Abstract Background Starch is the main storage substance in rice caryopsis and its properties will determine the quality of rice. Super rice has been extensively studied due to its high-yield characteristics, but the knowledge of amyloplast development and starch quality in caryopsis of super rice especially with large panicle is limited. Results To address this, large panicle typed and normal panicle typed super rice cultivar Yongyou2640 (YY2640) and Nangeng9108 (NG9108) were investigated in this study. The development of amyloplast in YY2640 caryopsis was better than NG9108, showing faster degradation rate of pericarp amyloplast and better filling degree of endosperm amyloplast. Meanwhile, the starch granule of YY2640 presented as polyhedral shape with smooth surface and the granule size was slightly larger than NG9108. The starch of YY2640 exhibited the lower amylose content, ratio of amylose to amylopectin and the higher level of amylopectin short and long branch-chains compared with NG9108, but there was no significant difference in amylopectin branching degree between them. Two rice starches both showed the characteristics of A-type crystal, and the relative crystallinity and external ordered degree of YY2640 starch were higher than those of NG9108. Furthermore, YY2640 starch showed better pasting properties with lower pasting temperature, shorter pasting time, higher peak viscosity, trough viscosity, breakdown value and lower setback value because of lower apparent amylose content. Conclusions Overall, the development and filling of amyloplast in YY2640 caryopsis were better than those of NG9108, thus leading to better starch quality of YY2640.

Talipot starch, a non-conventional starch source with a high yield (76%) from the stem pith of talipot palm (Corypha umbraculifera L.) was subjected to three different thermal treatments (dry-heat, heat-moisture and autoclave treatments) prior to phosphorylation. Upon dual modification of starch with thermal treatments and phosphorylation, the phosphorous content and degree of crosslinking significantly increased (p ≤ 0.05) and was confirmed by the increased peak intensity of P=O and P–O–C stretching vibrations compared to phosphorylated talipot starch in the FT-IR spectrum. The highest degree of crosslinking (0.00418) was observed in the autoclave pretreated phosphorylated talipot starch sample. Thermal pretreatment remarkably changed the granule morphology by creating fissures and grooves. The amylose content and relative crystallinity of all phosphorylated talipot starches significantly decreased (p ≤ 0.05) due to crosslinking by the formation of phosphodiester bonds, reducing the swelling power of dual-modified starches. Among all modified starches, dry-heat pretreated phosphorylated starch gel showed an improved light transmittance value of 28.4%, indicating reduced retrogradation tendency. Pasting and rheological properties represented that the thermal pretreated phosphorylated starch formed stronger gels that improved thermal and shear resistance. Autoclave treatment before phosphorylation of talipot starch showed the highest resistant starch content of 48.08%.

LPDs are non-bank financial institutions that are regulated and approved by the Regional Regulations of the Province of Bali. The management of LPD is fully handed over to the relevant Pakraman village. In line with the rapid development of LPDs, it turns out that on the other hand it shows diverse performance, so that LPDs need to pay attention to the level of product quality and customer interest in the products offered.            The purpose of the study was to determine the comparison of product quality and interest in saving at the Tajun Traditional Village LPD with the Traditional Village of Tegal. The number of samples from Tajun Adat Village LPD was 98 people and the LPD of Tegal Traditional Village was 84 people. The research data were analyzed by the Mann-Whitney Test. The results showed that there was a significant difference between the quality of the products of the Adat Village of Tajun LPD and the Traditional Village of Tegal. This difference is indicated by indicators of physical evidence, reliability, responsiveness and empathy. The product quality of Tajun Adat Village's LPD is better than the traditional village of Tegal. There is a significant difference between the interest in saving the traditional village of Tajun LPD and the traditional village of Tegal. The difference is in the indicator of confidence. Interest in Saving Tajun Indigenous Village LPD is higher than the Traditional Village of Tegal.

