Our objective was to evaluate leg tissue composition and physico-chemical quality parameters of sheep meat fed with increasing levels of annatto coproduct. 32 male uncastrated animals without a defined breed were randomized in four treatments (0, 100, 200 and 300 g kg-1 of annatto coproduct in the DM diet). After 78 days of confinement, the animals were slaughtered and body components were recorded. Reconstituted leg weight, total muscle weight, biceps weight and semitendinosus weight showed a negative linear behavior (P < 0.05) with the inclusion of the annatto coproduct in the diet. No effects of the inclusion of annatto coproduct (P > 0.05) were found for leg tissue composition (%), muscle:bone ratio, relative fat or leg muscle. Meat physico-chemical parameters (color, shear force, water retention capacity and cooking losses) were not affected by the inclusion of the annatto coproduct in the diet. The annatto coproduct can be included in up to 300 g kg-1 of dietary dry matter without negative effects to the leg tissue composition (%) and physical parameters of confined sheep meat.

The aim of this research was to evaluate the nutritional and physico-chemical properties of six different vegetable fibers and explore the possibility of using them as a thickener or gelling agent in food. To determine the technological, nutritional and physical parameters, the following analyses were carried out: water-holding capacity, water retention capacity, swelling, fat absorption capacity, solubility, particle size, moisture, hygroscopicity, pH, water activity, bulk density, porosity, antioxidant activity, phenolic compounds and mineral content. Gels were prepared at concentrations from 4% to 7% at 5 °C and analyzed at 25 °C before and after treatment at 65 °C for 20 min. A back extrusion test, texture profile analysis and rheology were performed and the pH value, water content and color were analyzed. As a result, all the samples generally showed significant differences in all the tested parameters. Hydration properties were different in all the tested samples, but the high values found for chia flour and citrus fiber are highlighted in functional terms. Moreover, chia flour was a source of minerals with high Fe, Mn and Cu contents. In gels, significant differences were found in the textural and rheological properties among the samples, and also due to the heat treatment used (65 °C, 20 min). As a result, chia flour, citrus, potato and pea fibers showed more appropriate characteristics for thickening. Moreover, potato fiber at high concentrations and both combinations of fibers (pea, cane sugar and bamboo fiber and bamboo, psyllium and citric fiber) were more suitable for gelling agents to be used in food products.

Physico-chemistry and biological data were investigated from October 2010 until April 2011 of Jatiluhur reservoir. A total of six sampling stations were selected for this study. The discharge and hidrological data were obtained from Perum Jasa Tirta II Jatiluhur. The results showed that the hydrological regime in the reservoir Jatiluhur was affected by global phenomenon La Nina events in 2010 and early in 2011. Stream flows were determined during sampling to range from 78 to 482.5 m3/s. The water quality findings were as follows: pH (6.93-8.81), temperature (26.37-30.6°C), dissolved oxygen (0.733-5.2 mg/l), conductivity (2.45-233µmhos/cm), COD (7.36-96.9 mg/l), turbidity (4.063-65.6 NTU), total phosphate (0.002-0.324 mg/l), total nitrogen (0.99-5.96 mg/l), chlorophyl (2.237-43.37 mg/m3), visibility (30-160 cm). The eutrophication was pronounced at Jatiluhur reservoir. Canonical Correspendence Analysis found that some water quality parameters correlated positively with the discharge and the water level.

Tarahara Fish Farm includes 37 large ponds as a fish super zone. Physicochemical parameters viz., air and water temperature, pH, DO, BOD, CO2, Cl-, TA and TH of these ponds were studied for two years (Nov. 2008 to Oct. 2010). The air temperature had positive and significant correlation with water temperature (r=0.893, P<0.01) but inverse and significant correlation with DO (r = - 0.669 P<0.05) and TH (r = - 0.673, P<0.05). Both air and water temperature showed a decreasing trend during the winter months of November to January and again September to October in both years. Similarly, positive and significant correlation showed by pH with DO (r =0.660, P<0.05) and BOD (r =0.846, P<0.05); by free CO2 with DO (r=0.854, P<0.01), chloride (r=0.648, P<0.05) and TA (r=0.616, P<0.05); by DO with TA (r =0.715, P<0.01) and chloride (r =0.625, P<0.05) and by TH with TA (r= 0.592, P<0.05) but inverse and significant correlation showed by pH with water temperature (r =-0.671, P<0.05); by free CO2 with BOD (r=-0.627, P<0.05) and by DO with BOD (r = -0.810, P <0.01). The water quality parameters were within suitable range for the fish growth and breeding with small fluctuations in different months during the first and second years. Physico-chemical parameters significantly (P<0.01; 0.05) differed between different months. However, no mass mortality of fish was recorded from this site. So, the area selected as fish super zone is fruitful to meet the expected production level of fishes and fish seeds in peripheral areas.

