QUALITATIVE BEEF INDICATORS OF THE MIXED BREEDS CATTLE

The article presents results of a study of the quality indicators of cross-bred steers raised in the conditions of modern fattening technologies. For the experiment, four groups of experimental young animals were selected: the first group included animals obtained from crossing Kalmyk bulls with crossbred cows from crossing Salers breeds with Simmental; the second group-bulls obtained from crossing Kalmyk bulls with crossbred cows, from crossing Salers bulls with black-and-white cows; the third – animals obtained as a result of crossing Hereford bulls with crossbred cows obtained from Salers bulls with Simmental cows; the fourth-bulls obtained as a result of crossing Hereford bulls with crossbred cows from crossing Salers bulls with Red pied cows. Each experimental group had 30 goals. It was found that the combination of the origin of crossbred animals of ½ blood of the Hereford breed with crossbred animals with ½ blood of the Salers and Simmental breeds contributes to a faster accumulation of live weight compared to their peers, which confirms their high "precocity" and better metabolism in the body. Over the entire period of the experiment, the bulls of the third experimental group outperformed their peers of other groups in terms of live weight dynamics, slaughter indicators and meat quality. Crossbreeding of Hereford bulls with cows with the genotype ½ Salers with Simmental breed contributed to the highest manifestation of the genetic potential of meat productivity in comparison with the studied peers.

Animals imported to Yakutia from other regions fall into feeding and housing conditions that differ from their usual agro-climatic conditions, which causes the problem of their adaptation. Yakutia is one of the areas where the feed of its own production has a lack of basic minerals, which affects the health and productivity of animals, which has an additional negative influence on the adaptation process of imported cattle. In order to replenish macro- and microelements in the body, it is necessary to introduce various local mineral feed additives, premixes, and use mineral salts into the ration. Under the conditions of Central Yakutia the influence of local mineral feed additives (zeolite of the Khonguruu Deposit in the Suntar district and sapropels of local lakes) containing macro- and microelements that increase the meat productivity of steers has been studied. As a result of the research the influence of local mineral feed additives on meat productivity and physiological condition of Hereford steers has been established. Influence of zeolite and sapropel in a complex with mineral salts on digestibility of nutrients of the ration and use of nitrogen, calcium and phosphorus by experimental animals has been defined. The influence of feed additives on the quality of meat products has been studied. The results have shown that the use of local mineral feed additives in the composition of ration of steers during the fattening period at a dose of 0,7 g zeolite per 1 kg of live weight of the animal and 200 g of sapropel in combination with 10 g of mineral salts contributed to the gain in live weight, carcass weight, carcass yield, yield of edible parts, and economic efficiency of fattening. For the entire period of the experiment the gain in live weight in groups was: in control group 2222,9 kg, in the 1st experimental group 2396,2 kg, in the 2nd experimental group 2471,1 kg. The total economic effect for the 1st experimental group for the period of experiment amounted to 44,3 thousand Rubles, for the 2nd experimental group 78,0 thousand Rubles or per 1 head/day 14,06 and 24,76 Rubles, respectively.

The antioxidant drug "E-selenium" was used to reduce the processes of LPO in the body of fresh cows. Two groups were formed from the analogous cows of the black-and-white breed: The Control was intact, Experienced received the antioxidant drug injection at a dose of 10 ml at the rate of 1 ml per 50 kg of live weight per head for 4 months of lactation from the second. The diets of animals of all groups were the same, balanced in nutrients and met the standards of the RAAS. The duration of the experiment was 150 days. During the period from the 3rd to the 5th month of lactation, there was a positive dynamic in increasing the number of fat globules in the milk of cows of the Experimental group. By the end of the 4th month, it was higher than the Control by 8.9 %. This confirms the active effect of the drug "E-selenium", which contributes to a positive dynamic in increasing the size of fat globules. Non-enzymatic antioxidant tocopherol is an active element of the anti-oxidative system. Selenium stimu-lates the body's own antioxidant system. In both experimental groups, the relationship between the concentration of peroxidation products and the quantitative composition of fat globules and their size was established. In the milk of cows of the Experimental group, the oxidation processes were inhibited by neutralizing the products (POL), increasing the number of large fat globules and the total fat content in the milk.

