Background: Dietary patterns affect both human health and environmental sustainability. Prior research found a ten-unit course on food systems and environmental sustainability shifted dietary intake and reduced dietary carbon footprint among college students. This research evaluated the impact of a similar, more scalable one-unit Foodprint seminar taught at multiple universities. Methods: We used a quasi-experimental pre-post nonequivalent comparison group design (n = 176). As part of the Menus of Change University Research Collaborative, research was conducted at three university campuses in California over four academic terms. All campuses used the same curriculum, which incorporates academic readings, group discussions, and skills-based exercises to evaluate the environmental footprint of different foods. The comparison group comprised students taking unrelated one-unit courses at the same universities. A questionnaire was administered at the beginning and end of each term. Results: Students who took the Foodprint seminar significantly improved their reported vegetable intake by 4.7 weekly servings relative to the comparison group. They also reported significantly decreasing intake of ruminant meat and sugar-sweetened beverages. As a result of dietary shifts, Foodprint seminar students were estimated to have significantly decreased their dietary carbon footprint by 14%. Conclusions: A scalable, one-unit Foodprint seminar may simultaneously promote environmental sustainability and human health.

COVID-19 has led to dramatic societal changes. Differing movement restrictions across countries have affected changes in consumers’ food practices, with a potentially detrimental impact on their health and food systems. To investigate this, this research explored changes in consumers’ food practices during the initial COVID-19 phase and assessed the impact of location on these changes. A sample of 2360 adults from three continents (Island of Ireland (IOI), Great Britain (GB), United States (USA), and New Zealand (NZ)) were recruited for a cross-sectional online survey (May–June 2020). Participants completed questions in relation to their cooking and food practices, diet quality, and COVID-19 food-related practices. Significant changes in consumers’ food practices during the pandemic were seen within and between regions, with fewer cooking practices changes found in the USA. Food practices, which may put added pressure on the food system, such as bulk buying, were seen across all regions. To prevent this, organisational food practices, including planning ahead, should be emphasized. Additionally, while positive cooking-related practices and increases in fruit and vegetable intake were found, an increase in saturated fat intake was also seen. With the additional pressure on individuals’ physical and mental health, the essentiality of maintaining a balanced diet should be promoted.

Shifting consumer behavior towards more sustainable diets can benefit environmental sustainability and human health. Although more frequent home cooking is associated with a better diet quality and fast-food consumption with worse diet quality, the environmental impact of diets based on frequency of cooking or eating fast food is not well understood. The objective of this study was to investigate whether the frequency of cooking dinner at home or eating fast food is associated with dietary greenhouse gas emissions (GHGE). We linked 24-h dietary recall data from adult respondents in the 2007–2010 National Health and Nutrition Examination Survey (NHANES) (N = 11,469) to a database of GHGE factors to obtain a measure of dietary GHGE (kgCO2-eq/2000 kcal) (the sum of emissions released in the production of food for an individual’s diet), adjusted by energy intake (kgCO2-eq/2000 kcal). We examined associations between frequency of cooking dinner (the only meal for which cooking frequency was measured), frequency of eating fast food, and dietary GHGE and protein sources (beef, pork, poultry, other meat, and fish and seafood (g/2000 kcal)) using generalized linearized regression models that controlled for age, sex, and other socio-economic characteristics. Greater cooking frequency was associated with higher dietary GHGE. In fully adjusted models, cooking 5–6 times/week was associated with an additional 0.058 kgCO2-eq/2000 kcal (SE 0.033) and cooking 7 times/week was associated with an additional 0.057 kgCO2-eq/2000 kcal (SE 0.027) when compared to cooking 0–2 times/week. Individuals in households who cooked dinner more frequently consumed significantly more meat, poultry, and fish (cooking 7 times/week: 148.7 g/2000 kcal vs. cooking 0–2 times/week: 135.4 g/2000 kcal, p-trend = 0.005), which could explain the association with a higher carbon footprint diet. There were few associations of note between fast-food frequency and GHGE. Policies and interventions that reduce consumption of meat and increase consumption of plants when both cooking meals at home and eating meals out are needed to shift toward diets that will be beneficial for both human health and the health of the planet.

