Plants are a good source of natural antioxidants and could provide protection against harmful free radicals. Phenolic compounds were found to be an important part of human diet and are considered as active principles in many medicinal and agricultural plants. Detailed information about health-promoting components of different soybean cultivars could lead to a better understanding and an increased consumption of this crop, including its use in functional foods. The objective of this study was to determine total phenolics, total tannins, total flavonoids and antioxidant capacity with different assays of five Serbian soybean cultivars (Merkur, Sava, Valjevka, Venera and Victoria) extracted with three different solvents (70% acetone, 70% ethanol and 70% methanol). Total phenolics varied among cultivars and among applied solvents. Antioxidant properties highly depended on a solvent used for extraction. Such results highlight an existing variability in soybean seeds and emphasise the need to evaluate diversity and to support conventional breeding programs to improve soybean nutritional value.

Fermented foods have made important contributions to human diets for thousands of years and continue to do so. Their health-promoting benefits are attracting increasingly attention. The present study was conducted to evaluate the impact of natural fermentation on antioxidant properties of traditionally fermented wheat (Triticum durum) compared to unfermented samples. Initially, the samples were submitted to traditional spontaneous fermentation. Subsequently, an aqueous extract was obtained and used to determine polyphenolic and flavonoid contents. Moreover, the antioxidant potential was also measured through the determination of the scavenging ability against 2,2-diphenyl-1-picrylhydrazyl (DPPH) radicals, reducing power and hydrogen peroxide scavenging activity. The results showed that the total phenolic and total flavonoid contents were significantly increased in fermented wheat. Moreover, the antioxidant activity was more effective in fermented than in unfermented wheat. Thus, natural fermentation can enhance natural antioxidants in wheat and transform it into a healthy food or ingredient with multi-functional properties which can be used in the food industry.

Over the past several years, natural antioxidants have attracted considerable interest as potential treatment for a wide variety of disease states, including cancer and other causes e.g. chronic inflammatory diseases and aging. Therefore, plant derived antioxidants are now receiving a special attention as they possess good antioxidant properties and hence a worldwide trend towards the use of natural phytochemicals present in fruits and vegetables have been reported. Numerous epidemiological studies indicate that consumption of cruciferous vegetables is associated with prevention of cardiovascular diseases and reduced incidence of cancers of the gastrointestinal tract and other sites. The substances that seem to be responsible for these properties are phenolic compounds (phenolic acids, flavonoids, polyphenols etc.) and sulphur-containing organic compound glucosinolates and their derived products. The present review focuses on the health promoting effects of phytochemicals and their beneficial bioactivities in Brassicaceae.

Background: Anchomanes difformis (ENGL: Blume) is a specie of flowering plants in the family Araceae. Anchomanes difformis is commonly reported for ameliorating hyperglycemia, inflammation, ulcer, malaria, and inhibiting microbial growth. Objective: This study evaluated total yields of phytochemicals present, measured antioxidant capacities and identified bioactive compounds in the leaves and rhizome extracts of A. difformis using solvents of different polarity (ethyl acetate, ethanol and water). Methods: Total polyphenolic, flavonoid content and alkaloids were measured, ORAC, TEAC and FRAP were performed as antioxidant capacity indices, and identification of bioactive compounds was done using UPLC-MS and HPLC. Results: All extracts contained polyphenols, flavonols, flavanols, and alkaloids in varying concentrations. All extracts exhibited antioxidant properties. However, aqueous leaves extract had the highest antioxidant properties and polyphenols with significance (p<0.05). Thirty-four compounds were identified altogether in the leaves and rhizome. Conclusion: A. difformis leaves and rhizome are potential sources of natural antioxidants and can serve as potential therapeutic agents against diseases linked with oxidative stress. Presence of health-promoting compounds indicates possible ameliorative potentials of A. difformis.

