The effect of two fruit maturity stages on the quality attributes of four fresh fig cultivars was examined, including consumer acceptance and antioxidant capacity. Fig quality attributes such as weight, soluble solids concentration (SSC), titratable acidity (TA), SSC:TA, firmness, antioxidant capacity, and consumer acceptance varied by cultivar. Fig cultivars harvested at the advanced maturity stage (“tree ripe”) had lower TA and firmness but higher weight, SSC, and SSC:TA than figs harvested at “commercial maturity.” Fig maturity did not affect antioxidant capacity, but tree ripe figs had higher consumer acceptance than commercial maturity figs. SSC was more highly correlated with consumer acceptance than TA or SSC:TA, but other factors may also be important in controlling this relationship. Cultivars with high SSC and firmness, at a maturity stage high enough to tolerate harvesting and postharvest handling, should be selected to develop the fresh fig industry. Because fig firmness is a concern, changes to packaging should be evaluated to protect the flavor of advanced maturity figs during postharvest handling.

Abstract Pereskia aculeata Miller is a native cactaceae found from the Northeast to the South of Brazil. This plant is recognized by the high nutritional value of their leaves, which are the most used in cooking and folk medicine. However, studies on the chemical characteristics and antioxidant capacity of the ora-pro-nobis fruits are scarce. Therefore, the aim of this study was to determine the best harvest point of the ora-pro-nobis fruits to optimize the content of bioactive compounds and their antioxidant capacity. The fruits were manually harvested, defined by their peel colors in three maturity stages: unripe (green), intermediate (yellowish green), and ripe (yellow) stages. The following attributes were evaluated: soluble solids (SS), titratable acidity (TA), SS/TA ratio, pH, and content of bioactive compounds, such as total chlorophylls, carotenoids, yellow flavonoids, total phenolic compounds, and antioxidant capacity. There was a decrease in the content of chlorophyll followed by an increase in the of total carotenoids and yellow flavonoids, due to the maturity stage. For the total phenolic compounds, it was not observed significant difference between the stages. The antioxidant capacity was quantified by the ORAC method in lyophilized pulp in the unripe (1.95 mmol 100 g-1 trolox) and ripe (3.85 mmol 100 g-1 trolox) stages. The lowest contents were observed in the intermediate (0.80 mmol 100 g-1 trolox in lyophilized pulp) stage. The maturity stage significantly influenced the bioactive compounds of ora-pro-nobis, which presented higher values of total carotenoids, yellow flavonoids, and antioxidant capacity in ripe fruits.

Fruit maturity stage has direct influence on the post-harvest life and consumer quality. Therefore, the understanding of the maturation process and its quality characteristics for storage are key factors for commercialization. In face of the foregoing, this study aimed to determine shelf life and changes in physical and chemical indexes of cherry tomatoes (Perinha Água Branca (PAB) and Mascot), assessing fruit harvested at four maturity stages and stored at ambient and controlled temperatures. For this, it was used fruit at turning, pink, red and ripe maturity stages, submitted to ambient (25 ± 2 °C) and controlled (12 °C and 90% RH) temperature, and assessed over time the indexes of fresh mass loss, titratable acidity, pH, soluble solids and ascorbic acid. The experimental design was completely randomized design in a factorial scheme of 2×4×7 for ambient temperature and 2×4×8 for controlled temperature. At ambient temperature, a longevity of up to 20 days was observed for PAB and Mascot fruit harvested at turning and pink maturity stages. When harvested at red and ripe stages, the longevity was of 15 days for PAB fruit and of 15 and 11 days, respectively, for Mascot fruit. At controlled temperature, PAB fruit showed longevity of 24 days when harvested at turning and pink stages and of 20 and 7 days, respectively, when harvested at red and ripe stages. A longevity of up to 27 days was observed for Mascot fruit harvested at turning stage and of 24 days for the other stages. The fruit harvested at turning and pink maturity stages, associated with storage under controlled conditions, presented higher longevity and maintenance of physical and chemical indexes of quality.

The nutritional value of the peeled and unpeeled fruit (peel plus flesh tissues) was studied using four peach (Prunus persica L.; Red Heaven, Maria Blanca, Big Top, and Queen Giant), two pear (Pyrus communis L.; Santa Maria, Pyrus pyrifolia N.; Nashi), and three apple (Malus domestica Borkh.; Gala, Granny Smith, and Red Chief) cultivars. Based on principal components analysis (PCA) models, there was a clear differentiation among the cultivars’ and the peeled fruits’ nutritional characteristics in comparison to the unpeeled ones. Increased antioxidant capacity and content of total phenols and flavonoids of peaches (Red Heaven and Maria Blanca) versus nectarines (Big Top and Queen Giant) were recorded. In contrast, nectarines were characterized by higher hydroxycinnamates and dry matter. The apples’ cultivar Granny Smith exhibited a high level of titratable acidity (TA), while the Gala displayed a high level of soluble solids concentration (SSC), carotenoids, dry matter, hydroxycinnamic acids, and flavonols at the unpeeled fruit, whereas the Red Chief by increased anthocyanins, antioxidant capacity, total phenols, and flavonoids. Nashi pears with peel were more beneficial due to the strong skin contribution in the fruits’ beneficial compounds content. The peel of the Granny Smith cultivar was associated with an increased level of P, K, Ca, and Mg, whereas that of Red Chief with increased anthocyanins and Mg content.