Abstract Objectives To determine the impact of State and Trait anxiety and dietary intake on college students' gastrointestinal symptoms during the COVID-19 pandemic. Methods A total of 455 students, aged 18–23, from two residential colleges in the midwestern United States participated in the study during April 2021. An online questionnaire that included the National Cancer Institute Dietary Screener, State-Trait Inventory for Cognitive and Somatic Anxiety, and an adapted version of the Gastrointestinal Symptoms Questionnaire was used. Stepwise multiple regression analyses was used to analyze the data. Results The mean score for GI symptoms was 5.57 ± 5.25. Moderate to severe symptoms of abdominal bloating (31.8%), nausea (16.2%), passing gas (29.1%), abdominal rumbling (28.1%), abdominal cramping (20.4%), diarrhea (18.8%), and constipation (14.7%) were reported by our participants. High rates of State-somatic, State-cognitive, and Trait-somatic anxiety were present in our study population. These anxiety subscales and dietary intake predicted 26% and 3.8% of the GI symptoms variance, respectively. Conclusions State-anxiety and Trait-somatic anxiety are large factors in predicting GI symptoms compared to dietary intake. College students could seek anxiety-reducing techniques to ease GI symptoms. Funding Sources None

Abstract Objectives Vouchers 4 Veggies (V4V) is a transformative healthy food voucher program aimed at increasing access to and affordability of healthy food in the most vulnerable communities. Between 2015–2018, over 2600 ethnically diverse low-income individuals were enrolled in the program with the goal to increase their fruit and vegetable intake, improve food security status and change health perception. Methods V4V partners with local community-based organizations and clinics that serve as voucher distribution sites as well as neighborhoods stores, grocery stores, and famer's markets where participants can redeem their vouchers. Participants receive $20-$40 worth of vouchers per month for 6 months. Data for this evaluation were collected using pre- and post- surveys (at 0 and 4–6 months) that included a validated fruit and vegetable intake screener, the USDA 7-item food security screener, demographic questions and health perception questions. Results Data from 862 matched surveys indicate that mean fruit and vegetable intake increased from 2.49 to 3.52 servings daily, corresponding to a 1.03 servings increase after six months in the program (0.89,1.77; P < .001). In addition, V4V participants’ food security scores improved, decreasing 0.88 points (−1.07, −0.71; P < 0.001) on a 6 point scale (0 being the most food secure and 6 being very food insecure), from a mean of 5.53 to 4.65 using the USDA validated 6-item scale. When stratified by race, food security improved significantly for all major racial groups except Black/African Americans. Finally, participants reported a statistically significant improvement in self-reported health status (P < 0.001), with a 14% change in status from poor/fair health to good/very good/excellent health. Conclusions This evaluation suggests that a modest supplement for fruits and vegetables may be able to improve dietary intake, support food security, and improve health perception among vulnerable residents of San Francisco. More research is needed to understand differences in maintaining long-term health and behavior changes among program participants. Children’s fussy eating is associated with a reduced vegetable intake. This quasi-experimental study evaluated “Big Chef Little Chef” (BCLC), a nursery-based cooking skills programme aimed at reducing food fussiness and increasing willingness to try green vegetables by incorporating repeated exposure and sensory learning. Parent and child (3–5 years) dyads attended BCLC for four/1.5 h weekly sessions. A comparison group was recruited after BCLC completion and attended a single education session at week 1. A questionnaire measured food fussiness at week 1 and week 4. At week 4, all children were offered six green vegetables (raw and cooked) and an average score (1 = did not try; 2 = tried it/ate some; 3 = ate it all) was calculated for willingness to try vegetables. In total, 121 dyads (intervention: n = 64; comparison: n = 57) participated. The food fussiness score (1 min–5 max) in the intervention group decreased significantly from 3.0 to 2.6 (p < 0.01) between time points, while there was no change in the comparison group (3.1 (week 1) and 3.0 (week 4)). The intervention group was more willing to try green vegetables with significantly higher (p < 0.001) median scores for raw and cooked vegetables (2.5 for both) compared with the comparison group (2.0 and 1.7, respectively). The BCLC reduced food fussiness and increased willingness to try green vegetables.