There is only a small acreage of planted soybeans in northern Europe, as the global production of this crop is mainly dictated by the warmer temperatures needed for bountiful yields. The defense response of soybean plants to a cold climate entails the secretion of specific compounds which help mitigate oxidative stress, i.e., antioxidants, including phenolic compounds. The objective of this study was to examine differences in the concentrations of phenolic compounds, their antioxidant properties, and the concentration of key isoflavones (namely genistein, daidzein, malonyl daidzein, malonyl genistein, and daidzin) in the seeds of six soybean cultivars from two different regions of Europe, namely Poland and France. The total phenolic contents, isoflavone levels, and in vitro antioxidant capacities of soybean seeds from most of the investigated cultivars of northeast Europe were found to be greater than those from southwest Europe. The phenolic compounds of seed extracts are primarily responsible for the free-radical scavenging of soybeans. Factors regulating the production of phenolic compounds in the seeds have not been thoroughly elucidated. Hence, the results presented in this paper can be useful in the selection of soybean cultivars with higher levels of seed phenolics, because of their beneficial impact on human health and on the soybean’s defense mechanism against plant stresses.

Edible nuts have an increasing role in human diet. Pistachio is a popular but less known kind of edible nut nevertheless it is rich in health benefiting nutrients, minerals, antioxidants and vitamins. Therefore, this study attempts to determine the antioxidants capacity, total phenolics and amount of some major elements (nitrogen, potassium, calcium and phosphorus), present in the most important Iranian pistachio nut, to enhance the health benefits, and use in breeding programs. For this reason eleven pistachio cultivars (‘Akbary’, ‘Ahmad Aghaii’, ‘Daneshmandi’, ‘Kalle Ghoochi 1’, ‘Kalle Ghoochi 2’, ‘Garmeh’, ‘Ohadi 1’, ‘Ohadi 2’, ‘Sefid’, ‘Momtaz’, and chance seedling tree ("None-grafted") as control) which are grown in commercial orchards of Fayzabad (Khorasan-e-Razavi) were analyzed for determination of some major elements, antioxidants capacity and total phenolics contents. The results showed that the amounts of the nutrients in 100 g kernel were within the following ranges: N 2.5-4.1 g, P 355.9-546.6 mg, K 573.6-994.9 mg and Ca 61.5-134.5 mg. Total phenolics content varied from 5.3-9.9 mg gallic acid equivalents in g fresh weight. The results also showed that the capacity of antioxidant ranged from 1.6-3.7 (mg ascorbic acid equivalents in g fresh weight). Weak correlation was observed between total phenolic content and total antioxidant capacity (r2=0.3824). The result demonstrates that there is adequate variation in major elements, antioxidants capacity and total phenolics contents within pistachio cultivars and hence there is potential for improvement towards enhancing these health-promoting photochemical in this nuts.

AbstractChinese kale (Brassica oleracea var. alboglabra) has high nutritional value. This study investigated the contents of glucosinolates, antioxidants (chlorophylls, carotenoids, vitamin C, and total phenolics), and antioxidant capacity in five organs from six varieties of Chinese kale. The highest concentrations of individual and total glucosinolates were in the roots and inflorescences, respectively. The highest levels of antioxidants and antioxidant capacity were in inflorescences and leaves. Plant organs played a predominant role in glucosinolate and antioxidant accumulation. Glucoiberin, glucoraphanin, and glucobrassicin, the main anticarcinogenic glucosinolates, could be enhanced simultaneously because of their high positive correlations. The relationship between glucosinolates and antioxidant capacity indicated that glucobrassicin might contribute to the total antioxidant capacity. These results provide useful information related to consumption, breeding of functional varieties, and use of the non-edible organs of Chinese kale.

