INFLUENCE OF VARIOUS SPECIES OF TECHNOLOGICAL PROCESSING OF TREPANG ON THE CONTENT OF TRITERPENE GLYCOSIDES AND SELENIUM IN WASTE OF ITS PROCESSING

Исследована возможность использования непищевых отходов разделки трепанга дальневосточного в качестве сырья для производства БАД на основе селена и гликозидов. В качестве объектов исследования использовали отходы переработки Apostichopus japonicus: прианальные участки и венчики с щупальцами и варочные воды. Исследовано содержание селена и гликозидов в трепанге и отходах его разделки, а также содержание и распределение селена и гликозидов при гидротермической и ферментативной обработке трепанга и отходов его разделки. Установлено, что содержание селена в трепанге и отходах составляет 9,0 и 11,5 мкг/г соответственно. Увеличение кратности варки до трех приводит к накоплению селена в варочной воде из трепанга до 30,5 мкг/г, а из отходов – до 107,5 мкг/г. Показано, что при варке трепанга гликозиды высвобождаются активнее. Содержание гликозидов в трехкратной варочной воде из трепанга составляет 162, а из отходов трепанга – 112 мг на 1 г сухого веса. Обоснована суточная дозировка БАД, разработанных по предлагаемым технологическим приемам. Показана возможность использования непищевых отходов, полученных при переработке трепанга, в качестве сырья для производства БАД как источника минорных биологически активных компонентов – селена и гликозидов. The purpose of the study: assessment of the possibility of using non-food waste from cutting trepang as a raw material for the production of biologically active food additives based on the determination of the content and ratio of selenium and glycosides. As objects of the study, the Far Eastern trepang (Apostichopus japonicus), waste from its processing: prianal areas and corollas with tentacles and cooking water were used. The content of selenium and glycosides in trepang and waste from its cutting, as well as the content and distribution of selenium and glycosides during hydrothermal and enzymatic treatment of trepang and waste from its cutting, are studied. It was found that the content of selenium in trepang and wastes is 9,0 and 11,5 мg/g, respectively. An increase in the cooking rate to three leads to the accumulation of selenium in cooking water from trepang to 30,5 мg/g, and from waste to 107,5 мg/g. It is shown that glycosides are more actively released when trepang cooking, in comparison with waste. The content of glycosides in triple cooking water from trepang is 162 mg, and from the waste – 112 mg per one gram of dry weight. The daily dosage for dietary supplements developed based on the proposed technological methods is substantiated. The possibility of using non-food wastes obtained during trepang processing as a raw material for the production of biologically active food additives as a source of minor biologically active components – selenium and glycosides is shown.

The results of studies of the qualitative composition and quantitative content of amino acids (AAs) in the leaves of three plant species of the genus Artemisia, widespread in the Elton region, were presented. Protein AAs were determined on an AAA T-339 amino acid analyzer (Czech Republic) after hydrolysis of a sample in 6N HCl at 105 °C for 24 h, free AAs – on an AAA-400 amino acid analyzer (Czech Republic) in a lithium buffer system. The protein AAs amount varied from 66 mg / g in A. lerchiana to 113 mg / g dry weight in A. santonica. 17 AAs were found in composition of these species, aspartic and glutamic acids were dominant. The content of free AAs varied from 4.4 mg / g in A. santonica to 8.3 mg / g dry weight in A. pauciflora. 14 AAs have been identified, among them proline was the predominant free AA. The share of proline was 75-81% of the total free AAs. Among the minor components, 3-4 compounds with a content above 2% dominated. The free AAs contain 3 non-proteinogenic ones (ornithine, citruline, and γ-aminobutyric acid). A. lerchiana and A. pauciflora species were similar in protein and free amino acids, probably due to the same growing conditions. A high level of free proline, together with a complex of biologically active substances in Artemisia species, which grow abundantly in the Elton region, allow to consider the possibility of their use as a medicinal raw material.

