Surimi is an export product and has a high economic value because it has high quality content, but surimi products can be contaminated. This study aims to determine the moisture content, pH, Total Plate Count, and Salmonella from self-made surimi of tuna fish and surimi from retailed store. The value of self-made surimi is 820 cfu/g as from supermarkets is 120 cfu/g but it meets the Indonesian National Standard, which is max. 50,000 cfu/g. The pH value for self-made surimi is 6.36, and for surimi from retailed store is 7.36. The moisture content of homemade surimi was 75.83% while surimi from retailed store was 70.33%. Furthermore, there is no Salmonella detected of surimi both sample. It can be concluded that both samples can be consumed after proper cooking. Surimi adalah produk ekspor dan memiliki nilai ekonomi tinggi karena memiliki konten berkualitas tinggi, tetapi produk surimi dapat terkontaminasi. Penelitian ini bertujuan untuk menentukan kadar air, pH, Angka Lempeng Total, dan Salmonella dari surimi buatan ikan tuna dan surimi yang diambil dari supermarket. Hasil penelitian menunjukkan bahwa rendemen ikan surimi Tuna adalah (63,50%). Nilai surimi buatan sendiri adalah 820 cfu/g karena dari supermarket adalah 120 cfu/g tetapi memenuhi Standar Nasional Indonesia, yaitu Max. 50.000 cfu/g. Nilai pH untuk surimi buatan sendiri adalah 6.36, dan untuk surimi yang diambil dari supermarket adalah 7.36. Juga, ini menunjukkan bahwa pH surimi buatan rumah bersifat asam sementara surimi dari supermarket basah. Nilai rata-rata untuk kadar air surimi buatan sendiri adalah 75,83% dengan surimi diambil dari supermarket yaitu 70,33% karena surimi diambil dari supermarket, memiliki kadar air lebih rendah dari surimi buatan sendiri. Produk dapat dikonsumsi dengan aman setelah proses pemasakan yang benar

Instant spices is a mixture of several spices that are young to be found in the market at an affordable price, and are usually used immediately as a cooking spice for certain foods. This study aims to determine the quality of the "Base Genep" instant spices sold in the East Denpasar Market. This research is a descriptive study using survey and experimental methods in the laboratory. The number of samples to be studied was 44 samples from 81 populations. The variables in the study were moisture content, pH, Escherichia coli, Total Plate Count (TPC) and mold. The results showed that from 44 samples of "Basa Genep" instant seasoning water content test results obtained were 21.62% - 23.707%, while the pH value of 44 samples of "Basa Genep" instant spice was obtained between 2.2-2.5 so that it meets the requirements.

Abstrak.  Suatu penelitian telah dilakukan untuk mengetahui efek agitasi susu probiotik yang ditambahkan buah naga merah (Hylocereus Polyrhizus). Penelitian ini dilakukan di Laboratorium Ilmu dan Teknologi Pengolahan Susu Fakultas Pertanian Universitas Syiah Kuala pada tanggal 29 April - 31 Mei 2016. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) pola faktorial 2x4 dengan 3 kali ulangan yang terdiri dari 2 faktor, A, agitasi yaitu (A1) dan (A2) non agitasi. Dan faktor B yaitu konsentrasi buah naga merah (B1) 20%,  (B2) 25%,  B3 (30%) dan (B4) 35%. Parameter yang diamati adalah derajat keasaman (pH), total mikroba dan uji organoleptik. Hasil penelitian menunujukkan bahwa terdapat pengaruh yang sangat nyata (P0,01) terhadap derajat keasaman (pH) dan berpengaruh nyata terhadap total mikroba (P0,05) serta terdapat interaksi antara kedua perlakuan. Sedangkan untuk uji organoleptik terdapat pengaruh yang sangat nyata (P0,01) terhadap kekentalan dan warna susu probiotik.  nilai derajat keasaman pH 4,03 - 4,11 dengan agitasi (pengadukan) masih sesuai dengan standar (SNI) 01-2981-1992. Sedangkan nilai total mikroba optimal terjadi pada penambahan buah naga sebanyak 30% baik agitasi maupun non agitasi. Effects of Milk Probiotic Agitation Added Red Dragon Fruit (Hylocereus Polyrhizus) on Sensory Test and Total Plate Coun Abstract.  A study about effects of milk probiotic agitation added red dragon fruit (Hylocereus Polyrhizus)  has been conducted to determine to test sensory and total plate count. This research was held at the Laboratory of Science and Milk Processing Technology, Agriculture Fakulty Syiah Kuala University on April 29 to May 31, 2016. This study used a completely randomized design (CRD) 2x4 factorial design with three replications consisting of two factors, A, agitation (A1) and (A2) non agitation. And factor B is the concentration of red dragon fruit (B1) 20%, (B2) 25%, B3 (30%) and (B4) 35%. The observed parameter is the degree of acidity (pH), total microbial and organoleptic tests. The results of the study indicate that the there is a  highly significant influence (P 0,01) to the degree of acidity (pH) and total significantly affected the total microbial (P 0.05), and there is interaction between the two treatments. As for organoleptic tests are highly significant effect (P 0.01) the thickness and color of probiotic milk. acidity pH value of 4.03 to 4.11 with agitation (stirring) is still in accordance with the standard (SNI) 01-2981-1992. While the total value of optimal microbial occurred upon addition of dragon fruit by 30% both agitation and non agitation

