Microbial contamination of poultry carcasses can be influenced by many factors during transport and slaughtering. The aim of this study was to evaluate the impact of four processing steps (plucking, evisceration, washing and chilling) on the total viable counts (TVC), counts ofEscherichia coli,Salmonellaspp. andListeriaspp. incidence on broiler carcasses. A total of 160 broiler carcasses originating from one farm were collected during one year period at a Czech slaughterhouse and examined. Both TVC andE. colicounts decreased during processing from 4.6 log cfu/cm2and 3.5 log cfu/cm2to 3.7 log cfu/cm2and 1.8 log cfu/cm2, respectively, with a major impact of washing on TVC and washing and chilling onE. colidecrease (P< 0.001). BothSalmonellaspp. (6 strains) andListeriaspp. (12 strains, none ofL. monocytogenes) were found sporadically in all processing steps followed. However, a decreasing trend was observed inSalmonellacounts andListeriaspp. incidence during the processing. Thus, this study brings new valuable information on the dynamics of microflora during modern poultry processing.

In this study, we evaluated the microbial contamination status of cold dishes consumed by residents of Jilin Province and investigated to determine the incidence of four pathogenic bacteria in cold dishes. A total of 300 samples of cold dishes including meat, vegetable and mixed products, were collected from three different purchasing places: supermarkets, farmers' markets and mobile vendors. Live bacteria were isolated using conventional culture methods. After separation, a quick and easy polymerase chain reaction (PCR) was used to detect Listeria monocytogenes , Staphylococcus aureus , Enterotoxic Escherichia coli and Salmonella . The results showed that the total number of microbial colonies in the vegetable samples exceeded the standard rate of 8%, and the total number of microbial colonies in the meat and mixed samples did not exceed the standard. The total microbial colony count exceeded the standard in all three different procurement sites, with the highest exceedance of 7.4% in the mobile vendor sites. The detection rates of Enterotoxigenic Escherichia coli , Staphylococcus aureus , L. monocytogenes and Salmonella among the four pathogenic bacteria detected in all samples were 4.3%, 3.3%; 3.0%; and 1.0%, respectively. This study can be used to qualitatively assess the microbiological quality associated with cold dishes. It provides data to support the detection of possible food safety problems.

The microbiological quality of 351 samples of nine types of spices including black pepper, caraway, cinnamon, cow parsnip, curry powder, garlic powder, red pepper, sumac, and turmeric, collected from retail shops in Tehran during 2007, was determined. The numbers of aerobic mesophilic bacteria, Escherichia coli, and molds exceeded Iran's National Standard limits, at 63.2% (>5 × 105 CFU/g), 23.4% (>0.3 MPN/g), and 21.9% (>5 × 103 CFU/g) of the studied samples, respectively. Coliform contamination was more than 103 MPN/g in 24.8% of samples. High contamination of retail spices is considered an indication of environmental or fecal contamination due to unhygienic practices in their production. Use of spices with high microbial content could increase the chance of food spoilage and transmission of foodborne pathogens. Accordingly, application of food safety measurements to reduce microbial counts in spices is strongly recommended.
