The purple sweet potato cracker product is the result of the creativity of the women's farmer group in Padahanten village. Until now, purple sweet potato crackers have not been able to become the main commodity in helping the economy of the women farmer group. Only a few members sell crackers. However, in practice sales are so small that they cannot be used as a reliable source of income. This is caused by various factors, one of the contributing factors is product packaging and product marketing. Product packaging currently only uses simple plastic without using a brand or logo, so it is less attractive to consumers. For marketing only through local residents and stalls in the village. In the manufacturing process, women farmer groups have not used tools/machines to speed up the production process. So it takes a relatively long time to produce crackers. In this community service activity, the packaging design will be made to the manufacture of marketing media in the form of web marketing. With this is expected to increase consumer interest and marketing. In addition, the manufacture of production equipment and training will be given to the women's farmer group in Padahanten Village in order to increase the production speed of the purple sweet potato cracker product.

Purple sweet potato is one of the agricultural products that has several advantages such as attractive color, high content of antioxidant, fiber and carbohydrate compounds and has a low glycemic index value. However, similar to the other agricultural products, the availability of purple sweet potatoes is seasonal, perishable, moldy and rotten. Proper processing with equipment or simple expertise can increase the economic value of purple sweet potato, so that it can be done by any group of people from either upper, middle or bottom. The purpose of this community service activities was to provide the technical guidance on processing the purple sweet potato into food products, namely noodles and sponge to open new business opportunities for group of housewives in the area of ​​community service partners namely Kampung Ladang Bambu, Medan Tuntungan. The expected outcome of this community service activity is the formation of a new business by a group of housewives to be able to increase the community income in Ladang Bambu Village, Medan Tuntungan. Purple sweet potato starch is known for its anthocyanin content and has a high carbohydrate content, especially starch. Starch extraction in purple sweet potato can cause browning due to the presence of PPO enzymes which results in decreased anthocyanin content in the resulting starch. Ascorbic acid can be used as an anti-browning agent. The analysis results obtained are the drying of purple sweet potato starch can be done for 4 hours because at that time the water content has been constant for a long time of further drying. The anthocyanin content of purple sweet potato starch decreases with increasing concentration of the addition of ascorbic acid, but the addition of ascorbic acid causes an increase in antioxidants of purple sweet potato starch because ascorbic acid is one type of antioxidant

<p><em>Higher education student is known as agent of change that can play a significant role on the transformation of the social life of a society. However, the idealism of students is often hampered by the availability of funds. On the other hand, someone who works as a lecturer at a higher education has a responsibility to do the three pillars of higher education (Tri Dharma Perguruan Tinggi), one of which is to carry out community service activities. To carry out the community service, a lecturer has many opportunities to obtain funds from various funding bodies. This article discusses the community service activity that was done by implementing a synergy between a group of lecturers and students who are the members of the Food Science Technology Student Association (HIMAGHITA) Universitas Sebelas Maret in the Village of Koripan, Matesih Sub-district, Karanganyar Regency. The purpose of the community service activity is to introduce the processing technology of purple sweet potato and corn and to increase the knowledge of food industry management in the group of women farmers in the region. The community service activity included the introduction of flour-making technology, processing technology of purple sweet potato cookies and corn brownies. Based on the results of monitoring and evaluation, it can be concluded that the synergy of lecturers and students can effectively support the community service activity and the introduction of purple sweet potato and corn processing technology can be well-carried out. In addition, the knowledge of farmer women's groups on the management of home-scale food industry increased after this activity was carried out.</em></p>

<p>Liver is an organ with complex metabolism. When the liver is inflamed, cellular immunity will defend against inflammatory agents by stimulating immune cells to produce reactive oxygen species (ROS). Excessive ROS accumulation cause oxydative stress with increased  liver malondialdehyde (MDA) level. Some researches showed that purple sweet potato contain flavonoids (anthocyanins) that functioned as antioxydants. This study aimed to show the prophylactic effect of purple sweet potato extract to the liver MDA level of male Wistar rats induced by carrageenan.</p><p>This study used post-only control group method using 18 male Wistar rats divided into 3 groups: group of rats without treatment, group of rats induced by 0,1 ml of 1% carrageenan by intraplantar injection on day-8, and group of rats given with 872 mg/kgBW of purple sweet potato extract for 7 days and induced by 0,1 ml of 1% carrageenan. In the end of the study, the liver MDA levels were measured by Thio-Barbituric Acid method on each groups.</p><p>The results of One-Way ANOVA test showed there was no significant difference (p = 0,290) between group of rats without treatment (<em>x̅</em>= 207,50) and group of rats induced by carrageenan (<em>x̅</em>=233,17). Then, there is no significant difference (p = 0.978) between group of rats induced by carrageenan and group of rats given with prophylactic purple sweet potato extract and induced by carrageenan (<em>x̅</em>= 232,50).</p><p>The conclusion of this study is giving intraplantar injection of carrageenan can increase liver MDA level insignificantly and giving prophylactic purple sweet potato extract has an effect to decrease the liver MDA level of rats induced by carragenan insignificantly because it contains anthocyanins as antioxidants.</p><p> </p><strong>Keywords: </strong>Liver, <em>Ipomoea batatas</em> L., Malondialdehyde, Anthocyanins

