The purpose of this report was to study all available information for estimating the sources of naturally occurring sodium and added salt in the Finnish diet. The calculations were based on food consumption statistics, sales figures of salt, salt use in the Finnish food industry and catering, and on the food consumption data provided by the mobile clinic dietary survey of 1973—1976. The average daily per capita intake of added salt is 10—11 g and that of the naturally occurring sodium in foodstuffs is 0.6 g which is equivalent to 1.5g of NaCl, the total intake being 11—12 g. In the adult population the mean daily intake of sodium expressed as NaCl is 12—15 g in men and 10—12 g in women. The average salt concentration in the diet is 4.3 g/1 000 kcal (10.3 g/10 MJ) and that of adults 4.5 g/1 000 kcal (10.6 g/10 MJ). Of the total sodium intake 50 % is derived from the salt used by the food industry and in catering, 38 % from salt added by the consumer at home, and 12 % from the naturally occurring sodium in the foodstuffs. Of the added salt, 57 %is used by the food industry and catering and 43 % by the consumer. Of the different food items, baked products (bread, buns and pastries) arc the most important sources of sodium, constituting 22 % of the total sodium intake. The share of bread alone is 16% and that of sausages and other meat products is 14%. The share of other food items is less than 10 %.

Abstract We conducted a food consumption survey in the general adult population of 18 years and older in Germany to obtain data on the frequency of consumption of food items that caused foodborne disease outbreaks in the past. A total of 1010 telephone interviews were completed that queried the consumption of 95 food items in the 7-day period before the interview. Survey results were weighted to be representative. Six exemplary ‘high risk’ food items were consumed by 6% to 16% of the general population. These were raw ground pork: 6.5%; ‘Teewurst’ (=spreadable sausage-containing raw pork): 15.7%; unpasteurised milk consumed without prior heating: 9.0%; food items prepared with raw eggs: 9.8%; unheated sprouts or seedlings: 8.8% and frozen berries consumed without prior heating: 6.2%. Data from our food consumption survey were comparable to data obtained from control persons in case-control studies conducted during past foodborne disease outbreak investigations. We consider our survey an additional helpful tool that will allow comparison with food consumption data from case-patients obtained in exploratory, hypothesis-generating interviews early on in outbreak investigations, and which may assist in forming hypotheses regarding associations of illnesses with suspected food vehicles. This may facilitate and accelerate investigations of future foodborne disease outbreaks.

Abstract Background Sodium is an essential mineral needed by the human body that must be obtained from food. An excess intake, however, can lead to many diseases. As food is the main source of sodium, this study aims to provide information on high sodium food consumption patterns in the Malaysian adult population. Methods The Malaysian Community Salt Study (MyCoSS) was a nationwide cross-sectional study, conducted between October 2017 and March 2018. A multistage complex sample was applied to select a nationally representative sample of respondents aged 18 years and above. Face to face interview by a validated Food Frequency Questionnaire (FFQ) comprising 104 food items was used to gain information on high sodium food consumption patterns. Results A total of 1047 respondents were involved in this study, with 1032 (98.6%) answering the FFQ. From the number, 54.1% exceed the recommendation of sodium intake <2000mg/day by FFQ assessment. The results also demonstrated that fried vegetables (86.4%) were the most common high sodium food consumed, followed by bread (85.9%) and omelet (80.3%). In urban areas, bread was the most common while fried vegetables took the lead in rural areas. By sex, bread was most commonly eaten by males and fried vegetables by females. The results also found that kolok mee/kampua mee contributed the highest sodium, 256.5mg/day in 9.0% adult population, followed by soy sauce 248.1mg/day in 33.2% adult population, and curry noodles 164.2mg/day in 18.5% adult population. Conclusion Fried vegetables, bread, and soy sauce were the main source of sodium consumption among adult. Reducing the amount of sodium added to these foods should be the top priority to reduce population sodium intake and thereby prevent sodium-related diseases in Malaysia.

