The paper contains the results of the first comprehensive analysis of Bashkir honey. Qualitative and quantitative palynological (pollen), organoleptic and physicochemical analyses described properties of 30 honey samples selected from 22 districts of the Republic of Bashkortostan. The qualitative pollen analysis found that most of the samples belonged to monofloral honey. Linden honey prevailed among the samples. Sunflower and buckwheat honey varieties were also common. The analysis found single samples of Viper's Bugloss, Melitot, rapeseed, Cirsium, Bird's foot, polyfloral, and honeydew honey types. The quantitative palynological analysis confirmed the results of qualitative analysis in most cases. Mismatches in honey varieties with underrepresented pollen (Cirsium and Carduus types of honey) were revealed. Also, the analysis found features inherent in several samples of Bashkir linden and buckwheat honey. The features are associated with an increased concentration of plant elements in their composition (64 500–74 600 and 26 500, respectively). The organoleptic analysis reduced the number of monofloral honey samples from 26 to 18. In 8 cases, small admixtures of honey with the characteristic properties affected the samples' quality. Organoleptic characteristics of linden honey were also revealed in honey samples with a low proportion of Linden pollen in the pollen spectrum (6 %). The physical and chemical analysis confirmed the botanical origin of linden, buckwheat, Viper's Bugloss, and honeydew honey samples. The study revealed that quite often, even small admixtures of certain types of honey (linden, buckwheat) had a positive effect on the sample's physical and chemical parameters. Heat treatment was established in half of the sunflower honey samples. The complete analysis results provide the basis for identifying characteristics of premium varieties of Bashkir linden and buckwheat honey. These varieties demonstrate an increased proportion of pollen from the honeybee plants and a high plant element concentration.

The paper presents the results of technological evaluation of red wine varieties breeded by All-Russian Research Institute for Viticulture and Winemaking: Vesta, Cherny, Zhemchug, Au-gusta, Teremnoy, Mugofir. These varieties are characterized by high sugar accumulation. Li-queur wines were prepared using classical tech-nology. The research was conducted in the la-boratory of wine technology in micro-wine production. The weight of one batch of grapes was 10–25 kg. The main physical and chemical parameters of wort and wine were determined. Wine distillate was used as an alcoholic agent. For maintaining and enhancing the varietal aroma of grapes we used technology of frac-tional alcoholization. With the help of degusta-tions, organoleptic characteristics of the ob-tained samples of liqueur wines were carried out, as a result of which preliminary conclusions were made about the feasibility of using the studied varieties for the preparation of red li-queur wines. All the studied grape varieties can be recommended for the production of liqueur wines, pink and red.

The purpose of the research is improving the efficiency of energy utilization of diets for Black-motley breed bull-calves through the use of probiotic drug Biogaran.The experiment was conducted in SPK-collective farm «Heroi» Chekmagushevsky district in the Republic of Bashkortostan. Group formation was carried out according to the principle of analogues taking into account breed, sex, age and body weight. 4 groups were formed of 6-month-old bull-calves of Black-motley breed and control (I) and 3 experimental (II, III and IV) for 15 heads each. In the diets of young II, III and IV groups in addition to the basic diet were injected with 3.5 g; 7.0 and 10.0 g of probiotic feed additive Biodarin per 1 kg of concentrated feed. Animals treated with the drug at a dose of 7.0 g/kg of concentrated feed, in comparison with their peers of the control group better digested dry matter by 1,64% (P<0.01), organic – 1,25% (P<0.05), crude protein – 2.97% (P<0.05), crude fiber – 1,53% (P<0.05) and BEV – 2.64% (P<0.05). Using in feed rations of large horned livestock young growth feed additive «Biodarin» has positive effect for energy metabolism: energy interchancing increased by 1.02-1.79 per cent, the energy gain is increased by 10.96-of 19.72%.

The article concerns the research of the herb Common Agrimony (Agrimonia eupatoria L.) use in the kvass manufacture, because the plant has a high content of flavoring and biologically active substances (flavonoids, tannins, arbutin, etc.). Researchers used standard, adopted in the brewing and soft drinks industry test methods and methods of processing obtained results. To produce kvass with the best quality characteristics, a man has to use Agrimonia eupatoria L. extract. In order to obtain this extract with the maximum amount of flavoring and biologically active substances (polyphenolic substances, ascorbic acid) a man must macerate 3-5 mm cut grass using purified water as a solvent in a ratio of 1:10 at a temperature of 40 ± 3 °C for 5-6 hours. Agrimonia eupatoria L. extract is an opaque brown liquid with a weak greenish tint, weakly expressed sweet-apricot aroma and taste; the mass fraction of dry substances is 3.0 ± 0.1 %; acidity – 2.5 ± 0.2 units; the content of polyphenolic substances is not less than 13.5 mg / 100 cm3; the content of ascorbic acid – not less than 4.5 mg / 100 cm3 . The authors developed kvass technology, including the preparation of kvass wort and Agrimonia eupatoria L. extract separately, its blending, fermentation, cooling, clarification and bottling. Based on the organoleptic and physical and chemical parameters obtained during the study, the researchers recommended the optimal ratio of kvass wort and Agrimonia eupatoria L.: 90:10 – 80:20. They developed regulated quality indicators of the new kvass: appearance – a transparent foaming liquid with opalescence, without foreign inclusions; color – brown with greenish tones; aroma and taste – refreshing, sweet and sour, bread, with light tones of Agrimonia eupatoria L. extract. The use of an aqueous extract from the herb Agrimonia eupatoria L. in the kvass production enables to get products with original organoleptic characteristics

