The study presents changes in the broiler meat market in the world in 2000-2016. Changes in production, consumption, foreign trade in general as well as in the largest producers and consumers, exporters and importers and in Poland were presented. In the world's major broiler meat producers, production growth was faster than consumption growth, which increased their export capacity. Meat supply in the world markets was concentrated while demand was more fragmented. In 2016 the share of the three largest exporters (USA, Brazil and EU) in world exports was 76.5% and the share of the top three importers was 29.5%. Prices of broiler meat were characterized by an upward trend. The annual growth rate of world prices was 4.2%, in the EU - 1.7%, and in Poland - 1.1%. As a result, the differences between the higher prices in the EU and the world have decreased. In Poland there was an upward trend in production, consumption and exports. Foreign markets are the main direction for the development of growing poultry meat production in Poland. These changes were the result of price competitiveness of Polish broiler meat, both on the EU and other markets. In 2016, poultry prices in the EU were 49.8% higher than in Poland. The world prices were also higher by 18.8%. By 2026 further growth in poultry production in Poland may be possible resulting mainly from foreign demand.

Abstract Poultry meat production is one of the most dynamic sectors in agriculture, recording the quickest growth in the food industry, while egg production has shown strong growth in the last twenty years. Combined with meat production, it is achieving the highest growth when it comes to meeting protein needs for the global population. In economic terms, coccidiosis is one of the most significant poultry diseases. Effective application of coccidiostats in poultry feed has been playing a key role in development of commercial poultry production for more than 50 years. The aim of this research was to estimate occurrence and residue concentrations of coccidiostats in table eggs, poultry liver and meat, available on the market in Bosnia and Herzegovina (B&H). Residues of lasalocid were found in table eggs, while residues of nicarbazin, maduramicin and diclazuril were detected in broiler meat and liver.

Meat products are an important element of the diet of most European consumers. The most common types of meat consumed in the European Union (EU) are beef and veal, pork, poultry (from which chicken and turkey are the most common), as well as young lamb. Moderate growth of meat production is forecast in the EU countries, which in 2030 will attain 47.5 million tons, that on 0.5% anymore by comparison to 2017 year. An increase will take place, above all things, due to the increase of volumes of poultry meat («plus» 4.6% by comparison to 2017), a small increase is expected on pork («plus» 0.4%). The production of beef will reduce on 7.4%. Basic pre-condition to the increase of production of meat in the EU countries of the expected increase of volumes of his export which will be stipulated world tendencies to growth demand on meat products. During the next 14 years EU plans to grow the volumes of meat export almost on 9% to 4.7 million tons, and it will remain net exporters. Thus, if both pork and poultry meat a general export will exceed an import substantially, balance on a beef is expected negative, and the volumes of its import to EU for indicated period will grow on 22%. In the EU, beef production continues to decrease slightly. The general decline was less than 1%, which is due to the conservation of animals in order to increase the size of the dairy herd, as a result of an increase in milk quotas. The EU has a high degree of self-sufficiency in relation to pork and therefore imports little. Import quotas are not used, because the import of some licensed countries does not meet veterinary standards. Thus, imports are effectively prohibited, although tariff quotas would be favorable. The EU does not interfere in the domestic pork market, nor does it play a leading role and export subsidies. The poultry meat is represented by a very diverse group of meat varieties from chickens, turkeys, geese, ducks to cesarocks. The production of chicken meat accounts for 70% of the total poultry production in the EU, while the production of turkey meat is 20%. The remaining 10% are distributed among other poultry in the EU. Internal consumption of meat in European Union by the populations beginning from 2018 year will have a tendency to the unimportant (within the limits of 1%) decrease. In 2030 an index of meat consumption per inhabitant in EU will be at high level and will make 85.3 kg per person in for slaughter weight. In the pattern of consumption in the nearest decades, as well as today, will championship be kept after pork (almost 48%), farther poultry meat (32%), beef (18%) and other kinds (2%). For the European experts forecast, during 2017–2030 price tendencies on the world and European markets of meat will look thus: on a beef – costs of EU-28 will decline on 1%; is a world price a decline on 19%; on the pork – costs of EU-28 a decline is on 5%; global price a decline on 4%; on a poultry meat are costs of EU-28 a decline is on 4% and global price will increase on 15%.

