Riskesdas 2018, show the percentage of nutritional status of stunting under five age in Indonesia 2018 was 25.7%, in West Sulawesi Province was the second highest contributor for stunting children in Indonesia with prevalence 41.8%. One of the preventive efforts that can be done is through the development of food products. In this study, the development of white bread with the substitution of Channa Striata fish flour was expected to enrich the nutritional content of bread, especially protein. In this study, using Channa Striata fish because it has a higher protein content than other foodstuffs known as sources of protein such as eggs, chicken and beef. Apart from protein, Channa Striata fish also has a high albumin content which can be used in wound healing. This aims of this study to determine the protein content of white bread with the substitution of Channa Striata fish meal by 5% and 10% Methods : This type of research is an experimental study to determine the protein content in white bread with the substitution of Channa Striata fish meal by 5% and 10%. The analytical method used to assess protein content is the kjeidhal method, which is a simple method for determining total nitrogen in amino acids, proteins, and nitrogen-containing compounds. The test was carried out at Health Laboratory South Sulawesi. Results : The results showed that the protein content of white bread with a substitution of 5% was 9.03 grams, and a substitution of 10% was 10.38 grams. Conclusion : The conclusion of this study was even more substitution of Channa Striata fish flour used, will increase protein content in the white bread.

Which allows testing of changes that occur after the intervention. This research design was used one grup pretest-posttest design. Results : there is an increase in knowledge in the form of difference in scores from pretest to posttest. Based on the result of the analysis using wilcoxon, the influence of education by cultural figure on the knowledge of mothers of toddlers about balance nutritional massages obtained  p=0.00  atau p<0.05 meaning there is influence. Conclusion : There is the influence of education by cultural figure on knowledge of mothers of toddlers about balanced nutrition massages.

Research Methods: This study used an experimental method in the laboratory with a Completely Randomized Design (CRD) of 1 factor, namely the addition of Carrots and Beans. Performed 5 levels of treatment and repetition 3 times with the addition of different Carrots and Beans. Organoleptic Properties Test Using the hedonic test method. Research Results : Anova Statistical Test Results on Panelists (Tukey) Effect of Carrots and Beans on Flavor (p <0.05). While the parameters of color, aroma and texture have no effect or (p> 0.05). The most preferred treatment for the highest average score is the taste parameter in treatment t4 with the addition of carrots and beans 20%. Conclusion : Based on the results of the test results of the acceptance of the SITELCIS Nugget in toddlers aged 4-5 years at the level of treatment t4 with the addition of carrots and beans (20%). From the results of the acceptance of children under five with given per serving of nuggets, the intake of good intake (≥ 80%) as many as 22 people, while the receiving power is less (<80%), which is as many as 3 people.

Stunting prevalence (5-12 years) is 34.4% which is the highest number in the NTB region compared to 10 other regencies / cities (NTB Province average of 14.9%) (Riskesdas, 2013). Fish Kelor Opak (OKI) is one of the traditional foods that can be strived to reduce Stunting (very short) in nutrient-prone groups in North Lombok Regency. In the three years of Health Intervention Research, problems still arise that quite disturb the sustainability of OKI consumption. There are not yet many traditional Opak craftsmen who produce Fish Kelor Opac (OKI) because of the ability of the craftsmen to provide raw materials and need modification of the materials, so that people like it. The purpose of this study was to modify Fish Moringa Opaque and its effects on stunting children. Descriptive observational method with emphasis on making Moringa Fish Opaque with different fish ingredients. The best products are given to children stunting. The results showed that modified Fish Opaque Moringa was made which had better taste, shape and texture than before. There is a difference in BB in children with stunting + OKI (P1) before and intervention is 2.07 kg, compared to P0 of 0.56 kg and There is a difference in TB in children with stunting + OKI (P1) before and after the intervention of 0.54 cm compared to P0 of 0.4 cm.

The carbohydrate and protein intake data in two groups were analyzed using the paired t-test. Research Result. The analysis showed that the highest protein intake enhancement occurred in the treatment group with a delta of 16.7 g, while the control group was 6.2 points. The carbohydrate intake before treatment was 191,9 g and increased after given comic Isi  Piringku by 193,4 g. Chronic malnutrition in toddlers, especially those with stunted growth, is one of health problems in Indonesia. The stunting cases increased in 2016 compared to a year earlier. The prevalence of stunting in several regions in East Java are still high, especially in Jember. Stunting has an impact not only on the physical growth, but also on the cognitive development and is related to the economic productivity in the future. One of the efforts to encourage the general public to exercise a healthy behavior and to consume balanced nutrition is through health promotion services at Posyandu (unified health services). The component that plays an important role in this case is “kader” (fronts). This study aims to analyze the effectiveness of the simulation of "fulfillment of balanced nutritional needs & utilization of local food" on the knowledge, attitudes and behavior of kader in Panduman-Jelbuk-Jember. The number of samples in this study was 36 kader in Panduman - Jelbuk - Jember. The analysis method used was T-test for normal distribution data, Mann Whitney-U and Wilcoxon for the data that were not normally distributed. Statistical test on the knowledge aspects results in p value 0.126, on attitude 0.740 and on behavior 0.004. Thus, it is concluded that there are insignificant differences in the aspects of knowledge and attitudes between before and after the treatment whereas significant differences occur in the behavioral aspects. However, changes in behavioral aspects leaned exactly towards behavior deterioration, which may be due to a bias in this study.