The current study was carried out to access the effect of DDT and HCH contaminated local food consumption on the adult population of Kazan city. Unexpectedly, the computations considered outcomes for a wide range of food items that are covered by the dietary admission model have hazard appraisal. The degrees of non-cancer-causing hazards for the strength of the grown-up populace related with the complex entry of DDT and HCCH at the median (Ме) level and the level of the 95th percentile with the basic food groups are identified. &#947;-Poly-glutamic acid (&#947;-PGA) is a naturally occurring homo-polyamide produced by various strains of Bacillus. As a biopolymer substance, &#947;-PGA possesses a few predominant features containing good water solubility, biocompatibility, degradability and non-toxicity. Based on this, &#947;-PGA can be used in pharmaceutical, such as drug carrier/deliverer, vaccine adjuvant, and coating material for microencapsulation, etc. Moreover, it has also been applied in a broad range of industrial fields including food, medicine, bioremediation, cosmetics, and agriculture. Especially, &#947;-PGA is an extremely promising food ingredient. In this mini-review, our aim is to review the function and application progress of &#947;-PGA in the food industry: e.g., improving taste and flavor, enhancing physical property, and promoting health.

Background: Sulphites added as preservatives in food have been associated with adverse health effects in humans. Objective: The present study was designed with an objective of assessing the risk of sulphite exposure through food in adolescents (12-16 years old) of Delhi, India. Methods: A total of 1030 adolescents selected from four private and four government schools of Delhi, were asked to record their food intake using a 24 hour food record, repeated on three days, for assessing exposure to sulphites. The risk was assessed using six different scenarios of exposure. Results: The actual intake for sulphites for average consumers was 0.15 ± 0.13 mg / kg b.w. / day which was 21.4% of acceptable daily intake (ADI). For high consumers (P95), it was 65% of the ADI. However, for 2 respondents, the actual intake exceeded the ADI. The major food contributors to sulphite intake were beverage concentrates (46%), ready to serve beverages (22%) followed by miscellaneous food items (16%), mainly ice creams and snowballs. Estimation of sulphite intake using different exposure scenarios revealed that for certain scenarios where the highest reported sulphite level or maximum permissible levels were considered for calculation, the high consumers exceeded the ADI, though, for average consumers, intake was well below the ADI. Conclusion: Actual intake of sulphite for average consumers was well below the ADI but for high consumers was approaching the ADI. People with sulphite sensitivity need to be aware of hidden food sources of sulphites.

Program of acceleration of local resource based diversification of food consumption (P2KP - BSL) has nationally implemented as the initial stage for program socialization since 2009 and simultaneously implemented in 2011. This is a descriptive study. Districts of Sekarbela, Selaparang, and Ampenan were selected as the research focused-areas considering that the three districts have already implemented three sub-programs of P2KP – BSL that are; a) Sub-program of Optimizing Courtyard Utilization, b) Sub-program of Food Processing, c) Sub-program of Consumption Campaigns of Diverse Food, Balanced Nutrition, and Safe for School Children. Finding of the study in Mataram town shows that there are seven planned sub-programs of P2KP – BSL; however, due to the limited fund, there only three sub-programs; sub-program of Optimizing Courtyard Utilization, sub-program of Food Processing, and sub-program of Consumption Campaigns of Diverse Food, Balanced Nutrition, and Safe for School Children have been realized . Meanwhile, there are four other unimplemented programs; 1) sub-program of Specific Region Food Production Developments, 2) sub-program of Local Food Lift, 3) sub-program of Food Business Development and SMEs, and 4) sub-program of Agro-Food Industry Development. Government has effort to change people's habits aiming to reduce the rice consumption and started to diversify food consumption through a variety of ways - dissemination through print media, electronic media, trainings, and field schools.

