To assess the level of consumption of vitamins entering the body with food, vitamin and mineral complexes, and enriched food in the population of working age of the Republic of Tatarstan. The quantitative content of vitamin A and ß-carotene in the diet of men and women is 2 or more times lower than normal value. Indices of the daily intake of vitamin C are 3 times less than normal. Significant differences in the intake of vitamins with food depending on the group of physical activity were not revealed (p > 0.05). Combined deficiency of retinol, β-carotene, thiamine, Riboflavin, Niacin, and ascorbic acid can be traced in 86% of diets. 13.2% of women and 3.7% of men use vitamin and mineral complexes every day; 48% of respondents fail to use them, the rest (35.1%) persons use irregularly. The intake of vitamin and mineral complexes correlates with the average monthly income and the level of education of the respondents (p ≤ 0.05). 3% of respondents consume enriched food 1-2 times a week. The majority of respondents (73%) do not know about products with high nutritional value, the rest (24%), use enriched products 1-2 times a month. We have not found a relationship between the number of enriched products consumed, family income and education level (p > 0.05).

The analysis of data on alimentary-dependent diseases among persons of the working age in the Republic of Tatarstan testifies to their steady growth. The proportion of deaths from diseases in the etiology of which nutrition plays a significant role over the period 2005-2015 was 77.9%. We have identified the main trend of eating behavior in each age group: high protein intake (in 75% of men and 81% of women) and fat (in 59% of women and 67% of men). A normal range of the body mass index (20.0-24.9), was noted in 44.3% of women and 44.7% of men. About 38% of the surveyed men and more than 2/3 of women (63.2%) do not have additional physical activity. As a result of the irrational eating behavior and low physical activity, the number of overweight men increased by 17.5% during the studied period. Only 20% of residents of the Republic of Tatarstan can be considered rational.

The qualitative composition and quantitative content of mineral elements and vitamins in the grapes of local varieties of Muscat Peitel, Salam, Yai pink raisins, growing in southern Dagestan, are studied. The elemental composition is determined by the methods of flame and atomic absorption photometry; ascorbic acid - titrimetry; rutin, nicotinic acid and carotene - colorimetry. A certain correlation of minerals and vitamins has been found, and it is crucial at selection of grapes, aimed at high nutritional value. The obtained results can be useful at the correct selection and placement of the varieties with the optimal combination of micronutrients to provide the Republic with table grapes of good quality.

Abstract In recent times, food is not only observed from the point of view of the required intake for growth, development and regeneration of the body, but also has a leading role in the quality of human life. Therefore, the diet focuses on optimizing the daily intake of both nutrients and non-nutritive ingredients of food, all in order to preserve health and, above all, reduce the risk of chronic non-communicable diseases. Functional food can be considered food that has been scientifically proven to have a positive effect on certain body functions (in addition to the usual nutritional value) that contribute to human health and reduce the risk of disease. At the same time, it is important that the food has a standard form and that the positive effect on health is manifested by consuming the usual amount of food. The functionality of food is achieved by the presence in it of bioactive components (one or more) which have been scientifically proven to have positive effects on human health in the quantities in which they are present in food. The nutritional value of foods of animal origin depends on many factors, but certainly animal diet has the greatest impact. In human nutrition the so-called designed products of animal origin (meat, milk, eggs) are used, which are due to the specific animal diets enriched with n-3 fatty acids, vitamins, carotenoids or trace elements. Today, there are nutritional strategies by which we can access functional foods for the purpose of health promotion.

This article examines the effectiveness of the treatment of rickets in young camels bred in the Republic of Kalmykia with tricalcium phosphate and tricalcium phosphate with granuvite E. To determine the biogeochemical features of the Justinsky and Yashkulsky districts of the Republic of Kalmykia, we carried out an analysis of diets for nutritional value and balance, and a study of the soil, water, feed, and macronutrient content of camels’ blood. The article presents data from the clinical examination, and the clinical, hematological and biochemical blood tests carried out before, during and after therapy. To enrich the body of experimental camels with missing macrocells (calcium, phosphorus) and vitamins (tocopherol), an experiment was carried out using tricalcium phosphate and tricalcium phosphate with granuvite E. From an economic point of view, it is more appropriate to use tricalcium phosphate (17.82 rubles) than tricalcium phosphate with granuvite E (15.54 rubles). However, as confirmed by laboratory studies (hematological and biochemical parameters), from a therapeutic point of view, the use of tricalcium phosphate for one month does not completely restore calcium-phosphorus imbalance, unlike when tricalcium phosphate is used with granuvite E. The use of tricalcium phosphate and granuvite E for therapeutic purposes once a month for young camels of 120 g and 2 g, respectively, has high therapeutic efficacy in treating osteodystrophy and normalizes the calcium-phosphorus ratio. Introduction. Lipids are a widespread group of biologically active substances in nature, making up the bulk of the organic substances of all living organisms. They accumulate in plants in seeds, as well as in fruits and perform a number of vital functions: they are the main components of cell membranes and the energy reserve for the body.Aim. Study of neutral lipids of sown oats (Avena sativa L.).Materials and methods. The objects of the study were fruits (grains) of oats of the sown variety "Tashkent 1," harvested in the Republic of Uzbekistan. Results and discussions. Neutral lipids of oat grains have been found to contain 13 fatty acids with a predominance of the sum of oleic, linolenic and linoleic acids. The total degree of unsaturation was almost 78%. Absorption bands characteristic of these substances were observed in the IR spectrum of MEGC.Conclusion. According to the results of the NL analysis, oat grains consisted of triacylglycerides and free LCDs, which were accompanied by hydrocarbons, phytosterols, triterpenoids and tocopherols.

