The purpose of this paper is to verify the knowledge that is useful for legume producers in relation to consumers’ eating habits in the field of legume products. According to experts, leguminous products have a positive effect on human health. The tendency towards healthy eating habits is also associated with the idea of sustainable consumption. The authors have attempted to combine these two trends. The main goal was to determine, among consumers, the level of knowledge about legumes, product purchase motives, and preferred places of purchase. This study was carried out with the use of an authorial questionnaire. In total, 1067 respondents from all regions of Poland participated in the study. The Statistica 13.1PL programme was used for statistical analyses. Methods used: descriptive statistics, discriminant analysis and linear regression analysis. With the aid of the conducted analyses, it was possible to determine that peas, beans, soybeans and lentils are the most recognised and most frequently consumed products (in various configurations) among the residents of the studied groups. The most important motives for their purchase among the surveyed consumers were “flavour”, “price” and the fact that these products can be an alternative to meat products and contain a lot of protein and fibre. The purchase channels that legume product producers must pay attention to are large-area shops and online sales. Sustainable consumption awareness for the consumers of legume products is best defined by a variable in the regression equation—“no harmful substances used during its production”. The legume products market has not yet flourished in Poland. The products are an excellent alternative to meat products due to their high protein content. Pro-health education has a measurable effect and consumer awareness is growing. Producers should use this knowledge by emphasising, in the promotion of products, that the products are produced in accordance with the idea of sustainable development, without the use of harmful substances, and that no means are used to extend the shelf life.

Fresh produce has rich sensory attributes, and consumers generally prefer examining physically these sensory attributes prior to purchase. The nature of e-commerce, however, limits consumers’ ability to examine products’ sensory attributes while buying online. Customers receive very limited intrinsic cues of fresh produce (such as color) when buying online and thus use only extrinsic cues to assess the quality of fresh produce. This study investigates the effects of extrinsic cues on online shopping for fresh produce, with a particular focus on the effect of geographical indication (GI), which often assumes the role of brand names among producers of fresh groceries. We used data from an online South Korean marketplace for fresh produce to conduct a linear regression analysis. The results show that products linked to GIs sold more and were ordered more frequently; other control variables had somewhat significant effects. The volume of online product reviews was found to have a significant positive effect on the amount of orders and sales, but the product rating itself did not have an effect. The price had a negative effect on the amount of orders, while the number of certifications (e.g. “organic agriculture”) had a significant positive effect on the number of orders.

Mindfulness which is based on one’s acceptance of the current situation and state without judging has recently manifested itself in various field studies of marketing.  Similarly, in today’s changing conditions, the importance of ecological balance has made consumers and businesses more sensitive to sustainable product production and consumption. In this context, the aim of the study is to explore the relationship between consumer mindfulness and sustainable consumption behavior. In order to test relationships, 200 usable questionnaires were collected and tested through linear regression analysis. Findings indicated that consumers’ mindfulness has a significantly positive effect on consumers’ sustainable consumption behavior.

The COVID-19 pandemic resulted in substantial lifestyle changes. No US study has identified predictors of perceived dietary healthfulness changes during the pandemic period. This study included analyses of lifestyle and dietary healthfulness changes using 958 survey responses from US primary household food purchasers. Information was collected related to demographics, COVID-19-related household changes, and health-related habits before and during the pandemic. Binary logistic regression identified predictors of perceived increase in dietary healthfulness during the pandemic period. Overall, 59.8%, 16.4%, and 23.4% of participants reported that their eating habits likely changed, may have changed, and likely did not change, respectively. Of the participants whose dietary habits likely or may have changed, 64.1%, 16.8%, and 19% reported healthier, neither healthier nor less healthy, and less healthy eating habits, respectively. COVID-19-related income loss, more meals consumed with household members in front of the television, an increase in food advertisement exposure, increased perceived stress, and better perceived current health were significant predictors of a perceived increase in dietary healthfulness. Overall, dietary habits were perceived to become healthier during the pandemic. The predictors of perceived improvement in dietary healthfulness were surprising and indicate the need for further study of these factors in crisis and noncrisis situations.

