DEVELOPMENT OF TECHNOLOGY AND RECIPES FOR HANDMADE SWEETS WITH THE ADDITION OF CAROB

Разработаны рецептуры и технологии конфет ручной работы пониженной калорийности, обогащенных биологически активными веществами без изменения оригинальных органолептических свойств. Обоснована возможность использования кэроба как заменителя какао. Исследована замена кэробом какао в различных концентрациях в рецептуре конфет. Описана технология конфет ручной работы функционального назначения с добавлением ягод черной смородины и порошка кэроба. Оценены показатели качества модельных композиций конфет с использованием порошка кэроба. Установлено, что совершенствование технологии производства шоколада позволило получить продукт с функциональным значением, сниженной энергетической ценностью, допустимыми органолептическими показателями и повышенным содержанием витамина С и пищевых волокон.Пищевая ценность одной порции (100 г) разработанной продукции – конфет с кэробом составила по сравнению с контролем соответственно, %: белки 5,9/8,1; жиры 56/60; пищевые волокна 64/36; витамин C 67/0; энергетическая ценность, ккал, 388/516. Снижение калорийности, повышение содержания витамина С и пищевых волокон в шоколадном батончике достигается за счет введения свежих ягод черной смородины. Применение измельчения без удаления семечек и кожицы ягод позволило повысить содержание пищевых волокон в готовом изделии. Recipes and technologies of handmade sweets of reduced caloric content, enriched with biologically active substances without changing the original organoleptic properties, have been developed. The possibility of using carob as a substitute for cocoa is justified. The substitution of carob for cocoa in various concentrations in the candy recipe was investigated. The technology of handmade functional sweets with the addition of black currant berries and carob powder is described. The quality indicators of model candy compositions using carob powder were evaluated. It was found that the improvement of the technology of chocolate production allowed us to obtain a product with a functional value, reduced energy value, acceptable organoleptic parameters and an increased content of vitamin C and dietary fiber. The nutritional value of one serving (100 g) of the developed products – sweets with carob – was in comparison with the control, respectively, %: protein 5,9/8,1; fat 56/60; dietary fiber 64/36; vitamin C 67/0; energy value, kcal, 388/516. Reducing the caloric content, increasing the content of vitamin C and dietary fiber in a chocolate bar is achieved by introducing fresh black currant berries. The use of grinding without removing the seeds and skins of berries allowed to increase the content of dietary fiber in the finished product.

The development of targeted beverages is a priority for healthy eating. Plant raw materials containing a wide variety of biologically active substances are used for their production. The presence of these ingredients helps to improve many physiological processes in the body, as well as to increase its immune status. The high efficiency of ultrasonic effects on various technological processes was confirmed by numerous studies. Ultrasonic extraction was carried out at t = 20 ? and an ultrasonic wave frequency of 22 kHz. As a result of the research, it was found that the equilibrium state is achieved within 15 minutes with ultrasound exposure. Natural raw materials, their chemical composition and the influence on the human body were studied in the work to develop new beverages recipes. The selected ingredients in a certain quantitative ratio made it possible to obtain beverages with improved bio-corrective properties, which allows satisfying the daily requirement of the human body for biologically active substances. Ultrasonic exposure has a positive effect on the organoleptic characteristics of the beverage and the aftertaste, as proved by the comparative organoleptic evaluation of the samples. The functional properties of the beverages developed were confirmed experimentally. The following was determined in the beverages: macronutrients content, antioxidant activity, vitamin C content, shelf life duration. The ultrasonic extraction method application in the technology of beverages manufacturing allows: to reduce the preparation time by half, to reduce the amount of raw materials by 15%, to increase the content of macronutrients by 45%, to increase the content of vitamin C by 35%, to increase the antioxidant activity by 45-50%, to increase storage stability by 50-60%, to improve organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional beverages.

