New varieties of leguminous plants expand the range and improve the quality of healthy food products. The new legumes meet the requirements of modern food production. In addition, they demonstrate low inhibitory properties and possess a high phytochemical potential. Domestic non-GM peas and beans have a high nutritional and biological value; they are cheap, highly profitable, and can be produced in large volumes. Thus, they have a high potential for expanding the raw material base of the food industry. The Republic of Bashkortostan is the leader in pea production: the State Register of Breeding Achievements contains over 10 varieties cultivated by Bashkir scientists. Researchers of the Omsk State Agrarian University have created high-yielding varieties of beans with improved consumer qualities that are adapted to Siberian environment. However, the qualitative indicators of the new varieties remain understudied. The present research expands the raw material base for the production of healthy and functional foods with the new legumes adapted to the conditions of West Siberia and the Urals. The study features the characteristics of legumes of Siberian and Ural ecotype, which helps to expand the information database on the phytochemical potential of the new varieties. The beans were provided by the Omsk State Agrarian University, the peas – by the Bashkir Research Institute of Agriculture (harvest of 2018). The main objectives of the study were to determine the indicators that form the nutritional and biological value of the raw materials: protein content, dietary fiber, the presence and quantity of macro and microelements, enzymes, and trypsin inhibitor, also during germination.

Curent situation of raw material base and study of limestone like construction stone deposits in the Republic of Serbian were relatively poorly considered during the last decades, and the main problems are the following: low production capacity fragmentation of production, needs for raw materials homogenization and delivering of standard quality, undeveloped market, the recession of the domestic economy and the economies in the region, the relatively low level of exploration by many deposits, especially lack of knowledge of the occurrence legality for certain types and quality of raw materials and lack of complete quality indicators for raw material, which sometimes causes the utilization of only the highest quality deposit parts.This paper provides an overview of active quarries in the Republic Srpska with exploitation of limestone like technical building stone and present an attempt to determine the basic quantitative and qualitative characteristics of the raw material and the current working conditions at these quarries. The purpose of such a review would be in an effort to create a clearer picture about production, market, social and other aspects of the limestone exploitation in the Republika Srpska and the realistic possibilities of maintaining and developing of these mineral resources utilization, which can certainlybe interesting for the development of many other industries in the Republic Srpska.

A large number of forms and varieties of garlic created in the selection process allowed this culture to spread almost all over the world: in temperate regions, in subtropics and even in tropical regions. Currently, the world's acreage of garlic is 1.438 million hectares, the average yield is 16.9 tons per hectare, the gross yield is 24.255 million tons. The largest producers of garlic are China, India, South Korea and Egypt. The highest yield was recorded in Uzbekistan, Egypt, China, Tadjikistan. In Uzbekistan, it is grown everywhere, mainly on household plots and small areas in farms. In the republic, varieties of garlic are South-violet (1972) and May VIR (1978). Since 2004, the Surkhandarya Scientific Experimental Station of the VegetableMelon Crops and Potato Research Institute has been conducting selection work to create new varieties of garlic. As a result of the research, the Chidamli variety was introduced and, since 2016, introduced into the State Register. All zoned varieties belong to the group of autumn-sprouting varieties. In 2011- 2015, about 100 promising clones of garlic were evaluated in the south of Uzbekistan. The effectiveness of selection for the size of bulbs and teeth is revealed. Clones with a mass of bulbs and teeth are isolated. Clones with a bulb weight of more than 80 g and a tooth mass of more than 6 g are distinguished. They are a valuable source for the creation of high-yielding varieties of garlic in Uzbekistan.

Currently, technologies that allow to preserve the native properties of raw materials in the finished product as much as possible thanks to the soft modes of technological processes deserve special attention. An important condition for obtaining healthy food products is the availability of a raw material base and technical means of extracting aquatic biological resources. The article shows that in China, a healthy lifestyle and the consumption of healthy food products are gaining popularity. China is a country that demonstrates absolute dominance in the production of shellfish, both aquaculture and in squid fishing. Despite this, there is a shortage of healthy food products in the domestic food market in China due to the uneven distribution of aquatic bioresources. The main type of processed shellfish are squids, which are traditionally very popular in China. In addition to frozen processed squid and other primary processed products, the main products from squid are minced squid, sliced squid and chopped squid, as well as various types of canned food. The article shows the high nutritional and biological value of squid, which is provided by high-grade proteins and essential polyunsaturated fatty acids. But when processing squids, a number of problems arise associated with the deterioration of organoleptic properties and a decrease in the biological value of the finished product. This article is a review and reveals a number of issues related to the features of the fractional composition of muscle tissue proteins of various raw materials. Also analyzed the changes in the physico-chemical parameters of proteins in a wide range of temperature effects. The article presents a promising type of technological processing, which allows to eliminate certain disadvantages of traditional technologies such as hard, dry consistency, weight loss of the finished product, as well as the loss of valuable extractive substances that provide organoleptic properties of food products. Such technologies with minimal impact on the technological properties of the finished product include SousVide technology. SousVide is a technology of low-temperature preparation of food products in a vacuum, which allows reliable monitoring of sensory performance and microbiological safety of products with strict observance of technological regulations.

