The article describes the varieties of elderberry, and the process of black elderberry fruits ripening. External characteristics of flowers, followed by ripening of fruits, have been described. The main components useful for the human body have been identified, which are contained in the fruits of the black elderberry. The effect of elderberry fruits on the human body when used for medicinal purposes has been. Elderberry fruits have a coloring substance that must be added to confectionery creams, sweets, marshmallows, as well as to liqueurs and wine products to give the products color and nutmeg taste. Elderberry fruits can be eaten fresh, ripe, but the most delicious and more useful fruits are provided in processed form, especially in juice and dried form. The useful properties of elderberry have been described, as well as the dangerous properties that appear in case of eating unripe elderberry fruits growing in the Republic of Belarus. The detailed composition of the components of elderberry fruit has been considered, all its useful properties noted. Particular attention is paid to the chemical composition of elderberry fruit, detailed amino acid composition of elderberry fruit has been given, and the composition of anthocyanin content in juice of direct extraction from elderberry fruit has been shown. The use of elderberry pomace in the food industry for the preparation of jam, jams, confiture, preserves and other products, as well as adding to wine, alcoholic beverages, to impart nutmeg taste, in the confectionery industry to add to dough and giving the product an almond smell has been described. It is especially noted that the pomace from elderberries contains biological active substances, bioflavonoids, anthocyanins, which confirms their immediate importance and the need to use for the creation of many products for preventive and functional purposes in the food industry.

Introduction. Lipids are a widespread group of biologically active substances in nature, making up the bulk of the organic substances of all living organisms. They accumulate in plants in seeds, as well as in fruits and perform a number of vital functions: they are the main components of cell membranes and the energy reserve for the body.Aim. Study of neutral lipids of sown oats (Avena sativa L.).Materials and methods. The objects of the study were fruits (grains) of oats of the sown variety "Tashkent 1," harvested in the Republic of Uzbekistan. Results and discussions. Neutral lipids of oat grains have been found to contain 13 fatty acids with a predominance of the sum of oleic, linolenic and linoleic acids. The total degree of unsaturation was almost 78%. Absorption bands characteristic of these substances were observed in the IR spectrum of MEGC.Conclusion. According to the results of the NL analysis, oat grains consisted of triacylglycerides and free LCDs, which were accompanied by hydrocarbons, phytosterols, triterpenoids and tocopherols.

Background and Objectives: Tea is considered one of the most consumed drinks around the world and the health benefits of it have recently attracted the attention of different researchers. It has also been proven beneficial in preventing the danger of some diseases like cancer and cardiovascular problems. Further, lipid oxidation is one of the major problems in food products. Considering the above-mentioned issues, the present review focused on various techniques used to extract polyphenols from different kinds of tea, as well as their use in the food industry. Results and Conclusion: Based on our findings in this review, the main components of tea are polyphenols that have health benefits and include catechins, epicatechin, epigallocatechin, epicatechin gallate, epigallocatechin gallate, gallic acid, flavonoids, flavonols, and theophlavins. From these components, catechin is regarded as the most beneficial component. Many techniques have been discovered and reformed to extract tea compounds such as solvent-based extraction, microwave-assisted water extraction, and ultrasound-assisted extraction techniques. Overall, the microwave-assisted water extraction method is a useful method for extracting tea polyphenols, which may be used in the meat, oil, and dairy industries.

The Republic of Croatia has a long tradition of fruit growing due to its geographical location, climatic conditions, and high quality of fruit crops, especially apple fruits. Apples can be used for the formulation of functional foods either in processed form (e.g., juice), or as a by-product (e.g., apple pomace). However, there is a growing demand for functional foods derived from ancient and traditional plant sources as they are recognized as a very valuable source of health-promoting bioactive ingredients. Similarly, old apple cultivars (Malus domestica Borkh.) are characterized by good morphological and pomological properties, less need for chemicals during cultivation and the higher share of biologically active compounds (BACs) with better sensory acceptability compared to commercial cultivars. However, their nutritional and biological potential is underestimated, as is their ability to be processed into functional food. The importance in preserving old apple cultivars can also be seen in their significance for improving the nutritional composition of other apple cultivars through innovative cultivation strategies, and therefore old local apple cultivars could be of great importance in future breeding programs.

Abstract Distilling industry is among the traditional sectors of the food industry. It is a significant producers of agricultural primary production and the most stable component of demand in the labour market. Among all the sectors of the food industry, however, it is subject to the greatest extent of the regulation of the business by state, when a crucial component of regulation is the legal regulation of the selection of the excise tax on alcohol. Given the considerable degree of regulation of excise taxes on alcoholic beverages by one of the secondary law of the EU, it is considered appropriate to assess the level of transposition of basic elements of excise tax on alcohol, as defined by literature, into the legal order of the Slovak Republic.