This study was conducted to determine the proximate composition, bioactive compound and total plate count (TPC) in Gracilaria edulis seaweed. This research used descriptive explorative method. The results showed the average value of moisture content (77.7%); protein content (39.4%); fat content (8.1%); carbohydrates by difference (71.7%); ash content (20.7%) and very low bacterial count. Phytochemical test results show this seaweed contains alkaloids, saponins, flavonoids, and triterpenoids compounds. Penelitian ini dilakukan untuk mengetahui komposisi proksimat, senyawa bioaktif dan angka lempeng total (ALT) pada rumput laut Gracilaria edulis. Penelitian ini menggunakan metode penelitian deskriptif eksploratif. Hasil penelitian menunjukkan nilai rata-rata kadar air (77,7%); protein (39,4%); kadar lemak (8,1%); karbohidrat (71,7%); kadar abu (20,7%) dan jumlah bakteri yang sangat rendah. Hasil uji fitokimia menunjukkan rumput laut ini mengandung  senyawa alkaloid, saponin, flavonoid, dan triterpenoid.

Food preservation is very important for the quality and safety of the meat and its product. In present study, the fresh beef were storaged in three different conditions, which including superchilling (-1 °C), chilled (4 °C) and frozen (-18 °C) preservation, respectively. The pH value, total plate count, thiobarbituric acid-reactive substances value (TBARS), total volatile basic nitrogen (TVB-N) and color were also determined. The result showed that after 8 days storage, the chilled beef decayed seriously, the frozen beef had no conspicuous changes, and the beef under supperchilling condition could extend the shelflife to 20 days and also maintained higher quality. To some extent, superchilling storage represent an advantage over traditional chilled and frozen storage, it is a good way to preserve freshness of fresh products and the raw material before processing, and also could have great effect on improving the quality characterizes of beef and prolong its shelf life.

This study aims to determine the proximate and total bacterial of dry salted scad fish (Decapterus sp.)dried using a closed solar drying sistem. The research method begins with fish weed in ‘butterfly’ thenwashed using flowed water and immersed in 15% salt solution for 30 minutes. The drying method was aclosed sun drying cabinet sistem, with 3 drying racks named Rack 1, Rack 2 and Rack 3 starting from thebottom. The dried salted fish was analyzed its proximate consisting of moisture content, ash content, fatcontent and protein content, as well as bacterial tests using Total Plate Count (TPC). The results showedthat the proximate values on Rack 1, Rak2, and Rack 3 were water content of 25.58%, 20.39%, and17.80% respectively; ash content of 9.64%, 9.69% and 7.71% respectively, fat content 8.08%, 11.40%and 15.16%, respectively and protein content 53.73%, 58.10%, and 59.11%. respectively. Meanwhile,the total plate count (TPC) value of dried salted layang fish (Decapterus sp) on Rack 1, Rak2, and Rack 3was 2.73 log x CFU / g or 5.4 x 102 CFU / g, 2.74. logx CFU / g or 5.5 x 102 CFU / g, and 2.74 logx CFU / gror 5.9 x 102 CFU / gr, respectively. The best place to put fish in the dryer is on Rack 3 as this is indicatedby the low moisture content. The TPC value was still within the value limit required by the SNI.

