AbstractThis study examined the impact of the ozonation procedure on the content of bioactive compounds in young shoots of Pinus sylvestris L. as well as on the yield and the composition of the essential oils and volatile fraction. The ozonation process consisted of exposure of the raw material during 5, 15 and 30 min to the ozone gas with the concentration of 10 and 100 ppm, and then it was stored for 24 hours. In the ozonated pine shoots, the content of vitamin C overall content of polyphenol content and antioxidant potential were determined. It was found that the investigated parameters increased as a result of the utilized procedure. The observed increase in the content of tested bioactive compounds was dependent on exposition time and was found to be highest for ozonated material for 15 min with ozone gas at a concentration of 10 ppm. As a result of the ozonation procedure the content of polyphenolic compounds and vitamin C content increased. Whereas it, did not have a significant effect on composition of the obtained essential oils. It was found that ozone is an effective elicitor, which allows increasing the content of bioactive compounds in pine shoots.

ABSTRACT: The objective of this research was to evaluate the nutritional composition and bioactive compounds of whole umbu fruit, including pulp, seed and peel, and also of a commercial umbu pulp. Samples of the fractions and of commercial pulp were analyzed for determination of minerals and proximate composition, total phenolic and antioxidant activity. Pulps and peel were also analyzed for vitamin C and carotenoids contents. Commercial pulp presented better nutritional composition than fresh pulp (P<0.05) and the peel presented higher phenolic content and antioxidant activity than seed. Peel also stood out by its vitamin C (79 mg.100 g-1) and total carotenoids (2,751 µg.100 g-1) contents, showing that, as the main barrier of the fruit for its protection, it is a fraction rich in bioactive compounds. The highest dietary fiber and iron contents were observed in umbu seed (P<0.05). Therefore, umbu by-products may be ingredients proper for development of food richer in nutrients and bioactive compounds.

AbstractThe chemical variability and antioxidant activity of the flower and leaf essential oils (EOs) of Ammoides pusilla, collected at Algeria was evaluated. The EOs were isolated by hydrodistillation and analyzed by Gas Chromatography (GC) and Gas Chromatography-Mass Spectrometry (GC-MS). Antioxidant activity was assessed by DPPH, ABTS, Reducing Power and TBARS assays. Oxygen-containing monoterpenes (54-77%) dominated all but one A. pusilla leaf EOs, and in two flower EOs (53% both). Thymol dominated in practically all leaf and flowers EOs, but cumin alcohol, p-cymene and limonene attained also relatively high percentages in some EOs. A strong negative correlation (p<0.01) between IC50 values of ABTS, DPPH, and hydroxyl scavenging activity and the percentages of p-cymene and cumin alcohol present in EOs were observed, showing that higher levels of these monoterpenes were responsible for the best activities found. In spite of this finding, the antagonism and/or synergism between EO components must be taken into account, since the EO activity can only be considered as a whole. Moreover, given the EOs chemical variability their use as antioxidants, should be preceded by their chemical evaluation.

Fruit jellies are widely produced as a way to utilize fresh fruits, which are highly perishable. Orange a fruit widely consumed in Brazil, it has a significant amount of bioactive compounds. Despite the great progress in the development of jellies, several factors can change its useful life, among them is the packaging. Therefore, the objective of this study was to evaluate the effect of packaging on the physicochemical, physical, microbiological and bioactive compounds stability of low-calorie orange jellies during storage. Analyses every 30 days during the 180 days of storage. The results showed that increased storage time led to a decrease in pH, reduction of the flow rate (polypropylene packaging), reduction in yellow intensity, and growth of fungi and yeasts (higher in polypropylene packaging). In contrast, luminosity, red intensity, moisture, total sugars, and the consistency index tended to remain stable during storage. The DPPH results showed an increase in the antioxidant activity and reduction of vitamin C throughout the period of storage, especially in polypropylene packaging. The total phenolic content was stable with a tendency to decrease during storage. Notably, vitamin C showed a positive correlation with antioxidant activity in jellies. Low-calorie orange jellies packaged in glass showed the least changes during storage.

This study carried out a chromatographic and spectrophotometric characterization of the bioactive compounds, antioxidants, phenolics, tocopherols, sterols and fatty acids of baru almonds “in natura” and submitted to drying processes. It was determined that baru “in natura” almonds presented high levels of phenolic compounds, vitamin C, antioxidants, phenolics, sterols, total monounsaturated fatty acids and low thrombogenic, and atherogenic indexes. During the process of drying it at 65 °C for 30 minutes, a decrease was noted in the levels of caffeic acid, chlorogenic acid, anthocyanins, p-coumaric acid, ferulic acid, o-coumaric acid, quercetin, and polyunsaturated fatty acids. The same condition resulted in an increase in the levels of gallic acid, rutin, catechin, trans-cinnamic acid, vanillin, m-coumaric acid, tocopherols, monounsaturated fatty acids and antioxidant activity (ORAC and DPPH). When submitted to a temperature of 105 ºC for 30 minutes the same behavior was seen with a reduction in the vitamin C and ORAC contents and increased presence of flavonoids.

Food technology seeks ways to preserve products while maintaining high bioactive properties. Therefore, an attempt was made to assess the effect of the process of impregnation with apple-pear juice and the drying process on the content of bioactive compounds in chokeberry fruit. Chokeberry fruits were subjected to impregnation with apple-pear juice at three levels of vacuum pressure, 4, 6, and 8 kPa; then, they were dried using microwave-vacuum technology. The water activity of the obtained products, the content of fructose, glucose, sorbitol, and polyphenolic compounds, and antioxidant activity were determined. A total of 20 polyphenolic compounds were identified in the fruits and the obtained products (seven anthocyanins, six flavonols, four phenolic acids, and three flavan-3-ols). Preliminary processing, which consisted of introducing the juice ingredients into tissue of the chokeberry fruit, resulted in increased content of bioactive compounds. Moreover, a positive effect of impregnation on the antioxidant stability of the fruit after drying was noted. Water activity in the obtained products showed their microbiological safety. Impregnation at 4 kPa vacuum pressure proved to be the most desirable; in such conditions, the best product in terms of the content of bioactive compounds was obtained.
