Field experiments were conducted during three growing seasons of (2004/05, 2005/06 and 2006/07) to investigate the effect of various nitrogen doses on quality components of two winter triticale cultivars (Favorit and Trijumf). Nitrogen fertilizers are applied in four doses: N1= 60 kg N ha-1, N2= 90 kg N ha-1 and N3= 120 kg N ha-1. Analysis of sedimentation, gluten content, and rheological flour and dough properties were done. The results showed that N fertilization significantly increased investigated quality traits in both cultivars. The highest sedimentation value and gluten content established with application of 120 kg N ha-1. Triticale cultivars reacted positively to nitrogen increasing, and its rheological flour and dough properties increased with N increasing. Nevertheless, quality of investigated cultivars belonged to C2 quality group. By the analysis of variance established high significant differences in mean values of sedimentation, wet gluten content and water absorption among the cultivars (A), years (B) and supplied nitrogen doses (C). All interactions (AB, AC, BC and ABC) were significant for wet gluten content, but for sedimentation only interaction, while of water absorption was only significant interaction BC.

All kinds of flour products which are made of wheat flour have already become the staple food on people's dining table. With the improvement of living standard, the quality requirements for the flour products have gradually improved. In addition to the production technique, the quality of wheat flour as the raw material is also very important for the quality of flour products. This paper briefly introduced wheat flour and two main components that affected its quality: starch and protein. Then, the related quality of starch and protein and the quality of corresponding flour products were tested for five kinds of wheat flour. The experimental results showed that the quality indexes of five kinds of wheat flour were obviously different and representative. The regression analysis on the quality data of wheat flour and flour products showed that the water absorption of flour decreased with the increase of total starch content, dry gluten content and gluten index, the water solubility of flour decreased with the increase of total starch content and gluten index and increased with the increase of ratio of amylose to amylopectin, and the radial expansion rate of the flour products decreased with the increase of wet gluten content. To sum up, the quality of wheat flour will affect the water absorption, water solubility and radial expansion rate of flour products in the production process.

The current paper has considered the effect of cultivation technologies of winter durum wheat varieties on their quality indicators through the years with varied weather conditions. The study was carried out in 2015-2019, in the conditions of laboratory and field trials. There have been studied such traits as nature weight, kernel hardness, protein percentage and gluten content of three zoned winter durum wheat varieties sown in weedfree fallow. There has been identified a proportion of the factors’ effect on quality indicators. In the curent study there was a range of mean values according to a variety, a year, a cultivation technology. Through the years of study, all variants of technologies contributed to larger grain nature weight, from 768 g/l in the variety ‘Donchanka’ to 792 g/l in the variety ‘Oniks’. The largest nature weight in the trials was established when using an intensive cultivation technology. Through different years of study, the highest protein percentage in grain was identified in 2016, it was 13.57-17.08%. Through three years, the largest gluten content in grain (30.06%) was identified in the variety ‘Oniks’ when using an intensive cultivation technology. The general assessment of pasta was 4-4.5 points.

Optimizing the bread-making quality properties of flour is currently one of the main aims of the bakery industry. Therefore, this study has investigated the effects of N fertilization and fungicide application at wheat heading on the protein content (GPC), gluten composition and rheological properties of wheat. Field experiments were carried out in North-West Italy over a 3 year period, on a high protein cultivar of soft winter wheat. Grain samples were collected for each agronomic treatment at four ripening timings, from the milk stage to the final combine harvesting, and the contents of the different gluten fractions were quantified. The late N fertilization increased the GPC (+1.2%) and dough strength (W) (+22%) as a result of a similar enhancement of all the gluten protein fractions, while the fungicide application slightly reduced the GPC (−0.3%) and W (−4%), mainly because of a dilution of the gliadin content, due to the significantly higher grain yield (+8.6%) and thousand kernel weight (+5.5%). These agronomic practices did not modify the gluten composition significantly, expressed as the relative ratio between the gliadins (glia) and the high (HMW) and low (LMW) molecular weight glutenins (gs), and confirmed by the accumulation trend of the different protein fractions during ripening. The year resulted to have the most marked effect on the gluten protein fraction ratios and alveographic parameters. The lowest W was observed in 2015, and although the highest GPC was recorded for the same year, the lowest gs/glia ratio was also observed. Instead, 2016 showed the highest gs/glia and HMW-gs/LMW-gs (H/L) ratios, and also the highest P/L value (2.2). In 2015, a slightly higher temperature during the ripening stage resulted in a greater increase in the γ-gliadin enriched fraction than the α/β gliadin ones, and marked differences were noted in the rheological traits. This field experiment has highlighted the interactive role of environmental and agronomic factors on the content and quality of gluten proteins and their bread-making ability, thus making a further contribution to the development of an integrated crop strategy for the cultivation of high protein wheat in humid Mediterranean areas.