Durian seeds are waste products from durian fruit that have not been utilized properly. Durian seedflour contain high starch as well as tapioca flour, therefore, durian seed flour can be combined withtapioca flour as a filler for sausage dough, in order to reduce production costs of sausage products. Theaim of this study was to analyze the physicochemical, microbiological and organoleptic properties of beefsausage with the addition of 0%, 25% and 50% durian seed flour from a maximum 30% of the flour usedin making sausages. The results of physical characteristics showed that the addition of durian seed flourhad a significant effect (P <0.05) on the cohesiveness of sausages and had no significant effect (P>0.05) onother physical characteristics of sausages. The microbiological assay showed that durian seed flour didnot affect the total plate count (TPC) of beef sausages. However, the total plate count of the sausages withthe addition of 25% durian seed flour still met the SNI (Indonesian National Standard) for sausages,instead of sausages with 50% durian seed flour addition. The results of chemical analysis showed that theaddition of durian seed flour had no affect on moisture content, ash content, fat content, protein content,and carbohydrate content of the sausages. The hedonic test values on the parameters of aroma, color,texture and general appearance also showed no significant effect (P> 0.05), except for taste parameters.The hedonic quality test value also showed that the addition of durian seed flour had no different effect(P> 0.05) on the parameters of aroma, color, texture, and general appearance, but had different effect (P<0.05) on the sausage taste. The addition of durian seed flour produced a distinctive taste which coverthe flavor of sausage.

Anchovies drying method in Saliong, Batuboi village, Kayeli Bay has been done by spreading fish on the ground covered by mat or net due to low cost and easy to apply. However, there are no guarantee in the sanitation and hygienic. The objective of this research was to study the effect of closed sun drying method on the quality of dried anchovies (Stolephorus sp). The method was using closed cabinet sun dryer prototype covered by transparence plastic multi racks. Parameters observed involve: organoleptic, moisture content, acid insoluble, total plate count (TPC), E. coli, Salmonella sp., Vibrio cholera and fungi according to Indonesian national standard reference (SNI). The result showed the dried anchovy have an organoleptic grade refers to appearance, smells and texture were 8.40, 8.33 and 8.27 respectively. Moreover, moisture 17.50%; acid insoluble ash 0.32%; total bacterial (TPC) 6.92x102; E. coli, Salmonella sp., V. cholera and fungi were negative. For comparison, dried anchovy produced by using conventional/traditional drying had an organoleptic grade refers to appearance, smells and texture were 7.67, 7.73 dan 7.87 respectively; while moisture 16.93% ; acid insoluble ash 0.65%; total bacterial (TPC) 1.16 x103; E. coli, Salmonella sp., V. cholera and fungi were negative. According to the SNI 01-2891 BSN 1992, dried anchovy produced by using enclosed sun dryer better than dried anchovy produced by traditional method.

Pork is one of the most consumption types of meat in the East Nusa Tenggara region.. Moringa leaf are one part of the plant which is known to have antimicrobial compounds.The aimof this research was to determine the influence of Moringa leaf infusion as a natural preservative to the quality of pork.This research is an experimental laboratory research and used a total of 48 samples of thigh pork (Biceps femoris). This research used a completely randomized design with factorial pattern. The first factor was concentration of infusion Moringa leaf consist of 0% (K0), 5% (K1), 10% (K2), and 15% (K3) and the second factor was time of storage consist of  0,6, 12, and 18 hours with 3 replications. The parameters of porkquality that have been examined: color, texture, odor, value in the Eber test, pH value, and total plate count (TPC) value.The results showed that the addition of Moringa leaf infusion change the color and odor. The Eber test shows the K3 group can last up to 18 hours. There was no significant effect of infusion concentration (P> 0.05) on the pH value and there was a very significant effect on the time of storage (P<0.01) on the pH value. There was a significant effect of infusion concentration (P<0.05) and very significant effect on the time of storage (P <0.01) on the TPC value. The value of TPC in the K3 group was below of the Standar Nasional Indonesia contamination limit for laying less than 12 hours at room temperature.