The objective of this article is to summarize the available technologies for biosensing applications in COVID-19. The article is divided into three parts, an introduction to biosensing technologies, applications of mainstream biosensing technologies and a review of biosensing applications in COVID-19. The introduction of biosensors presents the history of inventing the biosensing technology, which refers to the ISFET. The resonant biosensor with the example of MEMS. the principle of optical biosensor, and the thermal biosensor. In the second part, the main use of biosensing techniques, it was discussed the field of the food industry, environmental monitoring, and the medical industry. In the part of biosensor application in COVID-19, it was mentioned that the technique of POCT, the use of RT-LAMP-NBS in the early detection in China, and the use in gRT-PCR for the detection of the DNA code to determine the presence of pathogen of COVLD-19 in the human body.

Objective: generalization and analysis of scientific data on the component composition, pharmacological properties and standardization of senna leaves. Materials and methods. The article provides an overview of scientific publications in the journals of the search platforms Scopus and PubMed, as well as the databases of the Russian Science Citation Index. The analysis of the range of herbal medicinal products was carried out according to the data of the State Registers of Medicines of the Republic of Belarus, the Russian Federation and the Republic of Kazakhstan using content analysis, comparison and generalization of data. Results. In addition to the laxative effect, determined by the presence of anthracene derivatives in senna leaves, the complex of their biologically active substances has antimicrobial, hypoglycemic, antioxidant, antifungal and antitumor effects. Also, the chemical composition of the plant is represented by fatty acids, triglycerides, flavonoids, macro- and microelements. The analysis of medicinal herbal preparations based on senna leaves registered in the Russian Federation, the Republic of Belarus and the Republic of Kazakhstan has been carried out. The differences in the methods of their standardization, given in the normative documentation on quality, have been revealed. The scientific experience of using the method of high performance liquid chromatography for the determination of anthracene derivatives in senna leaves is generalized. Conclusion. The complex of biologically active substances of senna leaves exhibits various pharmacological effects, which, possibly, will expand the range of combined preparations based on them. The use of a modern and selective method of high-performance liquid chromatography in the analysis of senna leaves is a very promising direction in the field of standardization of this type of medicinal plant material.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

Collagen is the most widely distributed class of proteins in the human body. Monomers of collagen are constantly being synthesized and degraded throughout the development of a healthy individual to adulthood. The collagenase subfamily found in human matrix (metalloproteinases), are capable of hydrolyzing native collagen under physiological conditions. Collagenases are produced by specific cells involved in repairs and remodelling processes and plays important role in connective tissue metabolism. Present article focus on the major sources, properties and therapeutic aspects of microbial collagenases in their relation with various diseases and its applications in medical and food industry. Collagenolytic enzymes are highly specific for collagen and have been the focus of much practical interest with respect to cosmetic, medical and food based applications. The most common uses of these enzymes appear to be in medicine as they have been used to treat burns and ulcers, to eliminate scar tissue and play an important role in the successful transplantation of specific organs.

The vulnerability of regional food markets is difficult to study due to the lack of a unified approach to analysing the weaknesses of agricultural enterprises, which is necessary for investigating their response to external and internal changes. The study aims to solve this problem by developing an adaptable method for assessing the vulnerability of organisations that produce, process and sell agricultural products in regional food markets. For this purpose, we applied hierarchical mechanisms of integrated assessment for combining various indicators of agricultural enterprises into a single vulnerability score. The present research examines the alcohol market: while this particular sector is represented by a small number of producers, these organisations are usually the largest taxpayers in the agri-food industry, especially in areas of risky farming. As an example, we show how the vulnerability of Permalko JSC (a large producer of alcoholic beverages) has changed because of the COVID-19 pandemic. This company not only satisfies the needs of Perm oblast’s market, but also exports its production to many Russian regions, as well as to near and far abroad. As a result, we propose a new methodology, represented by a set of mathematical formulas, and define its variables. This versatile approach to vulnerability assessment can be adapted for any agri-food enterprise by specifying the parameters. The model is implemented in the dekon software package, which is a web application. The cloud service will provide unified access to all agricultural enterprises.

Aim. Evaluation of the awareness of health workers of vaccine prevention at the present stage. Methods. To achieve the aim, survey of health workers of the Republic of Tatarstan was conducted using the developed questionnaire. The coverage of survey was 3 250 people. Statistical processing of the results was carried out using Microsoft Excel 2010 programs. Results. The conducted study revealed that a significant proportion (95 %) of health workers were positive about vaccine prevention, were vaccinated themselves and vaccinated their children. The most prevalent forms of informing parents of vaccinated children about adverse reactions after vaccination are oral recommendations by the doctor and information sheets about adverse reactions. The majority of interviewed health workers (89.9 %) support the initiative to cancel the right of citizens to refuse vaccination. In the opinion of health workers, the main components of successful organization of vaccine prevention in the medical organization are availability and diversity of vaccines, the level of qualification of medical personnel, and equipment of the vaccination room. Less than half of health workers were trained in specialized training on immunoprevention. The majority of health workers (86.3 %) consider it necessary to expand the national schedule of preventive vaccinations of the Russian Federation. Conclusion. Organizational measures to inform health workers in various areas of vaccine prevention are needed to be taken; promising directions are organizing specialized courses on immunoprevention and discussion of relevant aspects of immunization of the population and adverse reactions in post-vaccination period.