There have been represented the study results of flour quality of the winter bread wheat varieties of semi-intensive type of the FSBSI Agricultural Research Center “Donskoy”. The purpose of the current study was to estimate variability of the values of indicators that characterize physical and rheological dough properties, to identify the correlation between them, and to isolate genetic sources. The objects of study were 20 winter bread wheat varieties. Field trials were carried out in 2017–2019 in the fields of the department of winter wheat breeding and seed production, the forecrop was maize for grain. The variety ‘Don 107’ was used as a standard. The quality of grain and flour of the winter bread wheat varieties was assessed in the laboratory for biochemical estimation of breeding material and seed quality. There have been identified the varieties ‘Asket’ (26.9%), ‘Podarok Krymu’ (26.2%), ‘Zolotoy Kolos’ (25.5%) and ‘Izyuminka’ (25.5%) with the maximum gluten content in grain. It was determined that the trait ‘gluten deformation index’ varied from 62 u.v. to 77 u.v., all varieties corresponded to the 1st quality class. There have been identified the genotypes ‘Volny Don’, ‘Don 93’, ‘Premiera’, ‘Podarok Krymu’, ‘Ambar’, ‘Donskoy Surpriz’ and ‘Izyuminka’ with low values of the variation coefficient of the trait. There have been identified the varieties ‘Krasa Dona’ (6.7%), ‘Zhavoronok’ (6.8%) and ‘Asket’ (8.2%) with low values of the variation coefficient of the trait ‘specific work of dough deformation’. There have been identified the varieties ‘Don 93’, ‘Izyuminka’ and ‘Podarok Krymu’, which according to P/L corresponded to the class of strong wheat. It was found that the varieties ‘Zolotoy Kolos’ and ‘Volnitsa’ corresponded to the class of strong wheat according to the valorimetric assessment. Correlation analysis showed that the rheological dough properties were significantly influenced by gluten content in grain. There has been estimated the quantitative manifestation and variability of the traits, which characterize the rheological and physical dough properties. There have been identified the varieties with the smallest varietal variation of traits, which are recommended to use in the breeding process as sources of useful traits and properties. The selection according to the traits ‘delute of dough’ and ‘valorimetric assessment’ allow developing and introducing into production genotypes with good baking properties.

Abstract The teosinte plant is one of the most important fodder crops that is affected by drought and nitrogen supply, and therefore the optimal supply of N- fertilization may be affected by the amount of irrigation water added to teosinte plants to obtain an economic crop. Two field experiments were done to study the effect of irrigation amount at three levels (100%, 80% and 120%) and nitrogen fertilizer levels (60, 90 and 120 kg N fed-1) (Feddan = 4200 m2) on the yield productivity of teosinte and determined the optimal and economic optimal N rate as affected by irrigation amount levels, and water relations. The results showed that the highest values of the fresh and dry weight of cuts, as well as plant height and stem diameter, were obtained when applying the full irrigation rate with full irrigation and 120 kg N fed-1. The results also showed that a 20% decrease in the irrigation rate led to a deterioration in the values of those parameters. Although the results showed that the full irrigation amount more saved water at two seasons under various levels of nitrogen. Moreover, all water relationships gave the best mean values for actual evapotranspiration, water utilization and use efficiencies also, higher application efficiency values at full irrigation and 120 kg N-levels than the other treatments. Also, the results showed that the economical yield of teosinte fresh cuts when using 211.01 kg N fed-1 with 120% of the recommended irrigation rate was higher when using 148.22 kg N fed-1 with the recommended irrigation rate. Therefore, we recommend using 211.01 kg N fed-1 to get an optimum economic yield of teosinte fresh cuts, especially in saline soil, with 120% of the recommended irrigation rate.

The objective of this study was to improve the quality of fresh spaghetti made from ordinary wheat flour using gluten powder at different levels (0.0, 0.5, 1.5 and 3.0%, w/w, flour basis). The spaghetti dough was evaluated by a Brabender Farinograph. The results indicated that with increasing the gluten level, peak, stability time and consistency of the dough increased. The results of creep test (carried out using a Texture Analyser) showed that with increasing the gluten content, elasticity of the dough increased while its viscosity decreased. Increasing the gluten level reduced the cooking loss and increased the water absorption of the samples cooked in distilled or salted water (2% NaCl). The hardness and the color of the uncooked and cooked spaghettis improved with increasing the gluten content. The sample containing 3% gluten powder cooked in salted water received the highest score for its sensory attributes.