The purpose of the research is to increase the effectiveness of the supplement Reasil on the growth of milk-fed calves. For the scientific and economic experience, three groups of calves were formed (control, 1 and 2 experi-enced). Groups of animals of 10 heads were formed according to the principle of analogues. The indicators of live weight, growth and blood of calves were studied after Reasil use in a diet: Reasil HumicVet as a liquid form, and Reasil Humic Health – reduced to powder. In the experiment, animals of a black-and-white breed were used. The Reasil feeding in the diet contributed to an increase in the live weight of milk-fed calves in the 1-st and the 2-nd experimental groups at two months of age by 5.65 and 5.48 kg (or by 7.4 and 7.2%), respectively, compared to the indicator of the control group analogues. The average daily growth of calves of the experimental groups exceeded this indicator of control animals by 96 and 82 g, respectively. The blood of calves of the 1st and 2nd experimental groups, showed that hematoglobin was higher by 15.7 and 11.4%, red blood cells – by 16.5 and 15.1%, and the alkaline reserve – by 5.2%, compared with blood of calves from the control group, which indicates the activation of metabolic processes in the body. The total protein amount in the blood serum of animals from the experimental groups increased by 8.4 and 5.9% respectively, compared to the tests of calves from the control group. The albu-min content of animals of the 1st experimental group tested was higher by 5.3%; from the 2nd experimental group there was no significant difference compared to the control. The number of gamma-globulins in the blood of ani-mals of the experimental groups increased, which indicates an increase in defense reaction of animals. The con-tent of calcium in the blood serum of calves from the experimental groups was higher by 8.3 and 5.9%, phosphorus – by 4.8 and 2.4%, which indicates a more effective use of these mineral elements.

The effect of pyridoxine hydrochloride on the body mass of animals, absolute and average daily increment, relative growth rate, growth factor of live weight and multiplicity of increase in live weight of calves in the early stages of postnatal ontogenesis were studied. For the experiment, six groups of one-day calves (control and five experimental) were formed, with 5 animals in each, which, in addition to the main diet (MD), fed pyridoxine hydrochloride in different doses, according to the scheme: control group – MD, I experimental group – MD + 1 mg/kg g. m pyridoxine hydrochloride, II – MD + 2 mg/kg g. m of the preparation, ІІІ – MD + 3 mg/kg of w. m., IV – MD + 4 mg/kg g. m and V experimental group – MD + 5 mg/kg g. m pyridoxine hydrochloride. Conditionally, the research was divided into four periods: colostrum – from birth and up to 5 days, until the formation of digestion – from 5 to 21 days, the period of the formation of digestion scar – from 21 to 60 days and the end of the milk period – from 60 to 90 days. It was established that feeding to calves with pyridoxine hydrochloride resulted in an increase in the live weight of 60 days of calves by 5.9% in the second group (P < 0.05), by 8.7% in the third group, by 8.3% in IV and 9.2% in V groups (P < 0.001) and for 90 days it was higher by 9.3%, 9.1%, 9.2% and 9.1% respectively (P < 0.05). The highest average daily increments were in the colostrum period in calves IV and V groups, which were added to the main diet, respectively, 4 and 5 mg/kg b.w. pyridoxine hydrochloride, in the period prior to the formation of digestion scar in calves of group IV, in the period of the formation of digestion scar in calves of the III group and at the end of the milking period in calves of group V. Absolute incresements of calves in the colostrum period and the period prior to the formation of digestion scar were the highest in calves of Group IV and the difference in control was respectively 0.34 and 1.05 kg. During the period of the digestion scar formation and the end of the milk period, the highest absolute increases were in calves of group V, which was added to the main ration of 5 mg/kg b.w. pyridoxine hydrochloride. The highest increase in body weight of calves in colostric period and prior to the operation scar rate was in group IV, the period of digestion scar formation was in the third group and during the completion period of milk in the second group of calves. In colostric period the increase of live weight was higher in calves III, IV and V groups of 5 to 21 days in calves of group IV, from 21 to 60 days in the third group and during the completion period of milk in the second group of calves.

