Snack bars made from black soybean and black rice could be used as a food product to complement the energy and nutrients needs. Both have anthocyanins content in black soybean and black rice as well as the potential as an antimicrobial agent. The purpose of this study was to obtain an optimal formula, evaluate the sensory acceptance, analyze the total monomeric anthocyanin content of the snack bars, and compare the growth of probiotic and pathogenic bacteria in anthocyanins crude extracts from the snack bars. The production of snack bars was done by using three variations of main ingredients, including 30% of black soybean + 70% of black rice (formula 1), 50% of black soybean + 50% of black rice (formula 2), and 70% of black soybean + 30% of black rice (formula 3). The results performed that consumers acceptance for formulas 2 and 3 was not significantly different (P > 0.05), but significantly higher (P < 0.05) than formula 1. Total monomeric anthocyanin content analyzed by the pH differential method in these three snack bars formulas had no significant difference (P > 0.05). The growth analysis of probiotic and pathogenic bacteria showed that the percentage of growth inhibition of Escherichia coli and Salmonella enterica serovar Typhi bacteria was significantly higher (P = 0.00) compared to Lactobacillus acidophilus. Also, formulas 1 and 2 could significantly inhibit E. coli and S. enterica ser. Typhi bacteria (P = 0.00) compared to formula 3. It could be concluded that formula 2 showed the best snack bar based on sensory evaluation and pathogenic bacteria inhibition assay.

Diarrhea is defecation with a frequency more often than usual (three times or more) a day (10 mL/kg/day) with a soft or liquid consistency, even in the form of water alone. Pathogenic bacteria, such as Escherichia coli, Salmonella typhimurium, and Shigella sp., play a role in many cases, to which antibiotics are prescribed as the first-line therapy. However, since antibiotic resistance cases are often found, preventive therapies are needed, such as consuming yogurt, which is produced through a fermentation process by lactic acid bacteria (LAB). This research aimed to determine the activity of lactic acid bacteria (Liactobacillus bulgaricus and Streptococcus thermophilus) in yogurt in inhibiting the growth of the pathogenic bacteria E. coli, S. typhimurium, and Shigella sp. The research applied in vitro with the liquid dilution test method and the true experimental design research method with post-test-only and control group design. The design was used to see the inhibitory effect of yogurt LAB on the growth of E. coli, S. typhimurium, and Shigell sp. to compare the effect of several different yogurt concentrations, namely 20%, 40%, 60%, and 80%. The results of the Least Significance Different analysis showed that there was a significant difference between yogurt with a concentration of 0% and that with various concentrations in inhibiting the growth of E. coli, S. typhimurium, and Shigella sp. with a p-value of &lt;0.05. Whereas, there was no significant difference in the various concentrations of yogurt in inhibiting the growth of the three kinds of bacteria with a p-value of &gt; 0.05.<p class="Default" align="center"> </p>