Abstract Cyanobacterial blooms occur frequently in artificial lakes, especially in water reservoirs with small retention exposition to anthropopressure. The abundant occurrence of cyanobacteria is accompanied by danger of oxygen imbalance in the aquatic environment and the secretion of toxins that are possible threat to human health and life. Cyanobacterial cell growth depends on a number of physical (temperature, light exposure), chemical (pH, concentration of compounds containing nitrogen and phosphorus) and biological (the presence of other organisms) factors. This paper presents the results of the analysis of water from reservoirs located in southern Wielkopolska region (Pokrzywnica-Szałe, Gołuchów and Piaski-Szczygliczka). Some important physico-chemical parameters of water samples taken from investigated reservoirs as well as cyanotoxins concentration were determined. Furthermore, the cyanobacterial species were identified. There was also an attempt made to correlate the water parameters with the cyanobacteria development and cyanotoxins production. On the basis of the results obtained in the analyzed season, it can be concluded that water from Pokrzywnica and Gołuchów reservoirs was rich in nutrients, hence the intense cyanobacterial blooms and cyanotoxins in water were observed

The wetlands located at the periphery of Jimma town, southwestern Ethiopia, have critical roles in providing a range of ecological and socio-economic benefits, yet they are subject to increasing anthropogenic disturbances, notably through agriculture, settlement, intensive grazing and brick-making. This study assessed the ecological status of these wetlands, and examined the scale of the human disturbances that local communities might impose on them. Macroinvertebrate communities, water quality parameters, and human disturbance scores were assessed. Except for electrical conductivity and water temperature, no significant difference (P < 0.05) was found in physico-chemical parameters between the sampled sites. Nitrate was the only parameter that correlated with significant influence on species richness of the sampled macroinvertebrates. A total of 10 metrics were used to generate the index of biotic integrity (IBI). This IBI was then tested based on macroinvertebrate data collected. Ways of assessing and evaluating the existing ecological status of the wetlands are discussed in the context of physico-chemical parameters, IBI based on macroinvertebrates and human disturbance scales. The present study was conducted to investigate the physico-chemical characteristics in drinking water of Mardan District, Pakistan. Furthermore, water quality was evaluated for the risk assessment of arsenic and heavy metals (HMs) and their contamination sources. Representative groundwater samples of shallow and deep sources were collected in the study area. These samples were analyzed for physical parameters, anions, light metals (LMs) and HMs. Results were compared with the drinking water guideline values set by the World Health Organization and the US Environmental Protection Agency. Average concentrations of anions, LMs and HMs were found within the maximum allowable contaminant levels except for bicarbonates, Fe, Cu, and Pb. Results revealed that hazard quotients >1 were observed for shallow groundwater for 10% samples only, suggesting potential health risk from water consumption. Correlation analysis and principal component analysis showed a relationship among various physico-chemical parameters in both shallow and deep groundwater. Statistical analyses suggested the geogenic and anthropogenic sources for possible enhancement of various physico-chemical parameters in the aquifer system of the study area.

This work aimed to study the relationship between meat emulsion in both raw and cooked states employing two different types of starch, potato, and wheat, in meat batters formulated with different fat percent. Emulsion stability as related to water retention capacity, thermal denaturation temperature, and enthalpy plus thermal diffusivity were determined in the raw and cooked state. There was an inherent difference in potato starch functionality, with higher emulsion stability and yield, but the Pearson correlation analysis and PCA demonstrated that water holding capacity and the denaturation enthalpy resulted in higher cook yield as a consequence of lower expressible moisture. This results in establishing the importance to maintain meat extensors as starches functionality before and during mixing and thermal processing to obtain better yield and less water release in fat-reduced meat products, both important quality parameters, related to sensory (juiciness) and texture (hardness) properties of comminuted meat products.

Physical, chemical, and biological parameters of the Kole (Open type) and Suguna (Closed type) wetlands have been investigated from January 2011 to December 2013. These lakes are locally called as Baur. The work has been carried out for one and half year period from nov 2011- May2013 in different seasons viz. monsoon, post monsoon and premonsoon respectively in order to assess water quality parameters and diversity of biotic communities. The present article attempts to investigate the possible interrelationship among the physicochemical parameters and biotic communities of both the beels. During the investigation, zooplankton diversity was observed high in the wetland. Rotifers were the most dominant group followed by Cladocera, Copepoda, Protozoa and Ostracoda during the investigation. There is a high density of zooplankton in monsoon than compare to other seasons indicate good water quality and less pollution load in both beels. These investigations will be the basic guidelines for the researcher in the field of ecology of beels. The comparison of the ecological parameters of these two lakes is attempted in the present investigation. The study aim to investigate the diversity of biotic communities in relation to physico-chemical parameters of surface water in gangetic plain. Physico-chemical parameters of both the beels revealed well marked fluctuations with maxima and minima values of each parameter during specific months and analysis of biotic communities revealed seasonal variations with an increase during summer and a fall during winter and monsoon seasons.

Physico-chemical properties are crucial characteristics of hydrocolloids as they decide the applicability of them. Rheology of system, flow behaviour and mechanical properties make hydrocolloids suitable for food industry. Modification of consistency or texture properties of functional polymers also controls their sensory characteristics, thereby they become significant essences such as thickener, gelling agents, foaming agent, texture modifier, viscosifier, emulsifier, stabilizer and binder. Industrial and pharmaceutical applications are also controlled by some suitable physico-chemical properties of hydrocolloids. The polysaccharide gum exudates constitute a architecturally distinct class of complex biomacromolecules having unique physico-chemical properties. Due to their good bio/tissue compatibility, non-toxicity, they are extensively used in the field of tissue engineering, drug delivery and wound healing. Chemical and molecular architecture of hydrocolloids in turn controls their physico-chemical and functional properties. Sterculia gum is a substituted rhamnogalacturonoglycan (pectic) type exudate gum used as suspending agent, gelling agents, emulsifier, bulk laxative, dental adhesive, drug delivery agent and wound healing agent. It exhibits high water retention capacity, high viscosity and least solubility. Solutions of sterculia gum are viscoelastic and thixotropic. Sterculia gum has been recommended as effective wound dressing material as it can form a intensely adhesive gel when dispersed in minimum ammount of water. Owing to wide applications and distinctive properties of sterculia gum, present work is an endeavor to summarize the molecular organization, chemical configuration and physico-chemical properties of sterculia gum and the factors affecting physico-chemical properties of sterculia gum.
