<p><span lang="EN-US">The purpose of the research was to investigate the chemical, mineral and amino acid content of meat of quails fed by biologically active additives based on the submerged bees of apimore, apiminum, aphytoitis. Feeding was carried out with full-fodder mixed fodders from one day to 56 days of age. The control group was fed by this fodder; experimental quails of the 2<sup>nd</sup><span>  </span>group were fed by this fodder with added 3% of the apimore compound; the 3<sup>rd</sup><span>  </span>group was fed also by apimin at the rate of 1.1 g per 1 kg of mixed fodder; the 4<sup>th</sup><span>  </span>group was also fed by apiates at a rate of 200 ml per 1 kg of mixed fodder. Apimor and apimin were thoroughly mixed with feed. The feed additive aphytoitis was drunk with water, certainly, we have taken into consideration daily water consumption of quails. Four birds were slaughtered in each group at the end of experiment. The selection of average samples of muscle tissue was carried out during anatomical disassembly of quail carcasses. Physical and chemical parameters, mineral and amino acid compositions were evaluated for the study of the effect of feed additives based on submerged bees on muscle quality. In the control group, the ratio of pulp and bone was 3.81:1, in the experimental group it was 4.07-4.2: 1. Quails fed by apiite had the highest rate of breast meatiness; it was 4.3% (p &lt;0.001) higher than in the control group. The nutritional value of white quail meat of the 2<sup>nd</sup> group was significantly higher by 7.2% (p &lt;0.01), and in the 3<sup>rd</sup> and 4<sup>th</sup> groups it was lower, respectively, by 0.6% and 1.3%. The nutritional value of white meat protein is caused by the presence of essential amino acids in it. A noticeable increase of these amino acids in poultry meat of experimental groups indicated an improvement of its dietary qualities. Under the action of apivite valine increased by 2.1% (p &lt;0.001), lysine increased by 3.6% (p &lt;0.001) in the poultry meat; under the action of apimor content of threonine increased the by 8.5% (p &lt;0.001), methionine increased by 9.8% (p &lt;0.01), and phenylalanine increased by 11.2% (p &lt;0.001). Feeding by the researched feed additives influenced the increase of calcium in white meat quail by 37.7-40.5% (p &lt;0.001), phosphorus by 8.9-17.4% (p &lt;0.001). Usage of apivite increased the cuprum content by 22.7% (p &lt;0.001). The quail meat of the 4<sup>th</sup> group was characterized by the highest content of zinc, it was by 23.3% more than the control (p &lt;0.001), the 2nd and 3rd groups had more by 5.5% and 6.7% respectively. There is a tendency to increase the iron content in the experimental groups by 5.1 to 15.6% (p &lt;0.01). In studies, the content of cadmium was lower than the <span>threshold limit value</span> under the action of the apimore by 6.0%, apimin by 8.0 % and apivite by 34.0 %, plumbum content was lower by 36.6%, 31.4% and 32.6% respectively. The best indicators for reducing cadmium content in the chest muscles had the 4<sup>th</sup> group under the action of aphids, plymbum had the 2<sup>nd</sup> group under the action of apimor. According to the results of our research, the quality of quail meat from experimental groups significantly exceeds the quality of their analogues in the control group.</span></p>