Interest in the consumption of berries is largely due to the content of biologically active substances in them and their importance as dietary antioxidants. Polyphenolic compounds found in blackcurrant berries are known as agents that act prophylactically and therapeutically on the human body. The following were determined: total content of phenolic substances, flavonoids, anti-radical activity according to the DPPH method, restoring power according to the FRAP method, anthocyanins, organoleptic characteristics, dietary fiber content, vitamin C content for feedstock, semi-finished products (blackcurrant berries, blackcurrant puree, two types freeze-dried snacks from blackcurrant berries). According to the results of the study, it was found that the freeze-dried berry (snacks of two types of freeze-drying) showed good results: 42.05 mmol Fe2 +/1 kg (snacks with a structure-forming agent, 5% pectin), 38.6 mmol Fe2 +/1 kg ( snacks) restoring power according to the FRAP method, 47.1 Ec 50 mg/ml (snacks), 79.4 Ec 50 mg/ml (snacks with a builder, pectin 5%) anti-radical activity according to the DPPH method, 766 mg HA/100 g ( snacks), 835 mg HA/100 g (snacks with a builder, pectin 5%) total phenolic content, 374 mg K/100 g (snacks), 392 mg K/100 g (snacks with by a touring agent, 5% pectin) total flavonoid content, 166.07 mg CG/100 g (snacks), 174.21 mg CG/100 g (snacks with a structuring agent, 5% pectin) anthocyanins content, 50.1% (snacks), 66.9% (snacks with a builder, pectin 5%) vitamin C content, 76.8% (snacks), 90% (snacks with a builder, pectin 5%) dietary fiber, 1.92% (snacks), 2.13 % (snacks with a builder, pectin 5%) – titratable acidity. Thus, we can conclude that vacuum drying provides samples with good physicochemical properties and is better than a dried sample.

ABSTRACT: This study evaluated physical characteristics, chemical composition, content of vitamin C, vitamin E, carotenoids, and minerals in biribiri fruits (Averrhoa bilimbi) from the Middle Doce River region (Minas Gerais, Brazil). Titratable acidity was determined by volumetric neutralization, pH by direct potentiometry, soluble solids by refractometry, humidity by gravimetry, ash by calcination in muffle, proteins by the micro-Kjeldahl method, dietary fiber by non-enzymatic gravimetric method and lipids using a Soxhlet extractor. Carotenoids and vitamin C were analyzed by high-performance liquid chromatography (HPLC) and vitamin E by HPLC with fluorescence detector. Fourteen minerals were analyzed by inductively coupled plasma atomic emission spectrometry. Biribiri showed high yield of edible portion (100%), low lipid, protein and carbohydrate content, and; consequently, low total energy value (25.36 kcal 100 g-1). The fruit also showed low dietary fiber content (0.62 g 100 g-1), total vitamin E (17.62 µg 100 g-1), total carotenoids (0.32 g 100 g-1), and high vitamin C, zinc, copper, iron content, manganese, molybdenum and chrome content. Regarding the heavy metals, the fruit showed no cadmium, and traces of aluminum and nickel. In conclusion, biribiri presented low energy value and expressive contents of dietary fibers, vitamin C, iron, manganese, molybdenum, chromium, zinc, and copper.

The VNIISPK black and red currant collection was studied for the content of biological active substances in berries, including ascorbic acid (vitamin C) and phenol compounds (vitamin P). The results of the study for the period of 1990-2015 are given. 256 black currant varieties, elite and selective seedlings and 103 red currant varieties, elite and selected seedlings were studied. Genotypes with a high level of characters on study were allocated for use in target crossings for fruit chemical composition improvement. The varieties , elite and selected seedlings of VNIISPK breeding were picked out as recommended sources of those characters, including black currants Desertnaya Ogoltzovoy, Muravushka, Nadina, Orlovskaya Serenada and red currants Marmeladnitza, Niva, Podarok Pobediteliam and Ustina having high contents of ascorbic acid in berries; black currants Arapka, Yershistaya, Zusha, Nadina, Nura, Ekzotica and red currant Osipovskaya having a high level of anthocyanins; black currants Yershistaya, Zusha, Nadina, Orlovia and Yubiley Orla with a high content of catechols; black currants Gamma, Gratzia, Lentiay, Orlovsky Vals and red currants Asya, Podarok Pobediteliam and Selianochka with a high level of leucoanthocyanins; black currants Yershistaya, Yubiley Orla and red currants Asya, Podarok Pobediteliam and Selianochka with a high sum of P-active substances in berries.