Abstract Background Studies have shown that having away from home meals contributes to high sodium intake among young people and those who lived in urban areas. This study aimed to determine the association between dietary sodium intake, body mass index, and away from home meal consumption behaviour among Malaysian adults. Methods MyCoSS was a cross-sectional household survey involving 1440 adults age 18 years and above. This study utilized stratified cluster sampling to obtain a nationally representative sample. Data was collected between October 2017 and March 2018. Socio-demographic information, dietary assessment using food frequency questionnaire (FFQ), and away from home meal consumption were assessed through a face-to-face interview by trained health personnel. Descriptive analysis and logistic regression were applied to identify the association of socioeconomic status and away from home meal consumption with dietary sodium intake. Results A total of 1032 participants completed the FFQ, with a mean age of 48.8 + 15.6 years. Based on the FFQ, slightly over half of the participants (52.1%) had high sodium intake. Results showed that 43.6% of participants consumed at least one to two away from home meals per day, while 20.8% of them had their three main meals away from home. Participants aged less than 30 years old were the strongest predictor to consume more sodium (adjusted OR: 3.83; 95%CI: 2.23, 6.58) while those of Indian ethnicity had significantly lower sodium intake. Surprisingly, having three away from home meals per day was not associated with high dietary sodium intake, although a significant association (crude OR; 1.67, 95% CI: 1.19, 2.35) was found in the simple logistic regression. Obese participants were less likely to have high dietary sodium intake compared with the normal BMI participants in the final model. Conclusion Over half of the participants consumed sodium more than the recommended daily intake, especially those who consumed three away from home meals. However, there was no significant association between high sodium intake and having three away from home meals per day. The promotion of healthy cooking methods among the public must continue to be emphasized to reduce the dietary sodium intake among Malaysian adults.

Anthocyanins are naturally occurring phytochemicals that have attracted growing interest from consumers and the food industry due to their multiple biological properties and technological applications. Nevertheless, conventional extraction techniques based on thermal technologies can compromise both the recovery and stability of anthocyanins, reducing their global yield and/or limiting their application in food systems. The current review provides an overview of the main innovative processes (e.g., pulsed electric field, microwave, and ultrasound) used to recover anthocyanins from agri-food waste/by-products and the mechanisms involved in anthocyanin extraction and their impacts on the stability of these compounds. Moreover, trends and perspectives of anthocyanins’ applications in food systems, such as antioxidants, natural colorants, preservatives, and active and smart packaging components, are addressed. Challenges behind anthocyanin implementation in food systems are displayed and potential solutions to overcome these drawbacks are proposed.

The food-related industries important influence on the environment and the factors which caused food-related industriesenvironmental pollution was investigated by using the food-related industry data. The results showed that the variables measuring the quantities and structures of food consumption have an important influence on carbon dioxides discharge. In addition, the scale of economics and environmental control variables have the biggest influence. We can lead peoples food consumption structure to the environmentally friendly structure and strengthen the environmental control, then control the environmental pollution of the food industry effectively.

BACKGROUND: The food frequency questionnaire (FFQ) is the method of choice for dietary assessment in epidemiological studies. FFQs focusing on mixed-dishes and simple food items are useful where mixed-dishes are an essential part of food consumption. OBJECTIVE: Regarding the fact that the nature of the Iranian diet is mixed-dish, the present study aimed to design and assess the validity and reproducibility of a dish-based semi-quantitative FFQ in the Iranian adult population. METHODS: A list of 302 food items was collected from four geographical areas around Iran. The validation study was conducted on 97 healthy adults. The FFQ was introduced at the beginning of the study and 10 months after; two three-day food records were collected during the study. Also, biomarkers including 24-hour urinary potassium and nitrogen, serum retinol, and alpha-tocopherol were measured. RESULTS: A 142-food-item FFQ was concluded. The correlation coefficient between the second FFQ and the second three-day food record ranged from 0.225 to 0.323 for macronutrients and 0.128 to 0.476 for micronutrients. The percentile agreements (same or adjacent quartile) between the two methods were more than 60%for all nutrients. The intraclass correlation coefficient between FFQs (except for vitamin E) ranged from 0.363 to 0.578. The correlation coefficient between the second FFQ and the second biomarker assessment was 0.241 for protein.
