COMPARATIVE CHARACTERISTICS OF COW AND GOAT MILK COMPONENT BY MIR-SPECTROSCOPY

На основе анализа компонентного состава молока проведено изучение белковой и жировой фракций, метаболитов веществ и соматических клеток для голштинизированных черно-пестрых коров и карачаевских коз в сравнительном аспекте. Молоко коров предназначалось для переработки, а молоко коз использовалось для выкармливания козлят. В этой связи представляет интерес использование экспресс-метода инфракрасной (ИК) спектроскопии для исследования точности прогностической модели анализа молока от разных видов животных, в частности, для определения в образцах содержания жирных кислот (ЖК). Скрининг молока по 25 показателям выполняли с помощью анализатора CombiFOSS 7 DSCC. Установлено, что в молоке коз было достоверно больше жира и белка, насыщенных ЖК (69,59% против 65,67% в коровьем) и более значимых для питания человека полиненасыщенных ЖК (4,05% против 3,66% у коров). Коэффициент детерминации показал высокую значимость совокупных факторов, включенных в GLM-уравнение, для массовой доли лактозы (23,9%), короткоцепочечных ЖК (28,1%), ацетона (24,3%), бетагидроксибутирата (37,9%), точки замерзания молока (46,0%) и мочевины (85,1%). Корреляции между компонентами имели биологическую направленность, характерную для процессов синтеза молока в организме жвачных животных. Проведенный комплексный анализ показал перспективность ИК-спектров для использования как в менеджменте стада коров и коз, так и в накоплении информации для изучения генетической детерминации процессов образования молока у сельскохозяйственных животных. The protein and fat fractions, metabolites and somatic cells count for Holsteinized Black-and-White cows and Karachai goats were studied by in a comparative aspect. The cows’ milk was intended for processing, and milk of goats was used to feed the goatlet. In this regard, to use the express method of infrared (MIR) spectroscopy to study the accuracy of the predictive model for analyzing milk from different animal species, in particular, to determine the content of fatty acids (FA) was interesting. Milk screening for 25 parameters was performed using a CombiFOSS 7 DSCC analyzer. It was found that under the same paratypical conditions, there was significantly more fat and protein in goat milk, however, in terms of lactose content, milk pH values were higher in cows’ milk. Goat milk has a higher content of saturated FAs (69.59% opp. 65.67% in cow milk) and polyunsaturated FAs that are more significant for human nutrition (4.05% opp. 3.66% in cows). The determination coefficient showed the high significance of the aggregate factors included in the GLM equation for the lactose percentage (23.9%), short-chain FA (28.1%), acetone (24.3%), betahydroxybutyrate (37.9%), milk freezing point (46.0%) and urea (85.1%). The correlations between components had a biological orientation that characterized for the milk synthesis processes into the body of ruminants. The analysis showed that MIR spectra are promising for use in the management of a herd of cows and goats, and in the information accumulation for studying the genetic determination of milk processes synthesis in animals.

Sheep and goat farming is returning back into the Czech Republic (CR) because of positive effects of alternative milk consumption on human health. Especially the elements Ca and Mg are important for nutrition. Paper presents the comparison of mineral milk composition of goats (White short–haired–W, n = 60), sheep (Tsigai–C, n = 60) and cows (Holstein–H, n = 36; Czech Fleckvieh–B, n = 93). Cow milk results were considered as reference. The herds were kept at altitude 260 m (H), 360 m (B), and 572 m above sea level (W, C) with total precipitation 449, 700 and 1200 mm per year and mean air temperatures 9.6, 7.0 and 3.7 °C. Bulk milk samples (4–8 animals in sample) from the first two thirds of the lactation and the winter and summer season were investigated. Goat milk freezing point differed from other species (P < 0.001), −0.6048 for C < −0.5544 W < −0.5320 H < −0.5221 °C for B. Cow milk Ca values were comparable to former results although milk yield (MY) was higher. Along lower MY the Ca was higher (1299.6 > 1172.0 mg . kg−1; P < 0.001) in B than H, similar trend was in Mg (122.0 > 107.4 mg . kg−1; P<0.001). Differences (P > 0.05) between species were in Ni and also mostly in Cu. Iodine results differed between species but not between cow breeds (P < 0.001; 462.8 H and 434.9 B > 126.0 W and 164.2 μg . l−1 C). It could be explainable by using of I disinfection at teat treatment in cows and absence of treatment in small ruminants. Macroelements were mostly highest (Ca, P, Na, Mg) in sheep milk, with exception of K. Phosphorus values (950.1 H, 1016.9 B, 1042.6 W and 1596.7 mg . kg−1 C) in species were linked with crude or true protein and casein values. Small ruminant milk could be good source of minerals for human nutrition, especially in the case of Ca and Mg of sheep and goat milk.

