In the modern society, terminology is considered as a significant factor that affects the communication process of scientists and specialists in the production and circulation of goods and services. The meanings of terms express scientific concepts that require an accurate definition in accordance with the level of development of a particular branch of knowledge. In the conditions of rapid industrial development, there is an interpenetration of terms and definitions. The development of catering industry resulted in its closer relationship with economy, market, and other food producing industries. The article provides definitions for the term ‘physical distribution of goods’ coined by various authors used to describe processes in the economy and trade. The existing terms mostly express the economic relations arising from the participants in the process when goods move from the producer to the consumer. These definitions consider only the economic component without taking into account the factors that affect the quality and safety of products and services, which is important for the food industry. The authors introduce a definition for the term ‘physical distribution of goods at a atering enterprise’. It takes into account the specifics and features of this process at catering establishments. The paper contains a simplified scheme of product distribution in the enterprise. The process includes five stages of the successive passage of raw materials and goods: delivery of raw materials and goods from the supplier to the enterprise – storage – relocation – production – sales. The authors identified and described features of physical distribution of goods in the conditions of food industry enterprises at all stages and recommended local regulatory documents that can help ensure the quality and safety of catering products.

The objective meaning of the sustainable development process in relation to the neo-industrialization of the economy is to create conditions for the restoration of the ecological identity of the national economy as a multi-industry production complex. We consider the neo-industrial development of the economy as the re-establishment of a competitive manufacturing complex in it, capable of saturating the domestic market avoiding increasing the burden on the environment with the innovative development of raw materials production, creating the material basis of national competitiveness in the environmental plan. From sustainable development point of view, neo-industrialization means conducting a comprehensive structural policy, the object of which should be national reproduction, and the subject is deep transformations of the processes that form the complex of human impact on nature, its institutional and technological structure, increasing the reproductive role of the green economy based on the potential of the internal market. At the same time, the history of greening industry, which dates back to the 1990s, testifies to the positive experience of replacing global production chains of raw materials, in particular, energy carriers, with the benefits of a fundamentally new type – alternative energy sources, biomaterials. Therefore, the development of technologically advanced manufacturing industry based on technologies of the green economy is possible as a result of the formation of production of goods and services that are maximally focused on meeting the environmental needs of society.

The importance of the natural resource and environmental factors in the development of the modern economy is becoming more important in the context of energy security and the quality of economic growth. This is also due to the fact that the state’s policy in increasing GDP has been adjusted to a qualitative social-and-economic development. In this regard, the quantitative measurement of the quantity and quality ratio of economic growth is relevant. The rise of the global economy as a whole and its individual territories is due to both a high-tech breakthrough and the development of raw materials industries – oil, gas, coal and metallurgy. Currently, to meet the needs of society in natural resources, environmental goods and services, ever-increasing costs are required for expanded reproduction of the mineral resource base and compensation for negative consequences resulting from the degradation of ecological systems and pollution of the natural environment.

The monograph presents a methodological approach to the formation of food products for the population living in ecologically unfavorable areas. The level of ecological condition of Sverdlovsk region is analyzed, the level of morbidity of the population taking into account influence of technogenic factors is studied. The reduction of the influence of technogenic factors on the level of morbidity of the population and the choice of local medicinal technical raw materials growing in ecologically favorable areas are theoretically justified. The article presents the development of quality assessment and modeling of new tea products, studied consumer properties, the results of the study of antioxidant activity and the dynamics of quality and safety during storage. The monograph is of practical interest for specialists engaged in the field of food industry, commodity science and public catering.

