В статье представлены исследования органолептических свойств модельных образцов мясных фаршей из конины с включением разного количества консервированного папоротника Орляк ( Pteridium aquilinum ). Результаты исследований свидетельствуют о том, что использование соленых побегов папоротника в количестве 15 % в рецептуре котлет из конины обеспечивает высокие потребительские показатели готового продукта. Разработана рецептура котлет «Бурятские новые» пониженной калорийности с высокими потребительскими свойствами. The article presents a study of the organoleptic properties of model samples of minced horse meat with the inclusion of different amounts of canned Orlyak fern (Pteridium aquilinum). Research results indicate that the use of salted fern shoots in the amount of 15% in the formulation of horse meat cutlets provides high consumer performance of the finished product. A recipe for «New Buryat» cutlets of low calorie content with high consumer properties has been developed.

The goal is to reduce the calorie content of margarines by changing the composition and fat base. In this regard, we studied the change in caloric content and the content of trans-acids in margarines with a change in their fat content. To reduce calorie content, the fat base of margarine was also reduced to 60%, and to increase the biological value of the product, it was enriched with highly unsaturated fatty acids. It was determined that with an increase in the number of unsaturated fatty acids and a decrease in the margarine fat content, the stability of the emulsion deteriorates. To increase the durability of low-calorie margarine emulsions, it is necessary to increase the flow rate of the emulsifier or enrich it with other functional substances.

Go/No-Go tasks, which require participants to inhibit automatic responses to images of palatable foods, have shown diagnostic value in quantifying food-related impulses.Moreover, they have shown potential for training to control impulsive eating. To test a suggested hypothesis that training modulates early neural markers of responseinhibition, the current study investigated how N2 event-related brain potential to high and low-calorie food images changes along the Go-/No-Go training and how the N2 is related to later eating behavior. Participants first completed a food Go/No-Go task in which high and low calorie food images were accompanied by Go- and No-Go-cues with equal frequency. Participants then completed a training block in which high-calorie foods were predominantly paired with a No-Go cue and the low-calorie foods with a Go cue, followed by a block with reversed coupling (order of the training blocks counterbalanced between participants). After each training, there was a snacking opportunity during which calorie intake was measured. Against our pre-registered hypotheses, the N2 amplitudes were not affected by calorie-content and there was no training-related modulation in the N2. Additionally, food intake did not differ between the preceding training blocks and the N2 amplitude did not predict food intake. Our study suggests that the link between N2 obtained in a food-related Go/No-Go task and impulse control is not clear-cut and may be limited to specific task characteristics. The results are of high importance as they question previously assumed mechanism of Go/No-Go training in food-related inhibitory control.

Cheeses produced using traditional technology usually contains 45 % 50 % of milk fat in dry matter, therefore they are classified as high-calorie foods and are not recommended to be included in the diet of people who need dietary nutrition. In the European countries, dietary low-calorie rennet cheeses are widely represented in the trade network, and in Ukraine such products are quite rare, expensive and usually of foreign production. Milk fat is an important structural and flavoring component of rennet cheeses and a significant decrease in its content in milk leads to a product of low consumer quality with problems such as unexpressed taste, coarse, rubbery consistency. In proportion to the decrease in the mass fraction of fat in the cheese, the disadvantages are more pronounced. The solution to this problem requires an integrated approach, which consists in the correction of technological methods for the production and maturation of cheese and the optimization of the composition of fermented microflora. It is possible to improve the sensorial characteristics of low-calorie cheeses by introducing into their structure exopolysaccharides (EPS) – high-molecular polymers synthesized by some strains of lactic acid bacteria (LAB). Research subject: biological and technological properties of LAB. The aim of this work is to search for strains of LAB with given physiological and biochemical characteristics for further use in the production of dietary rennet cheeses with a reduced mass fraction (MF) of fat. The common microbiological and technological research methods were used in the work. Research results. The expediency of using sucrose as the only source of carbohydrate nutrition for screening LAB with EPS-activity has been shown. Six strains of LAB identified as Streptococcus thermophilus, Lactobacillus bulgaricus, Lactobacillus plantarum and Leuconostoc mesenteroides were withdrawn from non-commercial fermented milk products and studied for their technological properties. In laboratory conditions, the expediency of using LAB with EPS-activity for the production of cheese with a reduced MF of fat has been confirmed. The use of new cultures LAB in the composition of the starter culture allowed increasing the moisture content in the cheese by (6.5 8.3)% compared to the control and to improve its texture and taste. Scope of research results application. The use of LAB-producers of EPS will improve the consumer characteristics of rennet cheeses with reduced fat content, expand the domestic range of these products, increase their biological value, will have a positive effect on the health of people who need dietary nutrition, as well as all population groups.

