Hunan province ranks highly in exporting Animal Derived Foods in the country. This study begins from the current export situation existing problems of Animal Derived Foods of Hunan province in recent years, proposes the ecological designing measures for these existing problems, to Implement quality and safety management by HACCP mode, promote garden-like and low carbon breeding ecological farming model, implement ecological function regionalization & develop local featured breeding, improve the eco-efficiency and construct a featured mode of industrial organization, establish international standardization system for poultry meat products,so as to promote a healthy development of the animal husbandry in Hunan province and actively boosting its exports.

The purpose of the article is to analyze the current state of the meat market in Ukraine, to identify trends in its development. Research methods. The following methods have been used generally accepted methods and techniques: a set of scientific methods of abstract and logical method (induction and deduction, analysis and synthesis, analogy and comparison, formalization) for develop theoretical positions and analyze the situation in the meat market; statistical when assessing the meat market; tabular for visual representation of the research results; graphic for identify and illustrate trends of the research economic phenomena. Research results. The meat market is an important component of the food market of the country, on the stability of which the living standards of the population and the food security of the country largely depend, has been generalized. Meat and meat products are among the most important foods. It has been found that the meat market operates in rather difficult economic conditions. Meat producers increase production volumes with the decline of certain branches of animal husbandry In the livestock industry of Ukraine there are transformational processes that cause changes in the meat market structure. The meat market structure is considered and the peculiarities of its functioning are revealed. Poultry meat has been found to have a monopoly on the meat market. The increase in poultry meat production is primarily due to the growing demand from the population and the food industry. The basis of the "meat diet" is poultry meat, as the most available type of meat has been determined. Scientific novelty. Production of poultry meat in Ukraine is the most profitable has been specified. The rapid return on investment in poultry production has led to increased investment in the industry, the construction of modern large poultry farms and the creation of powerful vertically integrated companies. Pork production has stabilized somewhat. However, African swine fever causes significant damage. Raising cattle remains a non-profit business. The trend of cattle slaughter continues in Ukraine,. At the same time, the main producers of cattle meat are households. Analytical assessments and determinations of factors influencing meat production and further development of the meat market have been further developed. Practical significance. Analytical materials of the article have been based on relevant official statistics, which can be can be used for addressing development of the meat market. The environmental aspects of poultry production have recently become increasingly political. This applies not only to the cultivation of poultry, but also to the processing and marketing of meat products. Poultry farming is associated with signifi cant environmental risks. Pollution from intensive animal husbandry is not so serious. Poultry farms consume a lot of water, especially when slaughtering poultry, and energy, especially when cooling and further processing meat. An important reserve for reducing the cost of meat entering the consumer market is the creation of an effective poultry farming system. If reducing water consumption by poultry farms becomes one of the priorities of environmental policy, the number of birds may increase, and meat prices may become cheaper. At the same time, when using the purifi ed and recycled water of the slaughterhouse of poultry farms for the technological needs of the slaughterhouse, for example, for washing gutted carcasses outside and inside (which is usually produced by tap water), the quality indicators of meat as a whole signifi cantly increase. The article analyses the necessity of studying the state of animal husbandry at the regional level and its importance to the development of rural territorial communities. It also presents the number dynamics of farm animals in enterprises, farms and households and the products obtained for the period from 1995 to 2019 on the territory of the West Polissya region in the section of Rivne and Volyn regions. As a result, a significant decrease in the number of animals was found, with the exception of poultry, the number of which increased 2.3-2.4 times. It was found that the change in the number of basic farm animals affected the production of the relevant products. From 1995 to 2019, the number of egg production increased significantly and the number of dairy products, wool, and meat (in slaughter weight) decreased in Rivne region. Poultry meat, which is significantly cheaper than pork or beef, is also a major part of meat products made in the West Polissya region. It is revealed that the main contribution to the development of animal husbandry in the West Polissya region is made by households, where a greater number of the main types of agricultural animals are concentrated (in 2019, 80% of cows, 75% of pigs, 92% of sheep and goats). Therefore, one of the conditions for improving its development is the use of various mechanisms to stimulate the evolvement of individual farms, farms and cooperatives. Measures to improve livestock leverage have been proposed as one of the important factors contributing to the implementation of sustainable development strategies for rural united territorial communities. В 2018 году дефицит белка и жиров животного происхождения в питании населения России составил 11,8 и 5,5, соответственно. Продолжает оставаться высокой импортозависимость по белку животного происхождения на уровне 10,3, по животным жирам 8,8. Интенсификация развития животноводства соответствует стратегической цели социального развития и повышения жизненного уровня населения нашей страны на ближайшую и отдаленную перспективы. В соответствии с Доктриной продовольственной безопасности взят курс на наиболее полное обеспечение и улучшение структуры питания людей за счет роста потребления ценной в питательном отношении молочномясной продукции собственного производства. Россия располагает всеми необходимыми условиями и имеет реальные предпосылки полностью решить проблему обеспечения населения животными жирами и пищевым белком животного происхождения, но с каждым годом усложняется ситуация с трудовыми ресурсами на селе.In 2018, the deficit of protein and animal fats at the diet of Russian population was 11.8 and 5.5, respectively. High import dependence on animal protein remains at the level of 10.3, and on animal fats 8.8. Intensification of animal husbandry corresponds to the strategy of social development and improvement of living standards of countryside population in near and longterm period. In accordance with the Food Security Doctrine it was taken the course on the most complete provision and improving the structure of peoples diet due to increasing in the consumption of valuable dairy and meat products of own production. Our country has all the necessary conditions and has real prerequisites for fully solving the problem of providing the population with animal fats and protein, but every year the situation with the labor resources in rural areas becomes more complicated.

