Background. Indonesian usually using repeatedly cooking oil for deep frying process. The repeated use of cooking oil can be found among street vendors. Consumption of repeatedly cooking oil could lead to hepatic disorder, cardiovasular disorder and even cancer. Objective. The research aims to describe and analyze peroxide value in cooking oil used by street vendors in Perintis Kemerdekaan street in Padang City. Methods. This is a descriptive research. The reseacrh objects were taken by purposive sample method and 23 samples cooking oil used by traders. This research was conducted at Clinical Laboratory of West Sumatera from October 2019 to May 2020. Results. This research found out 14 from 23 of cooking oil used by street vendors have peroxide value above the Indonesian National Standard (abbreviated SNI) 01-3741-2013. Cooking oil used by fritter street vendors have average peroxide value is 15.10 mEq O2/kg while pecel catfish and chicken street vendors is 10.29 mEq O2/kg. The avarage peroxide value in each type of cooking oil are bulk 10,81 mEq O2/kg, branded 14,64 mEq O2/kg and mixture 16,28 mEq O2/kg. Conclusion. More than half of the samples tested had exceed the maximum peroxide values (> 10 mEq O2/kg) and the highest average are found in fritter street vendor and mixture of bulk and branded cooking oil.

The Government of Sidoarjo Regency in establishing policies regarding the arrangement of Street Vendors (PKL) aims to create a clean, orderly and beautiful Sidoarjo Regency and continue to empower existing street vendors. The spatial planning policy implemented by the Sidoarjo Regency Government is aimed at maintaining and structuring a more orderly and orderly spatial location without ignoring the existence of street vendors who aim to improve the economy of their families. This study aims to find out how the Sidoarjo Regency Government's policy in structuring street vendors (PKL) based on traders, order and beauty, this study uses descriptive research methods using a qualitative approach. The results of the study indicate that the PKL structuring policy is closely related to the plan to create a clean, orderly, safe, and comfortable city spatial plan. So that in its formulation, an alternative policy that is aware of the environment is needed. The government of Sidoarjo Regency so far has made significant efforts in structuring street vendors in the Sidoarjo Regency area and to overcome and anticipate the impacts. The implementation of the street vendor management policy (PKL) based on the Sidoarjo Regional Regulation No. 3 of 2016 concerning the arrangement and empowerment of street vendors has been running but has not been effective, such as the resistance that occurs when the implementation of the PKL arrangement takes place, it should be able to be overcome if the Sidoarjo Regency Government is responsive enough to various demands from street vendors.

A high peroxide value of used vegetable oil can lead to poisoning in the body and various diseases such as diarrhea, fat deposition in blood vessels, cancer and decrease of digestibility of fat and destruction of vitamin E. This study aims to determine the peroxide values in reused cooking oil on fried snack seller on Jalan Rajawali, Palangka Raya. A quantitative descriptive research design was used in this study. Random sampling technique was used to collect the sample � determination of peroxide value using iodometry method. Results show that based on quality requirements, from 14 cooking oil samples there were 78.6% of the samples comply with the peroxide value requirements and 21.4% of the samples did not comply with the peroxide value requirements. Samples which did not adhere to the peroxide value requirements are cooking oil that has been used for more than five repetitions.

Quality of used cooking oil with snake fruit (Salacca zalacca (Gaertn.) Voss) seed adsorbent  has been conducted. This study aims to determine the ability of snake fruit seed in reducing peroxide value and free fatty acids in used cooking oil which can improve the quality and extend usage lifespan of the used cooking oil. The oil sampled in this study was packaged cooking oil which is usually used to fry food untill 7th frying. The oil was then neutralized using snake fruit activated charcoal. The test refers to the Indonesian National Standard (SNI) 7709: 2012 as the quality requirements of cooking oil. The results showed that snake fruit activated charcoal can reduce peroxide value as much as 56.18% and free fatty acid 76.04% in the used cooking oil.