Damage to the tendon-ligamentous apparatus places serious limitations on a personʼs physical activity. Injuries are especially common in physically healthy people leading an active lifestyle, such as athletes. To treat such injuries in orthopaedics and traumatology, autoplastic operations are performed or prostheses made of synthetic or biological materials are installed. The known treatment methods, in spite of their effectiveness, have a number of serious drawbacks, which often limit their use. Therefore, the search for new approaches and materials for plastic ligaments is an urgent task. Today, biotissue prostheses are accumulating advantages over their synthetic counterparts. The most promising raw material for biological ligament prostheses, due to its availability in the required quantity and optimal size, is the flexor and extensor calf tendons. This paper aimed to develop a method for treating xenogenic tendon to manufacture ligament prostheses and assessing its biocompatibility in a heterotopic implantation model. To manufacture a ligament prosthesis, the raw material was subjected to mechanical cleaning and chemical-physical treatment, as well as treatment with supercritical carbon dioxide fluid with the addition of the nonionic surfactant Tween 80, which together contributed to effective decellularization and removal of other biologically active components, while maintaining the physical and mechanical parameters and natural fiberarchitectonics of native raw materials. The biocompatible properties of ligament prosthesis specimens made from the flexor and extensor calf tendons using this method were evaluated in a model of heterotopic implantation into the subcutaneous adipose tissue of rats. The results obtained confirm the promising use of this material, treated according to the proposed method, in clinical practice.

The content of the major groups of biologically active substances in flowers of 7 Campanula species, cultivated in the forest-steppe of Western Siberia, were investigated for the first time. Freshly collected flowers were found to contain 0.06-0.15 % of catechins, 0.31-3.17 % of flavonols, 3.31-6.47 % of tannins, 3.10-15.57 % of pectic substances, and 0.66-16.4 mg% of carotenoids calculated per absolute dre weight of raw material. The amount of ascorbic acid was 36.9-114.0 mg% per wet weight. The data indicate that Campanula flowers are promising for the production of phenolic compounds, the development of food additives and fresh consumptions a seasoning.

Introduction. With the development of the food and processing industry, the matter of environmental pollution is becoming more and more acute. Environmental protection is based on the principle of rational use of natural resources and sustainable technology. Vegetable pomace is a secondary raw material; its amount depends on the production technology and equipment. The observed positive trend in the gross harvest of vegetables in open ground can increase the number of vegetable processing enterprises and the capacity of existing enterprises. Eventually, waste will start accumulating at processing sites, and it will have to be used as raw materials. The present paper features the content of biologically active substances in pomace of carrots and beets grown on the territory of the Siberian region and introduces options for their further use in functional foods. Study objects and methods. The research featured carrot pomace of the varieties Losinoostrovskaya, Nantskaya, and Queen of Autumn, as well as beet pomace of varieties Cylinder and Bordeaux. All the samples were harvested in the Kemerovo region in 2019. Determination of physical and chemical parameters was carried out using standard methods. Carotenoids, flavonoids, β-cyanine were studied using spectrometry and photocolorimetric method. Results and discussion. The experiment featured the content of bioactive substances in pomace of carrots and beets obtained during industrial processing. The content of carotenoids in carrots (mg of β-carotene per 100 g of dry weight): for Losinoostrovskaya variety – 23.56 ± 0.23; Nantskaya – 25.32 ± 0.18; Queen of Autumn – 20.78 ± 0.25. Flavonoid content (mg of catechol equivalent per 100 g of dry weight): Losinoostrovskaya – 12.02 ± 0.37; Nantskaya – 13.45 ± 0.56; Queen of Autumn – 11.50 ± 0.48. The content of β-cyanine in beets (mg per 100 g of dry weight): Cylinder – 100.0 ± 8.5; Bordeaux – 35.0 ± 1.8. The nutritional value of carrot and beet pomace with a mass fraction of moisture was 10%. The nutritional value of vegetable pomace is due to the high content of dietary fiber; therefore, the raw materials can be considered for functional food production. The content of biologically active substances in vegetable pomace (flavonoids, carotenoids, β-cyanines) can enhance the functional orientation of this secondary raw material when used in food technologies for the production of food of high nutritional value. Conclusion. The results obtained will make it possible to use the biochemical potential of plant raw materials in many aspects, as well as to obtain new functional food products, thereby expanding the range of healthy foods.