Current trends in meat and meat products exports are considered. The dynamics and structural changes in meat exports by types and degree of processing (beef and veal, pork, poultry, finished meat products) are analyzed. The paper proves that in recent years, only meat and edible poultry by-products have taken a competitive position in the world market. Accordingly, the dynamics of exports of this type of meat is positive, and the share of these products in the structure of exported meat is the largest (86.09%). Possible threats to the growth of import dependence on certain types of meat products, in particular, chilled and frozen beef and veal, pork, are indicated. The rating of the largest countries-importers of meat and meat products (by types) from Ukraine is built, their share in the structure of meat exports is determined. Changes in the geographical structure of exports have been studied, which indicate a low level of diversification of the geography of exports of certain types of meat (pork, beef). At the same time, a positive development of the geographical structure of poultry meat exports (exported to more than 100 countries) was revealed. Problems of the export potential development in the meat industry of Ukraine are revealed. In particular, the problems of livestock development (outdated technologies and production techniques that reduce the efficiency and productivity; inefficiency of the organization of purchase and processing of meat, which leads to reduced breeding in small businesses and households; inefficiency of state incentives, etc.) and industrial meat production (lack of raw materials, obsolescence of fixed assets and production technologies, poorly developed logistics, etc.). The solution of these problems requires: a systematic approach, which will encourage the cooperation of agricultural and industrial production, cooperation with importers of meat products and protection of domestic producers in the domestic and international markets, creating a favorable investment and information environment that will promote the meat industry development.


This article presents the results of studying the impact of housing and feeding conditions on broiler chickens of Hubbard RedBro cross, as well as the quality of products obtained when using floor and cage content, in a farm. It established that when receiving a mixed feed of own production using feed raw materials grown on a farm without the use of pesticides, a statistically significant decrease in potentially dangerous substances for animal health is recorded. Compared with factory feed, it has reduced the content of pesticides by 14 times, and mercury and arsenic by 24 times, cadmium by five times, and lead by ten times. The results of the study of economic indicators of growing Hubbard RedBro cross broiler chickens, as well as the chemical composition and quality of carcasses, indicated that there was no significant difference between the floor and cell conditions of keeping. Still, the use of a diet based on eco-feeds contributed to a statistically significant decrease in the concentration of toxic metals in the muscles of the poultry of the experimental groups. As a result, it found that the use of the studied compound feed in the diets of broiler chickens increased the indicators of Biosafety and ensured the production of environmentally safe ("organic") poultry meat products.

