Soy-based drinks are an alternative source of high-quality vegetable protein and have almost the same content as cow's milk but do not contain lactose which can cause digestive problems in some people (lactose intolerance). Nutrition value and quality in legumes will be better after going through the germination process. This study aims to determine the effect of soybean seed soaking time and the percentage of stabilizer Carboxymethyl Cellulose (CMC) on the best chemical, physical and olganoleptic quality in soybean sprouts milk. The method used in the study of soybean sprouts milk is Random Factorial Design (RCBD) which consists of 2 factors: soaking time (4 hours, 8 hours and 12 hours) and the percentage ofstabilizers Carboxymethyl Cellulose (CMC) (0.4% and 0,6%). Each treatment was repeated 3 times so 18 trials were obtained. The tests included chemical tests including protein content and antioxidant activity, physical including viscosity and organoleptics including color, the flavor, texture and taste. Analysis of chemical and physical content data is done using the Minitab application to search fordata Analysis of Variance and to determine the notation using the Tukey Method. While the organoleptic test uses the Friedman method and to find the best treatment using the Effectiveness Index. The best research results on soybean sprouts milk on chemical, physical and organoleptic content were found in the P1C1 treatment (4 hours immersion time and 0,4% CMC percentage) with protein analysis results with a value of 4.97, antioxidant activity with a value of 45.75, viscosity with a value of 19.73, color with a value of 35.33 (likes), the flavor with a value of 3.50 (somewhat like), texture with a value of 3.20 (somewhat like) and taste with a value of 3.63 (like).

Germination process can increase the nutritional value and functional properties that exist in the grain. Black soybeans contains anthocyanin, vitamin E and antioxidant activity that is beneficial to health. This study aims to determine the effect of long germination on rendement, anthocyanin, vitamin E levels and antioxidant activity on black soybean sprouts. Preliminary studies includes optimalization the length of germination and characterization of black soybean seeds. The main research includes physical and chemical analysis of rendement measurement, anthocyanin content, vitamin E content and antioxidant activity.  Then, analysis of proximate content on black soybean sprouts best result from long treatment of germination. The data measurement of black soybeans sprouts was obtained a digital scales and spectrophotometer UV-Vis. The results showed that (1) The germination has an effect on rendement, anthocyanin, vitamin E levels and antioxidant activity on black soybean sprouts. (2) In 40 hours long germination treatment showed anthocyanin level (91.84 mg / 10 g) and antioxidant activity (24.51% RSA) has the highest value. (3) The longer of germination has higher value on rendement percentage and vitamin E content.

ABSTRACT Corn (Zea Mays L.) is widely developed in Indonesia. Corn kernels showed total phenolic and antioxidant activity. Antioxidants have the potential as photoprotectors, therefore, plants containing phenolic compounds can be used in the prevention of free radicals. For this reason, researcher is interested in further researching the phytochemical screening, antioxidant activity and sunscreen testing from extracts of stems, leaves, hair and leaf wrapping from corn (Zea mays L.). The samples used were corn plants (corn silk, corn leaves, corn stalks and leaf wrapping corn) originating from Kauditan area, North Minahasa. The results of the study showed that the leaf contained saponin and flavonoid compounds, the stem contained alkaloid and saponin compounds, the hair contained alkaloid and flavonoid compounds, and the leaf wrapping only contained alkaloid compounds. The highest to lowest total phenolic content values starting from the stem were 46.93 μg / mL, the leaf wrapping 37.76 μg / mL, the leaf 26.63 μg / mL and hair 14.49 μg / mL. The leaf has the highest antioxidant activity with a value of 72.81% followed by 62.87% stem then wrapping leaf 43.13%  and finally hair 29.14%. The SPF value of the stem was included in the ultra protection with a value of 16.117 followed by the leaves included in the maximum protection with an SPF value of 10.902. While the hair with SPF value of 0.6 and wrapping leaf with SPF value of 0.222 are included in the minimum protection. Keywords: Corn (Zea Mays L.), Sunscreen, Antioxidants, Phenol ABSTRAK Jagung (Zea Mays L.) banyak dikembangkan di Indonesia. Biji jagung menunjukkan kadar total fenolik dan aktivitas antioksidan. Antioksidan memiliki potensi sebagai fotoprotektor, oleh karena itu, tanaman yang mengandung senyawa fenolik dapat digunakan dalam pencegahan radikal bebas. Untuk itu peneliti tertarik untuk meneliti lebih lanjut tentang skrining fitokimia, uji aktivitas antioksidan dan tabir surya dari ekstrak batang, daun, rambut, dan daun pembungkus dari jagung (Zea mays L.). Sampel yang digunakan ialah tanaman jagung (rambut jagung, daun jagung, batang jagung dan daun pembungkus jagung) yang berasal dari daerah Kauditan, Minahasa Utara. Hasil dari penelitian menunjukkan daun mengandung senyawa saponin dan flavonoid, batang mengandung senyawa alkaloid dan saponin, rambut mengandung senyawa alkaloid dan flavonoid, dan daun pembungkus hanya mengandung senyawa alkaloid. Nilai kandungan total fenolik  yang paling tinggi sampai paling rendah dimulai dari batang sebesar 46.93 μg/mL, daun pembungkus 37.76 μg/mL, daun 26.63 μg/mL dan rambut 14.49 μg/mL. Daun memiliki aktivitas antioksidan yang paling tinggi dengan nilai 72.81% diikuti oleh batang 62.87% kemudian daun pembungkus 43.13% dan yang terakhir adalah rambut 29.14%. Nilai SPF batang termasuk dalam proteksi ultra dengan nilai 16,117 diikuti oleh daun yang termasuk dalam proteksi maksimal dengan nilai SPF 10,902. Sedangkan rambut dengan nilai SPF  0,6 dan daun pembungkus dengan nilai SPF 0,222 termasuk dalam proteksi minimal. Kata Kunci : Jagung (Zea Mays L.), Tabir Surya, Antioksidan, Fenol