The paper examines environmental problems of a city with a developed mining industry. Their influence on social stability, public health and demography, labor activity, migration, etc. was revealed. The methodology for assessing social and ecological tension for the city of Sibay in the Republic of Bashkortostan was tested, based on the approaches developed by I.A. Sosunova for the regions of Russia. The main materials for calculating the socio-ecological tension of the city were data from the analysis of information on the socio-economic and ecological state of the territory, conducting a sociological survey of the population, as well as assessing the ecological and geochemical state of the environment by a set of ecological indicators. All indicators were assessed using five-point scales. The final indicator was the index of social and ecological tension, which was determined by dividing the sum of points for the indicators under consideration by their number. As a result of a comprehensive analysis, it was revealed that the socio-ecological tension of the city of Sibay includes: Gorny (3,7) Yuzhny (3,2) Center (2,7) Gold (2,6) Eastern (2,4) Fishermans House (2,3) Arkaim (1,6). The use of the category of socio-ecological tension in the proposed interpretation makes it possible to identify sociological problems of behavior and society. The results of the study are recommended to be used for a comprehensive analysis of indicators for monitoring urbanized territories of a mining region, which determine its environmental safety and sustainable development, ranking the territory as well as a set of economically justified measures to include them in the programs of strategic development of the region.

The results of technological studies of intro-duced wine grape varieties growing on the ampelographic collection of the Institute are shown: Barhatny, Viorica, Golubok, Megra-buer, which are characterized by high sugar accumulation. Liqueur wines were prepared according to the classical technology and the main physical and chemical parameters of the wort and wine were determined. The research was carried out in the laboratory of winemak-ing technology in the conditions of micro-wine production. The weight of one batch of grapes was 10–25 kg. Wine distillate was used as an alcoholic agent. To preserve and enhance the varietal aroma of grapes, the technology of fractional alcoholization was used. As a result of the organoleptic characteristics of liqueur wine samples, preliminary conclusions were made about the feasibility of using the studied varieties for the preparation of liqueur wines. All the studied grape varieties can be recom-mended for the production of liqueur wines.

Water is essential for life, important for the ecosystem and it is in great demand due to its scarcity. This study explored the reuse of the wastewater of the Water Treatment Plant in Gramame for agricultural purposes. A qualitative and quantitative investigation of the effluent was carried out through the characterization of its physical and chemical parameters, comparing the results to what is allowed by the current legislation, CONAMA Resolution 357/2005. After this process, the activated charcoal of coco-da-baia mesocarp, adsorbent material, was prepared and tested in a filter system in a column with a continuous flow and ascendant entrance, in which the kinetic effect was evaluated. This technique was evaluated by correlating the reduced values in the adsorption material, respecting the initial effluent concentration, obtaining a reduction of 50% in the hardness, 87.5% in chloride and 66.6% in acidity. These results verified the adequacy of the technique in potential hydrogenation (pH) and abrupt reduction of color and turbidity. This treatment is suggested to qualify the effluent for use in agricultural, safe for humans and the environment. The adsorbent substrate efficiency was verified by correlating it with the Thomas isothermal model.