In Saudi Arabia, the carbon footprint and energy use that results from using concrete in construction is a major negative contributor to the environmental effects of building materials. Likewise, the impact of annual cooling and heating energy demands has an equally prominent role to play. These demands need to be assessed and benchmarked in order that reduction targets can be set. Saudi Arabia presents its own unique context and local conditions, which creates a challenge when utilizing generic frameworks for assessing the environmental impact of domestic buildings. In meeting this aim, this paper presents a resilience and environmental sustainability assessment framework (RESAF) developed specifically for domestic buildings in Saudi Arabia. RESAF helps designers/builders to minimize the carbon footprint of the building fabric and reduce in-use energy demands of domestic buildings in Saudi Arabia. This paper shows how this framework can be used to reduce, by approximately 23%, the carbon impact from construction materials, primarily by substituting a portion of cement for pulverized fly ash (PFA) or ground granulated blast furnace slag (GGBS). A reduction of 19% in annual cooling and heating energy demand were additionally achieved throughout the building’s life, simply by increasing insulation and using triple-glazed windows. The importance of passing these alternative solutions through the resilience filter is highlighted, not least questioning whether they are really fit-for-purpose.

Purpose: To evaluate mindfulness meditation as an antecedent of reductions in stress and increases in hope. Method: A quasi-experimental design ( N = 46; meditation group, n = 23; comparison group, n = 23) using a community sample was used to evaluate the impact of mindfulness meditation on stress and hope. A path analysis was also used to model a directional relationship between meditation participation and increases in hope mediated by reductions in stress. Results: The data indicated that the meditation group exhibited significantly higher hope and lower stress than the comparison group. The path analysis indicated that reductions in stress fully mediated the relationship between mindfulness meditation and increases in hope. Discussion: The data support that meditation can increase hope via stress reduction. The results suggest a need for further research into mindfulness meditation and hope, especially since increasing hope is a fundamental aim of strengths-based practice.

The incidence of Cervical cancer about 16/ 100,000 women, 70% of deaths occur in poor and developing countries. It is estimated that approximately 528,000 new cases of cervical cancer and caused 266,000 people to die. The purpose of this study to determine the impact of local language movies on knowledge and motivation Women in the implementation of early detection of cervical cancer by the IVA test. This study uses a quantitative method with a design quasi-experimental pre and post-test with control group design, data were collected using a questionnaire. Samples were 60 women in the Kampung Melayu district area consists of 30 people as the intervention group and 30 in the comparison group. The data analysis used univariate, the bivariate test of T-dependent and T-test Independent, multivariate use MANCOVA. Results showed knowledge before and after intervention increased from 10.73 into 12.80 with p-value(0.000) and Motivation scores increase of 56.57 into 60.40 with p-value (0.002). There are significant differences between the intervention group and the comparison group with p-value(0.002) for the knowledge and p (0.000) for motivation. There was a significant effect of the variable Independent Movie towards Knowledge and Motivation women with pValue 0.00, covariate variable does not affect the knowledge and motivation with p-Value greater than α =0.05. Need to campaign on an ongoing basis to be able to motivate women in carrying out the examination IVA and the media that is used needs to be varied so that women interested and more easily understand the message.

Recognised as an ambitious step, the European Green Deal guides the application of European Union policies not only in the environmental field, but also in other areas that may directly or indirectly interfere with human health and environmental sustainability, with the aim of transforming climate challenges and environmental issues in applicable opportunities. With the COVID-19 crisis, major challenges have emerged and aggravated extant problems in the most varied societies. In the European Union’s context, the impact of the new pandemic stood out, especially at the beginning, showing different responses by the Member States, in a disorderly and isolated way between one border and another, which highlighted when it would be placed in practice. Member States´ solidarity and responsibility to work together towards an economic and social recovery plan is critical in order to keep European project alive. Therefore, in an attempt to reinforce the link between solidarity and responsibility among Member States, the European Union uses the Green Deal to respond to the crisis through a recovery that has common objectives around the sustainability and well-being of its citizens.

Food choice impacts human health and planetary sustainability. The feeding patterns that reduce risk factors for noncommunicable diseases and various mortality causes are recognized as healthy eating habits. The average world population is far from reaching these habits due to the lack of access to healthy foods and a high prevalence of malnutrition. Understanding the impact of healthy sustainable food systems is growing worldwide to reach food security for the global population and future generations. A systemic perspective of this concept includes the health and well-being of individuals and the environmental, economic, socio-cultural, public policies context, besides food, agriculture, and ecological sciences. We need to confront the menaces and challenges represented by the ongoing changes of our era, which strongly generate global food insecurity. This issue is relevant not only for human health but also for climate change and other threats, based on modifications in production, handling, and consumption of foods that consider health and welfare impact at individual and planetary levels. In this review, some key concepts related to healthy and sustainable food systems are presented.