A study was carried out at four different (0, 1, 7 and 30 days) freezing durations in regard to the microbiological incidence in speckled shrimp (Metapenaeus monoceros) from three different local markets - Ananda bazaar, New Market and Polashi bazaar of Dhaka city. The study unveiled that Ananda bazaar samples were more or less contaminated than those of others. The microbial load varied with market sources as total bacteria count (TBC), total coliform count (TCC) and faecal coliform count (FCC) were found in all the storage periods crossing the acceptable limit. Except for E. coli (EC), all the bacterial counts were significantly different (p < 0.05) in 7 and 30 days freezing durations. A significant difference (p < 0.05) was found in all freezing durations only for EC counts. After 30 days storage duration for all counts showed 101 cfu/g reduction of microbial load from every initial count. The Salmonella-Shigella (SS) and Vibrio spp. were identified in all the samples of the three markets. In case of biochemical composition, an inverse relation was found in moisture - protein and moisture - fat where the moisture content increased after 30 days freezing duration but protein and lipid contents decreased with time. This study revealed that shrimp available in local markets of Dhaka city was highly ingested with pathogenic bacteria which indicate the unhygienic condition of the market premises. Dhaka Univ. J. Penelitian ini bertujuan untuk menguji aktivitas bakteri patogen dengan memakai nanopartikel kitosan sebagai antibakteri yang dibuat dalam empat konsentrasi (0,5%, 1%, 1,5% dan 2%) serta penggunaan kontrol asam asetat 1%, ciprofloxacin dan air steril sebagai pembanding. Metode penelitian yang digunakan yaitu metode gelasi ionik untuk pembuatan nanopartikel kitosan dan difusi agar untuk pengujian antibakteri. Data dianalisis dengan One Way Anova yang dilanjutkan dengan metode BNT (Beda Nyata Terkecil). Hasil penelitian diperoleh penghambatan pertumbuhan bakteri S. aureus dan E. coli tertinggi pada konsentrasi 0,5%, dengan diameter zona hambat hari pertama sampai hari ketiga 12,31 mm, 9,98 mm, dan 20,46 mm pada S. aureus dan 15,88 mm, 18,71 mm, dan 20,43 mm pada E. coli, kategori kuat, dan bersifat bakteriostatik dan penghambatan terendah pada konsentrasi 2% dengan diameter zona hambat pada S. aureus yaitu 5,56 mm, 5,50 mm, dan 5,40 mm, dan pada E. coli yaitu 5,93 mm, 9,64 mm, dan 12,58 mm, kategori sedang, dan bersifat bakteriostatik. Kata kunci: Kitosan, nanopartikel kitosan, aktivitas antibakteri.  Abstract Antibacteria is a substance that can inhibit the growth of bacteria and able to kill bacteria that cause infections. <p>One of the sources of functional foodstuff is carbohydrate-based commodities which contain anthocyanin. These commodities include black rice, purple corn, and purple sweet potato. The anthocyanin compound is a pigment which is responsible for the purple color to the produced commodities. This compound possesses antioxidative activities which are able to bind with free radical compounds and protect human body against various diseases.Physiological function of the anthocyanin in foodstuff has attract particular interest for further exploration, particularly on its bioavailability nature, functional food ingredients, and its product’s appearances. Several anthocyanin-rich varieties such as Jeliteng black rice, Srikandi Ungu corn, and Antin purple sweet potato has been released by Indonesian Agency for Agricultural Research and Development (IAARD). In the future, development of processed functional food product is expected to raise in line with the increase in the public’s interest on the important of the health. The specific function of antioxidant derived from the anthocyanin compound enable human immunity increase which is recently getting popular, particularly during Covid-19 pandemic. Potential development of the foodstuffs associated with anthocyanin involves various research from upstream to downstream, starting from superior varieties development which contain higher anthocyanin content, by product creation with higher functional values and preferred by the consumers.</p><p>Keywords: Carbohydrates, anthocyanin, functional food, diversification.</p><p> </p><p><strong>Abstrak</strong></p><p><strong>PROSPEK PENGEMBANGAN KOMODITAS SUMBER KARBOHIDRAT KAYA</strong><br /><strong>ANTOSIANIN MENDUKUNG DIVERSIFIKASI PANGAN FUNGSIONAL</strong></p><p>Salah satu sumber bahan pangan fungsional adalah komoditas berbasis karbohidrat dan mengandung antosianin. Komoditas tersebut antara lain padi beras hitam, jagung ungu, dan ubi jalar ungu. Senyawa antosianin merupakan pigmen yang memberikan warna ungu pada produk yang dihasilkan. Antosianin memiliki aktivitas antioksidan, yang mampu mengikat senyawa radikal dan melindungi tubuh dari penyakit. Fungsi fisiologis dari antosianin dalam bahan pangan telah menarik perhatian untuk dilakukan eksplorasi sifat bioavailability, fungsi pangan fungsional, dan tampilan produknya. Beberapa varietas unggul komoditas sumber karbohidrat kaya antosianin seperti padi hitam Jeliteng, jagung Srikandi Ungu, dan ubi jalar ungu Antin telah dilepas oleh Balitbangtan. Ke depan, pengembangan produk olahan pangan fungsional diharapkan semakin meningkat seiring dengan meningkatnya perhatian masyarakat akan pentingnya kesehatan. Fungsi khusus antioksidan dari senyawa antosianin dapat menaikkan imun tubuh yang sangat dibutuhkan masyarakat, apalagi dalam masa pandemi Covid-19. Potensi pengembangan bahan pangan berantosianin memerlukan penelitian dari hulu hingga hilir, mulai dari perakitan varietas unggul mengandung antosianin lebih tinggi sampai teknologi pengolahan untuk menghasilkan produk olahan yang lebih berkualitas, dengan sifat fungsional yang lebih tinggi, dan disenangi oleh konsumen.</p><p>Kata kunci: Karbohidrat, antosianin, pangan fungsional, diversifikasi.</p>

Aquacultured channel catfish (Ictalurus punctatus) were evaluated for the presence of human pathogenic bacteria. Fresh catfish fillets procured from three catfish processors in the southeastern United States during the four annual seasons (e.g., summer, fall, winter, and fall) were screened for selected human pathogens. At each sampling time point, 20 freshly processed catfish fillets were randomly selected from each processor during each season. Five catfish fillets were randomly selected for aerobic plate counts and all 20 fillets were screened for five pathogenic bacteria viz. Campylobacter jejuni/coli, Escherichia coli O157:H7, Klebsiella pneumoniae subsp. pneumoniae, Plesiomonas shigelloides, and Vibrio cholerae. There was a significant difference (P &lt; 0.05) in the aerobic plate counts due to differences in unit processing operations and processing season. C. jejuni/coli, E. coli O157:H7 and K. pneumoniae subsp. pneumoniae were not isolated. Only P. shigelloides and V. cholerae were isolated during the warm weather.