Скрябина и ФГБНУ ФНЦ ВИЭВ РАН, аминокислотный состав мяса перепелов в Государственном бюджетном учреждении Краснодарского края Кропоткинская краевая ветеринарная лаборатория . Из цыплят в суточном возрасте кросса Кобб500 было сформировано три группы по 10 голов в каждой две опытные и контрольная опытным группам выпаивали кормовые добавки из расчета 1 мл/кг живой массы птицы до 50 суток выращивания, убой птицы проводили на 56 сутки. Тушки птицы после 24х часов созревания в холодильной камере при температуре 4 С подвергали исследованиям по общепринятым методикам: ГОСТ Р 519442002. Мясо птицы. Методы органолептических показателей, температуры и массы ГОСТ 314702012. Мясо птицы, субпродукты и полуфабрикаты из мяса птицы. Методы органолептических и физикохимических исследований аминокислотный состав мяса исследовали согласно М 0438 2009. Корма, комбикорма и сырье для их производства. Методика измерений массовой доли аминокислот методом капиллярного электрофореза с использованием системы капиллярного электрофореза Капель. Применение кормовых добавок в дозе 1 мл/кг живой массы способствовало увеличению живой массы птицы при применении Абиотоника на 54,23, а при применении Чиктоника на 37,70 по отношению к контролю. Во всех исследуемых пробах количество ЛЖК находится в пределах нормы и составило: в 1й опытной 1,390,03 мг КОН, во 2й опытной 1,420,04 мг КОН и в контрольной группе 1,810,06 мг КОН, что говорит о свежести и доброкачественности мяса. Значение рН мяса цыплятбройлеров находилось в трех группах в пределах нормы и не превышало 6,0. Poultry farming is one of the major branches of animal husbandry, which develops through concentration, specialization and intensification on the basis of poultry plants and poultry farms. The increase in production of eggs and poultry meat is based on a significant increase in the productivity of poultry with a simultaneous increase in its population with a high payment of feed by production and the increase in labour productivity. The purpose of the work was to study the influence of enzyme feed additives in the diets of laying hens on the quality of eggs. The researches have been carried out in PJSC “Poultry plant Chelyabinskaya”, which produces high-quality chicken eggs obtained from the poultry cross “Loman LSL-classic”. The object of study was enzyme drugs produced by Sunzyme – a multi-enzyme drug that includes xylanase, cellulase and mannase activities. The dosage of enzyme drugs in the feed mixture of laying hens was: Sunfyze 5000 – 80 g/t, Sunzyme – 100 g/t. The results of researches show that in the groups that received enzyme drugs in their diet, egg production was higher than in the control group. So, for the entire period of researches the hens of the experimental groups were significantly superior to the control group in terms of egg production per average laying hen. The largest difference was in hens of the 1st experimental group (enzyme drug Sunfyze) – 10,8 eggs; the smallest in hens of the 3rd group (enzyme drugs Sunfyze and Sunzyme) – 5,7 eggs. In hens of the 2nd experimental group compared with hens of the control group egg production was higher by 7,9 eggs. The best indicators of production efficiency have been obtained in the 1st experimental group of laying hens, which were fed with the enzyme feed additive Sunfyze to reduce the nutritional value of the diet according to the matrix.

To reduce the risk of aflatoxicosis, antioxidants have proven to be effective feed additives in combination with adsorbents as excellent inhibitors of intoxication processes in the poultry body. The study purpose was to determine the effect of Tox-O adsorbent in combination with Oxy-Nil antioxidant drug on the broiler meat production and quality and reduce the risk of aflatoxicosis. It was demonstrated that to optimize meat production in the diets of farmed poultry with a tolerant amount of B1 aflatoxin, it is necessary to introduce Oxy-Nil antioxidant in the amount of 600 g/t and Tox-O adsorbent in the amount of 750 g/t of feed. Due to synergistic effect of these drugs, the nutritional value of poultry meat was optimized, which was expressed in control group comparison in the enrichment of pectoral muscle samples with dry matter and protein. When feeding tested drugs in pectoral muscle samples of chickens of experimental group III, the value of meat biological usefulness was improved.

The nutritional quality of mushroom protein varies and is strongly affected by the relative proportion of each amino acid. Thus, the purpose of this study was to estimate the concentration of the amino acids present in mushroom proteins in order to evaluate the protein nutritional value. In this investigation fifteen field-collected mushroom samples of the Boletaceae family from various parts of Macedonia were included. After acid hydrolysis and pre-column derivatisation with phenyl isothiocyanate (PITC) determination of seventeen amino acids was carried out by the HPLC method. Tryptophan was determined spectophotometrically in the alkaline hydrolysates. The dietary protein quality of the investigated mushrooms was evaluated by comparison of the essential amino acid content with the reference FAO/WHO pattern. Essential amino acids made up 47-75 % of all determined amino acids depending on the origin and the species of the fruit body. Lysine was the most often found limiting amino acid in the investigated mushrooms samples. The nutritional value of proteins calculated by biological value, protein ratio, chemical score and essential amino acid index was very high in the majority of mushrooms studied. The biological value of the mushroom protein varied from 51.3 to 78.9 %. Protein amino acids accounted for about 66.7 % of the total nitrogen, suggesting that a practical nitrogen to protein conversion factor for this Macedonian edible Boletaceae mushroom may be considered to be about 4.17 on average.