Ocimum basilicum L. (common basil) is one of the promising spicy - aromatic and medicinal plants. It is used both in traditional and traditional medicine as an expectorant, anti-inflammatory agent, gastritis, colitis, nephritis, etc. Numerous scientific studies have established that O. basilicum L. essential oil in experimental practice has good antioxidant, antimicrobial, and cytostatic activity. The modern spice market requires a growing variety of forms and varieties of basil for consumption as seasoning and green vegetables. An important place is occupied by raw materials (leaf and herb of basil), in recipes of medicinal and forest teas. Essential oil is used both in the food and in the perfumery – cosmetic industry and pharmaceuticals. Perspectivity in the spice market and its multiple medicinal properties were the reason for the continuation of work on the improvement and creation of new promising varieties of basil, of various uses. A working collection was created, consisting of 34 varieties, forms and nursery of crosses and breeding selections, numbering from 40 to 100 units, on average by year. Five varieties of basil of diverse directions were created and registered in the State Register, both for consumption as seasoning in fresh and dry form, for flavoring edible salt, vinegar and oil, and also as a medicinal raw material for teas. Brief results obtained over 17 years а presented in this paper.

For centuries, ceramic brick is the main building material in the construction of low-rise residential buildings and utility rooms. In addition, durability, high artistic features and the absence of toxicity characterize building ceramics. The volumes of construction in the Republic of Sakha (Yakutia) and the demand for bricks are increasing every year. Ceramic brick imported from outside the republic is used in the construction of facilities in Yakutsk. The Republic of Sakha possesses a good raw material base of clay and loam for the production of ceramic products. The study of basic properties of clay raw materials for obtaining a quality product is of particular importance. The results of studies on the use of raw materials from the Sannikovskoye clay deposit located in the Republic of Sakha (Yakutia) for the further production of ceramic bricks are presented. The chemical and mineralogical compositions of the clay raw materials are determined. Compositions of ceramic masses with the addition of waste cullet in different percentages are designed to reduce the amount of solid waste. The cullet used is tare and transparent. The technological and basic physicomechanical properties of the obtained samples are investigated.

The article discusses the current state-of-the-art in the tin industry and the prospects of the Republic of Kazakhstan. The evaluation is performed in terms of the development of domestic tin production for the growing global demand and the development of the domestic high-tech industry. The study includes the main domestic sources of the raw material base of the tin, which includes mineral raw materials, anthropogenic and secondary waste. Since the most important for the contemporary tin industry are mineral raw materials, the possibility of complex processing of ore from the Syrymbet deposit was studied. Based on the results of the studies performed, it was found that the mineral tin-containing raw materials of the Syrymbet deposit, in addition to cassiterite, also contain acid-soluble tin-containing minerals (stannin, etc.). At the stage of gravity concentration, the most efficient extraction performance of tin into concentrate was found for the gravity separator – amounting to 34.2%. At the leaching stage, the most efficient extraction of tin (1,543 μg/L) showed an aqueous solution of sulfuric acid with a concentration of 100 g/L, at a temperature of 45 °C.

