Influence of Individual Physical and Chemical Indices of Cognacs on their Qualitative Characteristics

Стабильность (розливостойкость) в течение длительного времени - одна из важных составляющих качественных характеристик спиртных напитков виноградного происхождения, в том числе коньяков. Коньяк представляет собой сложную многокомпонентную систему, включающую более 800 различных соединений, в том числе фенольный комплекс древесины дуба и минеральные вещества. В процессе длительного хранения под воздействием ряда факторов эти соединения, вступая во взаимодействие друг с другом, могут образовывать различные виды помутнений, что влечет за собой потерю товарного вида готовой продукции. Целью настоящей работы стало исследование влияния отдельных показателей физико-химического состава обработанных коньяков на изменение их стабильности в процессе хранения. В качестве объектов исследования использовали образцы обработанных розливостойких коньяков отечественного производства, которые были разделены в зависимости от возраста на четыре группы: I группа - 3-летние, 4-летние и 5-летние (23 образца); II группа - выдержанные «КВ» и выдержанные высшего качества «КВВК» (15 образцов); III группа - старые «КС» (9 образцов); IV группа - очень старые «ОС» (7 образцов). Образцы хранили в течение 6 мес. при температуре 22…25 °С, в условиях, не допускающих попадания прямых солнечных лучей. В процессе хранения проводили мониторинг изменения физико-химических показателей, розливостойкости и органолептических характеристик исследуемых образцов с периодичностью 1 раз в месяц. Установлено, что на всем протяжении хранения физико-химические показатели исследованных образцов оставались в пределах нормы. Однако, в отдельных образцах, на определенном этапе эксперимента (после 2 мес. хранения) было отмечено появление осадка. Кроме того, по результатам определения склонности к различным видам помутнений был отмечен рост доли коньяков, нестойких к необратимым коллоидным и кристаллическим помутнениям в трех группах, кроме IV группы. Полученные данные по исследованию структуры осадков и результаты тестов на розливостойкость согласуются с характером изменений массовых концентраций катионов натрия и кальция, а также фенольных соединений. В целом полученные результаты проведенных исследований показали необходимость контроля массовой концентрации катионов натрия и кальция, а также фенольных соединений при прогнозировании розливостойкости коньяков. One of the important components of the quality characteristics of alcoholic beverages of grape origin, including cognacs, is their stability (bottling resistance) for a long time. Cognac is a complex multicomponent system that includes more than 800 different compounds, including the phenolic complex of oak wood and minerals. During long-term storage, under the influence of a number of factors, these compounds, interacting with each other, can form various types of turbidity, which entails the loss of the presentation of the finished product. The aim of this work was to study the effect of individual indicators of the physical and chemical composition of processed cognacs on the change in their stability during storage. As objects of research, we used samples of processed bottling-resistant cognacs of domestic production, which were divided, depending on age, into four groups: Group I - three-year-old, four-year-old and five-year-old (23 samples); Group II - matured «KV» and matured of the highest quality «KVVK» (15 samples); Group III - old «KS» (9 samples); IV group - very old «OS» (7 samples). The samples were stored for 6 months at a temperature of 22…25 °C, in conditions out of direct sunlight. During storage, changes in physical and chemical parameters, bottling resistance and organoleptic characteristics of the samples under study were monitored at a frequency of 1 time per month. It was found that during the entire storage period, the physicochemical indicators of the studied samples remained within the normal range. However, in some samples, at a certain stage of the experiment (after 2 months of storage), the appearance of a precipitate was noted. In addition, according to the results of determining the tendency to various types of cloudiness, an increase in the proportion of cognacs unstable to irreversible colloidal and crystalline cloudiness was noted in three groups, except for group IV. The data obtained on the study of the structure of sediments and the results of tests for pouring resistance are consistent with the nature of changes in the mass concentrations of sodium and calcium cations, as well as phenolic compounds. In general, the results of the studies carried out showed the need to control the mass concentration of sodium and calcium cations, as well as phenolic compounds when predicting the pouring resistance of cognacs.