Aim. Study of the effect of new domestic lactulose-containing feed additives on the biological properties and amino acid composition of the protein in broiler chicken meat. Material and Methods. During the research, classical and modern methods were used: zootechnical, biochemical, etc. The methodological basis was the scientific works of domestic and foreign scientists who studied the features of the effect of feed additives on the body of poultry and its productive qualities. The mass fraction of protein was determined by the Kjeldahl method according to GOST 25011-2015, the mass fraction of fat – by the Extractive-weight method according to GOST 23042-2015, the mass fraction of moisture – by the thermogravimetric method using the ELVIZ moisture analyzer, the mass fraction of total ash – GOST 31727-2012 (ISO 936:1998), amino acid composition of pectoral muscles – by capillary electrophoresis (Kapel 105M). Results. As a result of the experiment, it was found that the use of additives No. 1 and No. 2 helps to stabilize the indices of digestibility of nutrients and, as a result, to improve the metabolic process in the body of the bird. It was found that the digestibility coefficient of dry matter in the experimental groups was by 0.91%, crude protein – by 1.68%, crude fat – by 0.79%, nitrogen-free extractable substances – by 1.33% higher than in the control group. Positive dynamics was also noted in the increase in the weight of the gutted carcass in the experimental groups by 5.47 and 4.46% in comparison with the same indicator in the control group. The use of lactulose-containing additives when growing broilers has led to an improvement in the quantitative and qualitative characteristics of the resulting product ("white" meat). An increase is observed in the value of the mass fraction of protein by 0.5 and 0.6%, respectively, in comparison with the mass fraction of protein in the meat of the control group. The studied feed additives balanced the ratio of essential amino acids to replaceable ones. During the experiment, it was found that in the white meat of the experimental groups, in comparison with the white meat of the control group of broiler chickens, there was an increase in the content of essential amino acids on average by 0.31 г/100 г (3.6%) и 0.41 г/100 г (4.7%), respectively. Conclusion. In terms of a set of indicators, the meat of broiler chickens grown with the use of new lactulose-containing additives No. 1 and No. 2 has higher indicators of meat quality compared to the control. New domestic prebiotic supplements based on lactulose No. 1 and No. 2, used in the experiment, are not only a natural alternative to antibiotics, hormones or other growth stimulants, but also a mechanism for a better approach to the formation of general beneficial physical and biochemical properties of meat of broiler chickens. Given this, these additives can be recommended for widespread implementation in poultry farming.

1. A comparative study was made of two biological techniques for assessing protein quality in wheat and barley, and in a soya-bean-protein isolate both as received, and after being heat damaged by autoclaving. Amino acid digestibility was determined by the ‘ileal’ analysis technique while amino acid availability was measured in growth assays. Some chemical and microbiological tests were also done.2. Heat treatment of the soya-bean-protein isolate caused little change in amino acid composition but the digestibility of all amino acids and the availability of lysine and methionine were severely reduced, lysine being most affected. The reduced availability of lysine was not entirely attributable to impaired digestibility.3. The amino acids in wheat and barley were highly digestible. The availability of methionine and lysine in barley and of methionine in wheat was high, whereas the availability of lysine in wheat was apparently much lower.4. The results showed that for methionine, digestibility values are a fair measure of the availability. In heat-damaged soya-bean-protein isolate however, digestibility of lysine over-estimated the availability, indicating that amino acid digestibility may sometimes provide a misleading indication of nutritional value.

Background: Phytonutrients in peach fruits have health promoting antioxidants against various chronic diseases. However, there is no extensive data to show the nutritional values of Local peach cultivars after post-harvest treatments. Objective: Mainly this study was objective to determine the effect of calcium carbide on nutritional value and quality of fruits of Pakistani peach cultivars. Methods: The peach fruits were collected from three different peach orchids of KPK and the fruits were divided into 4 groups while 5th group was collected from local fruit shop. Each experimental group was treated with different concentration of calcium carbide whereas control group was not treated. The peel and pulp samples were oven dried and ground to fine powder separately. The elemental compositions were determined using Particle Induced X-ray emission and Pelletron Tandem Accelerator. Result: Sixteen elements were identified in peach fruits and the elements were Al, P, S, Cl, K, Ca, Cr, Mn, Fe, Co, Ni, Cu, Zn, As, and Se. In peel, concentration of some elements increased or decreased after treatment with CaC2 while in pulp the conc. of nearly all detected elements was increased in treated samples. We found significantly high amount of heavy metals traces including As, Se, Co, Si, and P in peach fruits treated with CaC2. Interestingly, the presence of trichomes in peach skin prevents the transfer of these heavy metals deep into the pulp which was also verified by the elemental profiling of nectarines. Conclusion: Conclusively, the artificial ripening with CaC2 changed the nutritional value of peach fruits that has higher health risks if consume with the peel. According to our best knowledge, this is the first report that highlights the effects of CaC2 which deteriorate the nutritional value of peach fruits in Pakistan.