Antioxidants are substances that can slow down the oxidation process of free radicals. Limpasu plant (Baccaurea lanceolata (Miq) Muell. Arg), an indigenous plant of Borneo, is a natural antioxidant source. The purpose of this study was to determine the antioxidant activity of the limpasu pericarpium extract. The extraction of the limpasu pericarpium was done by maceration method using solvents with increasing polarity ranging from n-hexane, ethyl acetate, and methanol. Antioxidant activities of the three extracts were measured by the DPPH and FRAP methods. The IC50 values of n-hexane, ethyl acetate, and methanol extracts, as well as quercetin using the DPPH method were 517,45 µg/mL, 530,64 µg/mL, 10,63 µg/mL and 6,83 µg/mL, respectively. Meanwhile, the IC50 values obtained from FRAP method were 198,96 µg/mL, 190,07 µg/mL, 661,36 µg/mL, and 7,09 µg/mL, respectively. The results revealed that the methanol extract is more potent than other extracts tested for antioxidant activity.

This study determined the antihyperglycemic and antioxidant activity of nanoemulsion extracts of M. affine leaves in alloxan-induced rats. This research used 24 male Wistar rats around three months old which grouped as normal (untreated), negative control (treated with carboxymethyl cellulose sodium/Na-CMC,), positive control (treated with glibenclamide), and various concentration (30, 60, and 90%) of nanoemulsion extract of M. affine leaves groups. The extract of M. affine leaves had an antioxidant activity with IC50 5.30 ppm, categorized as a very strong antioxidant. Furthermore, the administration of this extract decreased glucose levels in antihyperglycemic rats.  We concluded that M. affine leaves extract potential as antioxidants and be developed as an ingredient for diabetic drugs.

Bacteriocins are a large group of antimicrobial compounds that are synthesized by representatives of the genus Bacillus and lactic acid bacteria. They are used extensively in the food industry as biopreservatives. Incorporated in the composition of edible coatings, bacteriocins can reduce microbial growth and decay incidence in perishable fruits, thus improving product shelf-life and commercial appearance. The present study aims to investigate the effect of edible coatings of 0.5 % carboxymethyl cellulose (CMC) enriched with a purified bacteriocin from Bacillus methylotrophicus BM47 on the shelf-life extension of fresh strawberries. During storage at 4 °C and 75 % relative humidity for 16 days, the measurements of mass loss, decay percentage, total soluble solids (TSS), titratable acidity (TA), pH, organic acids, total phenolic and anthocyanin contents and antioxidant activity were made. The results demonstrate that the application of edible coatings with 0.5 % CMC and 0.5 % CMC with bacteriocin (CMC+B) led to a significant decrease of mass loss in the treated strawberries compared to the uncoated fruit. After the 8th day of storage, significant reductions in decay percentage along with the absence of fungal growth in CMC+B-coated fruit were observed in comparison with the CMC-coated and control strawberries. During the second half of the storage period, CMC and CMC+B treatments reduced TSS amount in the coated fruit compared to the control, but did not affect the increase of TA and decrease of pH values that are normally associated with postharvest changes. The CMC and CMC+B coatings did not prevent the decrease of ascorbic acid, and total phenolic and anthocyanin contents during cold storage. The application of CMC and CMC+B coatings had a significant inhibitory effect on decreasing the antioxidant activity throughout the storage period and maintained the antioxidant levels in both treatments close to the initial value of 76.8 mmol Trolox equivalents per 100 g of fresh mass.

