Background: Insufficiency of nutrients intake such as protein and calcium may lead to the incidence of stunting in children under five years. In fact, Indonesia has many local foods like freshwater fish and local fruits which had abundant nutrients. Seluang is a typical Kalimantan freshwater fish contains high protein and calcium. The utilization of seluang fish flour and kepok banana flour as substitution in making cookies will increase the nutritional value of protein and calcium and may reduce the use of wheat flour. Objective: This study aims to analyse the effect of selpis (seluang and banana) flour substitution on protein, calcium, acceptability and organoleptic quality of cookies.Method: Experimental method with a completely randomized design (CRD) with five flour substitution treatments: 0%, 5%, 10%, 15%, 20% was used in this study. The protein content was tested by Kjeldahl method while the calcium content was tested by the AAS method. Results: Most of panelists preferred the original cookies (P1), characterized by yellowish in colour, fresh-baked aroma, slightly tough in texture and sweet-taste. The highest levels of protein and calcium were at P5 (20%) of 12.25% and 5.88 mg / 100 g.Conclusion: The substitution of seluang and kepok banana flours affect protein levels, calcium levels, acceptability (taste, color and aroma) of cookies but does not affect the texture of cookies.

Carbohydrates have an important role for endurance athletes to replenish glycogen in muscle and liver that had been used during muscle contraction. This research aims to analyze the effect of adding breadfruit flour (Artocarpus communis), green banana (Musa paradisiaca L.), dates (Phoenix dactylifera) and chocolate (Theobroma cacao L.) toward the acceptance and carbohydrate content of egg roll as an alternative snack for endurance athletes. This research use True Experimental Research, completely randomized design with four formula and repeated four times for each formula. Panelist in this study consist of 30 athletes of Local Training Center, Indonesian National Sport Committee in East Java Region. Based on the test of acceptance on the modification of egg roll formula, the most preferred formula was F1 (breadfruit flour 150 g, chocolate 500 g, dates 150 g) with the highest mean rank values were on color (2.65) and flavor (2.70), while the aroma and texture aspect had the lower mean rank (2.50) each compared to F0 (2.87 and 2.58). The result of Friedman Test statistic on all characteristics of the acceptability include color, aroma, texture and flavor found there was not significant diffrence on the acceptance of egg roll (p>0.05). The highest carbohydrate content was F1 (59.4/100 g). Based on the best acceptance value and the highest carbohydrate content, it was conclude that the optimal  formula was F1. Total egg roll that should be consumed by the athletes before sport was 125 grams (12 sticks egg roll) and 60-95 grams (6-8 sticks egg roll) for after sport

The effect of different levels of nano- and mineral-Iron and their method of application on anatomical properties of the upper and lower epidermis of Moringa (Moringa oleifera Lam.) leaves was studied. Seeds of Moringa were sown in 15 kgs soil capacity pots during the growing season of 2018/2019 arranged as a factorial experiment within Completely Randomized Design, with three replicates. The factorswere a method of fertilization(soil or foliar application),three levels i.e. 0,180 and 360mg.l-1 of each of mineral and nano-Iron. The total number of experimental units was 2×3×3×3 for method, nano-Iron, mineral-Iron, and replicates respectively. The application method caused an increase in the mean dimensions of normal epidermis cells, stomatoes, and hairs. These traits were increased as Iron levels increased. Where 360 mg.l-1 of both types of Iron gave the highest dimensions. Soil application gave higher values of epidermis dimensions than that obtained from the foliar application. The number of stomatoesincreased with increasing the level of Iron. The number of normal epidermis cells was conversely proportioned with their volume.