Проблема и цель. В настоящее время сельскохозяйственную технику (СХТ) принято хранить в закрытых помещениях, под навесом и на открытых обустроенных площадках. Однако указанные технологии хранения СХТ не могут обеспечить оптимальных условий хранения и имеют низкую степень экономической эффективности. Цель исследований – экспериментальное обоснование и практическая реализация нового способа хранения СХТ на открытой площадке с применением экспериментальной конструкции активного теплового укрытия (АТУ). Методология. В исследованиях проводилось сравнение с показателями трех наиболее распространенных способов хранения СХТ, а именно хранения в закрытом помещение, под навесом и на открытой обустроенной площадке. Объектами изучения в процессе длительного хранения были зерновые сеялки СЗУ-3,6 в количестве четырех единиц. Процесс хранения четырех единиц зерновых сеялок СЗУ-3,6 осуществлялся следующим образом: 1 ед. СХТ на открытой площадке, 1 ед. СХТ под навесом, 1 ед. СХТ в закрытом помещении и 1 ед. СХТ на открытой площадке с применением экспериментальной конструкции АТУ. Результаты. Анализ показал, что предлагаемый способ хранения СХТ на открытой площадке с применением экспериментальной конструкции АТУ требует меньших вложений на обустройство места хранения, не требует дополнительных трудозатрат и материальных ресурсов на подготовку объекта СХТ к хранению, а общие затраты на подготовку и хранение изолируемого объекта СХТ сравнимы с затратами на хранение его в закрытом помещении. Заключение. Применение экспериментальной конструкции АТУ является более рациональным способом обеспечения надежной сохранности изолируемого объекта СХТ от воздействия на него окружающей среды на весь период хранения. Problem and purpose. Currently, agricultural machinery (AM) is usually stored in closed rooms, under a canopy and in open equipped areas. However, the indicated storage technologies for AM cannot provide optimal storage conditions and have a low degree of economic efciency. The purpose of the research is the theoretical substantiation and practical implementation of a new method of AM storage in an open area using an experimental design of an active thermal shelter (ATSh). Methodology. The studies included a comparison with indicators of the three most common methods of AM storage, namely storage in a closed room, under a canopy and in an open equipped area. The objects of the study in the process of long-term storage were 4 grain seeders SZU-3.6. The storage process for four units of grain seeders SZU-3.6 was carried out as follows: 1 unit was in the open area, 1 unit was under a canopy, 1 unit was indoors and 1 unit was in an open area using an experimental design of ATSh. Results. The analysis showed that the proposed method of AM storage in an open area with the use of an experimental design of ATSh requires less investment in arranging the storage site, does not require additional labor and material resources to prepare the storage facility for storage, and the total costs of preparing and storing an isolated storage facility are comparable to the cost of storing it indoors. Conclusion. The use of the experimental design of ATSh is a more rational way to ensure the reliable safety of the insulated object of AM from the efects of the environment on it for the entire storage period.

The aim of this research is to substantiate the possibility of using crushed activated carbon (hereinafter referred to as activated carbon) as a food additive in the production of Cheddar cheese in order to expand the range of this type of cheese on the market. The studied samples of Cheddar cheese, produced in accordance with the technological instructions approved in the prescribed manner, in compliance with the state sanitary regulations for dairy enterprises in accordance with GSP 4.4.4.011. According to the research results, all physicochemical, microbiological and toxicological indicators comply with the requirements of DSTU 6003:2008. It is proved that the introduction of activated carbon helps to reduce the amount of moisture without increasing the level of acidity in the finished product. Thus, ensuring the compliance of physico-chemical and microbiological indicators with the requirements of the standard. In the process of laboratory studies, the presence of carbohydrates in the control and experimental samples is revealed, which indicates the incomplete ripening of cheese in the process of cheddarization. It is established that the introduction of activated carbon during the ripening of cheese helps to reduce the amount of carbohydrates by 2.8%. The introduction of activated carbon helps to reduce the moisture content by 0.4%, in comparison with the sample without its use. The influence of activated carbon on the indicators of active and triturated acidity, which affect the safety indicators of cheddar cheese during storage for 30 days, is analyzed. As a result of the study, lower pH values of a sample of cheddar cheese with activated carbon are obtained, which helps to suppress the growth of conditionally pathogenic microflora of cheese and stabilizes microbiological parameters during storage of Cheddar cheese with activated carbon. It is proved that cheddar cheese with activated carbon maintains high quality indicators throughout the entire storage period