The aim of this study was to monitor the impact of heat treatment variables on the freezing point of cow and goat milk. The freezing point (FP) was established in 30 bulk tank samples of goat milk and in 30 bulk tank samples of cow milk which were subject to laboratory heat treatment at temperatures of 72 °C (A), 85 °C (B), 95 °C (C), with the same exposition times of 20 s. Freezing point measurements of raw and heat-treated milk were carried out in compliance with the Standard CTS 57 0538 by a thermistor cryoscope. The FP of raw cow milk increased with heat treatment from the initial values of -0.5252 ± 0.0114 °C (O) by 0.0023 °C (A), 0.0034 °C (B) and 0.0051°C (C). Changes in FP values of goat milk were detected, from its initial value of –0.5530 ± 0.0086 °C there was an increase in the FP depending on the mode of heat treatment due to pasteurization by an average of 0.0028 °C (A), 0.0036 °C (B) and 0.0054 °C (C). The dynamics of the changes were similar both in goat and cow milk. Freezing point values in cow and goat milk differed (P ⪬ 0.01) when compared to the freezing point of untreated milk after the individual interventions as well as when compared between each other. An increase in the heat treatment temperature of cow and goat milk causes an increase in the freezing point (a shift towards zero). These results can be used in practice for checking the raw material in dairy industry.

Shukra dhatu is meant for procreation, its Kshaya (diminution) causes Male Infertility. Shukra dhatu is formed by the transformation of Aahara rasa (food) with the help of Agni (digestive fire). Aahara is one of three important sub pillars which supports life. Ksheera is Satmya (wholesome), and it is Dhatu Vardhaka (nourishes the body tissues), Rasayana (rejuvenation), Vajikarana / Vrushya (aphrodisiac), generally indicated in Shukra Doshas (sem- inal disorders). Aja Ksheera (Goat milk) attributes Laghu (light), Balya guna (Strength promotor) along with Deep- ana (kindles the digestive fire), Grahi Karma (absorptive) praised for its Sarva-Vyadi Hara (cures all ailments) and Shukrala karma (spermatogenic measure). It is easily digestible when compared to Goksheera (cow milk) and it is a good source of essential fatty acids such as linoleic, vitamin A, and trace elements like Zinc, Mg which are essen- tial factors for the production of sperm and male hormone. Formulations of Aja Ksheeera namely Chagaladya ghrutha, Tilagokshuradi yoga possess Vrushya property and are indicated in Nastashukra (diminution of semen), Shukra Nisarana, Shanda (impotency) conditions. The Guna Karma of Aja Ksheera along with its rich nutritive value supports the spermatogenesis thus it can be considered in the treatment of Shukrakshaya as Aahara as well Aushadha. Abstract This study was conducted to obtain an alternative more economical and healthier milk substitute feed by adding whey powder and propolis to cow's milk in goat kid rearing. 40 Saanen goat kids born in the same period and were divided into 4 groups 7 days after thei birth. The kids were divided into 4 groups 10 by 10 into control group (CG) who were kept together with their mothers and into experimental groups 1-2-3 (EG1,EG2, EG3) who were kept in seperate sections. Kids in all three experimental groups were fed only with the formula (cow milk+whey powder+water). In the EG2 and EG3, the kids were given 0. 4 cc and 0. 2 cc propolis respectively in addiditon of the formula once a day. Some growth and development parameters and rectal temperatures of the kids were measured once a week and morning and evening diarrhea scorings were taken in all groups. Some biochemical and hematological analyzes were performed. According to all the results obtained, the differences in the body temperatures and in the glucose and urea values among the groups were found to be significant and the other characteristics were statistically significant (P<0.05). The insignificant difference between the average growth and development parameters of the kids in the CGs in the CG was an important finding in growing kids more economically and reserving the goat milk for more profitable procedures. According to the diarrhea scores, it was observed that propolis was effective on diarrhea and it was concluded that it could be used in growing kids as a preventive measure. Feeding kids with the formula was found more economical than feeding them with mother-milk. As a result of this study, it could be suggested that the use of milk replacers containing whey and propolis will positively affect the growth, the development and the health of the goat’s kids.