To use effectively internal raw material base, JSC “Ural Steel” accomplished I category major overhaul of the blast furnace No. 2. The main purpose of the overhaul was to design a rational profile which could ensure an ability to operate with a charge containing 95 % of Mikhailovskii GOK (mining and concentrating plant) pellets having basicity of 0.5 by CaO/SiO2. The blast furnace No. 2 having useful volume of 1232 m3, was constructed by design of Danieli Corus, the Netherlands, and was blown in on December 30, 2020. In the process of guarantee tests, step-by-step increase of Mikhailovskii GOK pellets (Fetotal = 60.5 %, CaO/SiO2 = 0.5) content in the charge iron ore part was being accomplished from 55 to 95.1%. Charging of the blend containing pellets in the amount of 55% of iron ore part, was done by charging system 4OOCC + 1COOCC (Ore - Coke) with filling level 1.5 m. Under conditions of pellets part increase in the blend, the charging system was changed to decrease their content at the periphery, to increase it in the ore ridge zone and make it intermediate between periphery and the ore ridge. At the pellets share in the iron ore raw materials 0.75 the charging system was used as the following: 3OOCC + 1COOC + 1COOCC, while at the content 95.1% the following charging system was used: 2COOC + 2COOC + 1COOCC. It was noted that in the period of guarantee tests the furnace running was smooth. The average silicon content in the hot metal was 0.70% at the standard deviation 0.666. Sulfur content in the hot metal did not exceed 0.024%, the blowing and natural gas consumption figures were 2100 m3/min and 11000 m3/min correspondently, oxygen content in the blowing 26.5%, hot blowing and top smoke pressure figures were 226.5 and 109.8 KPa correspondently. The productivity of the furnace was reached as high as 2358 t/day at the specific coke rate 433 kg/t of hot metal. After guarantee tests completion, the pellets content in the iron ore part was decreased gradually from 95 down to 50%. The decreasing was made by 5% in every 6 hours of operation. Application of the mastered technology of the blast furnace No. 2 with the increased share of pellets will enable to stably supply the blast furnaces No. 1, 3 and 4 by iron ore raw materials in the proportion of 30-35% of pellets and 65-70% of sinter.

Increasing water resistance and mechanical strength of hardening magnesian binders’ products can be achieved by introducing microfillings into a hardening dispersed system. It is shown that serpentine provides an increase strength and water resistance in hydration and hardening process, being as a structure-forming component, it intensifies this process. It allows expanding the raw material base for the production of magnesia binders for construction purposes.

An actual problem of the alcohol industry development is the expansion of the raw material base through the use of new, cheaper types of carbohydrate sources. Recently, glucose-fructose syrup has been of increasing interest to producers of ethanol. Among the producers of craft drinks, in particular rum-based drinks, cane molasses is in increasing demand. The article presents the technological aspects of the fermentation process of nonconventional sugar-containing raw materials on the example of glucose-fructose syrup and cane molasses in ethanol by different yeast strains. It is determined that glucose-fructose syrup and cane molasses are raw materials depleted of nitrogen, phosphorus and growth substances necessary for the yeast activity. To improve the technological properties of raw materials in the molasses, nitrogen, phosphorus nutrition and corn extract as a growth substance shall be added to a mash. Glucose-fructose syrup is of pH 3.68 and of acidity 0.12, which negatively affects the fermentation. It is established that in order to create optimal living conditions for yeast, it is necessary to add substances to the glucose-fructose syrup that will contribute to the safety of development and prevent the pH 3.5. It was determined that the alcohol yield from 1 ton of glucose-fructose syrup is 31.0 dal, from 1 ton of cane molasses is 24.0 dal on the yeast 46ED and 22 dal on the TegaYeast without the use of growth substances and vitamins necessary for the reproduction of yeast biomass. Under conditions of improving the technological properties of the mash from the glucose-fructose syrup and cane molasses by adding biologically active substances promoting the synthesis of yeast biomass, the ethanol content in the fermented mashes increases up to 11.9 12% vol.

BACKGROUND: A possible reduction in stocks of medicinal plant raw materials of Thymus serpyllum L. and Thymus vulgaris L. leads to the need to expand the raw material base of the official medicinal plants with using of endemic species of the flora of Kazakhstan, in particular, Thymus rasitatus Klokov, and Thymus eremita Klokov. AIM: The aim of the study was to study the possibility of using 70% ethanol extracts of T. rasitatus and T. eremita as antimicrobial agents. MATERIALS AND METHODS: The aerial parts of T. rasitatus and T. eremita were extracted with 70% ethanol using ultrasound assisted extraction. The qualitative and quantitative analyses of the 70% ethanol extracts were determined using the liquid chromatography-detection-ESI-mass spectrometry-(MS)/MS technique. The study of the antimicrobial activity of these extracts was performed for eight strains of Gram-positive bacteria, six strains of Gram-negative bacteria, and four cultures of fungi. RESULTS: Chromatographic analysis of hydroalcoholic extracts of both investigated Thymus species showed very similar phenolic compounds composition. In both cases, the major components are luteolin-7-O-glucoside and rosmarinic acid. About 70% ethanol extracts of T. rasitatus and T. eremita have a broad spectrum of antimicrobial activity, exhibit the bactericidal or bacteriostatic activity against all tested bacteria and fungi at concentration range of 0.0195–20 mg/ml, but differ in their potency against tested strains of microorganisms. CONCLUSION: About 70% ethanol extracts of T. rasitatus and T. eremita, endemic plants in the flora of Kazakhstan, can be considered as potential drugs with a wide spectrum of antimicrobial activity. The results of chromatographic analysis could be used for drug standardization.