Honeybees products comprise of numerous substances, including propolis, bee pollen, and royal jelly, which have long been known for their medicinal and health-promoting properties. Their wide biological effects have been known and used since antiquity. Bee products are considered to be a potential source of natural antioxidants such as flavonoids, phenolic acids, or terpenoids. Nowadays, the still growing concern in natural substances capable of counteracting the effects of oxidative stress underlying the pathogenesis of numerous diseases, such as neurodegenerative disorders, cancer, diabetes, and atherosclerosis, as well as negative effects of different harmful factors and drugs, is being observed. Having regarded the importance of acquiring drugs from natural sources, this review is aimed at updating the current state of knowledge of antioxidant capacity of selected bee products, namely, propolis, bee pollen, and royal jelly, and of their potential antioxidant-related therapeutic applications. Moreover, the particular attention has been attributed to the understanding of the mechanisms underlying antioxidant properties of bee products. The influence of bee species, plant origin, geographic location, and seasonality as well as type of extraction solutions on the composition of bee products extracts were also discussed.

AbstractInvestigations have been made to study the production of phenolic compounds (total phenolics, flavonoids and phenylpropanoids) and total antioxidant capacity in 27 Macedonian traditional medicinal plants to improve its potential as a source of natural antioxidants. Antioxidant potential of plant extracts was analyzed by five different assays: cupric reducing antioxidant capacity (CUPRAC), phosphomolybdenum method (PM), reducing power (RP), 2,2-diphenyl-1-picrylhydrazyl (DPPH·) and 2,2′-azinobis(3-ethylbenzothiazoline-6-sulphonic acid (ABTS·+) radical scavenging activity. Origanum vulgare extract consistently exhibited the highest content of phenolic compounds and the strongest antioxidant capacity based on the tests performed, and can be proposed as a promising source of natural antioxidants. Melissa officinalis and Salvia ringens were also identified as valuable sources of antioxidant compounds. A positive linear correlation between antioxidant activity and total phenolics, flavonoids and phenylpropanoids indicates that these compounds are likely to be the main antioxidants contributing to the observed activities of evaluated plants. These findings suggest that the medicinal plants studied in this paper are good sources of bioactive compounds for the food and pharmaceutical industries.

Quince (Cydonia oblonga Mill.) has been long regarded to be a health-promoting fruit. Although it is mainlyconsumed in processed form, its relatively heat-stable polyphenolics were confirmed to be responsible for most of the beneficial effects. This review aims to show basic nutritional information on quince fruit such as carbohydrate, fibre, pectin and mineral element contents. In addition, vitamin and polyphenolic contents and composition as well as the physiological effects of quince consumption were also surveyed. Information on presumable protective effects against several diseases including infl ammation, atopic dermatitis, ulcers and cancer is summarized. Potential antibacterial effects of quince polyphenolics were also considered. Polyphenolics are supposed to be responsible for the major part of benefi cial health-effects, and phenolic compounds predominantly accumulate in peel. There exists a considerable extent of genetic variation in phytochemical composition among cultivars, which might be exploited in designing future breeding programs for quince improvement and opening new ways for health-related uses.

The aim of this study was to compare the major pomological and antioxidant properties of fruits which are comparatively studied in wild strawberry (Fragaria vesca L.), taken from natural habitats and commercially important varieties that are grown in the Una - Sana Canton (Bosnia and Herzegovina): Marmolada, Clery, Maya, Arosa and Elsanta. The aim was also to point out the potential superiority of the wild forms, how rich they are in vitamin C, phenol and anthocyanin, in order to be considered as a potential source of natural antioxidants. The results of analyzing the contents of vitamin C and the total phenols of fruit indicate that a wild strawberry has significantly higher antioxidant content of these components than all the commercial varieties tested. The content of vitamin C in fruits of a wild strawberry was 72 mg/100g and the phenol content 94.8 mg/100g. Their inclusion in breeding programs can provide significant potential to create varieties which will possess a better fruit quality with a higher content of antioxidant components. A wild strawberry is a significant genetic potential of particular importance for conservation and biodiversity of certain areas, as well as for the selection and breeding of cultivated fruit trees. The highest content of the total anthocyanin of fruit is registered in Marmolada (134.7 mg/100g).
