The production of steamed cheese has a long tradition in Slovakia. Some of these cheeses have even received the PGI designation, which is a designation granted to products with specific geographical characteristics (Slovenská parenica, Zázrivské vojky, Zázrivský korbáčik, and Oravský korbáčik). In our study, eight samples of various unsmoked steamed cheese from small dairy farms (samples D, F, G, and H) and medium-sized farms (A, B, C, and E) were evaluated. Our work aimed to determine whether there are significant differences in sensory characteristics between samples from small and medium-sized dairy farms and whether there are differences in the preferences between these samples for consumers. Samples were evaluated by sensory analysis, where the assessors evaluated the characteristics of color, odor, texture, flavor, and overall appearance on a nine-point hedonic scale. Differences at a statistically significant level in the attributes of odor, texture, flavor, and overall appearance were confirmed (p <0.05) between samples from small and medium dairy farms, no statistically significant difference was proved in the attribute color (p >0.05). The results were processed using PCA, whereas can be seen from the graphic representation the carriers of all evaluated attributes were samples from medium-sized farms (except for sample D, which belonged to the first group of samples together with samples from medium-sized farms). We constructed a preferential map by combining internal and external mapping, while the internal data were formed by data obtained from assessors using sensory analysis and the external data came from an online questionnaire. Using the preferential mapping technique, we found out that samples from medium-sized dairy farms were classified as the most preferred samples which correspond with the results of sensory analysis.

Objective: Conduct effective sensory method on three nail strengtheners with different packaging and pharmaceutical forms commercialised in Brazil. Methods: Two affective tests, of acceptance and sorting-preference, and a purchase intention test were conducted. The attributes packing appearance, ease of application provided by the packaging and texture and spreadability of the pharmaceutical form were evaluated, using the hedonic scale of 9 points to evaluate the attributes and 5 points to assess the intention of buying. The sensory panel was composed of 32 judges, consumers or potential consumers. Results: On the acceptance test, the pen with emulsion pharmaceutical form obtained was most preferred on the appearance of the package (7.88) and ease of application (7.72) attributes. The sample most preferred on texture and spreadability attribute was the nail polish bottle with brush containing enamel base pharmaceutical form (8.06), followed by pen bottle containing emulsion (6.75) and dropper bottle containing oil as pharmaceutical form (5.41) respectively, with statistical significance (p<0.05). All samples were higher with significant difference (p<0.05) compared with the dropper bottle containing oil on purchase intent.Conclusion: It was demonstrated that pen bottle had the highest preference on package appearance and ease of application attributes and the enamel base pharmaceutical form had the highest preference in the texture and spreadability attribute. The nail polish bottle containing the pharmaceutical form enamel base showed the highest preference in purchase intention and sorting-preference test.

Beverage strategies with balanced carbohydrate and protein supply are important for athletes’ recovery. Cow’s milk with added bioactive compounds present in coffee and cocoa facilitates glucose metabolism and may help post-workout glycogen recovery. Home-prepared beverages are cost and nutritionally effective strategies. Thus, the objectives were: (1) To develop home-prepared beverages containing nonfat powdered milk and sugar combined with filtered coffee or cocoa powder in balanced amounts for recovery after endurance exercise; and (2) to perform sensory analysis. Sensory evaluation was conducted by an acceptance test, applying nine-point hedonic scale and descriptive analysis, using the check-all-that-apply method (CATA). McNemar’s test and logistic regression with the proportional odds model were employed. The sample included 44 triathletes and 56 runners, of both sexes, 31–70 years old. Both beverages were well accepted by runners and triathletes, with higher acceptance of the coffee beverage (odds ratio coffee vs cocoa 5.232, p=0.0038). There was no significant difference between acceptance of triathletes and runners for the two beverages. The descriptive sensory analysis (CATA) resulted in slightly different characterizations between the two beverages. Both beverages were well accepted and characterized by the athletes, who can supply different options of post-workout beverages according to individual tastes, composition, and characteristics.

Abstract Background Psychological disorders are common among individuals who experienced COVID-19. Previous studies have shown that females report higher depression and anxiety than males. The present study aims to test the differences in depression and anxiety between males and females who have experienced COVID-19. This a descriptive, observational, comparative study, among Saudi Arabian population. A total of 686 participants have been recruited. Participants completed an online questionnaire that contains questions about sociodemographic, COVID-19, Generalized Anxiety Disorder (GAD-7) questionnaire, and Patient Health Questionnaire (PHQ-9) to measure anxiety and depression, respectively. Results Twenty-six percent of the participants were excluded and our final sample consisted of 507 participants (median age 23; 65% females). Of the final sample, 23% (118) have been previously diagnosed with COVID-19. There is no significant difference in GAD-7 and PHQ-9 scores between COVID-19- positive and COVID-19-negative populations. However, females who have experienced COVID-19 reported significantly higher GAD-7 and PHQ-9 scores compared to males. Conclusion The results of our study show that females are significantly at a higher risk for depression and anxiety as a result of COVID-19 infection compared to males. Further epidemiological studies are required for a better understanding of this correlation.