One of the components of the problem of Ukraine's national security is the loading of warehouses with a variety of ammunition with an expired guaranteed storage period. The experience of storing ammunition shows that during long-term storage, propylene powder used in ammunition is capable of spontaneously undergoing various physical and chemical transformations, which negatively affects the ballistic characteristics of ammunition. The lack of ammunition production in Ukraine has led to the fact that ammunition is currently in operation, the storage time of which reaches 25-30 years or more. This article analyzes publications devoted to scientific research related to the problems of ballistic stability of propellants. A number of factors are presented that affect the physicochemical stability of powder charges during their long-term operation. The generalizing data on changes in the main ballistic characteristics of ammunition at different periods of their storage are presented. It is assumed that one of the ways to improve the ballistic and energy characteristics of ammunition with long service lives can be the regeneration of nitrocellulose powder charges. It is shown that at present there are no methods for the regeneration of propellant charges of long service life. However, there are encouraging data on the treatment of propellants with hydrogen peroxide, on the basis of which a technology can be developed for the complete or partial restoration of the ballistic and energy characteristics of the propellant charge. It is presented that the predictive assessment of changes in the characteristics of ammunition with long service lives does not correspond to their real indicators. It has been determined that the problem of nitrocellulose propellants of long service life is complex and, on the basis of its solution, theoretical and methodological foundations of the regeneration of nitrocellulose propellant charges can be developed to homologate the ballistic and energy characteristics of ammunition.

The present article investigates the effect of sodium lactate on microbiological, physico-chemical and sensory characteristics of lightly salted Pacific herring ( Clupea pallasii ) and Baltic herring ( Clupea harengus membras ) during refrigerated storage 5 ± 0.3°C. There have been analyzed different processing methods of lightly salted samples of Pacific and Baltic herring: control (without sodium lactate), and experiment (3% sodium lactate), both in vacuum packaging and modified atmosphere packaging (MAP - 40% CO2/60% N2). For vacuum and MAP there were used bags with low oxygen permeability (3 cm3/m2/day). It was found that 3% sodium lactate keeps firmness of the texture of salted fish muscle and reduces the release of water into the package during storage. Adding 3% sodium lactate reduces the value of the water activity in lightly salted Pacific and Baltic herring by 0.01-0,012 units. The lowest pH (0.02 units) was registered in samples without sodium lactate packed in MAP. Organoleptic signs of spoilage in fish without sodium lactate appeared much earlier, and using 3% sodium lactate both in vacuum and in MAP helped protect and improve organoleptic characteristics of the product during storage. Total biological semination of experimental samples packed in MAP kept at the very low level during the whole storage period, i.e. combined effect of using 3% sodium lactate and MAP inhibited microbial growth. This combination allows to reduce twice the rate of accumulation nitrogen in terminal amino-groups and to increase 1.5-2 times storage life of lightly salted Pacific and Baltic herring, compared to their storage life in vacuum packaging without sodium lactate. The results obtained allow us to recommend using sodium lactate in production of lightly salted fish in oxygen-free packaging, especially in modified atmosphere packaging (40% CO2/60% N2).

