Fresh-cut diced (1 cm3) kohlrabi (Brassica oleracea L. Gongylodes Group) `Kompliment F1' washed with chlorinated (100 mg·L-1) water was stored in modified atmosphere packaging (MAP) up to 14 days at 0 °C. Samples were packed in 35-μm oriented polypropylene (PP) bags or in plastic trays heat-sealed with unperforated or perforated (control) PP film. Changes in respiratory rate, ethylene emission rate, microbial growth, color, browning, decay, sugar contents, chemical attributes (soluble solids content, pH, and titratable acidity), and sensory attributes (visual appearance, aroma, flavor, and texture) were monitored. Cutting resulted in an increased CO2 production compared to the whole stem, ranging from 2-fold immediately after cutting, to 8-fold at day 4. The equilibrium atmospheres within bags and trays were 6% O2 plus 13% CO2, and 13% O2 plus 8% to 9% CO2, respectively. In both MAP treatments, microbial development was delayed compared to air (control). The total aerobic counts were lower than 7.7 log CFU/g, which has been defined as are commended limit criteria. No physiological disorders, decay. or off-flavor developed. Therefore, sensory quality attributes were suitable for commercial purposes. However, fresh-cut kohlrabi stored in MAP had slightly better color retention and microbial quality than the control.

The optimal ripeness stage for processing and marketing fresh-cut mangoes (Mangifera indica ‘Kent’) with best quality and maximum shelf life was determined. The initial ripeness stage selection was based on whole fruit firmness because this quality attribute was more reliable in predicting fresh-cut shelf life than flesh color or soluble solids content (SSC). Overall, the visual quality deteriorated differently and at different rates among ripeness stages. The shelf life, based on subjective visual evaluation, was 10, 7, and 5 days for ripeness stages corresponding to an average flesh firmness of 35, 30, and 25 N, respectively, and was mainly limited by desiccation and development of off-odor for the two firmer ripeness stages or symptoms of edge tissue damage and spoilage for the least firm stage. The slices from fruit with the highest initial firmness remained firmer during storage, had the lowest pH and SSC to titratable acidity (TA) ratio, and had the highest contents of volatile ketones and esters. The softest slices had the highest pH, SSC:TA ratio, and total ascorbic acid (TAA) content, as well as the lowest TA and highest volatile aldehyde and alcohol contents. Intermediate firmness slices had intermediate pH, SSC:TA ratio, color, and TAA content. Also, they had less volatile alcohols and aldehydes than slices from riper fruit but had similar content of esters as slices from the less ripe fruit. Therefore, based on the results from this study, an initial firmness of 30 N is recommended to process mangoes into fresh-cut slices because it assures the best quality and maximum shelf life based on textural, visual, and compositional attributes.

The objective of this work was to determine the effects of postharvest application of 1-methylcyclopropene (1-MCP) and two calcium salts, applied individually or combined, on firmness and visual quality of fresh-cut muskmelon stored in air, for 18 days. Two sets of fruits, one of them exposed to 1-MCP at 300 nL L-1, were cut into cubes, dipped in deionized water, or in 1% Ca solutions as CaCl2, or in calcium amino acid chelate (Ca-chelate), placed in clamshell containers, and stored in air at 5±1ºC and 90±5% RH, for 18 days. The assay was conducted using an entirely randomized design, with three replications, in a split plot array. Evaluation of visual appearance, color, flesh firmness, total soluble solids, titratable acidity, and pH was performed right after treatments, and every period of three days, up to eighteen days. Application of 1-MCP at 300 nL L-1, calcium chloride or Ca-chelate, or the combination 1-MCP and calcium, preserved initial freshness and reduced softening of the samples. Ca-chelate synergistically enhanced the effect of 1-MCP on firmness after nine days of storage, while calcium chloride improved firmness of the samples throughout storage. Ca-chelate may serve as an alternative for shelf life extension of cantaloupe fresh-cut muskmelon.