Title (Bahasa Indonesia): Keberadaan salmonella dan tingkat kesegaran frozen smoked tuna This study aimed to quantify Salmonella, Total and Total Plate Count (TPC) in fresh tuna loin, frozen tuna loin, and frozen tuna loin filled with CO gas, to analyze the level of freshness of the fish through the test Mb, pH and appearance in fresh tuna loin, frozen tuna loin and frozen tuna loin filled with CO gas, and to describe the presence of Salmonella and the provision of value Mb with CO gas. Object of study in this research is the bacterium Salmonella and Myoglobin (Mb) in frozen smoked tuna, through the fish freshness analysis (Mb value test, pH, and organoleptic), TPC analysis, total Salmonella in fresh tuna (as a positive control), frozen tuna loin and frozen tuna loin frozen filled with CO gas. Results showed total Salmonella after incubation at 37 ° C for 24 and 48 hours fresh tuna loin, frozen tuna loin, and frozen tuna loin frozen filled with CO gas were 4.80 x 102 CFU/g and 5.43 x 102 CFU/g; 0.57 x 10 CFU/g and 1.55 x 102 CFU/g; 3.90 x 102 CFU/g; and 8.63 x 102 CFU/g, respectively. Total Salmonella tended to decline in frozen tuna, but increase in frozen tuna CO at 48 hours incubation. Mb value was 1.02 for fresh tuna loin, 0.86 for frozen tuna and 0,92 for frozen tuna filled with CO gas, respectively. The pH value was 5.23 in fresh tuna loin, 6.10 in frozen tuna loin, and 6.24 in frozen tuna loin filled with CO gas. Organoleptic value showed that fresh tuna loin was attractive to very attractive, frozen tuna loin was attractive and frozen tuna loin with CO gas was very attractive. TPC incubated at 37 ° C for 24 hours for fresh tuna loin was 11.75 x 103 CFU/g, for frozen tuna loin was 1.66 x 103 CFU/g, and frozen tuna loin with CO gas was 1.54x103 CFU/g. TPC incubated at 37 ° C for 48 hours for fresh tuna loin was 12,13x103 CFU/g, frozen tuna loin was 1.73 x 103 CFU/g, and frozen tuna loin with CO gas was CO 1.99 x 103 CFU/g. Penelitian ini bertujuan untuk menganalisis tingkat kesegaran ikan, menghitung Total Plate Count (TPC) dan total Salmonella pada tuna loin segar, tuna loin beku, dan tuna loin beku yang diberi gas CO, serta mendeskripsikan keberadaan Salmonella dan tingkat kesegaran frozen smoked tuna. Objek kajian dalam penelitian ini adalah isolat Salmonella dan Mioglobin (Mb) pada frozen smoked tuna, dengan menganalisis kesegaran ikan (uji nilai Mb, pH dan organoleptik), analisis TPC, total Salmonella pada tuna segar (sebagai control positif), tuna beku dan tuna beku yang diberi gas CO. Hasil penelitian menunjukkan bahwa Total Salmonella yang diinkubasi pada suhu 37OC selama 24 dan 48 jam untuk tuna loin segar, beku dan beku yang diberi CO berturut-turut : 4,80 x 102 CFU/g dan 5,43 x 102 CFU/g; 0,57 x 10 CFU/g dan 1,55 x 102 CFU/g; 3,90 x 102CFU/g; dan 8,63 x 102 CFU/g. Total Salmonella cenderung menurun pada tuna beku, tetapi naik pada tuna beku CO dengan lama inkubasi 48 jam. Nilai Mb masing-masing adalah: 1,02 untuk tuna segar, 0,86 untuk loin tuna beku dan 0,92 untuk loin tuna beku yang diberi gas CO. Nilai pH 5,23 untuk loin tuna segar, 6,10 untuk loin tuna beku dan sebesar 6,24 untuk loin tuna beku yang diberi gas CO. Nilai organoleptic 7,55 untuk loin tuna segar ( diantara menarik dan sangat menarik), 7,35 loin tuna beku (menarik) dan 7,75 loin tuna beku yang diberi gas CO (sangat menarik). TPC yang diinkubasi pada suhu 37OC selama 24 jam adalah 11,75 x 103 CFU/g untuk loin tuna segar, 1,66 x 103 CFU/g untuk loin tuna beku dan 1,54 x 103 CFU/g untuk loin tuna beku yang diberi gas CO sebesar. TPC yang diinkubasi pada suhu 37OC selama 48 jam 12,13 x 103 CFU/g untuk loin tuna segar, 1,73 x 103 CFU/g untuk loin tuna beku dan 1,99 x 103 CFU/g untuk loin tuna beku yang diberi gas CO.

The aim of research wasto determine the effect of the coating of edible film derived from bovine split hide gelatin on inhibiting microbiological damages and properties of the beef meatballs with different coating concentrations. The material used was gelatin types A (processed with acid curing agent) from the bovine split hide and glycerol. The completed randomize design (CRD) with a factorial pattern of 3 x 3 was used in this study. The first factor was 3 levels of coating concentration (0, 5, and 10%) and the second factor was 3 levels of storage time at 10oC (3, 6, and 9 days). It was continued to Duncan's Multiple Range Test (DMRT) if the treatment indicated significant effect at aprobability level of 5%.The results showed that the storage time and coating concentration affected the soluble protein, pH value, water holding capacity (WHC), and total plate count (TPC) in beef meatballs. Bovine split hide gelatin can be used as an edible coating on beef meatballs and extend the shelf time of beef meatballs.
