Currently, the world practice of the food technology uses an integrated approach of the deep vegetable raw processing, including the secondary resources in order to reduce the direct costs and production costs. In this research, the quantitative and qualitative composition of the marcs obtained while producing the “Vigrass” juice from the wheat germ of 10–12 cm long is investigated. It is revealed that the volume of the obtained marcs is up to 35%, their humidity of 70–74% in the conditions of the “Prorostki” Ltd company production is determined. It has been studied that 100 g of marc contains: protein – 5.56 g, lipids – 3.96 g, organic acids – 0.93 g. It is established that the wheat sprouts marcs include the amount of P – active substances 110 mg/100 g, flavonoids 200 mg/100 g, chlorophyll 12 mg/100 g, tannin 370 mg/100 g, vitamin C 129 mg/100 g. It is identified that 12.83% of dietary fibers marcs include 6.81% of lignin, 1.50% of cellulose, 4.23% of hemicellulose and 0.29% of pectin substances. The dynamics of the vitamin C and chlorophyll content in the wheat sprouts marcs depending on the drying temperature is educed. It has been established that during the marc drying at high temperatures, the amount of vitamin C and chlorophyll decreases by more than 60% of the total content, which is consistent with the data of other authors. The technological parameters of the marc drying for the production conditions have been determined. They make possible to preserve the biologically active substances almost fully: temperature 40 °С, time 8 hours. A complex technology has been developed to process wheat sprouts to produce the “Vitgrass” juice and powder from marc.

Hedysarum neglectum is a forage plant. Xanthone glycoside - mangiferin is extracted from this plant and used for medicine "Alpizarin". In addition to substances of xanthone nature (mangiferin and isomangiferin) Hedysarum neglectum contains sugars, vitamins and provitamins, tannins; in the underground part it contains oligomeric catechins, isoflavonoids, butylphenols, alkaloids, tannins, flavonoids, saponins, coumarins, carbohydrates, vitamin C. For selecting optimal schemes of fractionization of substances, it is necessary to resort to multi-stage schemes of group-wide (preliminary) isolation and preparative accumulation. In particular cases, it is necessary to take into account the presence of concomitant substances, as well as the effectiveness and selectivity of the sorption-chromatographic technologies used. According to the results of the studies, the use of silica gel and sefadex LH-20 for the isolation of a complex of flavonoids and gallic acid is the most effective method for the selection of the optimal variant of the preparative isolation of the total amount of BAS in mcg/ml. The results of the research allowed us to identify the target biologically active substances with a degree of extraction of at least 80%: - fractions of xanthones, flavonoids, gallic acid.

A large number of biologically active substances, organic acids, tannins, and pectin substances were detected during the study of fruits, leaves, and pulp of the fruits of mountain Ash. The content of these substances in leaves and pulp will significantly expand the arsenal of medicinal plant raw materials used. Given the wide distribution of mountain Ash in the territory of the Russian Federation, harvesting leaves from the same plants after harvesting the fruit and using pulp will make it possible to obtain new phytopreparations.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

Sufficient consumption of natural biologically active substances (BAS) – vitamins, dietary fiber, mineral compounds – reduces the risk of developing diseases associated with negative external factors. A large number of BAS are contained in the cherry plum fruits. Cherry plum is characterized by storage short term, during which quality changes are possible. Studies have been conducted on the low temperatures effect the change of BAS in cherry plum fruits. Studied objects were five cherry plum varieties grown in the Russian southern regions – Dinnaya, Zhemchuzhina, Obilnaya, Puteshestvennitsa, Neberdzhayskaya ranyaya. It was found that during storage, the physical and chemical parameters change slightly, the dry substances content decreases (within 1.3-3.2 %), sugars (5.5-7.0 %), the total acids content increases (2.8 3.3 %). The BAS content slight decrease during storage does not significantly affect the nutritional value of cherry plum fruits. The ascorbic acid reduction is 9.8-17.3 %, the anthocyanins content decreases on average from 16.9 to 19.7 %, the beta-carotene content decreases by 8.7-14.8 %, the reduction level of pectin substances is 15.75-22.2 %. Thus, the freezing method application allows to preserve valuable BAS in cherry plum fruits and use them in the future as a basis for the production of functional food products.