Наведено результати аналізу звітної документації щодо якості та безпечності яловичини, свинини, баранини, м’яса птиці, кролів і нутрій на території Полтавської області. Встановлено, що за період 2012–2016 рр. державними лабораторіями здійснено 583235 експертиз м’яса туш із використанням органолептичних, бактеріоскопічних, біохімічних і паразитологічних методів досліджень. Водночас, за наслідками експертизи виявлено, що 1734 зразків м’яса не відповідають показникам, які затверджені у відповідних державних стандартах. Основними причинами вибраковки м’яса тварин різних видів були невідповідність за органолептичними та біохімічними показниками. Ensuring stable high quality food is a priority for all food industry sectors. The quality of meat products depends not only on the level of development of technology and technology, but above all on the properties and condition of raw materials, which amounts to 70–80 % of the cost of finished products. Increasing production of products, as well as the intensive development of various branches of the food industry, require further strengthening and improving the quality control of food raw materials and finished products. The aim of the work was to analyze the reporting documentation of the state laboratories of veterinary medicine in Poltava region for 2012–2016 on the quality and safety of meat from animals that come to market. The task of the research was to determine the number of carcasses carried out from different species of animals, to determine the percentage of culling of the product, to identify the reasons for which the vaginal discharge was carried out. The studies on the assessment of the quality and safety of milk were carried out on the basis of the analysis of the reporting documentation of the state laboratories of veterinary medicine in Poltava region for the period from 2012 to 2016. Determine the number of expert examinations for each year and for five years. Established the number and percentage of non-carcasses of different types of animals (cattle, pigs, sheep, poultry, rabbits, nuts), and the main indicators for which carcass meat did not conform to regulatory standards. It was established that during 2012–2016 on the territory of Poltava region 583235 expert examinations of carcasses of different kinds of animals were conducted, 1734 of which proved to be inappropriate in relation to current standards of quality and safety of the product, which led to its prevention in the implementation. During the study period, 3.723 tons of beef, 35.522 tons of pork, 0.064 tons of mutton, 1.613 tons of poultry meat and 0.374 tons of rabbit meat and nutria were not admitted. The main reasons that led to the prevention of the carcasses of different species of animals in the implementation and subsequent reburial in the territory of Poltava region was the discrepancy in organoleptic and biochemical indicators.

<p><span>Although often overlooked, infrastructure has a significant role in modern society. It is necessary means of transportation for goods and services needed to support commerce. It is this need and the need for continued economic development that causes the continuous infrastructure construction and its’ associated greenhouse gas emissions. Infrastructure construction requires energy to process raw materials, transport, mix and final construction. Greenhouse gas emissions from pavement sections have previously been identified for pavement preservation techniques. This research further evaluates greenhouse gas emissions for typical pavement sections from Indiana and Oklahoma to determine the carbon footprint based on linear foot of pavement. The comparison of CO2e of two typical roadway sections finds the difference in carbon footprint since variation in their minimum roadway. The carbon footprint of typical utility pipe with HDPE produces minimum CO2e and steel produces maximum CO2e. Soil base remediation options produce minimum CO2e and stabilized aggregate base produces maximum CO2e. Carbon offsets are determined by choosing vegetative options, soil remediation methods and appropriate pavement. This study is limited to a few pavement sections with a small variety of typical anticipated carbon offsets that would be seen in roadway construction. The index presented allows users to simply quantify benefits of the carbon offsets.</span></p>

At the present development stage of fish culinary production special significance has range expanding and technology improving for the following purposes: the available fish resources use; the organoleptic characteristics improvement and the nutritional value and competitiveness increase of products manufactured at the enterprises of the food industry. This study concerns the technology and the consumer properties formation improvement of cold appetizers from silver carp in the form of a roll. Unlike traditional the developed products consist of fillet of a bighead silver carp on a skin and an original stuff from egg, vegetables and mushrooms. The researchers conducted study using conventional and special methods. They recommended to introduce gelatin in a dry powdered at the stage of roll forming form in a recipe of the developed fish rolls. A man tested fish gelatin as anew consistency regulator of the developed products. The traditional and fish gelatin use allows to increase the yield of fish cold appetizers in the form of a roll by 8.0 %. When adding gelatin, there was an improvement in consistency and sensory perception of the product as a whole. The analysis results of biological value showed that the developed dishes, being an important additional source of protein and essential amino acids such as threonine, lysine, valine, may well improve the ration balance. The fatty acids ratio in fish rolls prepared according to new recipes is close to the ideal fat in the ratio of saturated, monounsaturated and polyunsaturated fatty acids (35:45:20) and is determined mainly by the composition of fatty acids in silver carp fat. The developed production will allow to expand the range of the food industry enterprises by cold fish appetizers of high quality and food value from available fish raw materials.