It has been experimentally proven that the strength and direction of the connection between the linear type traits evaluation of the Ukrainian black-and-white dairy breed cows and their body build depends on the type of the build and the sign of the exterior. The study was conducted in 2018 on a breeding plant of the Ukrainian Black-and-White Dairy breed SPC named Shchorsa in Kiev region (n=89). Differentiation of cows on types of their body build was conducted by the method proposed by Chernenko (low-capacity, mid-capacity and high-capacity types) and Kolesnik (by the massiveness index – on the friable and dense, the bone index – delicate and rough, the wide-breast and wide-rump indices – on narrow-body and wide-body types). It was found that the cow-heiferswere well-developed, had intermediate stature and optimum body condition score, deep body, and wide, slight slope rump. They alsohad desirable rear legs, set and foot angle but some toe-out, the udder was well-balanced. Under the good total score of the exterior of studied cows there were some animals with short stature (134– 136 cm), very wide rump, straight rear legs side view and toe-out, extremely steep foot angle, loose fore udder attachment, deep udder below hocks and front teat placement inside of quarter. The degree of development of the studied linear traits of cow-heifers confirms their in-herd variability. The variability of the exterior traits varies from 10,7 % (body depth) to 38,6 % (stature). In addition to the stature of a significant variability was characterized of angularity (22,4 %), rear legs set (22,5 %), body condition score (21,8 %), as well as traits that describe udder: rear udder attachment (31,4 %), udder depth (32,6 %) and front and rear teat position (31,3 % and 25,1 %, respectively). The high variability of linear traits indicates the possibility of effective their selection. As a result of the research, it has been established that the strength and direction of the correlations between the linear type traits evaluation of Ukrainian Black-and-White Dairy breed cows and the type of their body build depends on the type of the body build and the linear trait. The low-, mid- and high-capacity bodies build types (according to Chernenko) reliably correlate with chest width (r=0,58) and body depth (r=0,48), rear legs rear view (r=0,30), the central ligament (r=0,28), udder depth (r =-0,22) and teat length (r=0,25), P˂0,01–0,001. Friable and dense bodies build (according to Kolesnik) were most strongly associated with stature (r=-0,28), chest width (r =-0,70), and body depth (r=-0,38), as well as with rear legs rear view (r=-0,23), P˂0,05...0,001; delicate and rough bodies build – with stature (r=-0,51), angularity (r=-0,22),rump width (r=-0,35), udder depth (r=-0,27) and rear udder attachment (r =0,20), P ˂ 0,05–0,001; narrow-body and wide-body types – with chest width (r=0,30) and rump width (r=0,23), P˂0,05–0,01. Linear type trait evaluation of cows depends on the body build. The strength and direction of the correlations between types of body build and linear traits showed that the most informative is the classification of the body build by low-, mid- and high-capacity according to Chernenko – on the average η2x=17,5 %. The less informative – by narrow-body and wide-body types according to Kolesnik – η2x=7,6 %. The classification of cows on delicate-rough, narrow-body and wide-body types (according to Kolesnik) according to informativeness and reliability can have the intermediate position – η2x=10,0–11,5 %. The strongest influence on the body build has the cows’ height (η2x=27,9 % on average for all studied types of body build), chest width (η2x=33,5 %), body depth (η2x=21,8 %), rump width (η2x=24,1 %) and rear legs (η2x=18,7 %). The presence of the body colour polymorphism in the tropical invasive pest giant African snail is reported for the first time from South India. Three different body colour polymorphs were recognised viz. grey, black and white. The grey body colour is the most common polymorph. The black and white colour polymorphs are found to be in almost equal proportions in the reported localities with the grey counterparts. The cytochrome oxidase subunit I (COI) sequences of the three colour polymorphs are found to be identical. The presence of the body colour polymorphism in south India may be attributed to the avian predation and other selection pressures.

In this research work the concentration of zinc, copper, lead, chromium, cadmium, and nickel in cow milk samples obtained from four different grazing areas   (kakuri, kudendan, malali, kawo) of Kaduna metropolis. The samples were digested by wet digestion technique .The trace element were determined using bulk scientific model VPG 210 model  Atomic Absorption Spectrophotometer (AAS).. The concentration of the determined heavy metal were The result revealed that Cr,  Ni and Cd were not detected in milk samples from Kawo, Malali  and Kudendan whereas lead (Pb) is detected in all samples and found to be above  the stipulated limits of recommended dietary allowance (NRC,1989) given as 0.02mg/day. Cu and Zn are essential elements needed by the body for proper metabolism and as such their deficiency or excess is very dangerous for human health. However, they were found in all samples and are within the recommended limits while Cd (2.13 – 3.15 mg/kg) in milk samples from Kakuri was found to be above such limit (0.5mg/day). Cow milk samples analyzed for heavy metals in this research work pose a threat of lead and cadmium toxicity due to their exposure to direct sources of air, water and plants in these grazing areas, thereby, resulting to a potential health risk to the consumers.