The use of phytopowders as food additives allows you to create highly nutritious mixtures with a pronounced taste and aroma of fresh fruits and berries. Fruit and berry powders are already used in the production of jelly, fruit drinks, drinks, juices and sauces based on domestic plant raw materials with a high proportion of biologically active substances. The most important phytonutrients of sea buckthorn fruits (Hippophae rhamnoides L.) are carotenoids, flavonoids, anthocyanins, sugars, organic and amino acids, tannins and pectin substances, phospholipids, macro- and microelements. The aim of the research was to study the quality and nutritional value of freezedried sea buckthorn powder. Sublimated sea buckthorn was the object of study (TU 10.39.25-007-0111115841-2018) manufactured by IP A.N. Mazurina (Russia, Kaluga region, Borovsky district, Borovsk). The quality of packaging and labeling, as well as organoleptic characteristics, nutritional value and mineral composition of raw materials have been studied. It was determined that the marking of sublimated sea buckthorn does not comply with the regulated requirements of GOST R 51074-2003 and TR CU 022/2011. Organoleptic characteristics of phytopowder are identified as characteristic of this type of raw material. The actual protein and fat content of the test material does not correspond to the levels stated by the manufacturer. The studied raw materials are distinguished by a variety of chemical composition, namely, the content of protein, carotenoids, vitamins E and A, lipids, dietary fiber, unique trace elements – Al, Co, Cr, Cu, Fe, Li, Mn, Ni, Ti, Zn.

The leading direction in the field of nutrition is the creation of a range of products that contribute to improving health when they are used daily in the diet. The urgency of studying bovine colostrum-colostrum, which is an immune-modeling animal raw material, has been substantiated. Colostrum is a natural source of all the ingredients needed to build immunity. Biologically active substances contained in cow colostrum contribute to: restoration of immunity; restoration of the intestines and stomach; strengthening the nervous system; renewal of brain cells; improving emotional tone and mood; increasing vitality and performance; slowing down the aging process; protection against diseases of the intestines and stomach, cardiovascular system, respiratory tract, diabetes, allergies, osteoporosis and a number of other diseases. Colostrum contains a minimum of 37 immune factors and 8 growth factors that help the body fight disease and promote good health and longevity. The classes of immunoglobulins contained in colostrum, which represent the bulk of whey proteins, have been studied. Colostrum is a limited source of raw materials, its production period is short, there are many opportunities for industrial use, but due to the small amount of raw materials, the market remains undeveloped, with the exception of food additives. Taking into account the extensive therapeutic and medicinal properties of colostrum, its unique composition and properties, its composition and physicochemical properties were investigated, the fractionation parameters were determined using various systems. To process the experimental studies, the STATISTICA 12 software package was used. To obtain the regression equation, the matrix data were processed using the Microsoft Excel 2010 software package. The analysis of the data obtained indicates the possibility and prospects of using colostroma in food production technology.

Data on distribution, stocks of commercial and potentially commercial brown algae in the Sakhalin-Kuril region, their extraction, industrial processing, and chemical composition are presented. It is shown that for the preservation of biologically active substances and technically valuable components of laminaria, the use of an IR dryer for its preservation at LLC FIG «BINOM», Aniva, Island Sakhalin was an innovative technological solution. The products that are produced at this enterprise, in particular, dried shredded laminaria (IR drying), dried thalloms in heat dryers equipped with gas air heaters with forced air circulation are high — quality products containing all the biologically active components of natural brown alga. Expanded quality indicators of dried products from the laminaria of Sakhalin-Kuril region are presented. Based on the obtained data, recommendations were developed for the integrated use of algae as an annually renewable aquatic biological resource, traditionally extracted and used as raw materials in the production of food products and biologically active substances. It is shown that, despite the significant reserves of kelp in the far Eastern seas of Russia, they are currently poorly developed by fishing, with the exception of the coastal zone of Western Sakhalin.