Interest in the consumption of berries is largely due to the content of biologically active substances in them and their importance as dietary antioxidants. Polyphenolic compounds found in blackcurrant berries are known as agents that act prophylactically and therapeutically on the human body. The following were determined: total content of phenolic substances, flavonoids, anti-radical activity according to the DPPH method, restoring power according to the FRAP method, anthocyanins, organoleptic characteristics, dietary fiber content, vitamin C content for feedstock, semi-finished products (blackcurrant berries, blackcurrant puree, two types freeze-dried snacks from blackcurrant berries). According to the results of the study, it was found that the freeze-dried berry (snacks of two types of freeze-drying) showed good results: 42.05 mmol Fe2 +/1 kg (snacks with a structure-forming agent, 5% pectin), 38.6 mmol Fe2 +/1 kg ( snacks) restoring power according to the FRAP method, 47.1 Ec 50 mg/ml (snacks), 79.4 Ec 50 mg/ml (snacks with a builder, pectin 5%) anti-radical activity according to the DPPH method, 766 mg HA/100 g ( snacks), 835 mg HA/100 g (snacks with a builder, pectin 5%) total phenolic content, 374 mg K/100 g (snacks), 392 mg K/100 g (snacks with by a touring agent, 5% pectin) total flavonoid content, 166.07 mg CG/100 g (snacks), 174.21 mg CG/100 g (snacks with a structuring agent, 5% pectin) anthocyanins content, 50.1% (snacks), 66.9% (snacks with a builder, pectin 5%) vitamin C content, 76.8% (snacks), 90% (snacks with a builder, pectin 5%) dietary fiber, 1.92% (snacks), 2.13 % (snacks with a builder, pectin 5%) – titratable acidity. Thus, we can conclude that vacuum drying provides samples with good physicochemical properties and is better than a dried sample.

Introduction. Plant raw materials can be a source of biologically active substances and increase the nutritional value of food products. The present research objective was to determine the content of biologically active substances in powdered viburnum and barberry. Study objects and methods. The study featured viburnum (Viburnum opulus L.) and barberry (Berberis vulgaris L.), dried by convection and crushed into particles of 50 microns. Results and discussion. The total content of phenolic compounds in powdered viburnum was 3114.07 mg/100 g, in powdered barberry – 2272.7 mg/100 g. The content of flavonoids in powdered viburnum was 324.52 mg/100 g, in powdered barberry – 390.00 mg/100 g. The flavonoid profile of the powders included rutin, hyperoside, quercitrin, isoquercintrin, and astralagin. The total content of catechins was 446 mg/100 g for viburnum and 506 mg/100 g for barberry. The catechins included mainly epigallocatechin and catechin. In powdered viburnum, the catechin composition was as follows: epicatechin – 196, catechin – 118, and epigallocatechin – 89 mg/100 g; in powdered barberry: epigallocatechin – 173, catechin – 111, and epicatechin – 74 mg/100 g. The antiradical activity in relation to trolox equivalent was 7560 mg/100 g in powdered viburnum and 9460 mg/100 g in powdered barberry. Conclusion. The obtained viburnum and barberry powders can fortify food with biologically active substances and expand the range of functional products.

The aim of this work was to investigate and compare the amounts of biologically active compounds, dry matter and soluble solids in pulp and peels of four pear cultivars (‘Ksena’, ‘Beloruskaja pozdniaja’, ‘Alna’ and ‘Aleksandr Lucas’). The research was carried out at Vytautas Magnus University Agriculture Academy (Lithuania) in 2020. Four pear cultivars (‘Ksena’, ‘Beloruskaja pozdniaja’, ‘Alna’ and ‘Aleksandr Lucas’) were cultivated at a farm in the Joniškis District of Lithuania. Pears were grown following traditional pear production technology. The amounts of dry matter, soluble solids, vitamin C and fiber were determined using the standard method. The total content of phenolic compounds was determined using a Folin-Ciocalteu reagent with a UV/VIS spectrophotometer. The research results showed that significantly the highest amounts of soluble solids were found in the ‘Alna’ pear fruit pulp (14.25% f. w.). The ‘Alna’ peel sample had significantly the highest amount of total phenolic compounds (1290.99 mg 100 g–1 d. w.). The highest content of dry matter was found in the ‘Aleksandr Lucas’ pear fruit peel (24.67%). The ‘Aleksandr Lucas’ and ‘Beloruskaja pozdniaja’ pear fruit peel contained significantly the highest amounts of vitamin C (2.70 and 2.63 mg 100 g–1 f. w., respectively). The highest content of fiber was found in the ‘Ksena’ fruit peel (36.12% d. w.). The investigated pear peel sample had significantly higher amounts of dry matter, vitamin C, total phenolic compounds and fiber than the pulp. However, the pulp contains the highest contents of soluble solids.