Abstrak.  Beras (Oryza sativa L.) merupakan salah satu tanaman pangan yang berfungsi sebagai tanaman pokok selain gandum dan jagung di Indonesia, dikarenakan mengandung nutrisi yang dibutuhkan tubuh seperti karbohidrat, protein, air  dan lemak. Meningkatnya jumlah penduduk maka permintaan terhadap beras semakin meningkat. Permintaan tersebut sangat ditentukan oleh selera konsumen yang dipengaruhi oleh kualitas beras yaitu mutu fisik (ukuran dan bentuk butiran, rendemen dan pengapuran), mutu tanak (kadar amilosa dan suhu gelatinisasi) dan mutu rasa (tekstur dan aroma). Penelitian ini bertujuan untuk mengetahui kualitas beberapa galur padi mutan M4 hasil iradiasi sinar gamma. Penelitian ini dilaksanakan di Laboratorium Ilmu dan Teknologi Benih, Laboratorium Analisis Pangan dan Hasil Pertanian, Laboratorium Ilmu Nutrisi dan Teknologi Pakan dan Laboratorium Fisiologi Tumbuhan Fakultas Pertanian Universitas Syiah Kuala, serta Laboratorium Departemen Ilmu dan Teknologi Pangan Fakultas Teknologi Pertanian Institut Pertanian Bogor, yang berlangsung pada bulan April hingga Juli 2018. Rancangan yang digunakan dalam penelitian ini adalah Rancangan Acak Lengkap (RAL) pola non faktorial dengan 3 ulangan. Perlakuan penelitian ini berupa galur (G) dengan 5 taraf, yaitu i-Snb (G0) kontrol, O-39e (G1), O-57d (G2), O-57e (G3) dan O-88j (G4). Parameter yang diamati yaitu sifat fisik beras (densitas kamba, derajat sosoh, dimensi beras rendemen beras giling, dan warna). Hasil penelitian menunjukkan bahwa galur  mutan M4 berpengaruh sangat nyata terhadap kualitas sifat fisik rendemen beras giling dan warna nilai L (kecerahan). Rendemen beras giling terbaik galur O-39e (70,33%) dan warna nilai L (kecerahan) galur O-88j (117,90).  Perlakuan terbaik secara kumulatif  untuk sifat fisik beras yaitu pada i-Snb.. Physical Quality of Rice (Oryza sativa L. ) M4  Mutant Results of Gamma Ray IrradiationAbstract. Rice (Oryza sativa L.) is one of main food which the function is to be staple food beside wheat and corn in Indonesia because it contains nutrients such as carbohydrates, protein, water, and fat. Towards the increasing populations, the demand of rice is increasing as well. The demand is largerly depends on the consumer taste affected by the quality of rice which are physical quality (size and grain shape, rendemen, and calcification), cooked quality (amylose content and gelatinization temperature) and flavor quality (texture and smell). The purpose of this research was to investigate the quality of rice from several M4 mutant line resulting from gamma ray irradiation. This research was conducted at the Laboratory of Seed Science and Technology and Laboratory of Food and Agricultural Analysis, Faculty of Agriculture, Syiah Kuala University, Banda Aceh, from the month April to July 2018. The design used in this study was based on a non-factorial completely randomize design with 3 replications and continued with the Least Significant Difference Test (LSD) level of 5% on a significant F test results. The results showed that the M4 mutant line had a very significant effect on the quality of physical properties, the yield of milled rice and the best color L (brightness), namely on the O-88j and O-39e line.

The dry root tuber of Apios fortunei contained about 75% starch, indicating that it is an important starch resource. Starch displayed spherical, polygonal, and ellipsoidal granules with central hila. Granule sizes ranged from 3 to 30 μm with a 9.6 μm volume-weighted mean diameter. The starch had 35% apparent amylose content and exhibited CA-type crystalline structure with 25.9% relative crystallinity. The short-range ordered degree in the granule external region was approximately 0.65, and the lamellar thickness was approximately 9.6 nm. The swelling power and water solubility began to increase from 70 °C and reached 28.7 g/g and 10.8% at 95 °C. Starch had typical bimodal thermal curve in water with gelatinization temperatures from 61.8 to 83.9 °C. The 7% (w/w) starch-water slurry had peak, hot, breakdown, final, and setback viscosities of 1689, 1420, 269, 2103, and 683 mPa s, respectively. Rapidly digestible starch, slowly digestible starch, and resistant starch were 6.04%, 10.96%, and 83.00% in native starch; 83.16%, 15.23%, and 1.61% in gelatinized starch; and 78.13%, 17.88%, and 3.99% in retrograded starch, respectively. The above physicochemical properties of A. fortunei starch were compared with those of maize A-type starch, potato B-type starch, and pea C-type starch. The hierarchical cluster analysis based on starch structural and functional property parameters showed that A. fortunei and pea starches had similar physicochemical properties and were more related to maize starch than potato starch.