The article concerns the counterfeiting problem of non-alcoholic drinks sold on the consumer market of the Russian Federation; provides data on drinks fraud methods (assortment, qualitative, quantitative and informational types). Strengthening quality control of soft drinks is one of the main directions of providing consumers with qualitative products. The authors presented authenticity identification results of carbonated soft drinks sold on the Kemerovo consumer market for compliance with the current regulatory documents requirements; run the consumer criteria analysis for the drinks identification of various brands. They obtained data on the labeling and packaging identification of selected non-alcoholic carbonated drinks samples for the compliance with current regulatory documents. A man recorded the compliance. There was an absence of the quantitative counterfeiting identification. The study described results of the organoleptic and physico-chemical quality indicators research. According to the GOST 28188-2014 “Non-Alcoholic Beverages. General Technical Conditions” the authors evaluated beverages quality by such physical and chemical indicators as the mass fraction of dry substances, acidity, and the mass fraction of carbon dioxide. The researchers run the organoleptic indicators analysis according to a score system. Authenticity identification of the selected drinks samples showed that there are no signs of counterfeiting and the products are of high quality.

Extra virgin olive oil (EVOO) is one of the most distinctive ingredients of the Mediterranean diet. There are many properties related to this golden ingredient, from supreme organoleptic characteristics to benefits for human health. EVOO contains in its composition molecules capable of exerting bioactivities such as cardio protection, antioxidant, anti-inflammatory, antidiabetic, and anticancer activity, among others, mainly caused by unsaturated fatty acids and certain minor compounds such as tocopherols or phenolic compounds. EVOO is considered the highest quality vegetable oil, which also implies a high sensory quality. The organoleptic properties related to the flavor of this valued product are also due to the presence of a series of compounds in its composition, mainly some carbonyl compounds found in the volatile fraction, although some minor compounds such as phenolic compounds also contribute. However, these properties are greatly affected by the incidence of certain factors, both intrinsic, such as the olive variety, and extrinsic, such as the growing conditions, so that each EVOO has a particular flavor. Furthermore, these flavors are susceptible to change under the influence of other factors throughout the oil's shelf-life, such as oxidation or temperature. This work offers a description of some of the most remarkable compounds responsible for EVOO’s unique flavor and aroma, the factors affecting them, the mechanism that lead to the degradation of EVOO, and how flavors can be altered during the shelf-life of the oil, as well as several strategies suggested for the preservation of this flavor, on which the quality of the product also depends.

Abstract Background Barberry has long been used as an herbal remedy since ancient times which is found throughout temperate and subtropical regions of the world. Given the short harvesting season and limited shelf life of the barberry, we evaluated the possibility of using modified atmosphere packaging and oxygen-scavenger sachets to increase its storage period. For this purpose, the physicochemical characterization (antioxidant activity, anthocyanin, phenolic compounds, and ascorbic acid content, acidity, firmness, color, and decay incident) of fresh barberry samples packaged within different atmospheres was investigated over 4 weeks of storage at 4 and 25 °C. The barberries were packaged with low-density polyethylene/polyester (LDPE/PET) films under natural atmosphere (C), N2 gas (N), vacuum (V), or in the presence of an oxygen scavenger (OS). Results The results revealed that with increased storage period, the O2 and CO2 levels inside the packages decreased and increased, respectively. The antioxidant activity and amounts of anthocyanin, phenolic compounds, and ascorbic acid all decreased with increasing storage period. Among the studied atmospheres, the OS and, subsequently, V packages were most capable of maintaining the quality of fresh barberries, with the decay incidence being approximately 30 times lower inside these packages relative to the control. Increasing the storage temperature accelerated the intensity of chemical changes and decay across all samples. Conclusion The barberries inside the OS packages stored at 4 °C (and even at 25 °C) still had good sensory properties in terms of chemical properties, texture, and color after 4 weeks. Fortunately, it seems that this packaging technology makes the exportation and delayed consumption of the fresh barberry possible by maintaining its quality.