The VNIISPK black and red currant collection was studied for the content of biological active substances in berries, including ascorbic acid (vitamin C) and phenol compounds (vitamin P). The results of the study for the period of 1990-2015 are given. 256 black currant varieties, elite and selective seedlings and 103 red currant varieties, elite and selected seedlings were studied. Genotypes with a high level of characters on study were allocated for use in target crossings for fruit chemical composition improvement. The varieties , elite and selected seedlings of VNIISPK breeding were picked out as recommended sources of those characters, including black currants Desertnaya Ogoltzovoy, Muravushka, Nadina, Orlovskaya Serenada and red currants Marmeladnitza, Niva, Podarok Pobediteliam and Ustina having high contents of ascorbic acid in berries; black currants Arapka, Yershistaya, Zusha, Nadina, Nura, Ekzotica and red currant Osipovskaya having a high level of anthocyanins; black currants Yershistaya, Zusha, Nadina, Orlovia and Yubiley Orla with a high content of catechols; black currants Gamma, Gratzia, Lentiay, Orlovsky Vals and red currants Asya, Podarok Pobediteliam and Selianochka with a high level of leucoanthocyanins; black currants Yershistaya, Yubiley Orla and red currants Asya, Podarok Pobediteliam and Selianochka with a high sum of P-active substances in berries.

Lithospermum erythrorhizon is a promising plant, its roots synthesize biologically active substances (BAS): naphthoquinone shikonin and its esters, which have antimicrobial, wound healing, anti-inflammatory, antioxidant, antineoplastic and other types of pharmacological action. The industrial harvesting of Lithospermum erythrorhizon is difficult due to its limited area, but there is a possibility to grow its cell culture using the biotechnological method, which opens up great prospects for the further isolation of these BAS. Previously, we proposed a composition and a technological scheme for the manufacture of polymeric films containing shikonin and its esters, isolated from a culture of Lithospermum erythrorhizon cells. This study is devoted to the development of approaches to the qualitative analysis of polymeric films. Three directions of qualitative analysis are considered: evaluation of external signs, determination of technological parameters of films, confirmation of the presence of naphthoquinones. The criteria of quality and methods of analysis in each direction have been determined. The presence of shikonin and its derivatives in the polymeric films was confirmed by color reactions, thin layer chromatography and spectrophotometry.

From the Southern Coast collection of Prunus cerasifera Ehrh. the fruits cultivars of the Nikitsky Gardens’ breeding Medovaya, Olenka, Rumyanaya Zorka and Idilliya were distinguished by their high taste qualities and the content of BAS. According to the norms of the Russian Federation, the fruits of these cultivars belong to the group of products with a high content of potassium and cuprum; satisfactory content of magnesium and ferrum, pastilles and jams from them belong to the group of products with a satisfactory content of potassium and cuprum. Cherry plum fruits, especially dark-colored ones, are a natural complex source of antioxidants, characterized by a high content of phenolic compounds and cuprum, and a satisfactory content of ascorbic acid and zinc. The content of pectin substances in the studied cultivars is comparable to that in apples. The fruits of the Idyllia cultivar with dark-colored pulp are distinguished by the maximum accumulation of pectins - 1.14%, ascorbic acid - 9.3, phenolic compounds – 441 mg/100 g, potassium – 11239, magnesium - 464, ferrum -10.81, zinc - 10.23, cuprum - 4.17, manganese - 0.228 mg/kg. Cherry plum fruits are characterized by a high content of BAS and are suitable for use in health nutrition both in fresh form and as raw materials for Food for Specific Health Use.