The quality of life (QoL) of people with Alzheimer disease (PwAD) may be influenced by the type of relationship between carer and the PwAD. Dyads of 98 PwAD/carers (N = 49 spouse-carers; N = 49 nonspouses carers) were measured about QoL, cognition, dementia severity, awareness of disease, functionality, depression, anxiety, and burden of care. Univariate and multivariate regression analyses were conducted to identify the factors that influenced the spouse and nonspouse self-report PwAD QoL (PQOL) and to compare carers’ ratings of PwAD QoL (C-PQOL). The total score of QoL for spouse and nonspouse PwAD showed no significant difference ( P = .29). The linear regression demonstrated that higher awareness of disease was significantly related to spouse PQOL ( P = .001). Nonspouse PQOL was negatively related to lower depression ( P = .007). The total score of QoL for spouse and nonspouse C-PQOL showed no significant difference ( P = .14). The linear regression demonstrated that depression of spouse-PwAD ( P < .001) and burden of care ( P = .001) were negatively related to spouse-dyads’ C-PQOL. The nonspouse-dyads C-PQOL was negatively related to depression of nonspouse-PwAD ( P < .001), awareness of disease ( P = .001), and the mood of the carer ( P = .01). Spouse and nonspouse PwAD evaluate PQOL better than carers (C-PQOL). No significant difference was found in the total PQOL and C-PQOL of spouse and nonspouse, but dyads evaluated differently about what is important to assess QoL.

Abstract Background: Spikelets at different spike positions and the caryopsis at different grain positions grow and develop differently. The caryopsis development and physicochemical properties of starch at different grain positions (the first, second, and third grain positions: G1, G2, and G3) of wheat spikelets were investigated in this study. Results: During the development process, the thickness of both dorsal and abdomen pericarp 8 days after anthesis (DAA) followed the sequence G2 < G1 < G3. However, at 14 DAA the thickness followed the dorsal sequence of G1 < G2 < G3 and the abdomen sequence of G2 < G1 < G3. At 20 and 30 DAA, no difference existed in the pericarp thickness of each grain. The accumulation quantities before 20 DAA varied with starch and protein of endosperm cell in the order G1 > G2 > G3. In mature caryopsis, the caryopsis size and weight indicate that G1 = G2 > G3. The starch content followed the order G1 > G2 > G3, while the essential amino acid, the total amino acid, and the protein content followed the order G2 > G1 > G3. The apparent amylose content followed the sequence G3 > G2 > G1, and A-type starch content followed G3 > G1 > G2. The amorphous ratio followed the order G2 > G1 > G3, whereas the double-helix ratio and the relative crystallinity exhibited the opposite trend. The order of the final degree of hydrolysis through AAG, PPA, and HCL was G2 > G1 > G3. Conclusions: The different material contents were possibly due to the short development time of caryopsis, and the difference in starch physicochemical properties between G2 and the other grain positions might be related to the components and structural characteristics of starch.

Quality is one of the key characteristics of rice and is largely governed by nitrogen application. An experiment was conducted to scrutinize the effect of nitrogen on quality characteristics of rice, with three nitrogen levels (viz. 50 kg N ha-1, 100 kg N ha-1 and 150 kg N ha-1) and four varieties/lines (viz. SAU ADL1, BRRI dhan70, BRRI hybrid dhan6 and SAU ADL11). Results revealed that quality characters of transplanted Aman rice were significantly influenced by nitrogen, variety and their interaction. Increasing trend was observed with the increasing level of nitrogen from 50 to 150 kg ha-1 regarding hulling percentage and milling outturn while decreasing trend was observed in case of apparent amylose content and imbibition ratio. Maximum protein content (9.60%) and gel consistency (96.16 mm) were recorded at 100 kg N ha-1. Among the studied materials, SAU ADL11 performed better in case of all studied parameters. Although interaction of 150 kg N ha-1 with SAU ADL1 and SAU ADL11 gave maximum value of hulling percentage and milling outturn. In interaction of 100 kg N ha-1 with these two lines gave maximum protein, gel consistency and satisfactory levels of all quality characters. So, it can be suggested to carry out further investigation with these two rice lines having 100 kg N ha-1. Bangladesh Agron. J. 2020, 23(1): 59-66