Summary Southern sweet-grass (Hierochloë australis /Schrad./ Roem. & Schult., Poaceae), commonly known as a bison grass, is a perennial tuft grass rarely occurring in mixed forests in Eastern and Northern Europe. The raw material collected from this plant are leaves rich in coumarin compounds (especially coumarin) responsible for sweet, specific aroma of these organs. In Poland, southern sweet-grass leaves are used mainly for alcohol products aromatisation. Growing demand for the raw material results in uncontrolled and excessive collecting of this plant. The best way to solve this problem is to introduce this plant into cultivation. Since southern sweet-grass is allogamous and heterozigotic, strong intraspecific variability of the species is observed. Fourteen clones of selected individuals from one population of southern sweet-grass naturally occurring in East Poland were compared in respect of morphological traits as well as accumulation of biologically active compounds. The clones differed significantly in the weight of leaves (3.76-22.59 g of air-dry weight per plant). The total coumarin content (determined by a spectrophotometric method) in this raw material for investigated clones ranged from 1.49 to 1.94%, flavonoids - from 0.25 to 0.55%, and phenolic acids - from 0.20 to 0.42%. Three coumarin compounds were identified by HPLC, namely coumarin, 3,4-dihydrocoumarin, and o-coumaric acid. The content of coumarin ranged from 84.00 to 310.85, 3,4-dihydrocoumarin: from 17.80 to 168.45, and o-coumaric acid: from 37.50 to 70.00 mg · 100 g-1 dry matter.

AbstractDevelopment trends need the necessity for wider use of the local resources and available natural materials are one of the priorities around the world. Freshwater sapropel is a common material in the water basement of the lakes, but still not sufficiently explored. The main goal of the project to start detailed and systematic research on the medical properties of sapropel to be obtained in Latvia, promote its scientifically based use in balneology, develop new medical procedures and services, and promote development of new exportable products. The results include the survey, sampling depths, and processing, evaluation of external signs, physical, chemical, and biochemical parameters, and evaluation of microbiological indicators. Active components from the sapropel samples extracted using the alkaline method. Sapropel extracts were characterized by organic carbon content, humic and fulvic acid concentrations, total phenolic content, trace metal and pesticide concentrations, total antioxidant status, and microbiological flora. Summarizing the article's main findings it was concluded that Latvian freshwater sapropel can be used as raw material for obtaining sapropel extract and use it in the preparation of pharmaceuticals and promote the development of new exportable products and services.

Abstract Drone brood homogenate and compositions based on it are gaining popularity as functional food products and biologically active food additives. It has antioxidant, androgenic, anabolic, sedative, antidepressant, immunotropic, cosmetic and other properties. Royal jelly and drone brood have a pronounced biological activity, as they contain a large amount of decenoic acids, sulfhydryl groups, proteins, peptides and other biologically active substances. The possibility of expanding the spectrum of biological activity determines the relevance of developing a product containing a composition of drone brood and royal jelly. A significant superiority of the safety of biologically active substances in adsorbed drone brood and royal jelly in comparison with lyophilized ones was shown, which indicates the preferred method of stabilizing the combined product. The purpose of the work was to compare two technological methods for preparing a combined product. The first method consisted in the joint adsorption of royal jelly and drone brood, and the second - in separate adsorption and drying, followed by joint dry granulation of the components. It is shown that the differences in the physicochemical characteristics of products obtained by different methods are insignificant. The composition has intermediate values of physicochemical indicators between drone brood and royal jelly.
