Trace elements are compounds that are essential in small amounts for biochemical reactions and to maintain human health. Almost all foods can contain varying amounts of these metals. In this study, the effects of food processing on the content of trace metals are investigated. Extensive interpretations of processing, including aspects of food production and specific examples of changes in metal content due to processing will be discussed. Pre-consumption food processing to improve rheological properties and increase shelf life is inevitable, which changes the bioavailability and amount of these compounds in different directions depending on the process. The amount of these trace metals in the food product can be affected by various conditions such as heating, fermentation, food additives, etc. The main factor in reducing trace elements in food, especially the use of heat in a special method and on the other hand, factors such as fermentation can also increase the bioavailability of these elements.

Maillard reaction products (MRPs) could offer flavor and aroma for food, and also render functional characteristics. In this work, three squid skin Maillard reaction products with glucose (GSS), fructose (FSS) and lactose (LSS) were prepared, whose volatile compounds were analyzed by gas chromatography-mass spectrometer. And the antibacterial activities of three Maillard reaction products against Escherichia coli, methicillin-resistant Staphylococcus aureus and Vibrio harveyi were investigated. The results showed that the volatile compounds of squid skin MRPs mainly contained alcohol, acid, phenol, ester, aldehyde, alkane, alkene, amide and ester, among which alcohol was the predominant component in the GSS and LSS, accounting for 53.87±6.02 % and 83.67±3.64%, respectively, however, acid was predominant component in the FSS, accounting for 54.19±3.38 %. Surprisingly, 2, 6-di-tert-butyl-4-methylphenol (BHT), as a synthetic antioxidant, was firstly identified in these three MRPs, which directly indicated squid skin MRPs have antioxidant activities. It is demonstrated that the antibacterial abilities of LSS and GSS were superior to that of FSS, and Escherichia coli was the most sensitive to the three MRPs among the three tested bacteria. This study demonstrates squid skin MRPs possess antioxidant and antibacterial abilities, which shows promising and far-ranging prospect in the fields of food additives.

Studies have been conducted on the effect of the food biopolymer composition on the clinical-biochemical status of white inbred mice. The experiment showed that the development of laboratory animals was carried out without abnormalities with the complete safety of all individuals. Clinical-biochemical dynamics, glucose monitoring and the results of experiments in the exchange of macro and microelements of plasma of mouse blood indicated the normal flow of metabolic processes. In addition, the animals that consumed food additives had a higher rate of absorption of feed carbohydrates and a predominance of osteosynthesis processes in animal bone tissue. The studies conducted allow us to conclude that enrichment and trace elements increase the availability of trace elements, as well as activate the formation and strengthening of the bone tissue of the body.

Food additives are widely used to enhance the taste, texture, appearance and longevity of food items. The aim of this study is to determine the quality and antibacterial activity of different food additives and preservatives. In this study 8 categories of food additives were collected from different super shops in Dhaka city. Almost 90% samples were free from pathogenic microorganisms and a low number of total viable bacteria were found in all samples. Antibacterial activities of these samples were measured by agar diffusion method. Except food color, all remaining categories exhibited zone of inhibition against tested laboratory isolates between 8 mm and 22 mm in diameter. These findings indicate that adding food additives or preservatives in food item can reduce or prevent the growth of pathogenic microorganisms. Harmful effects of food additives to human health need to be evaluated before they are applied in food items. Stamford Journal of Microbiology, Vol.9(1) 2019: 23-26

Genotoxic data of substances that could be used as food additives are required by the European Food Safety Authority. In this sense, the use of an extract from grapevine shoots containing a stilbene richness of 99% (ST-99), due to its antioxidant and antibacterial activities, has been proposed as an alternative to sulfur dioxide in wine. The aim of this work was to study, for the first time, the in vivo genotoxic effects produced in rats orally exposed to 90, 180, or 360 mg ST-99/kg body weight at 0, 24, and 45 h. The combination of micronucleus assay in bone marrow (OECD 474) and standard (OECD 489) and enzyme-modified comet assay was used to determine the genotoxicity on cells isolated from stomach, liver, and blood of exposed animals. The ST-99 revealed no in vivo genotoxicity. These results were corroborated by analytical studies that confirm the presence of stilbenes and their metabolites in plasma and tissues. Moreover, to complete these findings, a histopathological study was performed under light microscopy in liver and stomach showing only slight modifications in both organs at the highest concentration used. The present work confirms that this extract is not genotoxic presenting a good profile for its potential application as a preservative in the wine industry.

To study the influence of trace elements on the corrosion and hydrogen ingress in Zr-2.5 Nb pressure tube material, buttons of this alloy containing up to 0.83 at% Fe were made by arc-melting. The buttons were then annealed at 973 K for three days, furnace cooled, followed by ≈80% cold-rolling. The microstructure of cold-worked Zr-2.5 at% Nb-0.83 at% Fe (Fig. 1) contained both β-Zr and intermetallic precipitates in the α-Zr grains. The particles were 0.1 to 0.7 μm in size, with shapes ranging from spherical to ellipsoidal and often contained faults. β-Zr appeared either roughly spherical or as irregular elongated patches, often extending to several micrometres.The composition of the intermetallic particles seen in Fig. 1 was determined using Van Cappellen’s extrapolation technique for energy dispersive X-ray analysis of thin metal foils. The method was employed to avoid corrections for absorption and fluorescence via the Cliff-Lorimer equation: CA/CB = kAB · IA/IB, where CA and CB are the concentrations by weight of the elements A and B, and IA and IB are the X-ray intensities; kAB is a proportionality factor.

A monolithic, polycapillary, x-ray optic was adapted to a laboratory-based x-ray microprobe to evaluate the potential of the optic for x-ray micro fluorescence analysis. The polycapillary was capable of collecting x-rays over a 6 degree angle from a point source and focusing them to a spot approximately 40 µm diameter. The high intensities expected from this capillary should be useful for determining and mapping minor to trace elements in materials. Fig. 1 shows a sketch of the capillary with important dimensions.The microprobe had previously been used with straight and with tapered monocapillaries. Alignment of the monocapillaries with the focal spot was accomplished by electromagnetically scanning the focal spot over the beveled anode. With the polycapillary it was also necessary to manually adjust the distance between the focal spot and the polycapillary.The focal distance and focal spot diameter of the polycapillary were determined from a series of edge scans.