ABSTRACT Kale is a vegetable that has high nutrition content, and balanced fertilization is essential to ensure high yield and quality of agricultural products. Curly kale, less known than regular leaf kale, is a new possibility for consumption. However, little is known about the influence of the type of fertilization on nutritional characteristics. This study aims to evaluate the influence of using organic fertilizers on the productivity, microbiological, and physico-chemical characteristics of Darkibor hybrid curly kale. The treatments consisted of three sources of organic fertilizers, one of organomineral fertilizer, and the control (without fertilization). The highest productivity was observed for kale that was treated with fertilizer in the organomineral composition in all harvests. For microbiological analyses, there was no contamination in all treatments, following legislation. There was no significant difference between treatments for the physicochemical composition, highlighting the high levels of phenolic compounds and proteins in curly kale. There was no difference between treatments regarding the mineral content of the leaves. Organic and organomineral fertilizers made it possible to produce curly kale with adequate physicochemical composition, free from microbiological contamination and heavy metals.

Green banana fruit is an important starch resource that consists of flesh and peel. The physicochemical properties of flesh starch have been widely studied; however, those of peel starch have hardly been studied, leading to the waste of peel. In this study, the physicochemical properties of the starches from the flesh and peel of green banana fruit were investigated and compared. The dry flesh and peel had 69.5% and 22.6% starch content, respectively. The starch had oval and irregular granules with eccentric hila. Their starches had similar bimodal size distribution; the volume-weighted mean diameter was approximate 17 μm, and the peel starch had a slightly smaller granule size than the flesh starch. The maximum absorption wavelength was higher in peel starch than in flesh starch. The apparent amylose content of flesh and peel starch was 21.3% and 25.7%, respectively. The flesh and peel starches both exhibited B-type crystalline structures and had similar relative crystallinity, short-range ordered degrees, and lamellar structures. The swelling power was similar between flesh and peel starches, but the water solubility was higher in peel starch than in flesh starch at 95 °C. The peel starch had a higher gelatinization temperature than flesh starch, but their gelatinization temperature range and enthalpy were similar. Both flesh and peel starches showed a diphasic hydrolysis dynamic, but peel starch had higher resistance to porcine pancreatic α-amylase hydrolysis than flesh starch. The contents of rapidly digestible starch, slowly digestible starch, and the resistant starch of flesh and peel were 1.7%, 4.3%, 94.1% and 1.4%, 3.4%, 95.2%, respectively, for native starch, and 73.0%, 5.1%, 21.9%, and 72.3%, 4.5%, 23.2%, respectively, for gelatinized starch.

To examine the quality of rhythmic improvisations after learning Ugandan folksongs via notated or aural/oral means, we asked university music majors ( N = 32) to practice two Ugandan folksongs via Western notation or while viewing a prerecorded video of an expert Ugandan performer singing the same song to mimic aural/oral tradition conditions. Subsequently participants heard an authentic performance of the song they had just learned and were asked to create a rhythmic accompaniment to that song. All conditions were counterbalanced by treatment and by song. Resulting improvisations were judged regarding whether the first was better than the second. Results indicated no significant difference between improvisations on the basis of how the song was learned ( p = 0.2617), differences between the songs themselves ( p = 0.1261) or the order of the songs ( p = 0.7518). Participants improvised better when the song was learned under notation conditions (differences not significant), but 70.1% of participants preferred to learn the song via aural/oral means ( p = 0.0041). Results are discussed in terms of challenges in assessment of improvisations and pedagogical implications for future research.