Scarce studies described eating habits and diet quality among university students in Lebanon. The aim of this study is to assess the rate of adherence to the Mediterranean diet (MedDiet) among Lebanese university students. A cross-sectional nutritional survey was carried out on 525 students (53% men, 18–25 years old) from the University of Balamand, Lebanon. Adherence to the MedDiet was assessed using a validated 14-item MedDiet adherence score. Mean adherence to the MedDiet was 7.96 (standard deviation 2.2), and it was adequate in 59% of participants. Adherence to the MedDiet was higher in older students and nonsmokers. Legumes, vegetables, fruits, and nuts were consumed according to the MedDiet standards among a minimum of 48.4% and a maximum of 69.5% of participants. Chicken, turkey, or rabbit was preferred by 66.9% of participants instead of beef, pork, hamburgers, or sausages; however, just 56.2% of participants showed adequate intake of red meat, hamburger, or meat products. Only 28.8% of them referred to an adequate intake of fish or shellfish. Most of the participants (86.3%) used olive oil as the main added fat, and 67.2% reported a low intake of butter and derivatives. Sofrito was also very usual among participants (79.6%). Only half of the studied sample reported an adequate intake of sweet or carbonated beverages and commercial sweets or pastries. Among the assessed sample, half the participants showed adequate adherence to the MedDiet; however, the mean of adherence among the sample is low.

This cluster randomized controlled trial (CRCT)-designed study aimed to explore the feasibility of a promotion pamphlet and/or WhatsApp as a suitable mode of delivery to promote healthy eating habits with fruit and vegetables (F&V) among firefighters. Convenience and snowball sampling methods were used. Forty-five firefighters from 23 fire stations were recruited and they all received the printed pamphlet, while the intervention group participants (n = 20) received additional teaching material through WhatsApp every two weeks for eight weeks. Feasibility outcomes included retention, practicality, and implementation. The participants reported high levels of satisfaction with the intervention. There were significant improvements in the mean numbers of days consuming F&V (p = 0.002; p = 0.031) in the intervention group, and for fruit consumption (p = 0.033) in the control group between the baseline (T0) and 3 months after completion of intervention (T1). High levels of participants’ satisfaction with the intervention revealed that a full-scale CRCT of the WhatsApp-delivered intervention promoting healthy eating could be feasible, especially as a means of increasing the numbers of days they consumed F&V and the numbers of servings of these consumed per day.

Abstract The use of edible flowers (EF) in gastronomy is gaining popularity; however, there is still a lack of information about the factors that most contribute to the acceptance of this product. Therefore, the objective of this study was to investigate the habits associated with the usage of EF in gastronomy in three different countries (Portugal, Slovenia, and Brazil) and also to evaluate the major determinants for those habits. In addition, the level of knowledge was also investigated, particularly with regard to the aspects such as perceived risks of toxicity and pesticides. For that, a questionnaire survey of self-response was carried out on a sample of 559 participants, from the above-mentioned countries. To analyse the data, basic descriptive statistical tools were used combined with crosstabs and chi-square tests. Finally, a tree classification was performed using the classification and regression trees algorithm. The results revealed that, regardless of the country, the participants were familiar with the use of EF in gastronomy. The participants had, in general, already consumed EF, and their use was more popular between the Portuguese participants, being the Brazilian those who used them less. Significant differences were found between the countries in the form of consumption of EF and also in the types of EF consumed. There were also significant differences regarding the reasons for eating EF. The classification analysis showed that the country and the level of education were the major determinants for the consuming habits and knowledge about EF. This study highlighted that eating habits are very dependent on the customs and traditions of each country and helped understanding the factors that most affect the participants’ attitudes towards the consumption and knowledge of EF.