Abstract Two field experiments have been conducted to study the effects of application of nitrogen fertilizer, bio-fertilizers and organic compounds on growth, yield and economic of onion production in 2014/2015 and 2015/2016 seasons. From the data it was found that combination of N fertilization of onion plants with 100 kg N fed.−1 (hectare = 2.38 feddan) and foliar with humic acid at the rate of 1 kg fed.−1 is the best in this study, for giving the highest bulb yield with the highest net returns of 12580 EGP (1USD = 17.80 EGP), with a benefit: cost ratio (B:C ratio) of 2.35. While, the highest cost of cultivation was obtained by 120 kg N fed.−1 and spraying onion plants with humic acid followed by compost tea. Also, from the economic view, the revenue of EGP is higher when used some biofertilizers and organic fertilizers if compared with chemical fertilization only.

The results of elements development of varietal agrotechnics of a new high-potential line 238h of winter triticale presented. It was identified that under the conditions of 2020 the most cost effective fertilizer system is an early spring application of NPK (S) (15-15-15 (10)) at a dose of 200kg/ha. The profitability level of this fertilizer was 88,9%.

The productivity of agricultural crops is the most variable and integral indicator of their vital activity, which accumulates their genetic potential, soil fertility, weather conditions and components of agricultural technology. Soybean under optimal growing conditions (the reaction of the soil is close to neutral, sufficient phosphorus and potassium nutrition, the use of nitraginization) assimilates from the air about 70 % of the total nitrogen requirement. Therefore, it is believed that it is enough to apply only a starting dose of nitrogen fertilizers (20–40 kg/ha a. s.), to get a high yield with good indicators of grain quality. The results of studies of the influence of long-term (8 years) application of different doses and ratios of fertilizers in field crop rotation on podzolized chernozem in the conditions of the Right -Bank Forest-Steppe of Ukraine on the yield and quality of soybean seeds preceded by spring barley were presented. It was found that crop yields could be increased by 18–77 % owing to different doses, ratios and types of fertilizers. The highest indicators of seed yields for three years of the research (3,02 t/ha) were obtained under the application of mineral fertilizers at a dose of N110P60K80 per 1 ha of crop rotation area, including under soybean – N60P60K60. Exclusion of the nitrogen component from the complete fertilizer (N60P60K60) reduced its yield by 26 %, phosphorus – by 17, and potassium by 11 %. There was no significant decrease in soybean yield in the variant of the experiment with a decrease in the proportion of potassium in the composition of complete mineral fertilizer (N60P60K30) for three years of study. The largest mass of 1000 soybean seeds was formed at doses of N60К60 fertilizers, and their protein content — under the application of complete mineral fertilizer in doses of N60P60K60 and N60P60K30.

The purpose of research: to improve the technology of growing flax in the Western region of Ukraine on the basis of the introduction of systems for minimizing tillage, which will increase the yield of trusts and seeds. Research methods: field, laboratory, visual and comparative calculation method. Research results: Field experiments included the study of three tillage systems (traditional, canning and mulching) and determining their impact on growth and development and yields of trusts and flax seeds. The traditional tillage system included the following operations: plowing with a reversible plow to a depth of 27 cm, cultivation with simultaneous harrowing and pre-sowing tillage. The conservation system is based on deep shelfless loosening of the soil and provided for chiseling to a depth of 40 cm, disking to a depth of 15 cm, cultivation with simultaneous harrowing, pre-sowing tillage. During the implementation of the mulching system, disking to a depth of 15 cm, cultivation with simultaneous harrowing and pre-sowing tillage with a combined unit was carried out. Tillage implements and machines were used to perform tillage operations: disc harrow BDVP-3,6, reversible plow PON-5/4, chisel PCh-3, cultivator KPSP-4, pre-sowing tillage unit LK-4. The SZ-3,6 ASTPA grain seeder was used for sowing long flax of the Kamenyar variety. Simultaneously with the sowing of flax seeds, local application of mineral fertilizers (nitroammophoska 2 c/ha) was carried out. The application of conservation tillage allows to obtain the yield of flax trust at the level of 3,5 t/ha, which is 0,4 t/ha (12.9 %) more than from the area of traditional tillage and 0,7 t/ha (25 %) in comparison with mulching. In the area with canning treatment, the seed yield was the highest and amounted to 0,64 t/ha. The difference between this option and traditional and mulching tillage reaches 0,06 t/ha (10,3 %) and 0.10 t/ha (18.5 %), respectively. Conclusions. Preservation tillage, which is based on shelf-free tillage to a depth of 40 cm and disking to a depth of 15 cm has a positive effect on plant growth and development, yield and quality of flax.