Background: The COVID-19 pandemic and lockdown measures have affected the sexuality and emotional bonding among the couple across the world. Objectives: We aimed to assess the effects of the COVID-19 pandemic and lockdown on the married people’s emotional bonding and sexual relationships in 3 south Asian counties (Bangladesh, India, and Nepal). Methods: A cross-sectional online survey was conducted among Bangladesh, India, and Nepal residents from April 3 to April 15, 2020. The survey was designed in English. The participants were selected through convenience sampling technique, the link of the online questionnaire was shared with the participants. Only participants older than 18 years and above, married, and living with their spouses were included in the study. Results: A total number of 120 respondents were included finally for analysis from the participating countries (India, Nepal, and Bangladesh). The mean age of the participants was 35.42 (±5.73) years; the majority were males under the age of 40 years and had completed postgraduation as their qualification. Among the study participants, more than half (53.8%) of the women reported being sexually active during the lockdown, whereas 41% of the men reported being sexually active. Among the sexually active participants, most women (57.7%) reported that they perceived positive emotional bonding with their partners. Nevertheless, there was no significant difference observed when compared with men. There are variations in responses. However, no significant association was identified. Conclusion: There are a few insights from the study, that is, there was no significant difference found in almost 3 countries in emotional intimacy. There had been a trend that there is improved emotional bonding with their partners, although no significant difference was observed.

ObjectivesTo investigate the current understanding parents have of concussion in their rugby-playing children aged 9–17.DesignCross-sectional studySubjects86 parents from four clubs completed an online questionnaireMethodsAreas covered (1) Parental experience of concussion (2) Rate of viewing of the RFU concussion educational video (RFUCEV), (3) Identification of symptoms of concussion (4) Understanding of the risk of concussion. Each participant was given a composite score, out of 19, based on their performance in symptom identification and true/false questions. Independent-sample two-tailed t-tests were conducted to analyse scores, primarily controlling for viewing of the RFUCEVResultsThere was a significant difference in the scores between the group that had viewed the RFUCEV (n=32, M=14.75, SD=2.55) and those who had not (n=54, M=13.05, SD=2.87); t(84)=2.75, p=0.00721. Additionally, over 25% of parents reported that their child had suffered a concussion, and this was also found to significantly improve the awareness score (p=0.04678)ConclusionsStatistically significant improvement in composite scores after viewing the RFUCEV makes it reasonable to require compulsory parental education prior to signing up a child to play rugby. This would build on the protocol changes made by the RFU in 2014 and further progress the safety of the sport. We suggest the video be improved to emphasise the areas highlighted as inadequately understood, including the increased risk of concussion in under-18s compared to adults.

Purpose The purpose of this paper is to evaluate the influence of the front of a package label and the nutritional claims linked to it over consumers’ expectations as to acceptance, purchase attitude and perception of quality characteristics of a new functional beverage made from cashew nut milk and added with mango juice and prebiotic substances. Design/methodology/approach Three versions of the front label were developed, which differed just by the type of nutritional claim presented (“0 per cent lactose and 0 per cent cholesterol; 0 per cent lactose, 0 per cent cholesterol and source of fibers, 0 per cent lactose, 0 per cent cholesterol and antioxidants”) and were evaluated in two phases, expectation and informed. For the evaluation, consumers used a multi-attribute scale, the nine-point hedonic scale and a nine-point semi-structured buying attitude scale. Findings The labels created a positive expectation on the consumers regarding the quality attributes, overall impression (mean = 6.0 “Like slightly”) and buying attitude (mean = 6.0 “Would probably buy”). After tasting the beverage associated with labels (informed phase), consumers kept a positive evaluation. The t-test performed between the pair of means of both phases showed that there has not been a significant difference regarding the quality attributes (p > 0.05), special, attractive, nutritive, healthy and buying attitude (Label 1, p = 0.26; Label 2, p = 0.18; Label 3, p = 0.26) in all labels. Originality/value The authors evaluated how the influence of label and nutritional claims in regards to a new product, a beverage made from cashew nut, affects its acceptance, buying attitude and characteristics of quality. Until this moment, there are no studies that evaluate how external attributes affect the acceptance of this beverage totally unique in the Brazilian market.

Limitations of plant-based dairy alternatives as sustainable foods are their relatively low protein content and low sensory appeal. In this study, we used a consumer-led product development approach to improve the sensory appeal of existing prototypes of 3-blend dairy alternatives produced from melon seeds, peanuts and coconut. We used Relative Preference Mapping (RPM) and consumer acceptance testing using the 9-point hedonic scale to respectively identify innovative flavours and deduce the effect of ingredient components on consumer sensory appeal. Mixture design was used as the formulation tool to obtain optimized prototypes of the 3-blend dairy alternatives. Proximate analysis of the new prototypes, instrumental color assessment and consumer testing provided a basis to select a sustainable 3-blend dairy alternative. This prototype had a relatively high protein content (2.16%), was considered innovative by target consumers and also had a moderate liking score (6.55 ± 1.88) on the 9-point hedonic scale. Prototypes with higher protein content had low sensory appeal and were not considered innovative. Other prototypes with innovative sensory appeal had low protein content. By combining different plant raw materials and utilizing different sensory testing methods, we were able to design sustainable plant-based dairy alternatives which can be further optimized.