Due to the different levels of bioactive compounds in tea reported in the literature, the aim of this study was to determine whether commercially available leaf teas could be an important source of phenolics and selected minerals (copper, manganese, iron, zinc, magnesium, calcium, sodium, potassium) and if the differences in the content of these components between various types of tea are significant. It was found that both the amount of these compounds in tea and the antioxidant activity of tea infusions were largely determined by the origin of tea leaves as well as the processing method, which can modify the content of the studied components up to several hundred-fold. The group of green teas was the best source of phenolic compounds (110.73 mg/100 mL) and magnesium (1885 µg/100 mL) and was also characterised by the highest antioxidant activity (59.02%). This type of tea is a great contributor to the daily intake of the studied components. The average consumption of green tea infusions, assumed to be 3–4 cups (1 L) a day, provides the body with health-promoting polyphenol levels significantly exceeding the recommended daily dose. Moreover, drinking one litre of an unfermented tea infusion provides more than three times the recommended daily intake of manganese. Tea infusions can be a fairly adequate, but only a supplementary, source of potassium, zinc, magnesium, and copper in the diet. Moreover, it could be concluded that the antioxidant activity of all the analysed types of tea infusions results not only from the high content of phenolic compounds and manganese but is also related to the presence of magnesium and potassium.

The aim of the study is to determine the role of geochemical factors (the content of Mg, K, Ca, Zn, Pb in soils and natural waters of the plain zone of Dagestan) in the prevalence of essential arterial hypertension (EAH) among the population of children. Materials and methods of research: an observational cross-sectional (one-step) study of the prevalence of EAH in the child population was carried out. The prevalence rates of EAH among children in the plain zone of the Republic of Dagestan are calculated for 100,000 children 0–17 years old, without taking into account gender differences. The content of elements (Mg, K, Ca, Zn, Pb) in the environment (soil, natural waters) was determined by atomic absorption spectroscopy. Results: one-way analysis of variance (One-Way ANOVA) of indicators of the content of metals (Mg, K, Ca, Zn, Pb) in the regions and objects (soils, natural waters) of the study revealed a statistically significant difference in the data (for soils: F=81,06772, p<0,0002; for natural waters: F=58,86451, p<0,00001). The dependence of children's EAH on the content of chemical elements in the objects of the biosphere of Dagestan was determined, which was expressed in an increase in the number of patients with EAH when Pb content exceeded (r=+ 0,576, r=+ 0,759) and with the decrease of Mg (r=–0,668, r=–0,173), K (r=–0,440, r=–0,636), Ca (r=–0,693, r=–0,533), Zn (r=–0,051, r=–0,827) in soils and natural waters. Conclusion: when assessing the pathogenesis of EAH in the population of children, the content of Mg, K, Ca, Zn, Pb in soil and water should be taken into account, since these microelements, entering the body with water and food, affect the elemental status of child's body.

Iron (Fe) is one of many heavy metals that is corrosive resistant, dense, and has a low melting point. If accumulated in the body, the metal can cause some medical conditions, such as irritation to skin and eyes, breathing problems, and in the long term, cancer. This research aims to know generally the spread of metallic iron (Fe) in the river Pasar in Belangwetan, Klaten. This study was conducted using an observational method in which researchers did not examine the effects of interventions. Sampling was done using purposive sampling method taken from three points, namely the upper, middle, lower. Determination of iron levels by Atomic Absorption Spectrophotometer (AAS) obtained a positive result, and the data was processed using SPSS to determine the Mean and Standard Deviation. Of the research result, it could be known the Mean score was 2.33 ppm and SD was 0.0352. The result of this research indicated that the levels of iron in the river Pasar in Belangwetan were 2.33 ppm. It means that the levels violate the regulation of the Minister of Health of the Republic of Indonesia, which is not more than 1mg/L (1ppm) in the clean water