The purpose of this study was to examine potential utilization of stevia’s leaf as sugar substitute in low calorie sweetbio-yoghurt. The experiment was carried out with the supplementation of stevia’s leaf extract in yoghurt at level 0.5; 2.0; 3.5% and yoghurt produced with supplementation 7.0% sugar used as a control. Parameters observed were level of stevioside, calorie content, pH and acidity, total solid, nutritional composition, microbiological quality, and sensory acceptance. The result showed that level of stevioside obtained in ethanol phase was higher (12.73%) than that in butanol phase (11.89%). There were no differences on pH and acidity in yoghurt either supplemented with sugar or stevia’s leafextract. The protein content in yoghurt supplemented with stevia’s leaf extract was higher than that supplemented with sugar, but no differences were observed on lactose content. Supplementation of stevia’s leaf extract at 0.5% increased fat content, but higher level of supplementation (2.0 and 3.5%) had no effects on fat content. Calorie content of yoghurtsupplemented with stevia’s leaf extract was lower than that supplemented with sugar. The supplementation of stevia’s leaf extract in yoghurt affected on taste, flavor, mouth-feel, and acceptance but had no effect on appearance and colour. Penelitian dilakukan dengan penambahan 0,5; 2,0 dan 3,5% ekstrak daun stevia pada yoghurt dan sebagai kontrol yoghurt dengan penambahan 7,0% gula. Parameter yangdiamati adalah kadar stevioside hasil ekstraksi, kandungan kalori, nilai pH dan keasaman, komposisi nutrisi, kualitas mikrobiologis, serta sensoris produk yoghurt. Hasil penelitian menunjukkan kadar stevioside hasil ekstraksi fase etanol (12,73%) lebih tinggi dibandingkan fase butanol (11,89%). Tidak ada pengaruh antara sweetener gula dengan ekstrak daun stevia terhadap nilai pH dan keasaman yoghurt. Penambahan sweetener gula dan ekstrak daun stevia sebesar0,5; 2,0; dan 3,5% meningkatkan kandungan protein, tetapi tidak berpegaruh terhadap kandungan laktosa yoghurt.Penambahan ekstrak daun stevia 0,5% meningkatkan kadar lemak, tetapi penambahan lebih tinggi (0,5 dan 3,5%) tidak berpengaruh terhadap kadar lemak yoghurt. Nilai kalori yoghurt dengan penambahan ekstrak daun stevia lebih rendah dibandingkan dengan penambahan gula. Hasil pengujian kualitas sensoris menunjukkan tidak ada perbedaanpenampilan dan warna antara yoghurt dengan penambahan sweetener gula dibandingkan dengan ekstrak daun stevia, tetapi penambahan ekstrak daun stevia berpengaruh terhadap aroma, rasa, mouth-feel, dan daya terima. Penambahan ekstrak daun stevia dapat mempertahankan viabilitas bakteri asam laktat dan probiotik dalam yoghurt selama seminggu. Low calorie sweet bio-yoghurt dengan penambahan 0,5% ekstrak daun stevia menghasilkan daya terima terbaik bagi panelis.Kata kunci: Low calorie sweet bio-yoghurt, daun stevia, pengganti gula

This study aims to produce low-calorie cream cheese (CC) to reduce the problems caused by high-fat cream cheese for some consumers by replacing milk fat with modified starch. Milk fat (MF) of buffalo’s milk was partially or fully (0.0, 25, 50, 75 and 100%) replaced by modified starch for making single cream cheese (SCC) or double cream cheese (DCC) aiming to produce low-calorie CC. The cheese samples were analyzed when fresh and after ten days of cold storage. Moisture gradually increased with increasing percentage of replacement and decreased with storage. Replacement of MF decreased protein and increased carbohydrate contents in general, while acidity increased gradually and pH decreased with increasing percentage of replacement and with storage. Energy content was significantly decreased by more replacement of MF and increased by advancing storage. Spreadability of DCC showed the same trend of energy results. Replacement of MF up to 50% improved the organoleptic properties while the full replacement adversely affected the organoleptic properties of CC.