The book under review is a concise but fairly in-depth study of the prospects for export diversification from the Less Developed Countries (henceforth labeled as LDCs) particularly to Developed Countries (henceforth labeled as OCs). Given the multiple problems faced by the LOCs in exporting to the OCs - protectionist policies with regards to manufactured exports, volatility of prices obtained for raw material exports, etc. - the study analyses the potential for following an intermediate route. The important issues in the export of semi -processed and wholly processed raw materials are discussed. 111ese issues range from the problems and potentials for the location of processing facilities in the LOCs to the formulation of appropriate policies to encourage an export of processed goods rather than raw materials. Such policies will be useful both in solving the balance of-payments problems of the LDCs and in attaining the goal of the Lima Declaration and Plan of Action on Industrial Development and Co-operation, that called for 2S percent of world industrial production to be located in the LOCs by the year 2000.

Plants from the Rosacea family are rich in natural molecules with beneficial biological properties, and they are widely appreciated and used in the food industry, perfumery, and cosmetics. In this review, we are considering Rosa damascena Mill., Rosa alba L., Rosa centifolia L., and Rosa gallica L. as raw materials important for producing commercial products, analyzing and comparing the main biological activities of their essential oils, hydrolates, and extracts. A literature search was performed to find materials describing (i) botanical characteristics; (ii) the phytochemical profile; and (iii) biological properties of the essential oil sand extracts of these so called “old roses” that are cultivated in Bulgaria, Turkey, India, and the Middle East. The information used is from databases PubMed, Science Direct, and Google Scholar. Roses have beneficial healing properties due to their richness of beneficial components, the secondary metabolites as flavonoids (e.g., flavones, flavonols, anthocyanins), fragrant components (essential oils, e.g., monoterpenes, sesquiterpenes), and hydrolysable and condensed tannins. Rose essential oils and extracts with their therapeutic properties—as respiratory antiseptics, anti-inflammatories, mucolytics, expectorants, decongestants, and antioxidants—are able to act as symptomatic prophylactics and drugs, and in this way alleviate dramatic sufferings during severe diseases.

Grinding or crushing hard raw materials is usually a primary operation which precedes the follow-up technological processes in a number of industrial sectors. A great variety of machines using different principles of fragmentation are employed in the technology of pulverization. The food industry uses roller mills, in which the main process is the shear grinding. In the animal feed industry impact machines known as hammer mills are often used. In recent years, mills have been employed that use their frontal edges for grinding or crushing during the rotation of one of two adjacent discs. The modern design disc machines used for grinding grain have resulted from long development and their operation has a relatively low noise level with reduced dust. The separation process that occurs in the gap between the active edges of the discs can be described as shear grinding and is currently the subject of attention which is focused on the specific energy consumption and fractional composition of the product of grinding. &nbsp;

The quality of raw materials and goods of animal origin depends first of all on the safety of feed, their balance in terms of the main nutrients and digestibility by the body. As a rule, the lower the quality and safety of feed, the lower the productivity of all types of animals and poultry. The quality of feed is influenced by all stages of their production: growing conditions, harvesting and storage, processing technologies, canning and preparation for feeding. Where high-quality feed is used in diets, maximum productivity and high realization of the genetic potential of animals are obtained. During the storage and processing of plant and animal raw materials its physic and mechanical, biochemical, sanitary and microbiological properties change. This can be avoided only by observing the sanitary and hygienic requirements for bagging, harvesting, and storing feed. The quality of feed is confirmed by its physical, chemical, organoleptic, microbiological and other indicators, which determines the variety of feed control methods at all stages of their turnover. In this connection, the development and strengthening of control over the quality and safety of feed and feed additives is one of the important tasks of modern animal feeding science. The purpose of the work was to carried out a comparative assessment of four samples of the starting compound feed SK-3 for piglets of different producers. The experimental part of the work has been carried out in the laboratory of veterinary expertise at the compound feed plant LLC “Athens-Volga”. For the study of compound feed an average sample was taken from each sample, separating from the combined sample using a hand scoop according to Federal standard 13496.0-2016. Methods of sampling. Quality and safety control was carried out according to organoleptic, physic and chemical, microbiological indicators and the content of mycotoxins in compound feed. Monitoring of compound feed of the compared samples of the starting compound feed for piglets SK-3 according to the studied indicators has shown that all samples meet the sanitary and hygienic requirements of Federal standard of our country.