The demand for natural products is constantly growing in the current environmental situation. This encourages manufacturers to increase the production of these goods. However, almost all branches of the food industry use nowadays a large number of biologically active additives, mainly of synthetic origin. In this regard, the introduction of natural vegetable supplements in the composition of a traditional food product will contribute not only to an increase in the nutritional and biological value of the product, but also to expand the range of healthy food products. The possibility of using dietary fiber from root crops of scorzonera, immobilized on biopolymers, and chickpea flour obtained from chickpea beans bioactivated by germination in the amount of 5% and 15%, respectively, was studied in the work. Scientific substantiation of the effectiveness of the use of vegetable filler in the production of combined soft cheese was given. The cheese product produced has a mass fraction of fat in dry matter of 4.5%, a mass fraction of moisture not more than 64%, a mass fraction of salt not more than 2.0%. The use of dietary fiber as a food additive in cheese production gives the product a functional value. Dietary fiber, introduced in an amount of 5.0%, increases the yield of the finished product by 11-11.5%. Thus, applying the proposed technology for the production of a soft cheese product, it becomes possible to solve a number of technological, environmental and economic problems, including an increase in the nutritional value of a soft cheese product, due to enrichment with dietary fiber, macro- and micronutrients, as well as an increase in the biological value of the developed product by balancing the amino acid composition

Currently, the world practice of the food technology uses an integrated approach of the deep vegetable raw processing, including the secondary resources in order to reduce the direct costs and production costs. In this research, the quantitative and qualitative composition of the marcs obtained while producing the “Vigrass” juice from the wheat germ of 10–12 cm long is investigated. It is revealed that the volume of the obtained marcs is up to 35%, their humidity of 70–74% in the conditions of the “Prorostki” Ltd company production is determined. It has been studied that 100 g of marc contains: protein – 5.56 g, lipids – 3.96 g, organic acids – 0.93 g. It is established that the wheat sprouts marcs include the amount of P – active substances 110 mg/100 g, flavonoids 200 mg/100 g, chlorophyll 12 mg/100 g, tannin 370 mg/100 g, vitamin C 129 mg/100 g. It is identified that 12.83% of dietary fibers marcs include 6.81% of lignin, 1.50% of cellulose, 4.23% of hemicellulose and 0.29% of pectin substances. The dynamics of the vitamin C and chlorophyll content in the wheat sprouts marcs depending on the drying temperature is educed. It has been established that during the marc drying at high temperatures, the amount of vitamin C and chlorophyll decreases by more than 60% of the total content, which is consistent with the data of other authors. The technological parameters of the marc drying for the production conditions have been determined. They make possible to preserve the biologically active substances almost fully: temperature 40 °С, time 8 hours. A complex technology has been developed to process wheat sprouts to produce the “Vitgrass” juice and powder from marc.

The use of the method of ultrasonic extraction in the technology of preparing drinks allows one: to reduce the preparation time by half, to reduce the amount of raw materials by 15 %, to increase the content of macronutrients by 45 %, to increase the content of vitamin C by 35 %, to increase the antioxidant activity by 45-50 %, increase stability during storage by 50 – 60 %, increase organoleptic characteristics. The results obtained prove the intensifying effect of ultrasonic exposure in the production of functional drinks.

Flour confectionery products occupy an important place in the diet of the population of our country, and the world and are in great demand. A significant disadvantage of this group of products is the low content of vital essential substances, such as vitamins, minerals, dietary fiber, etc., and the high content of carbohydrates and lipids. Demand for these products necessitates the need to adjust the chemical composition of these foods. One of the most famous representatives of flour confectionery is cupcakes. In the recipes of cupcakes, the largest share occupies such types of refined raw materials like wheat flour, granulated sugar, fats, which cause an imbalance in their chemical composition, low nutritional value, and high caloric content. As biologically active additives of plant origin, flour from the seeds of various niche crops (flax, hemp, sesame, amaranth, etc.) can be added to the cupcake recipe. After all, this type of raw material is valuable for its composition (the content of proteins, fats, essential amino acids, and fatty acids, vitamins, minerals, etc.) and health properties. The recipe for cupcakes enriched with flour from the seeds of niche crops has been developed. The prototype for the study was chosen recipe for the cake “Stolychnyi”. Hemp, flax, pumpkin, and sesame flour were chosen as raw materials. Organoleptic, physicochemical quality indicators, nutritional, and energy value of finished products are determined. Based on the results of the organoleptic evaluation of cupcake samples, determination of their physicochemical quality indicators, comparison with the production sample, we recommended the introduction of a cupcake enriched with low-fat hemp flour. The protein content in this sample was 8.85 g/100 g, fat – 17.83 g/100 g, carbohydrates – 51.8 g/100 g, energy value – 396.85 kCal / 100 g of product. Due to the functional properties of hemp flour, the resulting product can be attributed to health products.