Определены физико-химические показатели 12 образцов сухих и полусладких белых и красных столовых вин, выработанных одним предприятием и разлитых в стеклобутылку (СБ), бутылку из полиэтилентерефталата и упаковку «пакет в коробке» (ПВК) в феврале 2018 г. холодным и горячим способами, с целью установления влияния упаковки на изменение органолептического состава и физико-химических показателей столовых вин. Физико-химический анализ и дегустация представленных образцов столовых вин проведены в марте 2018 г. с использованием общепринятых методик. Установлено, что через месяц после розлива в упаковку все опытные образцы соответствовали требованиям действующей нормативной документации на данный вид продукции и обладали оптимальными физико-химическими показателями, кроме образца полусладкого красного вина в СБ, который на момент анализа был подвержен микробиологическому воздействию. Во всех исследованных образцах столовых вин обнаружен 1,2-пропиленгликоль, но его содержание не превышало допустимых норм. По итогам дегустации для сухих столовых вин рекомендован розлив в СБ, поскольку холодный розлив, применяемый при этом виде упаковки, практически не влияет на изменение органолептических характеристик продукта. Для полусладких вин рекомендуется горячий розлив, поскольку он препятствует забраживанию и задушке вина, а розлив в упаковку ПВК позволяет сохранять качество вина. Physico-chemical parameters of 12 samples of dry and semi-sweet white and red table wines produced by one enterprise and poured into a glass bottle (GB), a bottle of polyethylene terephthalate and a bag-in-box in February 2018 by cold and hot methods were determined in order to establish the influence of packaging on the change in the organoleptic composition and physico-chemical characteristics of table wines. Physical and chemical analysis and tasting of the presented samples of table wines were carried out in March 2018 using generally accepted methods. It was found that a month after filling in the package, all prototypes met the requirements of the current regulatory documentation for this type of product and had optimal physico-chemical parameters, except for the sample of semi-sweet red wine in the GB, which at the time of analysis was exposed to microbiological effects. In all the studied samples of table wines 1,2-propylene glycol was found, but its content did not exceed the permissible norms. Following the results of the tasting, bottling in the GB is recommended for dry table wines, since the cold bottling used in this type of packaging practically does not affect the change in the organoleptic characteristics of the product. For sweet wines it is recommended that hot-filling because it prevents fermenting and suffocating wine and bottling in bag-in-box allows to preserve the quality of the wine.

В статье представлены результаты применения аэрозольных обработок кальций-содержащим препаратом «Мастер Грин Ca», дана оценка показателей качества винограда в процессе длительного хранении. Исследования проводились в течение 2020 г. в условиях Республики Крым на столовых сортах винограда: Италия, Ред Глоуб, Шоколадный и Молдова. Применение аэрозольных обработок способствовало изменению динамики относительного сахаронакопления сортов Молдова, Ред Глоуб и Италия, к концу хранения массовая концентрация сахаров превышала контрольные значения в диапазоне 3,9-17,6 %. Отмечено снижение активности полифенолоксидазы в опытных вариантах: у сорта Италия после 30 и 90 суток хранения - на 43 и 5 % соответственно, у сорта Ред Глоуб к концу хранения активность снизилась на 40,8 %. Установлено снижение значений естественной убыли массы винограда при применении аэрозольных обработок исследуемым препаратом: у сорта Ред Глоуб - на 44,6 %, у сорта Шоколадный - на 8,5 %, у сортов Молдова и Италия - на 24,4 %. Аэрозольные обработки оказали положительное влияние на органолептические показатели в период хранения, обеспечив гибкость гребня, сохранность естественного окраса, тургора ягод и гармоничности вкуса. Образцы винограда, обработанные препаратом «Мастер Грин Ca», были оценены на уровне 7,71 балла (Ред Глоуб) и 8,93 балла (Италия). The article presents the results of using aerosol treatments with calcium-containing preparation Master Green Ca, the assessment of grape quality indicators in the process of long-term storage is given. The studies were carried out during 2020 in the conditions of the Republic of Crimea on table grapevine cultivars: ‘Italia’, ‘Red Globe’, ‘Shokoladnyi’ and ‘Moldova’. Using of aerosol treatments contributed to changes in dynamics of relative sugar accumulation in the cultivars ‘Moldova’, ‘Red Globe’ and ‘Italia’; by the end of storage, the mass concentration of sugars exceeded the control values in the range of 3.9-17.6%. A decrease in the polyphenol oxidase activity in experimental variants was registered: for the cultivar ‘Italia’ after 30 and 90 days of storage - by 43 and 5%, respectively; for the cultivar ‘Red Globe’ by the end of storage the activity decreased by 40.8%. A decrease in the values of natural loss of grape weight when using aerosol treatments with the studied preparation was established for the cultivars: ‘Red Globe’ - by 44.6%, ‘Shokoladnyi’ - by 8.5%, ‘Moldova’ and ‘Italia’ - by 24.4%. Aerosol treatments had a positive effect on organoleptic characteristics during storage ensuring preservation of stem flexibility, natural color, turgor of berries and balanced flavor. Grape samples treated with Master Green Ca preparation were rated at the level of 7.71 points (‘Red Globe’) and 8.93 points (‘Italia’).

Lake Ray is a unique natural object of the Republic of Kazakhstan. It is located in the Balkhash depression of the Almaty region. The waters of the lake are characterized by a peculiar hydrochemical and mineral composition, which can be used for various types of health tourism and recreation. The study aimed to show scientifically substantiated therapeutic and health-improving attractiveness of the territory of lake basins, to attract investment in the development of tourism. This study presents the physicochemical and spectral analysis of water and therapeutic mud. Organoleptic characteristics (color, odor, consistency, structure) and sanitary and microbiological indicators of the declared sample of mud, physical and chemical indicators of the declared sample of water have been determined. The results indicated that the physicochemical composition of water and brine met the regulatory sanitary and epidemiological requirements and could be used in stationary medical institutions and physiotherapy. Lake Ray in the Republic of Kazakhstan has a unique variety of hydromineral recreational resources.