Physico-chemical and physiological changes of `Flordaprince peach fruits harvested at different maturity stages were evaluated during low temperature storage. Harvested fruits were immediately classified into four different maturity stages based on red-skin color (I, 20%; II, 40%; III, 60%; and IV, 80%). Fruits were stored at 2 C (90% R.H.) for 0, 15, and 30 days. Following cold storage conditions, fruits were transferred to a 20 C room. Physico-chemical and physiological characteristics evaluated during storage included weight loss, firmness, pH, titratable acidity, skin color (hue), total soluble solids, respiration rate, and ethylene production. Weight loss increased (up to 40%) after 27 days storage at 2C. The fruits harvested at maturity stage I showed the lowest weight loss. Flesh firmness decreased significantly during storage at 2 C. Fruits from stages I and II had higher firmness than fruits harvested at stages III and IV. A significant change from green-yellow to red color was observed in fruits of the distinct maturity stages during storage at 20 C.

ABSTRACT Mexican plum (Spondias purpurea L.) ‘Cuernavaqueña’ was harvested at four ripening stages, with the aim of evaluating the concentration of bioactive compounds and antioxidant capacity in the pulp and the epicarp. The highest ethylene production (9.43 mL kg h-1) and total soluble solids concentration (23.9 °Brix) was observed in the fully ripe stage. Titratable acidity was higher in green stage compared to other analyzed ripening stages in both pulp (0.48 %) and epicarp (0.32 %). Fully ripe plum epicarp presented the highest content of total phenols (GAE 190 mg g-1), flavonoids (QE 214 mg g-1), and carotenoids (853 mg g-1) compared to other ripening stages. The antioxidant capacity was higher in the epicarp of the fully ripe fruit compared to the other ripening stages: DPPH (1087 µM TE /100 g), ABTS (1534 µM TE/100 g), and FRAP (1764 µM TE/100 g). Significant correlations (r = 0.60 *** to 0.95 **) between bioactive compounds concentrations and antioxidant activity were obtained.

The objective of this study was to determine how ripening physiology and quality of 'Golden' papaya are affected by maturity stages at harvest. Papayas were harvested at four maturity stages (Stage 0: totally green; Stage 1: up to 15% of yellow skin; Stage 2: 16-25% of yellow skin; Stage 3: 26-50% of yellow skin) and evaluated during ripening at 23ºC. Physical and physico-chemical (skin color, pulp firmness, soluble solids, titratable acidity, and ascorbic acid), physiological (respiratory activity and ethylene production), and sensorial (flavor, odor, firmness, and appearance) characteristics were evaluated. Regardless of maturity stages, fruit showed similar variation in respiration rate, exhibiting constant values after the 2nd day of storage at 23ºC (~31 mL CO2 kg-1 h-1 for stages 0, 1, and 2, and ~37 mL CO2 kg-1 h-1 for stage 3). Typical climacteric behavior was not observed for any maturity stage. Only fruit harvested at stage 0 and 1 showed a well defined ethylene production peak of 2.1 µL C2H4 kg-1 h-1 after 7 d of storage and 1.3 µL C2H4 kg-1 h-1 after 6 d, respectively. Fruit harvested at stages 0, 1, 2 and 3 reached the edible condition (pulp firmness < 20 N) after 7, 6, 4, and 3 d at 23ºC, respectively. The ascorbic acid concentration increased 20-30% during ripening, while skin hue angle and titratable acidity was reduced. Independent of the maturity stages at which papayas were harvested, soluble solids did not alter during ripening. Fruit harvested at stages 2 and 3 had superior scores for sensorial evaluation, mainly for flavor and appearance. Harvest at different maturity stages altered fruit postharvest physiology and when effectuated at early stages, it reduced fruit quality but did not make its consumption unacceptable.