In ancient times plants have been a great source of medicine. Many of traditionally known plants have been extensively studied by advanced scientific techniques and reported for various medicinal properties such as anticancer, antinflammatory, antidiabetic, anthelmintic, antibacterial, antifungal, hepatoprotective, antioxidant, larvicidal. The aim of the present study was to evaluate the antibacterial effects of methanolic and aqueous extracts of <em>Melia azedarach</em> fruit against isolated strains of <em>Pseudomonas aeruginosa, E. coli, Staphylococcusaureus, Bacillussubtilis</em>, Proteus and Klibsiella using well and disc diffusion methods. Both extracts established significant antibacterial activity against tested bacteria. In well and disc methods, <em>Staphylococcus aureus, Pseudomonas aeruginosa</em>, Klibsiella and Proteus showed sensitivity at significant level to aqueous extract of Melia azedarach fruit. In comparison between two methods well and disc E. coli was significantly different at 50 mg/mL. and <em>Pseudomonas aeruginosa</em> at 100 and 200 mg/mL. <em>Staphylococcus aureus</em> and Proteus showed a significant difference in sensitivity to alcohol extract of M. azedarach fruit in well method. In disc method <em>Pseudomonas aeruginosa</em> and Proteus showed a significantly different sensitivity to alcohol extract of M. azedarach fruit. In comparison between well and disc method no significant difference was observed on alcohol extract of Melia azedarach. In comparison between alcohol and aqueous extract no significant difference was observed in both well and disc methods.

A better understanding of variability in plant populations is crucial for crop improvement which plant breeders can use through selection. This study aimed to determine selection criteria for the sixth generation of black rice through genetic variability, heritability value and genetic advance. This research was conducted from March to July 2018 at Pakahan Village, Jogonalan Sub-district, Klaten Regency, Central Java, using a Randomized Complete Block Design (RCBD). The variables observed were plant height, total number of tillers and productive tillers, panicle length, number of seeds per panicle, panicle intensity index, weight per panicle, 1,000 seed weight, seed weight per plant, flowering age, harvest age, plot yield, yield per hectare, rice color and total anthocyanin content. Variance analysis showed that there was a very significant difference (p &lt;0.01) among the genotypes tested for all observed characters indicating variability. In this study, the phenotypic coefficient of variance (PCV) values was relatively higher than the genotypic coefficient of variance (GCV) for all traits. However, GCV values were close to PCV values in some characters such as plant height, flowering age, harvest age, rice color and anthocyanin content which showed a high contribution of genotypic effects to the phenotypic expression of these characters. The high heritability and high average value of genetic advance were indicated in the parameters of plant height, flowering age, harvest age, rice color and anthocyanin content. The characters of plant height, flowering age, harvest age, rice color and anthocyanin content can be used as sixth-generation black rice selection criteria.

BackgroundFeeding dogs with raw meat-based diets (RMBD) has increased in popularity in recent years. Proponents claim that RMBD is more natural for dogs, because it is what their ancestors (wolves) eat. Opponents claim that RMBD is a health hazard to both humans and animals, with a risk of spreading zoonotic bacteria and resistant bacterial strains.MethodsThis cross-sectional study investigated differences in bacteria shedding in faeces between dogs fed RMBD and dogs fed dry kibble. Faeces samples from 50 dogs from the same municipality were analysed for the presence of extended-spectrum beta-lactamases (ESBL)-producing Escherichia coli, Campylobacter and Salmonella.ResultsFor the 25 dogs fed RMBD, ESBL E coli was isolated from 13 faeces samples, Campylobacter from 12 and Salmonella from 1. For the 25 dogs fed dry kibble, ESBL-producing E coli was isolated from one faeces sample and Campylobacter from four, while Salmonella was not detected.ConclusionThere was thus a significant difference in excretion of zoonotic and resistant bacteria in faeces between dogs fed RMBD and dogs fed dry kibble. These results confirm that RMBD can pose a microbiological risk not only for dogs, but also for people handling RMBD and faeces from dogs.