Разработан новый быстрорастворимый продукт (кисель) с определенным фазовым составом и строением на основе молочной сыворотки и местного растительного сырья – черноплодной рябины (Aronia melanocarpa). Разработана модель технологии производства быстрорастворимого гранулированного продукта (кисель) на основе молочной сыворотки и черноплодной рябины. Исследована сохраняемость киселя в трех температурных режимах: 1-й (21 ± 1)°С; 2-й с низкой плюсовой температурой (5 ± 1)°С; 3-й с повышенной (39 ± 1)°С при влажности окружающей среды 80%. По окончании годичного исследования сохраняемости при температурных режимах (21 ± 1)°С и (5 ± 1)°С изменений в органолептических показателях продукта не наблюдали. Скорость растворения продукта при температурных условиях хранения (21 ± 1)°С и (5 ± 1)°С не изменялась на протяжении 9 мес. Установлено, что при хранении в условиях пониженных положительных температур 4–6°С и в режиме комнатной температуры (21 ± 1)°С исследуемый пищеконцентрат по окончании 6 мес. хранения не изменил свойств по показателям качества. Сроки испытания продукта превышали по длительности в 2 раза заданный срок хранения (коэффициент запаса). Результаты испытаний явились основанием для разработки технической документации на производство быстрорастворимых гранулированных плодово-ягодных киселей. A new fast – soluble product (kissel) with a certain phase composition and structure based on whey and local plant raw materials Aronia melanocarpa. A model of technology for the production of a rapidly soluble granular product (kissel) based on whey and Aronia melanocarpa has been developed. The stability of kissel in three temperature modes was studied: 1st (21 ± 1)°C; 2nd with a low plus temperature (5 ± 1)°C; the 3rd with the increased (39 ± 1)°C at 80% ambient humidity. At the end of a year-long study at temperature conditions (21 ± 1)°С and (5 ± 1)°С, no changes in the organoleptic characteristics of the product were observed. Dissolution rate of the product under storage temperature conditions (21 ± 1)°C and (5 ± 1)°C did not change for 9 months. It is established that when stored at low positive temperatures 4–6°C. With and at room temperature (21 ± 1)°C. At the end of 6 months of storage, the food concentrate under study did not change its properties in terms of quality. The product testing period was 2 times longer than the specified storage period. The test results were the basis for the development of technical documentation for the production of instant granulated fruit and berry kissel.

Рассмотрены аспекты применения вторичного продукта сокового производства – выжимок из тыквы, полученных конвективным вакуумным высушиванием при температуре, не превышающей 50°С, в качестве обогащающего пищевыми волокнами сырьевого ингредиента рецептуры крекера. Дана характеристика высушенных выжимок из тыквы сорта Мускатная. Приведены результаты исследования влияния порошка из выжимок тыквы дисперсностью от 63 до 125 мкм на хлебопекарные свойства муки – количество и качество клейковины, автолитическую активность. Обоснование рецептуры крекера с повышенным содержанием пищевых волокон и β-каротина проведено методом математического планирования – полный факторный эксперимент 22 с последующей оптимизацией методом ридж-анализа. Разработана производственная рецептура. Апробация разработанной рецептуры показала, что крекер с выжимками из тыквы в количестве 11,34 г/100 г муки имеет отличительные органолептические характеристики, обусловленные привкусом и ароматом тыквы, по физико-химическим показателям соответствует требованиям межгосударственного стандарта, по составу, г/100 г, пищевых волокон (3,4) и β-каротина (2,9) может быть отнесен к продукту – источнику пищевых волокон с высоким содержанием β-каротина. The aspects of the use of the secondary product of juice production – pumpkin pomace obtained by convection vacuum drying at a temperature not exceeding 50°C, as an enriching raw ingredient of the cracker formulation with food fibers are considered. The characteristics of dried pumpkin pomace of Muscatnaya variety are given. The results of the study of the influence of pumpkin pomace powder dispersion from 63 to 125 microns on the baking properties of flour – the quantity and quality of gluten, autolytic activity are adduced. The substantiation of the cracker formulation with high content of dietary fibers and β-carotene was carried out by the method of mathematical planning – a complete factorial experiment 22 with subsequent optimization method by ridge analysis. The production formulation is developed. Approbation of the developed formulation showed that the cracker with pumpkin extracts – 11,34 g/100 g of flour has distinctive organoleptic characteristics due to the taste and aroma of pumpkin, on physical and chemical indicators meets the requirements of the interstate standard, by composition, g/100 g, dietary fiber (3,4) and β-carotene (2,9) can be attributed to the product – a source of dietary fiber with a high content of β-carotene.