Introduction. Coconut water is rich in nutrients and biologically-active compounds. However, it has a short shelf life that can be prolonged by freeze drying. The purpose of this study was to analyze the physicochemical and sensory characteristics of fresh and powdered coconut drinks. Study objects and methods. The experiments included eight samples, namely fresh and powdered coconut drinks obtained from coconuts of different varieties (tall and hybrid) and maturity stages (4 and 6 m.o.). The samples were analyzed for nutrient content (ash, protein, fat, total carbohydrate, and fibre), physicochemical properties (titratable acidity, pH, viscosity, total soluble solids, turbidity, water activity, and browning index), and sensory characteristics (color, aroma, taste, texture, and overall acceptance). Results and discussion. The results obtained showed that there were significant differences among the coconut drinks of different varieties and maturity stages. They differed in nutrient content, pH value, titratable acidity, viscosity, and water activity. Meanwhile, the aroma, taste, and overall acceptance scores of all the samples were not significantly different. The powdered drink from 6 m.o. hybrid coconut was selected as the optimal sample due to its good sensory and physicochemical attributes. These attributes were similar to those of the fresh coconut drink. Conclusion. The powdered drink from 6 m.o. hybrid coconut obtained by freeze drying could be considered as an alternative healthy drink with good quality characteristics.

Changes in fruit quality attributes and antioxidative properties from six cultivars of thornless blackberries (Rubus sp.) (`Apache', `Arapaho', `Chester', `Loch Ness', `Navaho', and `Triple Crown') during four different ripening stages (red, mottled, shiny-black, and dull-black) were determined under Alabama growing conditions. Berry fruit samples were evaluated for pH, titratable acidity, total soluble solids, TSS/TA ratio, soluble sugars, vitamin C (reduced, oxidized and total), and antioxidant capacity (measured as trolox equivalent antioxidant capacity, TEAC). Significant variation among cultivars were noted in fruit quality attributes and antioxidative properties, which were influenced by maturity at harvest. An increase in fruit pH concomitant with a decline in titratable acidity (TA) was observed during ripening for all cultivars. Total soluble solids (TSS) values increased from 5.7% to 11.6%, with associated TSS/TA ratio values ranging from 11.92 to 63.56 in ripening fruit. Highest reducing and total sugar content were contained in dull-black fruit. Vitamin C content either declined or remained unchanged with ripening, and the pattern was dependent on cultivar, maturity at harvest and form determined. In general, antioxidant activity declined between red and dull-black ripening stages. The results suggest that the TSS/TA ratio may provide the best maturity index in determining optimal eating quality and antioxidant capacity in terms of TEAC value the best indicator of optimal nutritional quality as influenced by maturity at harvest.

Carambola fruit collected at the dark-green, light-green, color-break, and ripe stages were evaluated during storage at 21C for up to 10 days. Fruit size, weight, postharvest changes in color, compositional characteristics, CO2 production, ethylene evolution, and weight loss were monitored daily. Fruit size ranged between 78 to 82 mm. Peel color luminosity and chroma values increased with maturity stage, while hue values decreased. However, hue and chroma values of the four ripening stages tended to decrease with storage time. Weight loss and fruit flesh firmness were both affected by storage time and ripening stage, and ranged among the maturity stages from 5.1% to 6.7% and from 2.11 to 0.94 kg-f, respectively. On dark-green fruit, total soluble solids and titratable acidity were 4.89° Brix and 0.808%, respectively. Fruit collected at the ripe stage presented values of 6.7° Brix and 0.412% titratable acidity. None of the fruit among maturity stages changed significantly during storage on these parameters. Carbon dioxide production increased from 6.06 to 21.83 ml CO2/kg-h during storage time among maturity stages and always was highest on ripe fruit. Fruit harvested at the color-break and ripe stages produced ethylene after 9 and 6 days, respectively, and ranged from 1.15 to 3.92 μl·kg–1·h–1.

The study assessed the changes in the quality and physical and chemical parameters of apples of four cultivars (‘Gala’, ‘Idared’, ‘Topaz’, ‘Red Prince’) subjected to mechanical vibration during transport under model conditions and after storage (shelf-life). Quality changes in apples were evaluated based on skin and flesh colour, total soluble solids, dry matter, firmness, titratable acidity, pH value, total polyphenol content, and antioxidant capacity. The vibration applied at a frequency of 28 Hz caused changes in the above parameters, which were visible also after storage and depended on the cultivar, but often did not show any clear trend or direction or were not statistically significant. The values of the total colour difference factor ΔE showed considerable variations in the skin colour but only small variations in the flesh colour of individual cultivars. Vibration resulted in a decrease in firmness. Variations in dry matter, total soluble solids, pH, and titratable acidity were small, often insignificant. Mechanical vibration and storage led to an increase in the polyphenol content and antioxidant capacity of all studied cultivars. The greatest stability of quality parameters, relatively high content of bioactive compounds, and antioxidant capacity were observed for ‘Red Prince’. The lowest quality parameters were noted for ‘Gala’. The analysed cultivars continued to show a high level of antioxidant capacity after treatment, which allows the conclusion that they remain a good source of bioactive compounds after transport and short-term storage.