Background: The repeated use of cooking oil can affect the quality of the oil and the nutrient composition in it. The presence of peroxides can be used as an indicator of oil deterioration. Fritter food is snacks by using flour dough which was prepared by deep fat frying method and sold on the street lot.Purpose: This study aimed to describe and analyze the amount of peroxide value of cooking oil used by fritter traders in Tembalang Sub-district, Semarang City.Methods: This is an observational descriptive research which analyzed 25 samples of used cooking oil of 25 fritter traders. Univariate analysis data was used to describe frequency distribution and mean. Analysis of peroxide value was established according to SNI 3741-2013.Results: Research shows that 28% of traders use branded oil, while the rest use bulk oil. Bulk purchased oil has an average peroxide of 8.77 mEq O2 /kg, while the branded 11.71 mEq O2 /kg.Conclusions: Forty-four percent of cooking oil exceeds the maximum peroxide amount (> 10 mEq O2 /kg, SNI 3741-2013). Bulk oil has a lower average peroxide content than branded oils.ABSTRAKLatar Belakang: Penggunaan minyak goreng secara berulang dapat mempengaruhi kualitas minyak dan komposisi zat gizi di dalamnya. Keberadaan peroksida dapat digunakan sebagai indikator kerusakan minyak. Gorengan merupakan makanan jajanan dengan menggunakan adonan tepung yang digoreng dengan minyak berlebih (deep fat frying) dan dijual di tepi jalan.Tujuan: Penelitian ini bertujuan mendeskripsikan dan menganalisis jumlah nilai peroksida minyak goreng yang digunakan pedagang gorengan di Kecamatan Tembalang, Kota Semarang.Metode: Jenis penelitian ini adalah deskriptif observasional. Sampel dalam penelitian ini sebanyak 25 yang didapatkan dari 25 pedagang gorengan. Data analisis univariat digunakan untuk menggambarkan distribusi frekuensi dan rerata. Analisis bilangan peroksida ditetapkan sesuai SNI 3741-2013.Hasil: Penelitian menunjukkan bahwa 28% pedagang menggunakan minyak bermerek, sisanya berupa minyak curah. Minyak yang dibeli secara curah memiliki rerata peroksida 8,77 mEq O2/kg, sedangkan bermerk 11,71 mEq O2/kg.Kesimpulan: Sebesar 44% minyak goreng melebihi jumlah peroksida maksimum (>10 mEq O2/kg, SNI 3741-2013). Minyak curah mempunyai rerata nilai peroksida lebih rendah dibandingkan minyak bermerek.

This article is motivated by the fact that the existence of the Street Vendor (PKL) profession is a manifestation of the difficulty of work and the lack of jobs. The scarcity of employment due to the consideration of the number of jobs with unbalanced workforce, economically this has an impact on the number of street vendors (PKL) exploding ... The purpose of being a street vendor is, as a livelihood, making a living, looking for a bite of rice for family, because of the lack of employment, this caused the number of traders to increase. The scarcity of jobs, causes informal sector migration job seekers to create an independent spirit, entrepreneurship, entrepreneurship, with capital, managed by traders who are true populist economic actors. The problems in street vendors are: (1) how to organize, regulate, empower street vendors in the cities (2) how to foster, educate street vendors, and (3) how to help, find capital for street vendors (4) ) how to describe grief as a Five-Foot Trader. This paper aims to find a solution to the problem of street vendors, so that cases of conflict, cases of disputes, clashes of street vendors with Satpol PP can be avoided. For this reason, the following solutions must be sought: (1) understanding the causes of the explosions of street vendors (2) understanding the problems of street vendors. (3) what is the solution to solving street vendors in big cities. (4) describe Street Vendors as actors of the people's economy. This article is qualitative research, the social paradigm is the definition of social, the method of retrieving observational data, in-depth interviews, documentation. Data analysis uses Interactive Miles and Huberman theory, with stages, Collection Data, Display Data, Data Reduction and Vervying or conclusions.

Purpose The purpose of this paper is to investigate the quality of the frying oil used in restaurants, fast food establishments, and confectionary stores. The compliance of used frying oils with the quality standards as determined by the peroxide value (PV) and the total polar materials (TPMs) is investigated by analyzing 375 samples of oil. Design/methodology/approach The PV was measured according to the national standard procedure number 4179, while the TPM was determined using a Testo 270 cooking oil tester. Frying oils with a PV>5 mEq/kg and a TPM>25 percent were considered to be non-edible. For a comparison of groups, the Mann-Whitney and Spearman correlation tests were used, and p<0.05 was considered significant. Findings The maximum TPM and PV recorded for frying oils in fast food restaurants were 97.5 percent and 77.9 mEq/kg, respectively. The results also revealed that 60 percent of samples were non-edible according to the TPM, while 58.9 percent of the oil samples were non-edible because of the PV. TPM and PV correlated well with each other (r=0.99, p<0.001) and with oil replacement intervals (r=0.90, p<0.001). The relationship between the TPM and PV was stronger in the polynomial model than the linear model. The following equation was obtained: peroxide (mEq/kg oil)=0.0043 TPM2 (%)+0.1587 TPM (%)–0.6152. Originality/value Considering the current limitations in official supervision by health authority, on-site self-monitoring of the TPM using the Testo 270 cooking oil tester by sellers as a solution seems a new approach. Food stores, restaurants, and confectionary stores should be equipped with TPM analyzers to determine the quality of the frying oil and the timely replacement of non-edible oils.

ABSTRACTThe relocation of Surakarta City street vendors from Taman Monumen Banjarsari to Pasar KlitikanNotoharjo is one of the innovative urban development policy focusing on cultural values aiming tostrengthen local ingenuity as the city’s economic power. This study examines how the innovative policywas implemented successfully. The study showed that the success of the innovation was due to (1) theinitiative and commitment of the mayor, (2) a shift in the mindset, creating trust in the management ofstreet vendors, (3) bureaucratic reform followed by legislation of supporting documents, (4) continuousand integrated mechanism of implementation, and (5) budget cuts and focus to spending with highimpact to welfare. The creation of the street vendor management manual should assure thesustainability of the innovative policy for the next term of governance.Keywords: sustainable development, innovative policy, government administration