The effect of revalorized Bimi leaves (B) and/or mustard (M) addition, as supplementary ingredients, to develop an innovative kale (K) pesto sauce was studied. Microbial, physicochemical (color, total soluble solids content -SSC-, pH and titratable acidity –TA-) and sensory quality were studied during 20 days at 5 °C. Bioactive compounds changes (total phenolics, total antioxidant capacity and glucoraphanin contents) were also monitored throughout storage. The high TA and pH changes in the last 6 days of storage were avoided in the K+B pesto when adding mustard, due to the antimicrobial properties of this brassica seed. SSC was increased when B + M were added to the K pesto, which positively masked the kale-typical bitterness. Mustard addition hardly change yellowness of the K pesto, being not detected in the sensory analyses, showing K+B+M pesto the lowest color differences after 20 days of shelf life. The addition of Bimi leaves to the K pesto enhanced its phenolic content while mustard addition did not negatively affect such total antioxidant compounds content. Finally, mustard addition effectively aimed to glucoraphanin conversion to its bioactive products. Conclusively, an innovative kale pesto supplemented with Bimi by-products was hereby developed, being its overall quality well preserved up to 20 days at 5 °C due to the mustard addition.

Five strawberry (Fragaria × ananassa Duch.) cultivars were grown in Queensland, Australia to determine whether higher temperatures affect production. Transplants were planted on 29 April and data collected on growth, marketable yield, fruit weight and the incidence of small fruit less than 12 g until 28 October. Additional data were collected on fruit soluble solids content (SSC) and titratable acidity (TA) from 16 September to 28 October. Minimum temperatures were 2 °C to 4 °C higher than the long-term averages from 1965 to 1990. Changes in marketable yield followed a dose-logistic pattern (p < 0.001, R2s = 0.99). There was a strong negative relationship between fruit weight (marketable) and the average daily mean temperature in the four or seven weeks before harvest from 29 July to 28 October (p < 0.001, R2s = 0.90). There were no significant relationships between SSC and TA, and temperatures in the eight days before harvest from 16 September to 28 October (p > 0.05). The plants continued to produce a marketable crop towards the end of the season, but the fruit were small and more expensive to harvest. Higher temperatures in the future are likely to affect the economics of strawberry production in subtropical locations.

The aim of this study was to determine some physicochemical characteristics of fruits of eight strawberry cultivars (Aromas, Camino Real, Campinas, Dover, Oso Grande, Toyonoka, Tudla-Milsei and Ventana) cultivated in organic and conventional systems. The evaluated characteristics were soluble solids (SS), titratable acidity (TA), SS/AT ratio and anthocyanins. Evaluated sensory characteristics were flavor and appearance. The cultivars had a differential performance between themselves and among the systems for the evaluated characteristics. Generally, the conventional system produced fruit with higher levels of soluble solids and, organic system produced higher concentrations of anthocyanins. The fruits of the cultivar Toyonoka had the best soluble solids content in both systems and the anthocyanins content of 'Tudla-Milsei' and 'Camino Real' were proeminent in comparison to the other cultivars. The fruits from the organic system of production were preferred by judges on the sensorial attributes. The highest notes were given to the appearance of the cultivar Ventana in the conventional system and 'Tudla-Milsei' in the organic system.

The research was done at Aleksandras Stulginskis University (Vytautas Magnus University Agriculture Academy since 2019) in 2017–2018. The research object was kombucha beverage brewed from Camellia sinensis L. black, green, oolong, pu-erh tea and fermented for 9 and 22 days by microorganisms at different room lighting conditions. The soluble solids content, active acidity and titratable acidity were determined in teas fermented for 22 days. The total amount of phenolics compounds, antioxidant activity, yeast colonies and sensory evaluation of tea were determined in teas fermented for 9 days. The research results showed that the quality of fermented tea was dependent on the tea species, but fermentation conditions were not essential. During the fermentation the soluble solids content of tea decreased by an average of 0.60% and the content of acetic acid increased by 0.34%. The highest content of acetic acid was found on the 22nd day of fermentation in all species of teas. The active acidity (pH) of all investigated species of teas decreased significantly during the fermentation process. The total content of phenolic compunds in all species of teas during the fermentation increased from 20 to 57% regardless of fermentation conditions. The highest content of total phenolic compounds was established in teas fermented for 9 days. The antioxidant activity of teas fermented for 9 days varied depending on the fermentation conditions. For black and green teas fermented in the light the antioxidant activity decreased, for oolong and pu-erh teas fermented in the dark the antioxidant activity increased. The number of yeast colonies increased in all tea samples during the fermentation. The best taste was fixed for pu-erh tea, which scored the highest (11.4) in sensory evaluation.