Abstract Background Inflammation is a symptom associated with many diseases. This symptom is treated with steroidal and non-steroidal anti-inflammatory drugs, which can cause severe side effects when used as long-term treatments. Natural products are an alternative source of new compounds with anti-inflammatory activity. Jefea gnaphalioides (Astereaceae) (A. Gray) is a plant species used to treat inflammatory problems, in Mexico. This study determined the anti-inflammatory activity and the composition of the methanol extract of Jefea gnaphalioides (MEJG). Methods The extract was obtained by heating the plant in methanol at boiling point for 4 h, and then the solvent was evaporated under vacuum (MEJG). The derivatization of the extract was performed using Bis-(trimethylsilyl) trifluoroacetamide, and the composition was determined by GC-MS. Total Phenols and flavonoids were determined by Folin-Ciocalteu AlCl3 reaction respectively. The antioxidant activity of MEJG was determined by DPPH method. The acute and chronic anti-inflammatory effects were evaluated on a mouse ear edema induced with 12-O-Tetradecanoylphorbol-13-acetate (TPA). Acute oral toxicity was tested in mice at doses of MEJG of 5000, 2500 and 1250 mg/kg. The levels of NO, TNF-α, IL-1β and IL-6 were determinate in J774A.1 macrophages stimulated by Lipopolysaccharide. The production of inflammatory interleukins was measured using commercial kits, and nitric oxide was measured by the Griess reaction. Results The anti-inflammatory activity of MEJG in acute TPA-induced ear edema was 80.7 ± 2.8%. This result was similar to the value obtained with indomethacin (IND) at the same dose (74.3 ± 2.8%). In chronic TPA-induced edema at doses of 200 mg/kg, the inhibition was 45.7%, which was similar to that obtained with IND (47.4%). MEJG have not toxic effects even at a dose of 5000 mg/kg. MEJG at 25, 50, 100 and 200 μg/mL decreased NO, TNF-α, IL-1β and IL-6 production in macrophages stimulated with LPS. The major compounds in MEJG were α-D-Glucopyranose (6.71%), Palmitic acid (5.59%), D-(+)-Trehalose (11.91%), Quininic acid (4.29%) and Aucubin (1.17%). Total phenolic content was 57.01 mg GAE/g and total flavonoid content was 35.26 mg QE/g MEJG had antioxidant activity. Conclusions MEJG has anti-inflammatory activity.

 Objective: Hyperuricemia (high uric acid levels) prevalence increased year by year. This study was aimed to elaborate the in vitro xanthine oxidase (XO) inhibitory activity and in vivo lowering hyperuricemic effect of Uncaria gambir (Hunter) Roxb) (gambir), Caesalpinia sappan L. (secang) and the combined extract of secang and gambir (formulae extract [FE]).Methods: Gambir and secang extracts were prepared by maceration with ethanol and FE was the proportioned combination of these two extracts. XO inhibitory activity was determined by measuring the formation of uric acid in the xanthine/XO system in vitro using allopurinol as a positive control at 100 ug/mL. Antioxidant activity was by 1,1-diphenyl-2-picrylhydrazyl radical reducing methods. The in vivo experiments were conducted in the oxonate-induced hyperuricemia rat model, in which FE was gavaged p.o. at the arrange dose of 75, 150, and 300 mg/kg bw for 2 weeks. Polyphenol content was measured using Folin–Ciocalteu reagent spectrophotometrically.Results: The XO inhibitory activity of FE was 80% of allopurinol, while secang and gambir were 98% and 50%, respectively. The strength was appropriate to the total polyphenol content, in which it decreased in the order of secang (99%) > FE (86%) > gambir (46%). Furthermore, FE at all tested doses was able to decrease uric acid levels. FE also demonstrated antioxidant activity with a value of 74% relative to Vitamin C at 4 ug/mL.Conclusion: These studies could be concluded that FE exhibited the ability to decrease uric acid level so that it was potential to be developed further as a uric acid-lowering agent.