In Transnistria own production is not able to meet the needs of meat processing enterprises in beef. Due to natural and climatic conditions beef breeds are not grown in this region. All beef production in Transnistria is carried out at the expense of dairy breeds of cattle. The search for ways to effectively produce beef in Transnistria is an urgent problem. The purpose of the research was to determine the effectiveness of the use of purebred Black-and-White steers and crossbreds with Holstein breed in the production of beef in Transnistria. A comprehensive study of meat productivity and meat qualities of purebred and crossbred steers, when they are reared and fattened to different age periods. In all age periods the steers of the experimental group surpassed their herdmates in live weight. It has been found that at the age of 3 months the difference was 14,8 kg (P < 0,01), 6 – 23,9 kg (P < 0,001), 9 – 21,4 kg (P < 0,001), 12 – 38,1 kg (P < 0,001), 15 – 40,3 kg (P < 0,001), and 18 months – 33,5 kg (P < 0,001). The maintenance and fattening of young animals in equal conditions allowed to reveal the most optimal variant of rearing of crossbreds to 18-month age with a live weight of 500–510 kg and their transfer to slaughter. Characterizing the profitability of production of live weight gain in the experimental group of animals, it has been found that the most profitable (34,8 %) was the rearing of animals up to 18 months of age, which is by 2,3 % higher than when rearing steers up to 16 months of age, and 2,4 % higher than when rearing them up to 20 months of age.

The growth, development and meat qualities characteristics of different genotypes lambs he growth and development features of three different genotypes ram-lambs, from their birth to six months age, were studied, in particular: purebred youngling of the Ascanian Fine-Fleeced breed (AFF), a cross of this gene pool with the Texel (AFFxT) and Merinolandschaf (AFFxM) breeds. Control over the growth and development these experimental animals was carried out by weighing in different age periods. The meat quality was assessed based on the slaughter results. It was found that the best development parameters were characteristic for the Texel crossbred with the Ascanian Fine-Fleeced breed; therefore, this crossing option has the meat productivity highest genetic potential. Summary. The disbalanced feeding and the uneven distribution of micro- and macroelements in the environment leads to a trace element, in particular hypomelanosis. To accelerate the growth and preservation of young farm animals include in the diet of various biological additives and drugs, which include selenium. For stimulation of weight gain in the livestock industry, as well as for the prevention and treatment of pathological processes in addition to micro - and macrouse amino acids, primarily methionine. The aim of this work was to study the influence of composition of DAFS-25+Polizon on morpho-biochemical parameters of blood and functional state of the liver in fattening bulls of black-motley breed in the conditions of the Republic of Bashkortostan. Experiments using were conducted on bull-calves of black-motley breed of the properties in the properties age from 6 to 15 months. The first experimental group during the experiment was additionally given the composition of DAFS-25+Polizon at a dose of 2 mg/kg, the animals of the control group received a standard diet. To assess the impact of the composition DAFS-25+Polizon on metabolism cattle studied morphological and biochemical indicators of blood and conducted histological examination of the liver. It is established that the use of the composition of DAFS-25+Polizon at a dose of 2 mg/kg increases the number of erythrocytes and hemoglobin in the experimental group and reduces the amount of white blood cells. The serum content of total protein, phosphorus and calcium increases in the group of experimental animals. Microscopic examination of the liver revealed no changes in the structure of the organ and hepatocytes in the experimental group, whereas in the control group hemodynamic disorders and dystrophic changes in liver cells were observed. Thus, the use of the composition DAFS-25+Polizon at a dose of 2 mg/kg of live weight in fattening bulls black-and-white breed contributes to the increase of redox processes in the body, stimulation of metabolism, prevent the development of liver disorders of cellular mechanisms of metabolism, optimizes the structure of the liver, which generally provides higher productivity.

Mycotoxins have been formed in feed are secondary metabolites of fungi and are quite stable substances that have teratogenic, mutagenic and carcinogenic effects. An effective way to combat mycotoxins in feed is the use of feed additives that adsorb toxins, prevent their absorption in the gastrointestinal tract of the animal and are excreted from the body. The infl uence of coconut enterosorbent Shelltic Es on fattening and meat qualities of young pigs has been studied. It has been found in the process of fattening that the highest feed digestibility was in pigs of the experimental group, in the diet of which enterosorbent has been added. The results of studies of the chemical composition and technological properties of pork have been provided. The positive eff ect of enterosorbent on precocity, absolute average daily gain of live weight and reduction of feed expenditures per 1 kg of gain has been revealed. In pigs from the experimental group the average thickness of the fat was higher and the area of the “muscle eye” was lower compared with animals of the control group, which indicates that higher rates of carcass yield have been obtained due to faster accumulation of fat tissue. The weight of internal organs of pigs indicates the intensity of metabolic processes in the body. In experimental animals the weight of the lungs was 0,1 kg lower, and the liver and heart were higher by 0,13 and 0,01 kg, respectively. Enterosorbent had no effect on the content of vitamins in the liver of pigs of the compared groups. The content of impurities of organochlorine toxicants and toxic elements in the meat and liver of animals of the experimental group was lower than that of control analogues. Therefore, the use of enterosorbent Shelltic Es promotes more active excretion of them from the body.