Hancornia speciosa is a fruit tree, popularly known as mangabeiras. The mangaba, fruits of this tree, are quite appreciated for their organoleptic characteristics. Because it is a climacteric fruit, this fruit has very high perishability. The use of products that extend the useful life is necessary. Calcium chloride (CaCl2) has been shown to be an alternative in post-harvest because it promotes few changes in fruit quality and increases the storage period. Thus, the objective of this work was to evaluate quality attributes of mangaba fruits in two stages of maturation, 'Immature' and 'Mature', submitted to CaCl2 application, in four storage times (0, 2, 4 and 6 days) under ambient atmosphere. During the experiment, the loss of fresh weight, color, pH, titratable acidity, soluble solids and SS/TA ratio were evaluated. It was verified that the 'mature' fruits showed a higher acidity and soluble solids content, even with the application of CaCl2, the difference that the loss with the application of CaCl2 was smaller. Unlike '‘Immature’ and ‘Immature’ fruits with CaCl2 in which these characteristics were acquired as the experiment was conducted, in addition to presenting lower values for weight loss, pH and color.

Abstract The study was conducted to determine the effects of Myrobalan rootstock and Blackthorn interstock on fruit physical and chemical traits of five apricot cultivars. The results showed that cultivars grafted on Myrobalan rootstock appear to induce a higher fruit mass when compared with the Blackthorn interstock. Blackthorn interstock showed a tendency to induce a higher soluble solids/titratable acidity ratio than Myrobalan. Values of soluble solids content, total sugars, titratable acidity and fruit firmness between Myrobalan rootstock and Blackthorn interstock were not significant. Regarding cultivars, the greatest fruit mass observed in Roxana in both treatments, and the lowest in Biljana on Myrobalan and in Vera on Blackthorn. The lowest soluble solids, total sugars and soluble solids/titratable acidity ratio were found in Roxana in both variants of grafting, whereas the greatest titratable acidity also observed in Roxana in both cases, respectively. Based on the results from this study, the fruits of Roxana can be recommended for fresh consumption, whereas fruits of the other cultivars can be recommended for processing.

Recently, there is increasing use of edible and biodegradable films and packaging that are both environmentally friendly and functional for storage and market distribution. Fresh-cut ‘Fuji’ apples, harvested in an organic farm, were treated, using a spraying technique, with three new edible coatings based on Aloe vera gel (AVG—40% v/w) and in combination with natural additives: lemon essential oil (LEO—1% v/w) and hydroxypropyl methylcellulose (HPMC—0.1% v/w) and compared with untreated sample (CTR), the physicochemical and sensory characteristics and the proximate compounds were evaluated. During cold storage, weight loss, soluble solids content, and color of uncoated slices were reduced, while softening, ripening, browning, and acidity were accelerated. In contrast, the AVG/HPMC treatment significantly delayed the above parameters related to post-harvest quality loss, while the AVG/LEO treatment delayed the browning processes, maintaining an excellent color during cold storage. Concerning proximate compounds, the treatments did not alter their concentration in the fruit tissues. Sensory analyses revealed no detrimental effect on taste, aroma, or flavor. Our data evidenced the positive effect of Aloe vera gel in combination with LEO and HPMC on fresh-cut apple quality as an innovative and sustainable technique to maintain fresh-cut apple quality.

This study was designed to determine the qualitative and microbiological impact of two different sources of irrigation water on tomato fruit: groundwater (GW), as the control, and treated agro-industrial wastewater (SW). The mean tomato fruit quality parameters of dry matter, weight, diameter, colour index, pH, soluble solids content, titratable acidity, Ca<sup>2+</sup> and Na<sup>+</sup> content were not significantly affected by the different water treatments. Conversely, NO<sub>3</sub> <sup>–</sup> contents was significantly higher with GW use, than with SW (2.21 <em>vs</em> 1.62 mg 100 g<sup>–1</sup>, respectively; P≤0.05). The microbial quality of the tomato fruit was not significantly different across the GW and SW treatments, with no <em>Salmonella</em> spp. isolated from any of the fruit, and the faecal indicators always below 10 CFU g<sup>–1</sup>. These data show that agro-industrial treated wastewater can be used for irrigation for industrial tomato production once the long-term effects on the agroecosystem have been defined.
