One of the most important challenges in the food industry is to provide healthy and safe food. Therefore, it is not possible to achieve this without different processes and the use of various additives. In order to improve safety and extend the shelf life of food products, various synthetic preservatives have been widely utilized by the food industry to prevent growth of spoilage and pathogenic microorganisms. On the other hand, consumers' preference to consume food products with natural additives induced food industries to use natural-based preservatives in their production. It has been observed that herbal extracts and their essential oils could be potentially considered as a replacement for chemical antimicrobials. Antimicrobial properties of plant essential oils are derived from some main bioactive components such as phenolic acids, terpenes, aldehydes, and flavonoids that are present in essential oils. Various mechanisms such as changing the fatty acid profile and structure of cell membranes and increasing the cell permeability as well as affecting membrane proteins and inhibition of functional properties of the cell wall are effective in antimicrobial activity of essential oils. Therefore, our objective is to revise the effect of various essential oils and their bioactive components against Listeria monocytogenes in meat and poultry products.

The need for safe food products amid increasingly perceived widespread use of various foodadditives which are sometimes hazardous to health. Preservative is one of food additives intendedto extend the shelf life of food products. The preservative produced by lactic acid bacteria isbacteriocin. Nisin, one of bacteriocin produced by LAB Lactococcus lactis,is considered safeand allowed its use in many countries, including Indonesia. This preservative is widely used forfood products due to its ability in inhibiting bacteria, especially Gram-positive bacteria such asClostridium botulinum, Staphylococcus aureus, Streptococcus hemolyticus, Listeriamonocytogenes, Bacillus stearothermophilus, and Bacillus subtilis.Nisin works actively at lowpH and can be used singly or in combination with other preservation treatments. Based on itsphysico chemical properties and bioactivity, the use of nisin in fishery products is more suitable infermentation process as well as fish canned in acidic medium such as tomato sauce.

Meeting the needs of food for the community in connection with increasing population and decreasing the number of agricultural areas. resulting in serious problems because the amount of food available is deficient. Based on this, a strategy that needs to be followed up to overcome the food crisis going forward. One of the efforts carried out by the government so far is to optimize the use of community houses as a source of family food. Food is a basic need for human survival, so everyone needs to be guaranteed to get quality and safe food. Food that is not produced properly and can be a source of microorganisms and chemical contaminants that can be dangerous and cause disease to humans. Cases of food poisoning should not need to occur if food products are processed with the correct processing procedures (Badan POM, 2007). Conditions for the fulfillment of food for the state up to individuals, as reflected in the availability of sufficient food, both in quantity and quality, safe, diverse, nutritious, equitable and affordable and not contrary to religion, beliefs, and culture of the community, to be able to live healthy, active, and productive in a sustainable manner (Law No. 18/2012).

One of the most important goals in the sphere of food safety is quality assurance and production of safe food. Nowadays studies devoted to determination of nitrates content in locally produced plant products are of very high priority. Many researches on the influence of nitrates on human health prove that nitrates are one of the external threat sources. Mineral fertilizers can cause harm if improperly stored or used. The authors give comparative characteristics for nitrites content in plant products contrasting regulatory documents in European Union and Customs Union. They point out threshold limit values and their influence on human body. In some samples of cucumbers nitrates content exceeded threshold limit values. Long nitrate consumption even in small amounts is one of the important chemical risk factors for the population health as it decreases organism resistance to the influence of such external environmental factors as ecological and social ones. The research was carried out in South Kazakhstan Region. To conduct the research the authors took the samples of locally produced plant products. They determined the levels of nitrates content in the main local food products, assessed the risks of harmful impact of the controlled nitrates which come with plant products grown in South Kazakhstan Region. The results show that it is necessary to carry out constant control to ensure foodstuff safety. The authors classified food products according to their contribution to the total exposure value. Thus, the authors found out that among locally produced vegetables potato and cabbage had the highest values (61.16% and 12.1% respectively). HQmed and HQ90 values were less than 1. The authors pointed out the main ways to reduce nitrates content in plant products in the article.

The demand for safe, hygienic, organic, and high-quality food products nowadays puts pressure on farmers to produce and practice sustainability. Sustainable agriculture practices (SAPs) are crucial to be implemented on every farm that produced foods to enable the supply of hygienic, safe food products and as a solution of pesticide-residue problems towards a healthier lifestyle. However, the farmers' main challenges towards sustainability and hindering their penetration to the global market are the difficulties in complying with the international standard of quality and certification compliance, such as MyGAP or Malaysian Good Agricultural Practices in cultivating, harvesting, and processing. MyGAP compliance showed that farmers are moving towards sustainable agriculture. This paper was aimed to assess the perception and the factors that influence the Intention to implement SAPs in pepper cultivation among pepper farmers in Sarawak. Descriptive analysis and factor analysis were used to accomplish the objectives of this study. Data collection was through interviews using a structured questionnaire administered on registered farmers under the Malaysian Pepper Board (MPB), planted at least 1 hectare or 2000 pepper trees in Bau and the District of Serian, Sarawak. Systematic stratified random sampling method was used based on the two different districts selected as stratification. The Theory of Planned Behaviour (TPB) was used as the conceptual framework to explain the farmers' behaviour towards SAPs. The results discovered four latent factors influencing Intention to practice SAPs: attitude, subjective norms, perceived behavioural Intention, and Intention, with the value of percentages of variance, explained 13.554%, 27.912%, 12.506%, 8.771%, and 7.703%, respectively. Subjective norms showed a high value of alpha at 0.935, followed by attitude (0.817) and Intention towards Sustainable Agriculture Practices (0.804). The findings provided the pepper farmers with invaluable insight on the advantages of adopting sustainable agriculture practices to expand their business locally and intentionally.

This paper presents the results obtained from the research realized in controlled environmental conditions in a horizontal greenhouse where seedlings from varieties of tomato lines in the process of testing for approval in Romania were used. The research was carried out in a three-factorial experimental scheme, in which were taken into consideration as variation factors: three cultivars of tomatoes, 3 colors of light emitted by the LED bulbs and 3 intervals of time (15, 30 and 45 minutes/day) for plant exposure to the monochromatic additional light treatment. Biometric measurements were made on the height and diameter of the stems and assessments of seedling weight, as well as analyzes on nutrient composition, accumulated after three months of cultivation in the greenhouse. The results obtained are within the limits mentioned by the specialized literature for the best seedlings for the tested varieties of tomatoes.