This study aims to determine the effect giving of ethylacetate fraction of leather  purple sweet potato (Ipomoea batatas (L.) Lam, on levels of malondialdehyde (MDA) serum in mice hyperglicemia were induced with streptozocin dose of 50 mg/kgBW. Mice were divided into 5 groups, each group consisting of 3 tails, group I is a negative control, group II is a positive control, group III,IV and V is given ethylacetate fraction a dose of 100 mg/kgBW, 300 mg/kgBW, and 600 mg/kgBW. Ethyl Acetate Fraction leather purple sweet potato given orally for 15 days after the animal is declared hyperglicemia and measurement of blood glucose levels on 5, 10, and 15 day after giving test preparation in animal experiments. On the 16 day throughout the mice were taken serum levels measured malondialdehid. The statistical analysis results showed that giving of ethyl acetate fraction of leather purple sweet potato at a dose of 100 mg/kgBW, 300 mg/kgBW, and 600 mg/kgBW can lower blood glucose levels in mice hyperglycemia significantly (p<0.05). Malondialdehid levels on average in each group is 1.35 nmol/ml, 3.00 nmol/ml, 2.72 nmol/ml, 2.20 nmol/ml and 2.61 nmol/ml, the results of statistical analysis showed a decrease in melondialdehid serum levels were significantly (p<0.05), where a dose of 300 mg/kgBW is an effective dose for lowering blood glucose levels followed by decreased levels of malondialdehid which give effect approaching negative control.

The browning of white adipocytes, which transforms energy-storing white adipocytes to heat-producing beige adipocytes, is considered a strategy against metabolic diseases. Several dietary compounds, such as anthocyanins, flavonoids, and phenolic acids, induce a brown adipocyte-like phenotype in white adipocytes. In this study, we demonstrated that purple sweet potato (Ipomoea batatas) extract (PSP) exhibited potent radical scavenging activity. In addition, PSP was found to contain large amounts of phenolic, flavonoid, and anthocyanin compounds; the amount of these compounds was affected by fermentation. Functionally, PSP-induced adipose browning in high-fat-diet (HFD)-induced obese mice. The administration of PSP significantly suppressed the body weight gain and abnormal expansion of white adipose tissues in the obese mice. The expression of adipose browning-related genes was higher in the inguinal white adipose tissues from the PSP-treated mice than those in the HFD-fed mice. Moreover, PSP-treated 3T3-L1 adipocytes formed multilocular lipid droplets, similar to those formed in the 3T3-L1 adipocytes treated with a browning induction cocktail. The PSP-treated cells had an increased expression level of mitochondria and lipolysis-related genes. The browning effects of PSP were enhanced by fermentation with Lactobacillus. This study, to our knowledge, is the first to identify a new mechanism to increase the antiobesity effects of PSP by inducing adipocyte browning of adipocytes.

The importance of community attitude and participation for the success and sustainability of cultural festivals has been steadily increasing in recent years. The Chuncheon Puppet Festival (CPF) is an international festival that has been held every year since 1989 in Chuncheon, Korea. The festival has several distinctive characteristics as a sustainable event because: (a) it maintains its single genre of puppet performances based on modern cultural art; (b) it is well-established as the festival for the local residents of Chuncheon City and is planned by local community residents and local small companies, not by government agencies or global large entrepreneurs; (c) it helps children to have an interesting cultural experience in the local environment; and (d) it is regularly hosted in August, an off-season for festivals in Korea that was chosen by residents as it is a school holiday season. However, there is still room for improvement to secure its place as a successful sustainable festival. The following might be considered: (i) increased exchange of human resources among the festival executive members, community groups, and the public staff in Chuncheon City; (ii) local residents should maintain full control of the festival; and (iii) a local cultural trust should be established by cultural art professionals, local resident organizations, puppet show professionals, and public agency staff. The CPF is a typical example of a successful sustainable festival with proactive and supportive community participation and a large number of volunteers that help to increase local competitiveness and sustainable local development. This case report delivers insightful lessons and messages to guide what needs to be preconditioned for local cultural festivals to be sustainable and successful for a long time in many destinations, where they can contribute as efficient catalysts for regional tourism development.