The purpose of this article is to investigate the trends in production and distribution of poultry meat in Ukraine. It is shown that the characteristics of the product itself have a significant effect on demand. In terms of price and quality, as well as the low consumer demand of the population of Ukraine, poultry has been a leading market player in recent years. Over the past ten years, chicken consumption has increased by 16% with a significant decline in population. The share of poultry meat in the structure of meat production in Ukraine was 53.5% in 2018, up 12% from 10 years ago. It has been researched that the market of poultry meat, unlike the markets of other types of livestock products, is characterized by a significant contribution of agricultural enterprises, which in 2018 produced more than 85% of all poultry meat produced. It is determined that the broiler meat market in Ukraine is highly concentrated. The market share of the seven largest poultry companies in 2018 was 85%, and the industry leader PJSC Myronovsky Khliboproduct (MHP) is about 57% of the total production in the agricultural enterprises segment. Most manufacturers continue to increase their production capacity, which further increases market concentration and competition. The structure of distribution of production of poultry enterprises on the example of MHP is considered. The company sells its products through franchise network, supermarkets, retail chains, exports and uses other distribution channels. It has been researched that branding is an important component of successful distribution in the poultry market. MHP were the first who brand fresh chicken meat. Existing poultry brands are positioned as a natural and environmentally friendly product. The poultry meat market in Ukraine has been shown to be saturated. Over the past 10 years, production volumes have increased by almost 60% and consumption by only 6%. It is the export of broiler meat today that is the main impetus to increase its production in Ukraine. Over the past 10 years, exports of poultry meat have been found to have increased almost 40-fold and continue to grow strongly in 2019. The main importers of Ukrainian poultry meat were the Netherlands, Slovakia and Saudi Arabia. In addition, in 2018, Ukraine became the leader among suppliers of chicken to Europe, increasing poultry meat exports to the EU by 57%. It describes how exporters manage to increase their exports. It has been determined that in order to support exports in Ukraine, it is advisable to set up an export-credit agency that insures risks and works to reduce the cost of export credits. It is also important to create an effective food safety and quality system in line with EU standards. It has been shown that along with exports, poultry meat imports are also growing, mainly low-grade products that are fully used for the production of meat and sausages product. It has been researched that the growth of export of poultry meat from Ukraine has a negative impact on prices for these products in the domestic market.

Economic activities are featured with certain cycles. The cycles can concern the whole economy as well as particular sectors. The dairy industry is one of the branches that are of high importance in Polish and the world as regards food sector. Polish dairy industry faced deep structural changes and modernisation. After the accession to the EU domestic market is strongly linked to both the EU and the world markets. The production in Poland exceeds consumption by ca 20%. The surplus is exported, which ties up the situation on the domestic market with the situation on international markets. Conducted analysis of the domestic and the world markets of milk skimmed powder showed parallel fluctuations. Domestic prices and the prices on the world markets are strongly correlated. The knowledge on the characteristics of those fluctuations allows stakeholders for a proper risk management as well as elaboration of suitable policy options by government administration.

Poultry farming is one of the most promising areas of production not only in Ukraine but also in the world. This is due to the high demand for protein products and increased consumption. Ukraine does not use enough of its export potential in the agrarian sector. It is precisely these circumstances lead to choosing as the basis for the research the mentioned direction of production by domestic producers. The tendencies of the Ukrainian poultry enterprises development and features of the chicken market are generalized, namely the volume of cultivation and sale on the slaughter of poultry by Ukrainian producers, the cost price and profitability of poultry meat production have been analyzed; the specific features of the products range are defined in all competitor companies and products offered for export. The competitiveness of domestic poultry production in comparison with domestic and foreign analogues has been investigated. For the study the following enterprises as the LLS “Ptahokompleks” Gubin, TM “Pan Kurchak”, slaughter-house “Piorkowscy” and JSC “Superdrop” were taken. It is established that domestic products are competitive both in terms of price and taste properties. The dynamics of export and import of poultry meat in Ukraine and abroad is analyzed. Significant growth of poultry meat export as compared to previous periods has been revealed, which is explained by obtaining permit documents and implementation of measures by domestic producers to bring poultry products closer to international standards. The prospects for the development of the investigated production direction are designed.