Aflatoxin M1 (AFM1) contamination in milk and milk products may pose a major public health concern. The present cross-sectional study was aimed to estimate the prevalence of AFM1 in bovine milk across all districts of Punjab, India and to identify the associated animal and farm level risk factors. A total of 402 milk samples (266 cow milk and 136 buffalo milk) were analysed using commercial ELISA and representative samples were confirmed using HPLC-FLD. The results revealed that 56.2 and 13.4% of the milk samples exceeded the maximum levels of the European Union, i.e. 0.05 μg/l and Food Safety and Standards Authority of India (FSSAI), i.e. 0.5 μg/l for AFM1 in milk, respectively. On analysis of species variation, buffalo milk (prevalence: 56.6%; mean concentration: 0.42±0.9 μg/l) was found to have higher AFM1 levels than cow milk (prevalence: 56.0%; mean concentration: 0.19±0.3 μg/l), with statistically significant difference between mean concentrations (P<0.01) and non-significant difference between AFM1 prevalence (P=0.91). Furthermore, milk from commercial dairy farms (prevalence: 64.7%; mean concentration: 0.34±0.65 μg/l) was found to be more contaminated than from household dairy establishments (prevalence: 47.8%; mean concentration: 0.19±0.65 μg/l). The risk factors ‘above average milk yield/day’ (odds ratio (OR): 2.4) and ‘poor animal hygiene’ (OR: 1.9) were identified at animal level, and ‘intensive dairy farming’ (OR: 3.1) and ‘animal feed without aflatoxin binder’ (OR: 4.7) as farm level risk factors for AFM1 excretion above maximum levels of European Union in milk. Among cow breeds, the milk from ‘non-descript’ breed (OR: 11.5) was found to be most contaminated with AFM1 and the least from Jersey breed (OR: 1.0). The present study highlighted the presence of AFM1 in milk samples; therefore, regular monitoring of AFM1 in milk is required so that high risk regions and associated risk factors can be addressed appropriately.

Background: The aim of the study was to assess the attitude of the school and college-going students towards online classes. Methods: An online cross-sectional study was conducted on 228 school and college-going students fulfilling inclusion and exclusion criteria selected through purposive sampling methods. A semi-structured online questionnaire consisting of a socio-demographic questionnaire and Attitude towards online classes (ATOC) questionnaire was prepared by the researcher using Google form. The link of the questionnaire was sent to all the selected respondents through WhatsApp messages and emails. The data was analyzed using the IBM SPSS version 20 software. The reliability of the attitude questionnaire was assessed using Cronbach’s alpha test. The association between categorical variables was assessed using Chi-square tests. The comparison between variables was assessed using the students independent t-test.Results: More than half of the respondents (51.32%) were found with a positive attitude towards online classes. There was a significant association found between attitude towards online classes and socio-demographic variables such as age (p<0.05), academic level (p<0.05), and family income (p<0.01). The respondents who attended online classes (p<0.05), have technical knowledge (p<0.01), and got supported by their parents in the study (p<0.05) were found significantly high positive attitudes towards online classes. There was a significant difference found in the attitude of the respondents who faced psychological disturbances such as a decline in attention-concentration (p<0.05), irritation-anger (p<0.01), and tension (p<0.05) due to online classes.Conclusions: Although, online classes are more beneficial for the students and teachers in their academic activities during the lockdown period due to the COVID-19 pandemic but it can’t take place of traditional face-to-face classes.

ObjectiveTo evaluate quality of paediatric endoscopy training of Young members of the European Society for Paediatric Gastroenterology, Hepatology and Nutrition (ESPGHAN).MethodsAn online questionnaire designed by the Young ESPGHAN Committee was sent to 125 Young ESPGHAN members between February 2014 and September 2015. The questionnaire comprised 32 questions addressing some general information of the participants and the structure of their paediatric gastroenterology, hepatology and nutrition programmes; procedural volume and terminal ileal intubation (TII) rate; supervision, assessments, participation in endoscopy courses and simulator training; and satisfaction with endoscopy training and self-perceived competency.ResultsOf 68 participants, 48 (71%) were enrolled in an official training programme. All alumni (n=31) were trained in endoscopy. They completed a median of 200 oesophagogastroduodenoscopies (OGDs) and 75 ileocolonoscopies (ICs) with a TII rate of >90% in 43%. There is a significant difference in numbers of ICs between the TII rate groups >90%, 50%–90% and <50% (median 150 vs 38 vs 55) (p<0.001). 11 alumni (35%) followed the ESPGHAN Syllabus during training. 25 alumni (81%) attended basic skills endoscopy courses and 19 (61%) experienced simulator training. 71% of the alumni were ‘(very) satisfied’ with their diagnostic OGD, while 52% were ‘(very) satisfied’ with their IC training. The alumni felt safe to independently perform OGDs in 84% and ICs in 71% after their training.ConclusionsDespite reaching the suggested procedural endoscopy volumes, a rather low TII rate of >90% calls for end-of-training certifications based on the achievement of milestones of competency.