ABSTRACT The purpose of this study was to determine the interaction effect of storage time and concentration of plantain peel extract and lemongrass on organoleptic characteristics (color, aroma, texture, and elasticity) and total microbes in chicken meatballs. This study used a 2-Factorial Completely Randomized Design method. The first factor was storage time with three levels, namely 0 days (T0), 2 days (T1), and 4 days (T2. Meanwhile, the second factor was the concentration of plantain peel and lemongrass extract with three levels, namely 0% (C0), 30% plantain peel extract + 20% lemongrass extract (C1), 20% banana peel extract + 30% lemongrass extract (C2), and 25% banana peel extract + 25% lemongrass extract (C3). Observation variables were organoleptic tests which included color, aroma, texture, elasticity, and shelf life after treatment based on the results of the total plate count (TPC) calculation. The results show that the 2-day storage period with the addition of 25% plantain peel extract and 25% lemongrass extract (T1C3) was the best treatment for organoleptic characteristics (color, aroma, texture, and elasticity). Based on the results of the study, it can be concluded that the administration of plantain peel extract and lemongrass was able to maintain the quality of chicken meatballs for two different days compared to the control. Treatment with a storage period of 2 days with 25% plantain peel extract and 25% lemongrass extract (T1C3) was the best treatment that was most favored by the panelists and had the least number of microbial colonies.Keywords: Meatballs, preservatives, banana peel extract and lemongrass, storage time.ABSTRAKTujuan penelitian ini adalah untuk mengetahui pengaruh interaksi lama penyimpanan dan konsentrasi ekstrak kulit pisang raja dan serai terhadap uji organoleptik (warna, aroma, tekstur dan kekenyalan) dan total mikroba pada bakso ayam. Penelitian ini menggunakan metode Rancangan Acak Lengkap Faktorial 2 Faktor. Faktor Pertama adalah lama penyimpanan yang terdiri dari tiga taraf yaitu 0 hari (T0), 2 hari (T1) dan 4 hari (T2), faktor kedua yaitu perlakuan ekstrak kulit pisang raja yang terdiri atas tiga taraf yaitu konsentrasi 0% (C0), konsentrasi ekstrak kulit pisang raja 30% + konsentrasi ekstrak serai 20% (C1), konsentrasi ekstrak kulit pisang raja 20% + konsentrasi ekstrak serai 30% (C2), konsentrasi ekstrak kulit pisang raja 25% + konsentrasi serai 25% (C3). Variabel pengamatan yaitu uji organoleptik yang meliputi warna, aroma, tekstur, kekenyalan dan daya simpan setelah perlakuan berdasarkan hasil perhitungan jumlah total plate count (TPC). Hasil penelitian menunjukkan bahwa perlakuan lama penyimpanan 2 hari dengan penambahan ekstrak kulit pisang raja 25% dab serai 25% (T1C3) merupakan perlakuan terbaik untuk uji organoleptik (warna, aroma, tekstur dan kekenyalan). Berdasarkan hasil penelitian dapat disimpulkan bahwa pemberian ekstrak kulit pisang raja dan serai mampu mempertahankan kualitas bakso ayam selama dua hari yang berbeda dengan kontrol. Perlakuan dengan lama penyimpanan 2 hari dengan pemberianekstrak kulit pisang raja 25% dan serai 25% (T1C3) merupakan perlakuan terbaik yang paling disukai oleh panelis dan memiliki jumlah koloni mikroba paling sedikit.Kata kunci: Bakso, pengawet, ekstrak kulit pisang dan serai, lama penyimpanan
