the anthropogenic load on rivers from the discharge of pollutants, which takes into account the water content of rivers and basin features of the formation of the quality of water resources. The proposed method makes it possible to determine the integral and differentiated loads for priority pollutants. It allows you to decompose the load into separate components (nitrogen, phosphoric, sulfate, chloride, etc.), to standardize the load taking into account the quality of river waters and to assess the priority of specific pollutants. This method has been tested on 12 rivers in Russia located in different natural and climatic conditions and having a wide range of water runoff values from 10 to 600 km3 / year. The calculation results showed that p. The Volga is experiencing the greatest anthropogenic load from the discharge of pollutants in wastewater. Therefore, first of all for the river. On the Volga, it is necessary to develop a basin program for the gradual reduction of anthropogenic load and mechanisms for its implementation