The production and consumption of meat and meat products in Ukraine are increasing every year. The highest rates are observed in the segment of chilled meat semi-finished products. Manufacturers of chopped semi-finished products use technologies for enriching meat products with dietary fiber, which improve the consumer and technological properties of the product. A comparison of the effects of adding fiber to fat and meat shows that in the case of meat the result is more pronounced. This is due offact that wheat fibers bind water more efficiently, which is released from the meat during heat treatment. The aim of the work was to investigate the effect of dietary fiber Kametsel on the quality indicators of chopped semi-finished products. The material of the research was «Juicy» cutlets from mechanically deboned poultry meat with different amounts of Kametsel additive. The generally accepted methods for determining the organoleptic properties of the product were used. The mass fraction of moisture was determined by the method of drying in a drying oven, and the water-binding capacity (WBC) of minced meat was determined by the Grau-Gamma method. It has been established that the use of dietary fiber Kametsel in the composition of model samples of «Juicy» cutlets improves their consistency and increases their juiciness. The highest product yield 80,31 % was observed for semi-finished products with the highest dietary fiber content. The lowest was at the variant II 71,40%, which is less than the control variant by 7,38%. In the semi-finished products of variant III, the values of moisture were higher by 63,50% and the moisture-binding capacity of minced meat by 61,40%, which is higher than the control samples by 2,20 and 1,80%. Adding Kametsel additive to minced meat is one of the ways to obtain high-quality meat products with controlled properties.

Совершенствование структуры ассортимента кондитерских изделий направлено на увеличение выработки продукции повышенной пищевой ценности. Исследована возможность замены сливочного масла в рецептуре отделочного кремового полуфабриката для мучных кондитерских изделий сливками животного происхождения для снижения его калорийности. Объектом исследования были образцы сливочного крема «Шарлотт», изготовленного на основе стандартной рецептуры, но с заменой сливочного масла сливками жирностью 33%. Для стабилизации структуры крема добавляли яблочный пектин в количестве 1,5% к массе образца. Оптимизацию показателей сбалансированности состава и органолептических свойств проводили с помощью прикладных математических программ Mathcad 15.0 и Statistica 13.0. На основе полученных данных разработаны технология и рецептуры отделочных кремовых полуфабрикатов с добавлением какао-порошка и без него. Органолептическая оценка показала, что разработанные кремовые полуфабрикаты имеют необходимые показатели качества – пластичную текстуру, устойчивую форму, приятный, без посторонних запахов вкус. Установлено, что калорийность разработанных образцов крема с заменой сливочного масла сливками жирностью 33% на 23% ниже, чем калорийность крема «Шарлотт», приготовленного по традиционной рецептуре. Включение в рецептуру крема яблочного пектина позволяет рекомендовать разработанный отделочный полуфабрикат для производства мучных кондитерских изделий функционального назначения. Improvement the structure of the range of confectionery products is aimed at increasing the production of products of increased nutritional value. The possibility of replacing butter in the formulation for finishing cream semi-finished products for flour confectionery products with animal cream to reduce its caloric content is investigated. Samples of butter cream «Charlott», made on the basis of a standard formulation, but with the replacement of butter with cream with a fat content of 33%, were the object of the study. To stabilize the structure of the cream apple pectin was added in an amount of 1,5% by weight of the sample. Optimization of indicators of balance of composition and organoleptic properties was performed using applied mathematical programs Mathcad 15.0 and Statistica 13.0. Based on the data obtained, the technology and formulations for finishing cream semi-finished products with and without cocoa powder were developed. Organoleptic evaluation showed that the developed cream semi-finished products have the necessary quality indicators – plastic texture, stable shape, pleasant, odorless taste. It is established that the caloric developed cream samples with replacement of butter cream 33% fat is 23% lower than the calorie content of the cream «Charlott», made on the basis of a standard formulation. The inclusion of apple pectin in the cream formulation allows us to recommend the developed finishing semi-finished product for the production of functional flour confectionery products.

Confectionery semi-finished products can not only improve the appearance and taste of confectionery products but also balance their nutritional composition, influence calorie content and digestibility, therefore, it is necessary to develop and implement measures to improve the quality and competitiveness of products. Actual scientific researches and issues analysis. Bean pasta has a special biological and digestive value but has low sensory indicators due to the inherent specific bean taste and aroma. Therefore, it is important to look for additional components of the recipe to emphasize the taste and aroma of beans and create a harmonious flavor composition. Uninvestigated parts of general matters defining. The effect of dry demineralized serum on the sensory and rheological characteristics of legumes has not been studied. The research objective. According to research results, the possibility of using a demineralized whey solution in legumes was confirmed. The statement of basic materials. Following the developed standard scales of sensory descriptors, the sensory characteristics of model legume compositions are analyzed. Designed for the differentiated use of legumes and different masses of valleys of whey product, demineralized in the confectionery industry, as a finish for semi-finished products. The deformation characteristics of model compositions of bean pastes have been experimentally investigated. Based on the research results, the main rheological modular constants were identified and analyzed. Conclusions. The results of the analysis of sensory and rheological characteristics indicate that dry whey powder is demineralized in the presence of 10-30% in legumes and allows you to obtain the desired consumer characteristics for finished semi-finished products used in the confectionery industry.