A comparative assessment of a remontant and common raspberries biochemical composition is given. The biochemical composition of a remontant raspberries cultivated in Cisbaikalia corresponds to the minimum physiological human need for biologically active substances. The content of sugars, vitamins (C, A, B1, B2, E and PP) and microelements has been studied. It was found that the frozen berry contains a sufficient amount of vitamin C, sugars and trace elements for daily consumption. The dietary value of raspberries is noted, due to the predominant accumulation of fructose and glucose. The minimum sugar content of berries in the Eurasia variety. A variety with a high content of vitamin C and sugars has been identified, it is Rubinovor ozherelie. The Zharptitsa and Rubinovoe ozherelie varieties are sources of iron, manganese, zinc and copper, and Penguin, Hercules, Orange miracle, Bellflower, form 16-136-6 are calcium. The Rubinovoe ozherelie variety contains a lot of sugars, vitamins and micronutrients, and also has a high organoleptic rating.

В статье представлены результаты научных исследований по разработке рецептуры и технологии пудинга с использованием полуфабриката из цельносмолотого пророщенного зерна (ППЗ), в состав которого входят измельченные пророщенные зерна (пшеница - 14 %, рожь - 44 %, ячмень - 14 %, овес - 28 %) с размером частиц 200-400 мкм. Результаты исследования пищевой ценности ППЗ указывают на высокое содержание белка (12,4 %), пищевых волокон (11,7 %), жиров (2,9 %), витамина С (5,9 мг/100 г), энергетическая ценность составляет 321,1 ккал. Целью исследования является разработка рецептур и технологии пудинга с использованием полуфабриката из цельносмолотого пророщенного зерна вместо традиционных ванильных сухарей. Изучена возможность замены основного рецептурного компонента сухарей ванильных на ППЗ в рецептуре пудинга сухарного. Образец № 1 - пудинг с 25 %-ной заменой сухарей ванильных на ППЗ, образец № 2 - 50 %, образец № 3 - 75 %, образец № 4 - 100 %. В рецептуру пудинга из ППЗ был добавлен ванилин для формирования соответствующего вкуса. Установлено, что по органолептическим и физико-химическим показателям наиболее сбалансированным является образец с полной заменой ванильных сухарей на ППЗ. Кроме того, разработанный образец обладает меньшим содержанием жиров (на 16,7 %), по сравнению с контрольным образцом, уменьшилось содержание углеводов: моно- и дисахаридов (на 11,1 %), крахмала (на 9,3 %). Также увеличилось содержание пищевых волокон (на 457,1 %). Использование предложенного полуфабриката в технологии сладких блюд позволит не только расширить ассортимент, но и повысить пищевую и биологическую ценность изделия. The article presents the results of scientific research on the development of the formulation and technology of pudding using a semi-finished product from whole-ground sprouted grains (SPSG), which includes crushed sprouted grains (wheat - 14 %, rye - 44 %, barley - 14 %, oats - 28 %) with a particle size of 200-400 microns. The results of the study of the nutritional value of SPSG indicate a high content of protein (12.4 %), dietary fiber (11.7 %), fat (2.9 %), vitamin C (5.9 mg / 100 g), energy value is 321.1 kcal. The aim of the research is to develop recipes and technology for pudding using, instead of traditional vanilla rusks, a semi-finished product from whole-ground sprouted grains. The possibility of replacing the main recipe component of vanilla rusks with SPSG in the recipe for rusks pudding has been studied. Sample No. 1 - pudding with a 25 % replacement of vanilla rusks with SPSG; sample No. 2 - 50 %; sample No. 3 - 75 %; sample no. 4-100 %. Vanillin was added to the SPSG pudding formulation to create the appropriate flavor. It has been established that in terms of organoleptic and physicochemical indicators, the most balanced sample is with a complete replacement of vanilla rusks at the SPSG. In addition, the developed sample has a lower fat content (by 16.7 %) compared to the control sample, the content of carbohydrates decreased: mono- and disaccharides (by 11.1 %), starch (by 9.3 %). The content of dietary fiber also increased (by 457.1 %). The use of the proposed semi-finished product in the technology of sweet dishes will not only expand the range, but also increase the nutritional and biological value of the product.