The problem of the uncontrolled use of antibiotics currently remains unresolved. Step-by-step monitoring of meat using modern methods will reduce the risk of using contaminated meat raw materials for food production. Qualitative monitoring will identify samples containing residual antimicrobial substances. The use of methods for identifying groups of antibiotics will help narrow the search for antibiotics by expensive chromatographic methods. A study was carried out of beef, pork and poultry meat, which is used in meat processing plants in the production of raw smoked sausages, using two methods. At the first stage, using a qualitative microbiological method, the raw meat was evaluated for the presence of antimicrobial substances, then their group was determined using a NovoCyte flow cytometer. According to the results of a study on a flow cytometer, it was found that out of 10 groups of antibiotics that can be determined by the tested method, the group of lincosamides was not found in all meat samples. The most common groups of chemotherapy drugs in pork were sulfonamides – 29.6 %, tetracycline group – 18.5 % and beta-lactams – 14.8 %, and in beef aminoglycosides – 36.7 %, phenicols – 30 % and beta-lactams – 13.3 %. In poultry meat samples, the most common were sulfonamides – 23.2 %, fenicols – 23.2 %, and beta-lactams – 16 %. Five groups of antibiotics were found in all studied types of meat: fenicols, β-lactams, macrolides, polypeptide antibiotics, and quinolones. This indicates their widespread use in animal husbandry and poultry farming.

In recent years, antibiotic-resistant bacteria with an impact on human health, such as extended spectrum β-lactamase (ESBL)-containing Enterobacteriaceae, methicillin-resistant Staphylococcus aureus (MRSA) and vancomycin-resistant Enterococci (VRE), have become more common in food. This is due to the use of antibiotics in animal husbandry, which leads to the promotion of antibiotic resistance and thus also makes food a source of such resistant bacteria. Most studies dealing with this issue usually focus on the animals or processed food products to examine the antibiotic resistant bacteria. This study investigated the intestine as another main habitat besides the skin for multiresistant bacteria. For this purpose, faeces samples were taken directly from the intestines of swine (n = 71) and broiler (n = 100) during the slaughter process and analysed. All samples were from animals fed in Austria and slaughtered in Austrian slaughterhouses for food production. The samples were examined for the presence of ESBL-producing Enterobacteriaceae, MRSA, MRCoNS and VRE. The resistance genes of the isolated bacteria were detected and sequenced by PCR. Phenotypic ESBL-producing Escherichia coli could be isolated in 10% of broiler casings (10 out of 100) and 43.6% of swine casings (31 out of 71). In line with previous studies, the results of this study showed that CTX-M-1 was the dominant ESBL produced by E. coli from swine (n = 25, 83.3%) and SHV-12 from broilers (n = 13, 81.3%). Overall, the frequency of positive samples with multidrug-resistant bacteria was lower than in most comparable studies focusing on meat products.

The study aimed to assess the effect of herbal additions with antioxidant properties (pepper, thyme and oregano) on the microbiological and oxidative stability as well as the sensory quality of minced poultry meat. Meatballs treatments without additives and treatments with the addition of three types of spices in two forms—dry spices and industrial extracts were examined. Popular seasoning additives of oregano (Origanum vulgare), thyme (Thymus vulgaris) and black pepper (Piper nigrum) at 0.3% of dry herbal or 0.003% as industrial extract were added to minced meat. The microbiological, chemical and sensory tests were performed at specified times and storage temperature. Based on the studied criteria, products maintained constant and adequate quality by up to 10 days while stored in 4 °C. In the case of all tested samples, the overall sensory quality began to deteriorate after 10 days of storage. The preservative role of herbs and extracts in meat products during processing and storage was observed. Oregano and black pepper in both forms maintained good microbial quality and showed their inhibitory effects on the growth of psychrotrophic bacteria. It was observed that dried herbs revealed a stronger antioxidant effect than additives in the form of extracts. The studied dried herbs played an antioxidant, antimicrobial and preservative role in meat products during processing and storage.