The estimation of the first-born cows of Ukrainian Black-and-White dairy breed by the exterior type in the leading breeding herds of Cherkassy region by the method of linear classification (n = 566) has been carried out. The results of the evaluated animals by the 100-score system indicate that within the group of traits, the average level of assessment is "good with the plus". The animals have been differed by the good development of group features characterizing the dairy type (82.4 score), body condition (83.5 score), limbs (82.8 score), udder (82.7 score) and overall score (82.8 score). The degree of development 18 descriptive traits of the exterior of cows, has been predicted by the method of linear classification, indicates their significant intraherd variability. Animals have the moderate height, deep body and angularity. The rump angle, the angle of hock joint and the teats length, according to the variability of scores in the range of 17.8–22.4%, have an average optimal development. The level of scores for the rear width (5.9 score), attachment of the fore (6.3 score) and the rear parts (6.0 score) of the udder testifies to their good development. The body structure of the cows-firstborn has a sufficient description of the type traits that determine their milk yield. At the present stage of selection and breeding work due to the use of bull-sires different origins and breeding value on the local population livestock with significant genotype diversity, the degree of influence each of the hereditary factors in the overall variability of linear features has a scientific and practical significance. In our studies, the force of influence conditional bloodiness of the Holstein mother's breed in the overall fraction of variability of linear type traits within the exterior complexes and the overall assessment takes a significant percentage - from 24.9 to 31.5 with a high degree of reliability according to Fischer's criterion. Among the descriptive traits, the proportion of influence the conditional bloodiness of mother, which is confirmed by high statistical confidence, ranges from 14.4 to 19.8%, and refers to the traits important for breeding. The level of coefficients of influence the father's breeding value in the total phenotypic variability for some of the linear traits is high and reliable. First of all it concerns group traits of the exterior, the development of which is determined by the pedigree value of father by 37.1–41.8%, and the overall assessment of type – by 46.6%. The coefficients of influence father's breeding value in most of the descriptive traits have high reliability (P < 0,001). The coefficients of the force of influence father, depending on the heredity of Holstein for the linear traits of almost the same level as his pedigree value. Since in this case the organized factor is purebreed Holstein and crossbreed bulls-sires of domestic selection, the positive role of Holstein heredity in improving the exterior type of cows has been traced realistically. The necessity of linear breeding, as an effective method in the system of dairy cattle breeding, has been substantiated by reliable values of the coefficients of the force of influence of father's line on the linear traits of offspring (3.4–29.5%). Despite the significant variability of coefficients of the force of influence on the linear traits, most of them have a high level of reliability within the evaluated body parts important for selection. The effect of cows belonging to the maternal line on the development of features of the body structure is insignificant and unreliable (5.3–9.2%). In the process of breeding aimed at improving cows of dairy herd by the exterior type, the pedigree value of parents has been assessed according to the method of linear classification of their daughters and their belonging to perspective genealogical formations.

The family Ciconiidae comprises 19 extant species which are highly social when nesting and foraging. All species share similar morphotypes, with long necks, a bill, and legs, and are mostly coloured in the achromatic spectrum (white, black, black, and white, or shades of grey). Storks may have, however, brightly coloured integumentary areas in, for instance, the bill, legs, or the eyes. These chromatic patches are small in surface compared with the whole body. We have analyzed the conservatism degree of colouration in 10 body areas along an all-species stork phylogeny derived from BirdTRee using Geiger models. We obtained low conservatism in frontal areas (head and neck), contrasting with a high conservatism in the rest of the body. The frontal areas tend to concentrate the chromatic spectrum whereas the rear areas, much larger in surface, are basically achromatic. These results lead us to suggest that the divergent evolution of the colouration of frontal areas is related to species recognition through visual cue assessment in the short-range, when storks form mixed-species flocks in foraging or resting areas.

AbstractGoat milk is a source of nutrition in difficult areas and has lesser allerginicity than cow milk. It is leading in the area for nutraceutical formulation and drug development using goat mammary gland as a bioreactor. Post translational modifications of a protein regulate protein function, biological activity, stabilization and interactions. The protein variants of goat milk from 10 breeds were studied for the post translational modifications by combining highly sensitive 2DE and Q-Exactive LC-MS/MS. Here we observed high levels of post translational modifications in 201 peptides of 120 goat milk proteins. The phosphosites observed for CSN2, CSN1S1, CSN1S2, CSN3 were 11P, 13P, 17P and 6P, respectively in 105 casein phosphopeptides. Whey proteins BLG and LALBA showed 19 and 4 phosphosites respectively. Post translational modification was observed in 45 low abundant non-casein milk proteins mainly associated with signal transduction, immune system, developmental biology and metabolism pathways. Pasp is reported for the first time in 47 sites. The rare conserved peptide sequence of (SSSEE) was observed in αS1 and αS2 casein. The functional roles of identified phosphopeptides included anti-microbial, DPP-IV inhibitory, anti-inflammatory and ACE inhibitory. This is first report from tropics, investigating post translational modifications in casein and non-casein goat milk proteins and studies their interactions.