The authors considered organic poultry production and presented a qualitative analysis of the diets used in raising broiler chickens. The authors also evaluated the possibility of switching from traditional diets to diets without chemical and microbial synthesis ingredients based on comparative data on the performance and economics of broiler chicken meat production. Organic requirements prohibit the use of microbial and chemical synthesis and genetically modified products in poultry feed. Obtaining large quantities of poultry products in a short period and at an affordable price involves using all kinds of additives that do not allow the products to qualify as organic. Surveys and opinion polls show that a new layer of consumers is today willing to buy organic poultry meat at a higher price. The aim of this work is to evaluate the possibility of producing organic meat from broiler chickens. The research was carried out at the Berdskaya poultry farm, and the test object was broiler chickens of the Iza cross. The age of broiler chickens ranged from one to 40 days old. The authors compared the effectiveness of traditional industrial diets and diets without microbial and chemical synthesis products. During the experiment, live poultry weight, average daily and gross gains, survival, feed costs and cost-effectiveness were considered. In commercial broiler chickens raised on diets without chemical and microbial synthesis ingredients during slaughter, the average live weight was 64.0% lower than that of broiler chickens in the experimental group. The average daily gain of these same broilers was also 52.9% lower. Feed costs per unit of production in industrial broiler chickens increased 1.7 times with the same survival rate of young animals (92.2%). Increasing the rearing period to 70 days resulted in a 1.4-fold increase in feed costs. The level of profitability decreased by 61.2 %, with a decrease in productivity. Increasing the price per kg of meat by 25 50 100 % would increase the profitability level by 22.4 4.7 -133.5 %, respectively, compared to the traditional method.

The state of the poultry market and highlights the peculiarities of its functioning has been researchedin the article. The poultry market as competitive and efficient with other meat marketshas been identified. And the poultry industry has maintained a positive production trend in recent years. In Ukraine, the poultry population is growing from year to year. In nineteen years, the number of poultry in agricultural enterprises has increased more than five times. A feature of the poultry market is the concentration of poultry and meat production in agricultural enterprises. More than 85percent of the poultry meat production in the slaughter mass was provided by agricultural enterprises. Most poultry meat was produced in Vinnytsia, Kyiv, Cherkasy, Dnipropetrovsk and Lviv regions. It is substantiated that the increase in poultry meat production is primarily due to the growth of demand from the population in conditions of low purchasing power. Poultry meat remains the most affordable for most meat consumers. In addition, due to a significant reduction in the supply of other types of meat, and consequently rising prices for them, poultry has become a substitute for most meat consumers. At the same time, many consumers have changed their tastes and preferences for a particular type of meat in favor of dietary poultry meat. The balances of supply and demand of poultry meat were analyzed. It has been proven that domestic poultry production fully meets domestic demand and has reserves to increase exports. It is noted that the further development of the domestic poultry market will depend, first of all, on solving the crisis problems in the world. In addition, indicators of production efficiency and product competitiveness will have a significant impact. Keywords: market, poultry meat, production, supply, demand, consumption, price.

In recent years, the production and consumption of poultry meat has been widely used both on the world market and on the market of Kazakhstan, one of the reasons for which is that poultry products are more accessible to consumers than animal products. With such an import structure, it can be assumed that the volume of imports of cheap chicken from abroad is a function of the income level of the population: the smaller the proportion of the population with a certain low income level, the less imports. For the effective development of poultry farming in Kazakhstan, it is necessary to overcome a number of constraining factors, one of which is the insufficient modern safety control system throughout the poultry meat production chain. The article develops a flowchart of the semifinished product production process based on poultry meat-broiler with soy flour, examines possible risks (hazards) for the development of management measures in the production of semi-finished products, identifies three control critical points for the production of semi-finished products from broiler meat with soy flour.