Aim and Objective:: To determine the mechanisms present in the etiopathogenesis of nasal polyposis. It is not clear whether amino acids contribute in a causal way to the development of the disease. Therefore, the aim of this study was to determine the plasma-free amino acid profile in patients with nasal polyposis and to compare the results with a healthy control group. Materials and Methods:: This was a prospective controlled study that took place in the Otolaryngology Department at the Harran University Faculty of Medicine between April 2017 and April 2018. Plasmafree amino acid profile levels were studied in serum samples taken from a patient group and a healthy control group. Patients who were diagnosed with bilateral diffuse nasal polyposis and were scheduled for surgical interventions were included in this study. Individuals whose age, gender, and body mass index values were compatible with that of the patient group and who did not have any health problems were included in the control group. All the participants whose levels of plasma-free amino acid were thought to be affected by one or more of the following factors were excluded from the study: smoking and alcohol use, allergic rhinitis presence, the presence of acute or chronic sinusitis, a history of endoscopic sinus surgery, unilateral nasal masses, a history of chronic drug use, systemic or topical steroid use in the last three months for any reason, and liver, kidney, hematological, cardiovascular, metabolic, neurological, or psychiatric disorders or malignancies. However, the gamma-aminobutyric acid (gaba: ng = 0.16 (0.10 – 0.24); cg = 0.21 (0.19 – 0.29); p = 0.010) plasma concentration was significantly lower in the nasal polyposis group than in the healthy control group. Conclusion: In this study, plasma levels of 15 free amino acids were significantly higher in the nasal polyposis group than in the healthy control group. A plasma level of 1 free amino acid was found to be significantly lower in the nasal polyposis group compared to the healthy control group. Therefore, it is important to determine the possibility of using the information obtained to prevent the recurrence of the condition and to develop effective treatment strategies. This study may be a milestone for studies of this subject. However, this study needs to be confirmed by further studies conducted in a larger series.

The date palm (Phoenix dactylifera L.) is one of mankind’s oldest cultivated plants. The fruit of the date palm is an important crop of the hot arid and semi-arid regions of the world. It has always played a genuine economic and social part in the lives of the people of these areas. The present objective in examining the amino acid content of different varieties of date palm fruits from Middle-East region; is to determine whether its protein could effectively supplement the nutritional value and it is also aimed in finding which variety is rich in number of amino acids. The phytochemical screening revealed the presence of eight essential amino acids and five non-essential amino acids in the date fruits. Among all the date fruit varieties taken as samples for the study, Dabbas cultivar of United Arab Emirates found to exhibit eight types of amino acids which includes five as non-essential ones. Total of thirteen amino acids were detected in the seven date cultivars. Determination of amino acid can serve as a guide to the possible nutritional value.

The aim of the study was to present a comprehensive characterisation of crayfish meat, which is crucial to assess its potential usefulness in the food industry. To this end, we assessed the yield, basic chemical composition (protein, fat, minerals), nutritional value (amino acid and fatty acid profiles, essential amino acid index (EAAI), chemical score of essential amino acids (CS), hypocholesterolaemic/hypercholesterolaemic ratio (h/H), atherogenicity (AI) and thrombogenicity (TI) indices), as well as culinary value (lab colour, texture, sensory characteristics, structure) of the meat of spiny-cheek crayfish (Faxonius limosus) (n = 226) from Lake Sominko (Poland) harvested in May–September 2017. Crayfish meat, especially that from the abdomen, was shown to have high nutritional parameters. It is lean (0.26% of fat), with a favourable fatty acid profile and a very high quality of fat (PUFA (sum of polyunsaturated fatty acids):SFA (sum of saturated fatty acids), n-6/n-3, h/H, AI, TI) and protein (high CS and EAAI). It is also a better source of Ca, K, Mg, Na, P, and Cu than meat from slaughter animals. Hence, crayfish meat can be an alternative to livestock meat in the human diet. Owing to its culinary value (delicateness, weak game flavour, and odour), it meets the requirements of the most demanding consumers, i.e., children and older people.