The purpose of the work was to study and identify the main factors aff ecting the quantity and quality of beef produced and sold in the Southern Federal district. A comparative assessment of the growth, development, formation of meat productivity and quality of beef of young animals of beef, dual and dairy breeds with stall-pasture technology and intensive rearing in the industrial complex. Experimental studies have been carried out in farms in the Rostov region. The object of research was cows with calves of Kalmyk, Hereford, Aberdeen-Angus, Russian komolaya, Kazakh White-headed breeds, as well as young animals of the same breeds, in addition, Black-and-White and Swiss breeds. Removable live weight in Hereford steers at 18 months of age was 658,0 kg, and Aberdeen-Angus – 655,2 kg. Domestic steers of Kalmyk were 41–44 kg lower in live weight than their herdmates of two imported breeds. However, with intensive rearing at 18 months of age, steers of Kalmyk breed had a removable live weight of more than 613,7 kg and a carcass weight of 326 kg. The yield of hot carcass was 55,4 %, and the slaughter yield was 58,89 %, which was only 1–2 % lower than the world’s leading beef breeds. It has been found when analyzing the results of boning the half-carcasses of experimental steers that the biggest weight of half-carcasses and the content of muscle and fat tissue in them in absolute terms were in Hereford steers. Steers of Kalmyk breed took the third place in terms of weight of large-sized semi–fi nished products and signifi cantly lost to Aberdeen-Angus herdmates by 7,3 kg or 6,5 %, and Hereford steers by 9,2 kg or 8,3 %. The results obtained prove the expediency of using stallpasture technology in the dry-steppe zone of the Southern Federal district when rearing young animals for beef up to 350–400 kg live weight at 15 months of age and its subsequent intensive rearing under industrial technology, in order to obtain the live weight of more than 570 kg and produce cost-eff ective beef.

Purpose: evaluation of pigs Yorkshire rocks and Landraz on PRKAG3, MC4R and MyOD1 markers.Materials and methods. The paper presents the analysis of the results of genetic testing, and determines the frequency of alleles and genotypes of Yorkshire and Landrace breeds at the State Enterprise ZhodinoAgroPlemElita" of the Minsk region of the Republic of Belarus by the genes-markers of productive traits: PRKAG3, MC4R and MYOD1. Zootechnical and molecular genetic methods were used in the research (PCR/PDRF). Snapshot analysis was developed for the genotyping of pigs to detect polymorphic markers of meat-feeding productivity of pigs on the Genas PRKAG3, MyOD1, MC4R. At the first stage, there was an assessment of tribal young (173 heads) on its own productivity in terms of indicators: the age of achieving the living mass of 100 kg, the average daily increase (d) from birth to the live weight of 100 kg, the length of the body (cm), the lifetime meat quality of the thickness of the scrape (mm), height of the longest back muscles (mm), the content of meat in the body (%). At the second stage of the research, the controlling fastenings of 200 goals of pigs and evaluation of feedst and meat qualities in the following indicators were carried out: the age of achieving a living mass of 100 kg (days), the average daily increase (d), feed consumption per 1 kg of growth (to. Units). Also determined: the length of the carcass (cm), the slaughter output (%), the thickness of the spick over 6-7 breast vertebrae (mm), the area of "muscular eye" (cm2), the mass of the rear third of the half carcass (kg), the flow of meat in the carcus (%). Then, genetic studies were compared with productivity indicators.Results. As a result of the research, it was found that in the tested animals, the frequency of the preferred allele I-PRKAG3 made 0.171-0.288, A-MC4R – 0.243-0.315, and C-MYOD1 – 0.064-0.477, respectively. The developed comprehensive system for assessing the breeding value of Yorkshire and Landrace pigs based on the marker genes PRKAG3, MC4R, and MYOD1 allowed us to identify the preferred alleles and determine correlation with productivity traits that provided increase in the average population values: for self-productivity - by 2-4%, for fattening traits - by 2.7-12.5%, for meat traits - by 2.8-34.4 %.Conclusion. The use of integrated system in pig breeding will speed up the selection work to increase the indicators of fattening and meat productivity of the created breeding herds of Yorkshire and Landrace pigs.
